Abstract:Food emulsion is one of the major systems in the food industry, which exists in spreads, dressings, creams, sauces, dips, and beverages. Recently, there has been an active search for suitable plant protein sources to replace animal proteins for the fabrication of advanced emulsion systems in the food industry. Pea protein is getting more and more attention as a good emulsifier in the food industry because of its low cost, low allergy, rich nutrition, and good functionality. This review summarizes recent studies on the fabrication and utilization of these advanced emulsions with pea proteins, including nanoemulsions, Pickering emulsions, high internal phase emulsions, and double emulsions. A brief description of emulsifying property of pea protein is given, then the formation and properties of each type of pea protein emulsions are described, and finally, the potential applications of pea protein as an emulsifier in commercial food products are introduced. A particular emphasis is given to the utilization of pea protein as an emulsifier and these advanced pea protein emulsions for the delivery of bioactive components, 3D printing, and production of market products.

Abstract:As a traditional fiber plant, kenaf also has tender branches and leaves which contain high and fine protein. Many domestic and international studies showed that kenaf has a good value as forage. With the speedy development of the stockbreeding and the forage industry, the forage with high and fine protein comes to be urgent goods. Further exploration and research on the feeding value of kenaf will be more helpful for the solution of the deficiency of the forage with high quality protein in South China. This paper summarizes the international research progress and prospect of the feeding value of kenaf and pro-vides references for further study.

Abstract:This paper reviews the research in nutrition and feed development in aquaculture animals in recent years, and analyzes the problem and future development of feed industry. In past 10 years, great advances have been achieved in aquaculture animal nutrient requirements, feeding, larval feed, broodstock nutrition, additives etc. But there are still some problems regarding aquafeed including high feed conversion ratio, high environmental discharge, high feed cost and unstable profit. In the near future, the research and development of aquaculture nutrition and feed should focus on “high efficiency, safety, economic and environmental neutral”. New concepts from ecology and genomics technologies should be applied in the study on molecular mechanism of nutrition and metabolism, nutrient requirements and accurate feed and feeding, feed quality control and processing, animal quality regulation, etc. The government should provide more opportunities for cooperation between scientists from different areas and long term support.

Abstract:China is rich in aquatic resources and the aquatic processing industry is developing rapidly, and the market potential of products produced using various aquatic raw materials is huge. The socio-economic development and the improvement of people's consumption level have put forward higher requirements for aquatic products, which further promote the technological innovation of related processing. The article classifies aquatic products into six categories: fish, shellfish, algae, crustaceans, echinoderms and cephalopods, and introduces the technological innovations and applications in freezing and preservation, sterilization, and by-product utilization in recent years, respectively, to provide reference for the continued development of aquatic products processing industry in the future.

Abstract:Globally, aquatic processing industries pay great attention to the production of aquatic proteins for the fulfillment of the nutritive requirements of human beings. Aquatic protein can replace terrestrial animal protein due to its high protein content, complete amino acids, unique flavor, high quality and nutritional value, and requirements of religious preferences. Due to the superior functional properties, an aquatic protein based delivery system has been proposed as a novel candidate for improving the absorption and bioavailability of bioactive substances, which might have potential applications in the food industry. This review outlines the extraction techniques for and functional properties of aquatic proteins, summarizes the potential modification technologies for interaction with polyphenols, and focuses on the application of aquatic-derived protein in delivery systems as well as their interaction with the gastrointestinal tract (GIT). The extraction techniques for aquatic proteins include water, salt, alkali/acid, enzyme, organic solvent, and ultrasound-assisted extraction. The quality and functionality of the aquatic proteins could be improved after modification with polyphenols via covalent or noncovalent interactions. Furthermore, some aquatic protein based delivery systems, such as emulsions, gels, films, and microcapsules, have been reported to enhance the absorption and bioavailability of bioactive substances by in vitro GIT, cell, and in vivo animal models. By promoting comprehensive understanding, this review is expected to provide a real-time reference for developing functional foods and potential food delivery systems based on aquatic-derived proteins.

Abstract:Abstract Aquaculture in China has undergone significant evolution in recent decades, transitioning from traditional practices to a vital food production industry. Alongside the rapid growth of aquaculture in China, aquafeed production continues to expand swiftly. This review attempts to establish an overview of the history and achievements in aquaculture nutrition research and feed industry in China. The development of scientific concept and methodology, especially the advanced molecular biology technology guarantees the shift from traditional nutrition to molecular nutrition, and subsequently to precision nutrition in aquaculture nutrition research. This evolution has facilitated the formulation of effective strategies to enhance the growth, health and product quality of aquatic animals. The advancements of aquaculture nutrition research and feed industry have also been propelled by innovative research concepts rooted in principles such as the health and safety of aquatic animals, the quality of aquatic products, resource conservation and environmental friendliness, and the advancements in key processing technologies within the aquafeed industry. The future perspectives of the aquaculture nutrition research and feed industry in China are also proposed. The present work aims to provide a reference for promoting the development of aquaculture nutrition research and feed industry in China.

Abstract:Economic growth and health awareness spotlight opportunities and challenges in the food industry, particularly with decreasing arable land, climate change, dwindling freshwater resources, and pollution affecting traditional protein sources. Microalgae have emerged as a promising alternative, with higher protein content, better nutritional quality, and greater environmental resilience compared to conventional crops. They offer a protein balance comparable to meat, making them a sustainable protein source with health benefits like antioxidants, cardiovascular support, and anti-inflammatory properties. Improving the protein content of microalgae through optimized cultivation techniques is crucial to fully realize its potential as a novel food source. While there are already microalgae-based food products in the market, challenges remain in utilizing microalgal protein for widespread food production, emphasizing the need for further research. This review article explores the impact of microalgae culture conditions on protein content, the physicochemical and nutritional characteristics of microalgal protein, the health advantages of microalgal proteins and their derivatives, as well as research on separating and purifying microalgal proteins and their derivatives. It also delves into the current opportunities and obstacles of microalgal proteins and their derivatives as food, highlighting the potential for investigating the link between microalgal protein food and human health.

Alternative protein sources in aquafeed: Current scenario and future perspectives

Abstract:Fish meal represents the main protein source for most commercially farmed aquatic species, as it is characterized by high nutritional value and lack of anti-nutritional factors. However, its availability and the market price have been recognized as serious problems at least for over a decade, making it necessary to search for non-conventional protein sources, as an alternative to fish meals. This review aims to comprehensively examine and critically revise the use of fish meal and all alternative protein sources explored to date on the health, welfare, and growth performance of the major aquatic species commercially interesting from a global scenario. The investigation revealed that the inclusion levels of the different protein sources, plant- and animal-derived, ranged from 10 to 80 % and from 2 to 100 % respectively, in partial or complete replacement of fish meal, and generated positive effects on health, welfare, growth performance, and fillet quality. However, the results showed that above a certain level of inclusion, each protein source can negatively affect fish growth performance, metabolic activities, and other biological parameters. Moreover, it is likely that by mixing different protein sources, the combination of each ingredient causes a synergistic effect on the nutritional properties. Therefore, the future of aquatic feed formulation is expected to be based on the blend of different protein sources. Overall, the analysis highlighted the need for additional research in the field of replacing fish meals with new protein sources, given that many knowledge gaps are still to be filled on aquatic species, which deserve to be investigated.

Simultaneously, a rising consumer demand for safe, nutritious diets has spotlighted the significance of "blue foods," particularly nutrient-rich and easily digestible fish and fish products. Within this context, the by-products of fish processing-comprising skin, viscera, scales, heads, bones, and fins-emerge as valuable reservoirs of proteins. To address the imperative of 'zero waste' and embrace a 'biorefinery for high-value compounds' approach, it becomes crucial to methodically extract and synthesize proteins from these by-products. This not only holds the potential to bolster the global economy but also aligns with environmental sustainability goals, reducing pollution and fostering a trajectory towards sustainable development. Scope and approach: This review endeavors to delve into recent literature focusing on the extraction and utilization of proteins from fish by-products obtained by chemical hydrolysis, enzymatic hydrolysis, fermentation, or other methods. In addition, this study will explore the biological activities and applications of these proteins in medical tissue engineering, food, and cosmetics. Key findings and conclusions: Extensive research findings highlight the manifold beneficial activities of proteins derived from fish by-products, showcasing their potential in health promotion, disease prevention, and therapeutic interventions. These proteins exhibit a broad spectrum of applications, ranging from health pharmacology to food supplements and pharmaceuticals. However, to comprehensively understand their mechanisms and ascertain their market potential, further in vivo and clinical trials are imperative. This exploration is essential not only to harness the full spectrum of marine resources but also to stimulate the growth of the blue bioeconomy. By unlocking the potential of fish by-products, people can contribute to global sustainable development and foster common prosperity.

Abstract:In recent years, as the algal polyunsaturated fatty acids are widely used in animal feed, the interests in the fundamental research and applied research of microalgae-based polyunsaturated fatty acids production are increasing. To support the industrial production of algal polyunsaturated fatty acids, studies in recent years have devoted numerous efforts in the algal strains screening, biosynthetic mechanisms exploration, induction conditions optimization, and algae-cultivation mode improvement. Specific factors impacting the biosynthesis of algal polyunsaturated fatty acids include temperature, illumination, salinity, and carbon supply. Two-stage cultivation is proven to be an effective method producing microalgae enriched with polyunsaturated fatty acids. In addition, the use of algal polyunsaturated fatty acids in animal feed has been proven to be a promising way to promote the sustainable development of human society. The addition of algal polyunsaturated fatty acids in feed could not only improve the fatty acid profile of animals, but also enhance the animals? immune responses. Herein, we would likely to summarize the progresses in the aforementioned fields and discuss some critical problems hindering the production and application of algal PUFAs. It is expected that this paper could not only introduce the new knowledge of algal polyunsaturated fatty acids to readers, but also point out the potential development trends of the production and application of algal polyunsaturated fatty acids in the coming future.

A comprehensive review is provided on the types of biological feed, their mechanism of action, fermenting strains, fermenting raw material resources, and their current status in animal production to facilitate in-depth research and development of applications.

Abstract:With the improvement of living standard,people's demands for animal product are increasing day by day.Therefore,the development and study of natural plant additives can improve feed quality or palatability,thereby increasing animal feed or feed utilization rate,and obtaining higher breeding benefits.Stevioside and rebaudioside A are two novel natural nonnutritive high-intensity sweetener,which have enormous potential as feed additive.This study summarized the property,the methods of separation,qualitative and quantitative analysis method and the application of stevioside and rebaudioside A in animal production,aiming to explore the natural plant extracts,make the sources of feed additives more green and efficient,and ultimately promote the development of animal husbandry.

Abstract:This article reviews the influence of ultrasonic treatment on protein extraction, modification (structure and function) and application. Summary The advancement of the modern food industry has prompted a shift away from traditional protein extraction methods due to their inherent limitations. As a result, there is a growing interest in exploring alternative methods for protein extraction and modification such as ultrasonic (US) treatment. This shift towards more sustainable and efficient protein extraction methods is a key research focus in obtaining safe proteins in an environmentally friendly manner. Furthermore, enhancing the functional properties of proteins through modification can expand their application. This paper reviews recent research progress and applications of US treatment on protein extraction and modification as well as the impact on protein structure and functional properties. In addition, the latest applications of ultrasound‐modified‐proteins, including nano‐proteins, 3D printing and interactions between proteins and other food components, are reviewed. This review may provide some inspiration for the potential application of US technologies in food fields.

Abstract:Background Aquatic foods, also known as blue foods, contain a wide range of unique bioactive substances. Among these substances, aquatic foods-derived bioactive peptides exhibit diverse structures and activities, including blood pressure reduction, antibacterial effects, uric acid level reduction, and antioxidant effects. As a result, these peptides show considerable potential for application in functional foods. Scope and approach Existing reviews on aquatic foods-derived bioactive peptides have focused primarily on their functional activities and preparation methods, while neglecting the latest trends in rapid discovery and large-scale production of peptides. Therefore, in addition to summarizing the most recent preparation methods of aquatic foods-derived bioactive peptides, this paper also examines the structure-activity relationships and strategies for large-scale production of active peptides. Key findings and conclusions The use of bioinformatics techniques, such as docking and data mining, can significantly expedite the process of discovering and purifying of aquatic foods-derived bioactive peptides. Furthermore, the precise design and optimization of peptides based on their structure-activity relationships can effectively enhance their activity. Heterologous biosynthesis via the modification of host and target peptides holds promise for enabling large-scale production of these peptides. These methods represent the future direction of research on aquatic foods-derived bioactive peptides.
