Abstract:Collagen is the most abundant extracellular matrix protein in food-producing animals. Gelatin is partially degraded collagen. Collagen peptides refer to the peptides with specific properties identified from collagen hydrolysate who produced by hydrolysis of collagen/gelatin. Due to the specific structural and bio- and physical-chemical properties, collagen and its derivatives are used in the field of food industry. In this review, the structure of the collagen molecule and its biosynthetic process in vivo are introduced, and the production methods and structures of gelatin and collagen peptides described. Then the inherent self-assembly property of collagen, the mechanical properties of collagen and gelatin gels, functional properties of collagen and gelatin, and bioactive properties of collagen peptides are reviewed. Finally, the applications of collagen and its derivatives that are correlated with their properties in food industry are summarized. The mechanisms and advantages of the applications of collagen and its derivatives in food industry are raised, and the limitations and challenges of these applications are also discussed. And possible studies to address the challenges of the applications in different areas are indicated.

Abstract:Owing to the increasing environmental concerns and requirements for high-quality foods, edible films and coatings (based on proteins, polysaccharides, natural phenolic active substances, etc.) are being developed as effective alternatives to traditional plastic packaging. Gelatin is extracted from collagen. It is an ideal material for food packaging due to its versatile advantages such as low price, polymerization, biodegradability, good antibacterial and antioxidant properties, etc. However, gelatin film exists poor waterproof and mechanical properties, which limit its developments and applications in food packaging. Previous studies show that pure gelatin can be modified by adding active ingredients and incorporating them with bio-polymers to improve its mechanical properties, aiming to achieve the desirable effect of preservation. This review mainly shows the preparation and molding ways of gelatin-based edible films and the applications of gelatin modified with other biopolymers. Furthermore, this review provides the latest advances in gelatin-based biodegradable packaging and food applications that exhibit outstanding advantages in food preservation.

Abstract:Gels refer to the soft and flexible macromolecular polymeric materials retaining a large amount of water or biofluids in their three-dimensional network structure. Gels have attracted increasing interest in the food discipline, especially proteins and polysaccharides, due to their good biocompatibility, biodegradability, nutritional properties, and edibility. With the advancement of living standards, people's demand for nutritious, safe, reliable, and functionally diverse food and even personalized food has increased. As a result, gels exhibiting unique advantages in food application will be of great significance. However, a comprehensive review of functional hydrogels as food gels is still lacking. Here, we comprehensively review the gel-forming mechanisms of food gels and systematically classify them. Moreover, the potential of hydrogels as functional foods in different types of food areas is summarized, with a special focus on their applications in food packaging, satiating gels, nutrient delivery systems, food coloring adsorption, and food safety monitoring. Additionally, the key scientific issues for future food gel research, with specific reference to future novel food designs, mechanisms between food components and matrices, food gel-human interactions, and food gel safety, are discussed. Finally, the future directions of hydrogels for food science and technology are summarized.

Recent advance in modification strategies and applications of soy protein gel properties

Abstract:Soy protein gel can be developed into a variety of products, ranging from traditional food (e.g., tofu) to newly developed food (e.g., soy yogurt and meat analog). So far, efforts are still needed to be made on modifying the gel properties of soy protein for improving its sensory properties as animal protein-based food substitutes. Furthermore, there is always a need to regulate its gel properties for designing novel and tailored products of soy protein gels due to the fast-growing plant protein-based product market. This review gave an emphasis on the latest modification strategies and applications of gel properties of soy protein. The modifying methods of soy protein gel properties were reviewed from an aspect of composition or processing. Compositional modification included changing protein composition and gelling conditions and using additives, whereas processing strategies can be achieved through physical, chemical, and enzymatic treatments. Several compositional modification and processing strategies have been both proven to alter the gel properties of soy protein effectively. So far, soy protein gel has been applied in the field of food and biomedicine. In the future, more mechanistic studies on the modification methods are still needed to facilitate the full application of soy protein gel.

Factors affecting final facial nerve outcome following vestibular schwannoma surgery.

Abstract:OBJECTIVE To determine factors affecting facial nerve outcome of vestibular schwannoma surgery. METHODS This retrospective cohort study comprised 652 patients. The outcome measure was House-Brackmann classification at two years post-operatively. Univariate and multivariate analyses were carried out to determine the factors affecting facial nerve outcome. The incidence rates of hemifacial spasm, metallic taste and crocodile tear syndrome were recorded. RESULTS For tumours less than 1.5 cm, 95 per cent of outcomes were normal, 100 per cent were satisfactory (House-Brackmann grades I-III) and 0 per cent were unsatisfactory (grades IV-VI). For tumours 1.5-2.4 cm, 83 per cent of outcomes were normal, 99 per cent were satisfactory and 1 per cent were unsatisfactory. For tumours 2.5-3.4 cm, 68 per cent of outcomes were normal, 96 per cent were satisfactory and 4 per cent were unsatisfactory. For tumours 3.5-4.4 cm, 52 per cent of outcomes were normal, 80 per cent were satisfactory and 20 per cent were unsatisfactory. For tumours larger than 4.4 cm, 50 per cent of outcomes were normal, 72 per cent were satisfactory and 28 per cent were unsatisfactory. CONCLUSION Tumour size and operation year were significant predictors of facial nerve outcome. The surgical learning curve was steepest for the first 50 patients.

Abstract:Gels are intermediates between solid and liquid with elastic and flowable characteristics whose three-dimensional networks can restrict water, air, and oil. They have extensive applications in modern times in biomedical engineering, electronics, environmental engineering, etc. However, gels have also been made as foods from ancient times for over a thousand years, such as pudding, tofu, and cheese. Among them, protein-based gel-like foods have continuously garnered significant attention and research. In contrast, some polysaccharide-based gel-like foods in southeast Asia, such as “liangfen”, “green tofu”, “ice jelly”, “tamarind jelly”, “konjac tofu”, and “black grass jelly”, were not noticed until recent years regarding their compositions and gelling mechanisms. This review commences on six traditional gel-like foods mentioned above, which refer to six different types of plants and four kinds of gel-forming polysaccharides, including pectin, tamarind seed xyloglucan, konjac glucomannan, and Mesona chinensis polysaccharide. Recent progress and developments of these gel-forming polysaccharides on different gelling mechanisms are summarized. Due to differences in corresponding gel properties, these polysaccharides are applied in various fields, such as delivery systems, tissue engineering, wound dressings, and adsorbent materials. Future trends of these gels would potentially focus on manipulating the mechanical properties by modifying the flexibility of polysaccharide molecules and designing composite gels, producing stimuli-responsive hydrogels and other desirable aspects to catch up with the properties of synthetic counterparts.

The review investigates diverse extraction methods and processing approaches for acquiring gelatin peptides from fish skin, emphasizing their impact on the peptide composition and functional characteristics. Furthermore, the review examines the manifold bioactivities demonstrated by fish skin-derived gelatin peptides, encompassing antioxidant, antimicrobial, anti-inflammatory, and anticancer properties, elucidating their potential roles in functional food products, pharmaceuticals, and nutraceuticals. Further, mechanistic insights into the functioning of gelatin peptides are explored, shedding light on their interactions with biological targets and pathways. Additionally, strategies aimed at improving the stability of gelatin peptides, such as encapsulation, modification, and integration into delivery systems, are discussed to extend the shelf life and preserve the bioactivity. Abstract:Chicken egg white (EW) proteins possess various useful techno-functionalities, including foaming, gelling or coagulating, and emulsifying. The gelling property is one of the most important functionalities of EW proteins, affecting their versatile applications in the food and pharmaceutical industries. However, it is challenging to develop high-quality gelled foods and innovative nutraceutical supplements using native EW and its proteins. This review describes the gelling properties of EW proteins. It discusses the development and action mechanism of the physical, chemical, and biological methods and exogenous substances used in the modification of EW gels. Two main applications of EW gels, i.e., gelling agents in foods and gel-type carriers for nutraceutical delivery, are systematically summarized and discussed. In addition, the research and technological gaps between modified EW gels and their applications are highlighted. By reviewing the new modification strategies and application trends of EW gels, this paper provides insights into the development of EW gel-derived products with new and functional features.

Abstract:Food hydrogels are effective materials of great interest to scientists because they are safe and beneficial to the environment. Hydrogels are widely used in the food industry due to their three-dimensional crosslinked networks. They have also attracted a considerable amount of attention because they can be used in many different ways in the food industry, for example, as fat replacers, target delivery vehicles, encapsulating agents, etc. Gels—particularly proteins and polysaccharides—have attracted the attention of food scientists due to their excellent biocompatibility, biodegradability, nutritional properties, and edibility. Thus, this review is focused on the nutritional importance, microstructure, mechanical characteristics, and food hydrogel applications of gels. This review also focuses on the structural configuration of hydrogels, which implies future potential applications in the food industry. The findings of this review confirm the application of different plant- and animal-based polysaccharide and protein sources as gelling agents. Gel network structure is improved by incorporating polysaccharides for encapsulation of bioactive compounds. Different hydrogel-based formulations are widely used for the encapsulation of bioactive compounds, food texture perception, risk monitoring, and food packaging applications.

Abstract:Alginates have been widely applied and explored in many fields due to their significant advantages. Due to the presence of free hydroxyl and carboxyl groups, alginates can be easily modified by different chemical modification methods. The development and use of chemically modified alginates is one of the hotspots in the field of food science. This paper first summarized the molecular chemical nature of alginates. Then, this paper reviewed the chemical modification methods of alginates. Third, this paper analyzed the product types of chemically modified alginates. Fourth, this work discussed the food application of chemically modified alginates. Finally, this paper provides a summary and outlook of the chemically modified alginates for food research. The chemical modification methods can be classified into five types: ionic complexation with cationic substances, covalent bond modification of the hydroxyl groups, covalent bond modification with the carboxyl groups, step-by-step covalent bond modification, and synergistic modification of covalent bond methods with ionic complexation. The product types are dependent on their roles as minor (emulsions and model foods) or main (foams, fibers, spheres, films, 3D printed scaffolds, and environment-determined hydrogels) components. The food application can be classified into five types: functional active substances, gelling agents, emulsifying agents, materials for food encapsulation, and materials for food packaging and preservation. This paper can guide the research and development of chemically modified alginates for food research.

Abstract:Naturally sourced gels from food biopolymers have advanced in recent decades to compare favourably in performance and breadth of application to their synthetic counterparts. Here, we comprehensively review the constitutive nature, gelling mechanisms, design approaches, and structural and mechanical properties of food gels. We then consider how these food gel design principles alter rheological and tribological properties for food quality improvement, nutrient-modification of foods while preserving sensory perception, and targeted delivery of drugs and bioactives within the gastrointestinal tract. We propose that food gels may offer advantages over their synthetic counterparts owing to their source renewability, low cost, biocompatibility and biodegradability. We also identify emerging approaches and trends that may improve and expand the current scope, properties and functionalities of food gels and inspire new applications.

Abstract:This review explores the realm of structural modifications and broad spectrum of their potential applications, with a special focus on the synthesis of xanthan gum derivatives through graft copolymerization methods. It delves into the creation of these derivatives by attaching functional groups (-OH and –COOH) to xanthan gum, utilizing a variety of initiators for grafting, and examining their diverse applications, especially in the areas of food packaging, pharmaceuticals, wastewater treatment, and antimicrobial activities. Xanthan gum is a biocompatible, biodegradable, less toxic, bioactive, and cost-effective natural polymer derived from Xanthomonas species. The native properties of xanthan gum can be improved by cross-linking, grafting, curing, blending, and various modification techniques. Grafted xanthan gum has excellent biodegradability, metal binding, dye adsorption, immunological properties, and wound healing ability. Owing to its remarkable properties, such as biocompatibility and its ability to form gels resembling the extracellular matrix of tissues, modified xanthan gum finds extensive utility across biomedicine, engineering, and the food industry. Furthermore, the review also covers various modified derivatives of xanthan gum that exhibit excellent biodegradability, metal binding, dye adsorption, immunological properties, and wound healing abilities. These applications could serve as important resources for a wide range of industries in future product development.

Abstract:There are several reviews that separately cover different aspects of fish gelatin including its preparation, characteristics, modifications, and applications. Its packaging application in food industry is extensively covered but other applications are not covered or covered alongside with those of collagen. This review is comprehensive, specific to fish gelatin/hydrolysate and cites recent research. It covers cosmetic applications, intrinsic activities, and biomedical applications in wound dressing and wound healing, gene therapy, tissue engineering, implants, and bone substitutes. It also covers its pharmaceutical applications including manufacturing of capsules, coating of microparticles/oils, coating of tablets, stabilization of emulsions and drug delivery (microspheres, nanospheres, scaffolds, microneedles, and hydrogels). The main outcomes are that fish gelatin is immunologically safe, protects from the possibility of transmission of bovine spongiform encephalopathy and foot and mouth diseases, has an economic and environmental benefits, and may be suitable for those that practice religious-based food restrictions, i.e., people of Muslim, Jewish and Hindu faiths. It has unique rheological properties, making it more suitable for certain applications than mammalian gelatins. It can be easily modified to enhance its mechanical properties. However, extensive research is still needed to characterize gelatin hydrolysates, elucidate the Structure Activity Relationship (SAR), and formulate them into dosage forms. Additionally, expansion into cosmetic applications and drug delivery is needed.

Abstract:Gelatin methacryloyl (GelMA), a kind of modified biomaterials with adjustable degradability from gelatin, can composite with various composite materials and therapeutic substances including cells through various physiochemical direct/indirect interactions to achieve treatment effect. Furthermore, owing to that the GelMA possesses photocrosslinking ability and excellent rheology properties, GelMA itself and its composite materials have the potential to be manufactured to function in diversified forms with 2D or 3D structures as required, such as thin films, microswimmers, biomimetic scaffolds, etc. Combined with the excellent biocompatibility from gelatin, GelMA composite hydrogels have been widely applied in biomedical applications. Unlike published reviews concentrating on a specific application fields or construction strategies of GelMA, this review summarized the multiscale construction strategies and available forms of GelMA complex hydrogel step by step based on its excellent physical and chemical properties. These strategies could be integrated to perform more desirable effects. In the end, the relevant biomedical applications in combination with the repair requirements of different tissues are briefly discussed. This systematic review can provide assistance for the rational application of GelMA in the field of biomedical.

Abstract:In recent years, polymer gels have been been increasingly applied in food science and biomedicine fields. Proteins are nontoxic, biodegradable, and biocompatible; thus, they have become popular materials for building natural gel networks. Zein, a membrane-forming protein from maize, has been used to construct gel networks. Indeed, due to its unique film-forming properties, zein has been combined with other substances to form gel networks for the encapsulation and delivery of active substances or wound dressings, depending on the designs and/or modifications of researchers. Here, the research progress in the construction of three kinds of zein gel networks is reviewed, and their performance over the past five years is evaluated, with methods characterized, mechanism analyzed, application examples provided, and the potential value of this gel-based discussed. Additionally, prospects for the future development and application of zein-based gel networks are highlighted.

Abstract:Gelatin, resulting from collagen, a naturally occurring protein found in ligaments and tissues, is formed through the boiling of connective tissues, bones and animal skins, commonly sourced from cows. Its exceptional properties, including the ability to form strong, transparent gels and flexible films, easy digestibility, solubility in hot water and positive binding action, make gelatin a highly valuable resource in various industries such as food processing, pharmaceuticals, photography and paper production. It is regarded as non-toxic, biocompatible, biodegradable and generally safe for use. Gelatin serves as a key ingredient in the manufacturing of a wide range of products, with a notable example being hard gelatin capsules, which come in varying levels of solubility in water. In this study, a Schiff base was synthesized by modifying gelatin with salicylaldehyde in ethanol at room temperature, a mixture of gelatin-Schiff base added to appropriate copper chloride sonicated in ethanol, the mixture was poured onto glass plates and allowed to dry. Modified gelatin film was produced and characterized using FTIR spectroscopy, while its surface properties were examined through Scanning Electron Microscopy (SEM) and Atomic Force Microscopy (AFM). Furthermore, the modified gelatin film’s potential biological activity was assessed against bacterial strains. The antibacterial screening tests revealed that the modified gelatin exhibited promising antibacterial activity against microorganisms, indicating an improvement in its antibacterial efficacy. These findings highlight the enhanced antibacterial potential of the modified gelatin film, further contributing to its versatility and potential applications in various fields. Different molecular weight distributions within the gelatin can lead to variations in film formation and subsequent surface features. Additionally, the composition of the gelatin film, including the presence of any crosslinking agents or modified functional groups, can further influence the resulting surface morphology. This study focuses on the preparation of modified gelatin films using suitable aldehyde compounds and explores their potential for pharmaceutical applications. Various techniques assessment of biological activity will be employed to investigate the properties and performance of the modified gelatin films. Abstract:Increased mass manufacturing and the pervasive use of plastics in many facets of daily life have had detrimental effects on the environment. As a result, these worries heighten the possibility of climate change due to the carbon dioxide emissions from burning conventional, non-biodegradable polymers. Accordingly, biodegradable gelatin and chitosan polymers are being created as a sustainable substitute for non-biodegradable polymeric materials in various applications. Chitosan is the only naturally occurring cationic alkaline polysaccharide, a well-known edible polymer derived from chitin. The biological activities of chitosan, such as its antioxidant, anticancer, and antimicrobial qualities, have recently piqued the interest of researchers. Similarly, gelatin is a naturally occurring polymer derived from the hydrolytic breakdown of collagen protein and offers various medicinal advantages owing to its unique amino acid composition. In this review, we present an overview of recent studies focusing on applying chitosan and gelatin polymers in various fields. These include using gelatin and chitosan as food packaging, antioxidants and antimicrobial properties, properties encapsulating biologically active substances, tissue engineering, microencapsulation technology, water treatment, and drug delivery. This review emphasizes the significance of investigating sustainable options for non-biodegradable plastics. It showcases the diverse uses of gelatin and chitosan polymers in tackling environmental issues and driving progress across different industries.
Hydrophobic modification of gelatin and the characterization on its performance

Abstract:Hydrophobic modification of gelatin,including acetylation and esterification,was performed by using of acetic anhydride and benzyl alcohol,in order to improve the hydrophobicity of gelatin and to get water-insoluble gelatin scaffolds without chemical cross-linking.The acetylation rate,IR,contact angle,TGA,water-solubility and biodegradation rate were also examined to evaluate the structures and properties of the modified gelatin.The results showed that hydrophobic groups had been successfully conjugated to gelatin molecules.The hydrophobicity of gelatin was enhanced after modification,and the modified gelatin was insoluble in water at room temperature.The biodegradation rate of the gelatin slowed down greatly,and its thermal stability was the same as the original gelatin.Moreover,acetylation rate reached 93.46%,which demonstrated that the reaction conditions of acetylation had been optimized.These performs indicate that the modified gelatin has a promise in tissue regeneration scaffold alone,such as skin and cartilage regeneration scaffold.
