Abstract:The popularity of fat-free fermented concentrated milk products, such as fresh cheeses and high-protein yogurt, has increased over the recent years, attributed to greater availability and improvements in taste and texture. These improvements have been achieved through modifications and new developments in processing technologies, for example, higher heat treatment intensities and incorporating different membrane filtration technologies. Though numerous processing parameters are discussed in the literature, as well as reasons behind the developments, detailed examinations of how process modifications affect the final textural attributes of these products are lacking. To draw links between processing parameters and texture, we review the literature on fat-free fermented concentrated milk products from the perspective of fermented milk protein-based microgel particles as the basic structural unit. At each main processing step, relationships between process parameters, micro- and macrostructural and sensory (textural) properties are discussed.An overview of particle characteristics that drive structural changes at each processing step is developed in relation to textural characteristics. Using this approach of assessing relationships between structural characteristics of concentrated dispersions of fat-free fermented milk protein-based microgel particles and processing parameters provides a basic context for the selection of optimal parameters to achieve a desired texture.
Microstructural studies of imitation cheese with a shift in continuous phase

Abstract:When casein is replaced with starch in imitation cheese, the functionality changes. Three different microscopy methods were applied to understand the microstructural differences in the product depending on which component dominates the microstructure. Confocal Laser Scanning Microscopy (CLSM) for component identification. Scanning Electron Microscopy (SEM) and Cryogenic Scanning Electron Microscopy (Cryo-SEM) for studying surface structures. Differences in the surface structures were detected between SEM and Cryo-SEM. In SEM, starch appeared rough and protein smooth, while in Cryo-SEM no starch roughness of the surface was found. A change in starch modification and effects of protein prehydration was also analysed. Adding octenyl succinic anhydride (OSA) modified starch for emulsifying properties resulted in a microstructure with fragmented protein at a protein level of 7 %, but not at 9 or 12 %. Protein prehydration had limited effect on microstructure. On a macrostructural level, the change to an emulsifying starch increased hardness in imitation cheese with 7 and 9 % protein. Protein prehydration slightly decreased the hardness, but the difference was not significant at all concentrations. This research provides valuable information about the microstructure of imitation cheese at a 50/50 composition, how the microstructure changes with an emulsifying starch and what occurs after a protein prehydration was included in the production.

Abstract:The present study compared the texture and functional properties of mozzarella cheese made with milk containing different of genetic polymorphisms kappa-casein (AA, AB, AE or BE). The genotype of kappa-casein in the milk from individual Holstein cow was determined by pyrosequencing method. Full-fat Mozzarella cheese was made from pooled milk from 3 cows with the same k-casein genotype and analysed 7 d after manufacture. The cheese made from type AB contained the highest level of fat and Ca/protein, and the lowest moisture content. The cheese made from type AB milk was harder and chewier than cheese made from type AE and BE milk. The cheese made from type AB and AA milk had higher stretchability but lower meltability and flowability than type AE and BE. In summary, the cheese made from type AB milk had different texture and functionality quality than that made from type AE or BE. (C) 2013 Elsevier Ltd. All rights reserved.
Dairy versus non-dairy cheese texture: Sensory and instrumental contrasts

Abstract:With growing consumer demand for plant-based products that mimic the eating experience of animal-based products, there is a need for improvement in instrumental measurements of sensory texture. This study aimed to characterize textural differences between dairy and non-dairy cheeses, and to investigate whether Large Amplitude Oscillatory Shear (LAOS) rheometry could discriminate sensory texture better than Texture profile analysis. Commercial dairy and non-dairy cheddar, mozzarella, and cream cheese were selected to provide a wide range of textures. Sensory evaluation used the check-all-that-apply methodology with 73 consumers. Texture profile analysis force-distance data were analyzed empirically, and also converted to stress and strain (see https://shiny.csiro.au/texture_dash). The major textural differences between dairy and non-dairy cheddar were related to structural cohesion, according to both instrumental measures (dairy cheddar had 1.5-fold higher failure stress and 2.2-fold higher failure strain) and sensory measurements (dairy cheddar was more chewy and less crumbly). In contrast, cream cheeses showed similar textural properties using sensory testing but significant instrumental differences (non-dairy cream cheese had 5.7-fold higher modulus of deformability, 4.7-fold higher failure stress). For mozzarella, there were large differences in both sensory attributes (chewy, crumbly, jelly-like, stretchy) and instrumental parameters (13.6-fold difference in modulus, 2.7-fold difference in failure stress). LAOS rheometry gave insights into the mechanisms by which samples absorbed or dissipated mechanical energy at nonlinear strains. The LAOS parameter G 3 ' / G 1 ' $$ {G}_3^{\prime }/{G}_1^{\prime } $$ correlated well with sensory attributes creamy, fatty/oily, and moist, indicating the potential of this technique to measure structural phenomena linked to sensory attributes that resonate with consumers.

Abstract:While processing at elevated temperatures, starchy food products undergo gelatinization, which leads to softening related changes in textural characteristics. Study of role of gelatinization in texture development is limited; specifically, ignoring gelatinization physics can lead to erroneous prediction of Youngs modulus. In a recent work, we demonstrated a texture model that predicts local and effective Youngs moduli as functions of moisture content. While this model tracks experiments closely for drying, it deviates significantly from experiments for frying. In this paper, three different techniques for incorporating starch gelatinization are used to enhance the texture model, and the suitability of each technique is discussed. These improved models can capture the initial gelatinization induced softening and are in much better agreement with experiments. We expect that this work could contribute to better understanding and predictive capabilities of texture development.

Dextran modulates physical properties of rennet‐induced milk gels

Abstract:Physical properties of rennet‐induced milk gels as core intermediates of cheese production are mainly affected by milk composition, type and amount of coagulation enzyme, and starter culture activity. We investigated model systems of reconstituted milk and dextran, which triggers effects on milk gels similar to exopolysaccharides from lactic acid bacteria. Furthermore clotting activity (0.02 or 0.04 IMCU mL−1) and milk pH adjusted prior to renneting (6.5 ‐ 5.7) were studied. A lower pH at renneting resulted in an earlier gelation onset, a higher gelation velocity and gel stiffness. The addition of dextran stabilized the gels especially at higher pH, and microstructural analysis revealed larger, more interconnected protein aggregates. However, at pH 5.7, a reverse effect was observed, indicating a destabilization of the casein network. The current study indicates that altering milk pH and addition of polysaccharides gives the potential to change textural properties of cheese by affecting rennet‐induced gelation.This article is protected by copyright. Characterization of high pressure jet-induced fat-protein complexation

Abstract:High-pressure-jet (HPJ) processing of various dairy systems has been shown to disrupt fat droplets and casein micelles and cause a strong association between fat and casein proteins. The present work seeks to better describe this association between fat and casein using a model milk formulated from confectionary coating fat (3.6% wt/wt), micellar casein (3.4% wt/wt), and water (93% wt/wt), which was then pasteurized, homogenized, and then either HPJ-treated (400 MPa) or not (non-HPJ-treated, control). Upon ultracentrifugation, fat in the non-HPJ-treated model milk creamed due to its low density. In the HPJ-treated model milk, fat precipitated with protein into a thick bottom layer upon ultracentrifugation, reflecting a strong association between protein and fat. Differential scanning calorimetry (DSC) and time-domain nuclear magnetic resonance of the non-HPJ-treated model milk revealed fat in 2 physical states: (1) fat that is physically similar to the bulk fat and (2) fat that was in smaller droplets (i.e., homogenized) and crystallized at a lower temperature than the bulk fat. In contrast, DSC of HPJ-treated model milks supported the presence of fat in 3 states: (1) fat that is physically similar to the bulk fat, (2) fat in small droplets that required substantial supercooling beyond the non-HPJ-treated model milk to crystallize, and (3) fat in such small domains that it crystallizes in a less stable polymorphic form than the non-HPJ-treated model milk (or does not crystallize at all). The state of fat within the HPJ-treated model milk changed minimally with acidification, indicating that the association is not dependent on the charge on the casein. Cryogenic transmission electron microscopy (Cryo-TEM) of the non-HPJ-treated model milk revealed uniform casein micelles, which likely adsorbed to the surface of fat globules post-homogenization. In contrast, Cryo-TEM of the HPJ-treated model milk revealed a porous protein aggregate that likely had dispersed fat throughout. Together, these results suggest that HPJ treatment causes fat to be entrapped by casein proteins in very small domains.

Abstract:The effect of fat content in cheese curds on their rheological properties was examined using dynamic shear measurements. Surplus fat addition to milk samples caused two distinct types of changes in the temperature dependence of the viscoelastic moduli of resultant curds. The first was a significant reduction in the moduli over a wide temperature range, which is attributed to the presence of liquefied fat globules within the milk protein network. The second was the excess contribution to the low-temperature moduli owing to the reinforcing effect of solidified fat globules. An upward shift in the sol–gel phase transition temperature driven by an increased fat content was also observed.

Functionality and physico-chemical characteristics of bovine and caprine mozzarella cheeses during refrigerated storage

Abstract:Low moisture part-skim Mozzarella cheeses (MC) were manufactured using fresh bovine and caprine milk to study melting, physico-chemical, textural, and microstructural properties of the cheeses during 8 wk of refrigerated storage. Structural changes in cheese matrix were evaluated by scanning electron microscopy and by proteolytic patterns using nitrogen solubility, SDS-PAGE, and Gel-pro analyzer. Meltability of ripened cow and goat MC were not different when fat content of both milks were standardized, whereas bovine MC formed a significantly larger amount of free oil throughout the experiment. The results of the proteolytic patterns, texture attribute (cohesiveness), and microstructure revealed that bovine MC had a greater structural degradation of cheese matrix than caprine MC during the storage. Elevated protein degradation in bovine MC led to more intense brown color formation than the goat counterpart when the cheeses were baked. The melting characteristics showed high positive correlation (r = 0.51 to 0.80) with proteolysis, whereas it was negatively correlated with textural characteristics. Among textural attributes, cohesiveness was highly inversely correlated with melting characteristics (r = -0.69 to -0.88). High negative correlations were also observed between proteolytic parameters and textural attributes (r = -0.48 to -0.81).

Abstract:During the past few years, the world community has faced a number of problems related to the delivery and storage of milk and milk products. In particular, the situation provoked by quarantine restrictions in various countries of the world forces to look for solutions regarding the use of non-traditional raw materials for the production of classic or similar food products. As a result, it is quite promising to use dairy products with extended shelf life, in particular, dry milk concentrates as the main protein carriers for the production of stable protein-fat systems. The use of dry milk proteins makes it possible to manufacture restored structural products that can be used as an alternative to classic ones. Therefore, the object of research is food components of various origins, in particular food modified starches, food fibers and their modifications, hydrocolloids. Characteristic indicators of viscosity with increasing shear stress were determined for 5 % solutions of modified starches of various types after brewing at a temperature of 80 °C. It was found that when the shear stress increases to a value of 200 Pa, there is a significant decrease in viscosity, which generally characterizes them as structural systems. The functional and technological indicators of wheat (VF-200), bamboo (BAF-200) food fibers (fiber length 200 microns) and carboxyl methyl cellulose (CMC) were studied. Increased functional and technological capabilities of CMC compared to dietary fibers were revealed. The kinetics of swelling of dietary fibers and CMC were studied, while the period of maximum intensification of the process, which is between 5 and 15 minutes, was determined. The maximum value of the swelling coefficient is characteristic for CMC 4.4±0.04, for wheat fiber 4.01±0.06, for bamboo fiber 3.81±0.05. Using the method of mathematical and statistical processing of experimental data, optimization of concentration and technological modes was carried out to achieve maximum hydration and strength of iota-carrageenan gel. It was determined that at a concentration of 1 % during brewing at 80 °C and a time of 5 min. high enough gel strength can be achieved for optimum consistency in the overall system. The result of the work is a comprehensive study of the functional technological characteristics of food additives that will form the consistency of a structural protein-fat product of the cheese type, which can be used in sausage products as a filler, with the aim of improving the organoleptic, structural-mechanical and nutritional values of the finished products.
Influence of calcium sequestering salt type and concentration on the characteristics of processed cheese made from Gouda cheese of different ages

Abstract:The effect of 90, 180 and 270 mEq/kg of the calcium sequestering salts (CSS) disodium phosphate (DSP), trisodium citrate (TSC) and sodium hexametaphosphate (SHMP) on the solubilisation of proteins and minerals and the rheological and textural properties of processed cheese (PC) prepared from Gouda cheese ripened for 30-150 d at 8°C was studied. The solubilisation of individual caseins and Ca and the maximum loss tangent during temperature sweeps of PC made from Gouda cheese increased, while hardness of PC decreased with ripening duration of the Gouda cheese. Levels of soluble Ca in PC increased with increasing concentration of TSC and SHMP, but decreased with increasing concentration of DSP. The solubilisation of casein and Ca due to ripening of Gouda cheese used for manufacturing PC could explain the changes in texture and loss tangent of PC. The results suggest that DSP, TSC or SHMP in PC formulation can form insoluble Ca-phosphate, soluble Ca-citrate or insoluble casein-Ca-HMP complexes, respectively, that influence casein solubilisation differently and together with levels of residual intact casein determine the functional attributes of PC.
Influence of protein and solid fat content on mechanical properties and comminution behavior of structured plant-based lipids

Abstract:Recently an approach has been developed to structure plant-based lipids with the intention to mimic animal fat tissue in processed meat products or analogues. This study investigated the comminution behavior in a bowl chopper of such structured lipids with varying mechanical properties. For products like salami-type sausages these systems need to withstand comminution to yield particles for inclusion in product matrices. Therefore, samples were prepared from protein suspensions with 6%, 8%, 10%, and 12% soy protein isolate (SPI) and 70% (w/w) total fat with varying solid fat contents (0-30%, w/w). The hardness of samples prepared with 6% and 8% SPI varied between 4.5 and 35.9 N. When comminuted in a bowl chopper, these structures had insufficient mechanical strengths to facilitate the formation of small particles and yielded a coarse paste. Higher concentrations of protein increased hardness (15.9-76.2 N and 15.6-96.1 N, for 10% and 12% SPI, respectively). These samples retained their structural integrity upon comminution yielding individual intact particles. The size of these particles increased with sample firmness, i.e. with increasing amount of protein. The shape of the particles was more elongated the higher the solid fat content as indicated by a higher aspect ratio. Taken together, results show that structural characteristics of the gelled emulsions can be tuned to yield desired fat particles after comminution.
Impact of the Dairy Matrix Structure on Milk Protein Digestion Kinetics: Mechanistic Modelling Based on Mini-pig In Vivo Data

Abstract:Beyond the individual content in nutrients, it is now established that the matrix structure is also to consider when evaluating the nutritional properties and possible health effects of a food material. The objective of this study was to gain knowledge on the effect of the structure of dairy products on the digestion of milk proteins as inferred from a mathematical modelling of mini-pig in vivo data. Six dairy matrices of the same composition but differing by their physicochemical and structural properties were investigated. They were manufactured using technological processes commonly used in the industry (heat treatment, rennet gelation, acid gelation and mixing). The experimental results cover a 7-h postprandial period and consist of plasmatic amino acid concentrations as well as dry matter contents and chromium concentrations (a marker of the liquid phase of the meal) of samples collected at the stomach exit. The model developed not only accounts for the main digestive events but also for phenomena that can occur within the stomach (milk clotting and aggregate syneresis). It provides a good fitting of all the experimental data and allows estimating parameter values that can be explained by considering the properties of the matrices investigated. The model has also been used to estimate quantities that cannot be observed experimentally (stomach volumes, endogenous secretions, gastric emptying half-time, etc.) in order to recover a better picture of all the results and validate the model predictions against the literature. It even appears that our simulations of gastric emptying and aminoacidemia superimpose very well with previously published data obtained using similar matrices and the same mini-pig species. This study shows that the great differences in the kinetics of amino acid absorption that were observed experimentally can be fully understood by considering the behaviour of the dairy matrices within the stomach. It therefore offers interesting perspectives for the integration of food structure parameters, and more particularly for dairy products, in the comprehensive view of the nutritional quality of food products.

Abstract:A closed cavity rheometer was employed to assess the properties of concentrated protein materials before, during and after thermal treatment, using conditions that are relevant to the production of meat analogues. Pea and soy protein isolate and wheat gluten were used as model matrices. The analysis was done using Lissajous curves, both for small and large amplitude oscillatory shear deformation. The energy dissipation ratios based on the enclosed area inside the Lissajous curves characterize the plasticity of the materials. The results show that the modulus of wheat gluten increases during heating and remains elevated after cooling. In contrast, the moduli of pea and soy protein isolates decrease during heating. Subsequent cooling leads to properties that are similar to the rheological properties of unheated pea and soy protein isolates. Lissajous curves and energy dissipation ratios provide insight in the non-linear response. At 30 °C, pea and soy protein isolate have a higher dissipation ratio than wheat gluten. Upon a heat treatment and even after cooling, the dissipation ratio was smaller at similar strain amplitude compared with 30 °C. This indicates that heating induced more elasticity. Upon heating, pea protein isolate loses its elastic properties faster than soy protein isolate, while wheat gluten showed abrupt dissipation after extensive deformation. The observed characteristics are consistent with the behaviour during extrusion and shearing, in which wheat gluten forms extended filaments, while soy and pea protein isolates form a homogeneous matrix. Studying the large oscillatory shear behaviour during and after thermal treatment provides a more detailed picture of the rheological changes during processing, than one would obtain through classical rheology. The dissipation ratio summarizes the information in the Lissajous curves. These insights help to better identify material-structure-process relationships for concentrated plant protein materials during thermomechanical conversions, such as extrusion.

Abstract:This study is aimed at characterizing the nonlinear viscoelastic behavior of hard cheeses using mild cheddar and gruyere as examples. The constitutive model consists of the Van der Waals hyperelastic function and the Prony series. The material constants were calibrated using data from monotonic compression and stress relaxation tests. Based on these constants, finite element simulations of three point bend and wire cutting tests were performed. The finite element predictions were compared with experimental data and good agreement was observed. In addition, successful predictions of the steady-state cutting force in the wire cutting tests have been made through the use of a critical strain failure criterion.

Abstract:Colloidal food products, such as emulsions, foams, gels, and dispersions, are complex systems that need the presence of stabilizing agents to enable their formation and provide stability. Proteins are often used for food foams and emulsions because of their ability to lower interfacial tension and make viscoelastic interfaces. Generally, to improve the resistance against rupture, polysaccharides are used in association with the proteins. Pectin is a complex polysaccharide that can help to stabilize foams or emulsions. This work aims at studying the mechanical resistance of the interface formed by mixtures of β-casein and pectin at high and low methoxylation degrees at the air/water interface using dilatational and shear kinematics. Frequency sweep tests, in the linear region, were performed in shear at different aging times and in dilatational mode, and the rheological data were analyzed. The transient data of the surface tension were analyzed by kinetic models to obtain the characteristic rates of the interfacial phenomena. The kinetic mechanisms of the protein/pectin mixed systems are controlled by protein and show a weak gel behavior for short aging times. The interfaces obtained with both pectins in a mixture with β-casein evolved with time, gelling and showing a solid-like behavior at concentrations of 1 and 10 g/L and after 3.5 h of aging time. The interfacial shear trend obtained suggests a good stabilizing effect of the pectins from citrus with long aging times.

Abstract:This study aimed to investigate if differences in β-casein polymorphic structure would affect the acid-induced (glucono-δ-lactone) gelation behaviour of corresponding skim milks. Gels obtained from skim milk containing A2/A2 β-casein had significantly lower elastic modulus, water holding capacity, and gel permeability compared to A1/A1 and A1/A2 gels. Microscopy images also showed a denser microstructure and smaller pore size in acid-induced gels prepared with A1/A1 and A1/A2 milks compared to A2/A2 milk. A number of reasons may account for these differences in gelation, specifically, gels with A1 β-casein contained greater amounts of α-helixes and aggregated β-sheets in their secondary structure compared to A2/A2 gel that was comprised mainly of random coils or polyproline II helixes. In addition, compositional differences such as greater total and micellar calcium and higher levels of total κ-casein existed in A1/A1 and A1/A2 milks compared to A2/A2 milk and may have contributed to the difference in gelation and gel structure. Although the role of β-CN phenotype on skim milk gelation may need further investigation, findings from this study clearly indicate that A2/A2 milk was associated with poor acid gelation properties.

Morphology Development and Flow Characteristics during High Moisture Extrusion of a Plant-Based Meat Analogue

Abstract:Plant-based meat analogues that mimic the characteristic structure and texture of meat are becoming increasingly popular. They can be produced by means of high moisture extrusion (HME), in which protein-rich raw materials are subjected to thermomechanical stresses in the extruder at high water content (>40%) and then forced through a cooling die. The cooling die, or generally the die section, is known to have a large influence on the products’ anisotropic structures, which are determined by the morphology of the underlying multi-phase system. However, the morphology development in the process and its relationship with the flow characteristics are not yet well understood and, therefore, investigated in this work. The results show that the underlying multi-phase system is already present in the screw section of the extruder. The morphology development mainly takes place in the tapered transition zone and the non-cooled zone, while the cooled zone only has a minor influence. The cross-sectional contraction and the cooling generate elongational flows and tensile stresses in the die section, whereas the highest tensile stresses are generated in the transition zone and are assumed to be the main factor for structure formation. Cooling also has an influence on the velocity gradients and, therefore, the shear stresses; the highest shear stresses are generated towards the die exit. The results further show that morphology development in the die section is mainly governed by deformation and orientation, while the breakup of phases appears to play a minor role. The size of the dispersed phase, i.e., size of individual particles, is presumably determined in the screw section and then stays the same over the die length. Overall, this study reveals that morphology development and flow characteristics need to be understood and controlled for a successful product design in HME, which, in turn, could be achieved by a targeted design of the extruders die section.
