Abstract:Glycyrrhiza is a well-known plant resource used for the production of extractum-glycyrrhizae; however, large amounts of Glycyrrhiza residues containing polysaccharides are produced, and these have not been well utilized until now. The aim of this study was to evaluate the Glycyrrhiza polysaccharides obtained from Glycyrrhiza residues as a potential gelatin replacer in yogurt. The incorporation of Glycyrrhiza polysaccharide (GP) at different concentrations accelerated the growth of lactic acid bacteria. Similar to the effect of adding gelatin (GE), GP could suitably improve the water-holding capacity (WHC) and texture of the yogurt. Moreover, the yogurt prepared with GP showed a higher viscosity and shorter transverse relaxation time of mobile water (T23) value than the control group (CG). Moreover, the microstructure analysis indicated that the casein network of yogurt with GP was more compact and cohesive than those of others. Yogurt prepared with 0.1% GPs exhibited the best sensory acceptance. The results indicated that small amounts of GPs can effectively replace gelatin as a thickener in yogurt with good quality.

Abstract:Gellan gum is a relatively new gum produced by Sphingomonas paucimobilis. Large-scale production of this new gum was limited for lack of knowledge of its biosynthesis mechanism. Recent advances in the gellan gum biosynthesis related genes and enzymes was focused on three aspects: synthesis of sugar-activated precursors, the repeat unit assembly, and gellan polymerization and export. Probably the most exciting prospects for gellan gum’s molecular modification and yield promotion will be found in gene engineering.

Abstract:Gellan gum (GG) is a linear, negatively charged exopolysaccharide that is biodegradable and non-toxic. When metallic ions are present, a hard and transparent gel is produced, which remains stable at a low pH. It exhibits high water solubility, can be easily bio-fabricated, demonstrates excellent film/hydrogel formation, is biodegradable, and shows biocompatibility. These characteristics render GG a suitable option for use in food, biomedical, and cosmetic fields. Thus, this review paper offers a concise summary of microbial polysaccharides. Moreover, an in-depth investigation of trends in different facets of GG, such as biosynthesis, chemical composition, and physical and chemical properties, is emphasized. In addition, this paper highlights the process of extracting and purifying GG. Furthermore, an in-depth discussion of the advantages and disadvantages of GG concerning other polysaccharides is presented. Moreover, the utilization of GG across different industries, such as food, medicine, pharmaceuticals, cosmetics, etc., is thoroughly examined and will greatly benefit individuals involved in this field who are seeking fresh opportunities for innovative projects in the future.

Abstract:Gellan gum is an anionic linear microbial polysaccharide. It has been extensively used in foods and cosmetics industries due to its special gelling property and rheological behavior of its aqueous solution since the early stage of its discovery. Recently, gellan gum as a natural polymer and its hydrogel show a wide range of application perspective in drug delivery and tissue engineering. Gellan gum is nontoxic, biocompatible, biodegradable and the resulting hydrogel is transparent and stable. The mechanical properties of gellan gum hydrogel are similar to those of normal human tissues under certain conditions. These advantages provide gellan gum versatile characteristics as a source of biomaterials. However, gellan gum-based hydrogels have intrinsic disadvantages such as lack of toughness and tissue tolerance as tissue engineering materials. These defects restrict their use in biomedical field. In order to solve these problems, quite a lot of work on chemical and physical modification on gellan gum has been carried out. Modified gellan gum reveals a much more promising perspective in the development of biomedical materials. In this paper, we summarize the gelation mechanism of gellan gum and various modification methods, and highlight the application of gellan gum and modified gellan gum based hydrogels in biomedical field. We also point out a number of main challenges for gellan gum-based tissue engineering materials.

Abstract:Gelatin is a significant multifunctional biopolymer that is widely utilized as a component in food, pharmaceuticals, and cosmetics. Numerous functional qualities are displayed by gelatin, such as its exceptional film-forming ability, gelling qualities, foaming and emulsifying qualities, biocompatibility and biodegradable qualities. Due to its unique structural, physicochemical, and biochemical characteristics, which enhance nutritional content and health benefits as well as the stability, consistency, and elasticity of food products, gelatin is utilized extensively in the food business. Additionally, gelatin has demonstrated excellent performance in encapsulating, delivering, and releasing active ingredients. Gelatin's various modifications, such as chemical, enzymatic, and physical processes, were analyzed to assess their impact on gelatin structures and characteristics. Hopefully, gelatin will be more widely used in various applications after modification using suitable methods.

Abstract:Konjac glucomannan (KGM) is a naturally occurring macromolecular polysaccharide that exhibits remarkable film–forming and gel–forming properties, and a high degree of biocompatibility and biodegradability. The helical structure of KGM is maintained by the acetyl group, which plays a crucial role in preserving its structural integrity. Various degradation methods, including the topological structure, can enhance the stability of KGM and improve its biological activity. Recent research has focused on modifying KGM to enhance its properties, utilizing multi–scale simulation, mechanical experiments, and biosensor research. This review presents a comprehensive overview of the structure and properties of KGM, recent advancements in non–alkali thermally irreversible gel research, and its applications in biomedical materials and related areas of research. Additionally, this review outlines prospects for future KGM research, providing valuable research ideas for follow–up experiments.

Abstract:Gels refer to the soft and flexible macromolecular polymeric materials retaining a large amount of water or biofluids in their three-dimensional network structure. Gels have attracted increasing interest in the food discipline, especially proteins and polysaccharides, due to their good biocompatibility, biodegradability, nutritional properties, and edibility. With the advancement of living standards, people's demand for nutritious, safe, reliable, and functionally diverse food and even personalized food has increased. As a result, gels exhibiting unique advantages in food application will be of great significance. However, a comprehensive review of functional hydrogels as food gels is still lacking. Here, we comprehensively review the gel-forming mechanisms of food gels and systematically classify them. Moreover, the potential of hydrogels as functional foods in different types of food areas is summarized, with a special focus on their applications in food packaging, satiating gels, nutrient delivery systems, food coloring adsorption, and food safety monitoring. Additionally, the key scientific issues for future food gel research, with specific reference to future novel food designs, mechanisms between food components and matrices, food gel-human interactions, and food gel safety, are discussed. Finally, the future directions of hydrogels for food science and technology are summarized.

Abstract:As a translucent functional gel with biodegradability, non-toxicity and acid resistance, gellan gum has been widely used in probiotic packaging, drug delivery, wound dressing, metal ion adsorption and other fields in recent years. Because of its remarkable gelation characteristics, gellan gum is suitable as the shell material of microcapsules to encapsulate functional substances, by which the functional components can improve stability and achieve delayed release. In recent years, many academically or commercially reliable products have rapidly emerged, but there is still a lack of relevant reports on in-depth research and systematic summaries regarding the process of microcapsule formation and its corresponding mechanisms. To address this challenge, this review focuses on the formation process and applications of gellan gum-based microcapsules, and details the commonly used preparation methods in microcapsule production. Additionally, it explores the impact of factors such as ion types, ion strength, temperature, pH, and others present in the solution on the performance of the microcapsules. On this basis, it summarizes and analyzes the prospects of gellan gum-based microcapsule products. The comprehensive insights from this review are expected to provide inspiration and design ideas for researchers.
The fermentation-based production of gellan from rice bran and the evaluation of various qualitative properties of gum

Abstract:The potential for the use of rice bran, an agricultural waste, as a substrate in the manufacture of gellan gum was examined. Using a standard strain of Sphingomonas paucimobilis (ATCC 31461) and rice bran substrate, gellan gum was produced under optimized conditions. The optimal yield of gellan gum using rice bran substrate was found to be 11.96 g L-1 with 5% glucose, 10% inoculum, and a mixing speed of 300 rpm. Native gum was found to have a consistency index of 2.00 Pa.sn. The viscosity of the gum was found to be extremely stable when exposed to thermal stress. Concerning the rheological characteristics, the Herschel-Bulkley model offered a more realistic representation of the flow characteristics of gum solutions. The synthesized gums were mostly composed of glucose, rhamnose, and glucuronic acid. The acetic acid content of gellan gums was 2.95%, while the molecular weight was 2.88 × 105 Da. Characterization of native gellan gums by UV-Vis spectroscopy, SEM, TEM and FTIR spectroscopy is also presented.

Abstract:Immunologically active glucans are (1→3)-#beta#-D-linked glucose polymers that occur as the conserved structure of cell wall of bacteria, fungi, cereals, mushrooms, seaweed or are secreted extracellularly by various fungi. Their beneficial effects have been attributed to modulation of immune function, increasing bacterial clearance, increasing bactericidal activity, and other nonspeeific effects. Herein, the preparation and derivation of (1→3)-#beta#-D-glucan from S. cerevisiae were reviewed. In contrast to the traditional acidic and alki extraction, a novel method,based on the combination of induced autolysis and subsequent oxidation of the autolysed cell by sodium hypochlorite, had higher yield. The poor aqueous solubility of resultant polysacchafide, however, was a huge hindrance to its clinic application. A process for preparing the (1→3)-#beta#-D-glucan sulfate by heterogeneous process was propesed,in which H2SO4 and n-propanol were employed. The outstanding advantages of this heterogeneous process is concerning ecological aspects especially for a large-scale production.

Abstract:This review explores the realm of structural modifications and broad spectrum of their potential applications, with a special focus on the synthesis of xanthan gum derivatives through graft copolymerization methods. It delves into the creation of these derivatives by attaching functional groups (-OH and –COOH) to xanthan gum, utilizing a variety of initiators for grafting, and examining their diverse applications, especially in the areas of food packaging, pharmaceuticals, wastewater treatment, and antimicrobial activities. Xanthan gum is a biocompatible, biodegradable, less toxic, bioactive, and cost-effective natural polymer derived from Xanthomonas species. The native properties of xanthan gum can be improved by cross-linking, grafting, curing, blending, and various modification techniques. Grafted xanthan gum has excellent biodegradability, metal binding, dye adsorption, immunological properties, and wound healing ability. Owing to its remarkable properties, such as biocompatibility and its ability to form gels resembling the extracellular matrix of tissues, modified xanthan gum finds extensive utility across biomedicine, engineering, and the food industry. Furthermore, the review also covers various modified derivatives of xanthan gum that exhibit excellent biodegradability, metal binding, dye adsorption, immunological properties, and wound healing abilities. These applications could serve as important resources for a wide range of industries in future product development.

Abstract:To achieve sustainable development, increasing attention has been paid to the utilization of renewable polysaccharides extracted from plant gum instead of synthetic materials. Peach gum polysaccharide (PGP) is a typical polysaccharide, which can be readily obtained by hydrolysis of peach gum, one of the abundant plant gums in the world. In the past decade, the research on the hydrolysis, structure, properties and applications of PGP has aroused great interest. The PGP with highly branched macromolecular structure shows remarkable merits of numerous functional groups, excellent water solubility, good biocompatibility, favorable emulsifying property, fine antioxidant and antibacterial activity, and low cost. The application of PGP has expanded from the pharmaceutical field to the fields of food, adsorbents, functional carbon materials, binders and gel materials. This review systematically introduces the research progress of PGP, as well as the opportunities and challenges faced by PGP in scientific research and practical application.

Abstract:Guar gum (GG), as a non-exudate gum, is extracted from the seed's embryos of Cyamopsis tetragonoloba (a member of Leguminosae family). Recently, this biopolymer has received extensive attention due to its low cost, notable properties, non-toxic biodegradation, ease of availability, and biocompatibility. However, disadvantages such as uncontrolled hydration rate and susceptibility to microbial attack have led many researchers to further modification of guar gum. Further modifications of guar gum heteropolysaccharide have been performed to improve properties and explore and expand its potential. The favorable biostability, improved solubility, and swelling, increased pH sensitivity, and good antibacterial and antioxidant properties indicate the significant advantages of the modified gum structures with different functional groups. In this review, the rapid growth in research on GG derivatives-based materials has been discovered. Besides, the production methods of GG and its derivatives have been discussed in tissue engineering and regenerative medical. Consequently, this review highlights the advances in the production of guar-based products to outline a promising future for this biopolymer by changing its properties and expanding its applications in potential targets.

Effects of fermentation conditions on molecular weight, production, and physicochemical properties of gellan gum

Abstract:Gellan gum has been widely used in many industries due to its excellent physical properties. In this study, the effects of different fermentation conditions on molecular weight and production of gellan gum were analyzed, and the optimized fermentation conditions for a high molecular weight gellan gum (H-GG: 6.42 × 105 Da) were obtained, which increased the molecular weight and yield of gellan gum by 201.4 % and 44.9 % respectively. Fourier transform infrared spectroscopy (FT-IR) and x-ray diffraction (XRD) analysis indicated that H-GG has similar characteristic absorption and semi-crystalline structures with the initial gellan gum (I-GG), and it was composed of glucose, rhamnose, and glucuronic acid showing no obvious changes in the molecular structure. Scanning electron microscope (SEM) observation revealed that the filaments of H-GG were slender, longer, and looser with larger pores. Importantly, gel properties analysis showed that the gel strength, viscoelasticity, and water-holding capacity of H-GG were better than those of I-GG, and the rheological results revealed that the H-GG is a pseudoplastic fluid with higher apparent viscosity and stable viscoelasticity at 20-70 °C. Therefore, the molecular weight and yield of gellan gum are significantly affected by fermentation conditions, and the obtained H-GG demonstrates improved gel and rheological properties.

Abstract:Curdlan has unique gel properties and special triple helix conformation, and curdlan gel has great application potential in the fields of food and biomedicine because of its water-retention capacity, thickening capacity, film-forming capacity, freeze-thaw stability, pH stability. Curdlan hydrogels with physicochemical properties and application fields can be prepared by different methods. In addition, combination with other substances can improve gel properties and impart unique functional properties to hydrogels. In this paper, the preparation methods, gel properties, and gelation mechanism of curdlan hydrogels, as well as recent progress in research on curdlan-based composite hydrogels are reviewed. Meanwhile, an overview of the application of curdlan-based hydrogels in food and biomedical fields is provided. This review is expected to provide a reference for further research and application of curdlan-based hydrogels.

Abstract:Naturally sourced gels from food biopolymers have advanced in recent decades to compare favourably in performance and breadth of application to their synthetic counterparts. Here, we comprehensively review the constitutive nature, gelling mechanisms, design approaches, and structural and mechanical properties of food gels. We then consider how these food gel design principles alter rheological and tribological properties for food quality improvement, nutrient-modification of foods while preserving sensory perception, and targeted delivery of drugs and bioactives within the gastrointestinal tract. We propose that food gels may offer advantages over their synthetic counterparts owing to their source renewability, low cost, biocompatibility and biodegradability. We also identify emerging approaches and trends that may improve and expand the current scope, properties and functionalities of food gels and inspire new applications.
