Development of High-speed Sensing Technique of Viscosity and Surface Tension using Near-infrared Laser-induced Capillary Wave and Its Applications

Abstract:In the food and bio engineering field, liquid viscosity is one of the important criteria of the physical property, quality control and transport efficiency. Although the development of an in-situ measurement technique applicable in various industrial environments has been required, conventional methods such as capillary viscometer and rotational viscometer are insufficient as principle. In the present study, near-infrared laser-induced capillary wave (NIR-LiCW) method to optically determine viscosity using nano-micro scale capillary wave was developed. Furthermore, as the aim for the applicability of a high time resolution measurement, the experiments with food and biological liquid samples were demonstrated. Chapter 1 summarizes the background and previous studies of conventional methods for viscosity focused on food and biological liquids. Additionally, it is described that this novel technique not only requires the characteristics of high-speed and non-contact but also the applicability to non-Newtonian liquids in order to develop a practical viscosity sensing apparatus with NIR-LiCW. Chapter 2 describes the principle, mathematical model and experimental apparatus of the present NIR-LiCW. In order to reveal the verification as measurement technique, the sensitivity analysis of wave behavior for viscosity and surface tension and the measurement of ten Newtonian liquid samples were demonstrated. It was confirmed that measured values were in good agreements within ±5 % from references. Chapter 3 describes the comparison between volume heating with surface heating; 1) relationship between mechanism of capillary wave and thremophysical properties, 2) measurement of decanol aqueous solution, 3) calculation of temperature rise and wave amplitude of liquid surface and 4) wave motion in the liquid. The liquid heating method of NIR-LiCW can be considered as volume heating theoretically, on the other hand, that of far-infrared laser-induced capillary wave (FIR-LiCW) employed in previous study is surface heating. It was confirmed that volume heated capillary wave is generated mostly by the effect of thermal expansion and nanometer-scale amplitude is induced with temperature rise of less than milli kelvin-order. Chapter 4 describes the development of liquid-level control system and high-speed sensing of milk and blood selected as food and biological liquid samples. By using the present NIR-LiCW apparatus, the denaturation processes of whey, casein and blood coagulation were detected as viscosity changes with time intervals of 1~5 s. Moreover, xanthan gum aqueous solution and hydroxypropylcellulose aqueous solution of non-Newtonian liquid samples were measured with changing the fringe spacing and heating laser power experimentally. Apparent viscosity changes caused by the non-Newtonian properties were detected. Additionally, the non-Newtonian properties of the samples were evaluated with the theoretically calculated shear rate using the power law model. Chapter 5 summarizes the results of this study.
