Abstract:Introduction Ice cream is a very popular but also complex food product. Dairy ice cream is made by freezing and aeration of a pasteurised mixture of ingredients including milk, fat, sugars, emulsifiers, stabilisers, flavouring compounds and water 1,2,3 . Ice cream contains by volume about 40-50% air bubbles, 30% ice crystals and 5% fat droplets which are held together by a continuous viscous unfrozen aqueous 15% sugar solution 1 . Ice cream thus contains all three states of matter simultaneously: solid, liquid and gas.
