Abstract:Dumplings are a traditional Chinese food welcomed by Chinese people. Research has indicated that process of quick-frozen wheat cultivars and their gliadins are all related to the quality and shelf-life of dumplings. Therefore, the effect of freeze–thaw cycles on the textural properties and microscopic characteristics of two types of quick-frozen dumpling wrappers (Zhaomai and Wenmai 19) and conformation of their gliadins were investigated. Scanning electron microscopy showed that Wenmai 19 dumpling wrappers had apparent damage after the first cycle, but Zhaomai wrappers did not reveal significant changes until the fourth cycle. The particle size distribution in the starch granules of Wenmai 19 wrappers varied in terms of mechanical damage, but Zhaomai delayed or avoided such effects. FT-IR found a loose protein structure of the gliadins. Differential scanning calorimetry showed that gliadins of Wenmai 19 degenerated more than those of Zhaomai. The crosslinking of gliadin and glutenin maintained a high-quality gluten network, thus protecting the gliadin stability from ice crystals. In turn, the gliadin maintained the strength of the gluten network. Therefore, raw flours with high-quality protein networks are more suitable for frozen dumplings. Freeze–thaw cycles dramatically decreased the textural characteristics of dumpling wrappers and the microscopic characteristics of their gliadin proteins. Concerning wheat cultivars with weak gluten, flours with high-quality protein networks are more suitable as raw materials for frozen dumplings.

Abstract:This study simulation on the effect of temperature fluctuations and cold chain interruption on quality during storage of frozen dumplings. The results showed that: As the number of temperature fluctuations increase and the extension of the cold chain interruption time, the moisture of frozen dumplings constantly lower, the acid value and cracking rate continues to rise. After 5 times of temperature fluctuations, moisture content from 65% to 58.72%, the acid value from 0.83 mg/g to 1.63 mg/g, and cracking rate up to 80%. Cold chain interrupt 150 min, moisture content from 60.94% to 47.14%, the acid value from 0.83 mg/g to 1.26 mg/g, and cracking rate up to 70%.

Abstract:To investigate the causes of cracks in wet joints of continuous concrete box girders, we performed in situ analysis of the temperature and strain field of wet-joint concrete for a sea-crossing bridge under construction in China after casting. We developed a numerical model to compare with the field tests. The numerical results agree well with those measured in the field. Thermal stress due to the heat of hydration in concrete is the main factor causing cracks, followed by concrete shrinkage. Furthermore, we investigated some measures to minimize and control the occurrence of cracks, such as optimizing the concrete mix ratio and lowering the casting temperature of wet concrete.

Abstract:Frozen dough processing technology is one of the important preservation technologies of fermented flour products, which realizes the separation of dough making and steaming. Steamed stuffed bun plays an important role in Chinese food culture. At present, frozen dough is mainly used in industrial production of steamed stuffed bun, but the freezing process will have adverse effects on the structure of gluten network, yeast activity, and quality of the end product. In this paper, the effects of xanthan gum, guar gum, sodium stearoyl lactate and diacetyl tartaric acid ester of mono（di） glycerides on the rheological properties, specific volume, height-to-diameter ratio, texture and sensory quality of frozen dough and steamed stuffed bun were studied. On the basis of single factor experiment, the compound improver formula suitable for making frozen dough steamed stuffed bun was obtained by using response surface method. The results showed that, in the single factor experiment, the optimum additive amount of xanthan gum, guar gum, sodium stearoyl lactate and diacetyl tartaric acid ester of mono（di） glycerides was 0.1%, 0.1%, 0.2% and 0.3%, respectively. In this condition, the comprehensive quality of frozen dough steamed stuffed bun was significantly improved. Based on the sensory score indexes, response surface optimization was carried out to obtain the optimized formula of improver: xanthan gum 0.1%, guar gum 0.11%, sodium stearoyl lactate 0.28% and diacetyl tartaric acid ester of mono（di） glycerides 0.35%.

Abstract:To improve the quality of freeze-dried dumplings, a novel hybrid strategy that different cooking methods combined with chitosan coating were applied in the preparation of dumplings. The dumplings, obtained according to the formula, first treated by three different cooking methods (microwave, boiling, and steaming), respectively, and then coated with chitosan with a mass fraction of 1.5%. The dumplings without coating treatment was used as control group. Results showed that, the drying time of steamed dumplings was the shortest (720 min), but its whiteness and rehydration performance were unacceptable to consumers. The whiteness of boiled dumplings was the highest, but its drying time was 90 min longer than that of steamed dumplings. The freeze-dried dumplings pretreated by microwave cooking had the best rehydration performance (rehydration rate, cracking rate of rehydrated dumplings, and rehydration loss rate) and hardness. Chitosan coating treatment of cooked dumplings was been found to have a satisfactory positive effect on inhibiting the cracking rate of freeze-dried dumplings, the cracking rate of rehydrated dumplings and the rehydration loss rate of freeze-dried dumplings. Microwave cooking combined with chitosan coating was considered to be the most suitable hybrid strategy for the production of high-quality freeze-dried dumplings.

Abstract:To reveal the effect of wheat flour particle size on the quality deterioration of quick-frozen dumpling wrappers (QFDW) during freeze-thawed (F/T) cycles, the components and physicochemical properties of wheat flours with five different particle sizes were determined and compared, along with the changes in texture and sensory properties, water status, and microstructure of QFDW during F/T cycles. Results showed that as particle size decreased, the damaged starch content and B-type starch content increased, the water absorption increased, and the gluten strength decreased. Furthermore, F/T cycles negatively impacted the quality of QFDW, evidenced by decreased texture properties and sensory evaluation score, water redistribution, higher freezable water content, and disruption of gluten network. Notably, QFDW made from larger particle size wheat flours required the shortest duration when traversing the maximum ice crystal formation zone. The QFDW made from larger particle size wheat flours formed a more stable starch-gluten matrix, which resisted the damage caused by ice recrystallization, demonstrating better water binding capacity and F/T resistance. The results may provide theoretical guidance for the study of QFDW quality and the moderate processing of wheat flour in actual production.

Abstract:With texture analyzer,the influence of different treatments including boil,microwave maturation and microwave reheating on the characteristics of frozen dumpling skin were analyzed. Compared with the property index of boiled frozen dumpling skin,microwave reheating reduced the toughness and the resilience but increased the hardness of cooked skin. After microwave maturation there was no significant change in toughness and springiness,but chewiness increased by 68% and resilience 24%. Therefore,microwave maturation could take place of boiling.

Abstract:Owing to the convenient and rapid process of producing frozen dough steamed buns, it is rapidly gaining popularity in the Chinese market. However, frozen dough steamed bun products have several issues, such as volume reduction, flavour changes and digestion-related issues, owing to limitations in technology and craft. The quality of frozen dough steamed buns has improved consistently in recent years, and several manufacturers have focused on front-end processes, such as selection of raw and supplementary materials and application of ameliorants. This review summarises and expounds on the effects of steaming, freezing and reheating on the quality of frozen dough steamed buns, providing a reference for the exploration and improvement of technologies for producing frozen dough steamed buns in the future.

Comprehensive Reviews in Food Science and Food Safety

Abstract:Fresh dough products lead to instability in product quality, high production costs, and more production time, which seriously affects the industrial production of the food industry. The frozen dough technology mitigates the problems of short shelf-life and easy deterioration of quality during storage and transportation. It has shown a series of advantages in large-scale industrialization, high-quality standardization, and chain operation. However, the further development of frozen dough is restricted by the deterioration of the main components (gluten, starch, and yeast) caused by freezing. This review summarizes the main production process of frozen steamed bread and buns, and the deterioration reasons for the main component of frozen dough. The improvement mechanisms of raw ingredients, processing technology, processing equipment, and additives on frozen dough quality were analyzed from the perspective of improving gluten network integrity and yeast freeze tolerance. From prefermented frozen raw to steamed products without thawing has become the preferred production process to improve production efficiency. Wheat flour mixed with other flour can maintain the gluten network continuity of frozen dough. The freeze tolerance of yeast was improved by treatment with yeast suspension, yeast cell encapsulation, screening hybridization, and genetic engineering. Process optimization and new technology-assisted fermentation and freezing effectively reduce freezing damage. Various additives improve the freeze resistance of the gluten-starch matrix by promoting protein cross-linking and inhibiting water migration. In addition, ice structural proteins and ice nucleating agents have been proven to change the growth morphology and formation temperature of ice crystals. More new technologies and additive synergies need to be further explored.

Corporate Effect of Vacuum Mixing and Freezing-thawing Treatment on Microstructure and Quality of Quick-frozen Youtiao Dough

Abstract:In order to investigate the corporate effect of vacuum mixing and freezing-thawing treatment on microstructure and quality of quick-frozen Youtiao dough and fritters, frozen Youtiao dough was prepared under the vacuum mixing (0~0.08 MPa) and freezing-thawing treatment (0~3 times). Combined analytical methods covering multiple instruments (e.g., low field nuclear magnetic resonance, scanning electron microscopy, and fourier infrared spectrum analyzer) were used to investigate the water distribution, microstructure, and secondary structure of treated frozen Youtiao dough. Meanwhile, the oil content, water content, specific volume and textural quality of Youtiao were analyzed. Results showed that freezing-thawing treatment destroyed the structure of the dough, declined the strong bonding water content of dough and α-helical content in gluten (14.80%~13.61%), resulting in the loose and disordered protein structure. However, with the increase of vacuum degree, the strong bonding water content in quick-frozen Youtiao dough gradually increased, and the ordered degree of protein network structure in dough also improved. Furthermore, freezing-thawing treatment could also decrease the volume (1.82 cm3/g~1.47 cm3/g), increase the oil content (15.08%~16.88%) and reduce the textural quality of Youtiao, while vacuum mixing could effectively decrease the oil content (15.08%~12.64%), improve volume (1.82 cm3/g~2.38 cm3/g), reduce hardness and improve other qualities of Youtiao. These results indicated that vacuum mixing could reduce the quality deterioration caused by freezing-thawing treatment by regulating the water distribution and protein structure in quick-frozen Youtiao dough. Therefore, this study can provide theoretical basis and guidance for large-scale production of quick-frozen Youtiao.

Abstract:Modification of corn starch using ultrasonic waves to improve its freeze-thaw resistance in frozen model doughs and buns. Analysis was performed by rheometry, low-field-intensity nuclear magnetic resonance imaging, Fourier infrared spectroscopy, and scanning electron microscopy. The results showed that the addition of ultrasonically modified corn starch reduced the migration of water molecules inside the model dough, weakened the decrease of elastic modulus, and enhanced the creep recovery effect; the decrease in α-helical and β-fold content in the model dough was reduced, the destruction of internal network structure was decreased, the exposed starch granules were reduced, and the internal interaction of the dough was enhanced; the texture of the buns became softer and the moisture content increased. In conclusion, ultrasound as a physical modification means can significantly improve the freeze-thaw properties of corn starch, providing new ideas for the development and quality improvement of corn-starch-based instant frozen pasta products.

Abstract:In this study, annealed glutinous rice flour treated under different conditions (ANN1, ANN2 and ANN3) were prepared. The structure as well as physicochemical characteristics of the flour and its dumpling products were investigated. The crystallinity of the annealed flour samples increased, while the hydration ability decreased. The content of bound water raised, and immobilized water as well as the freezing enthalpy value decreased for the fast-frozen dumplings made from annealed flour samples. It showed that annealed treatment could reduce the formation of large ice crystals, thus decrease the cracking of fast-frozen dumplings. The freezing enthalpy value of annealed dumplings decreased which was conducive to protect the structure and quality of products. The boiled dumplings made of annealed flour had better eating quality as demonstrated by the increase in the transmittance of the soup. It indicated that moderate annealed glutinous rice flour ANN2 had optimal physicochemical properties to make high quality dumplings. This study would pave the way for further study of the annealing glutinous rice flour and provide theoretical guidance for the application of annealing treatment in starchy food product.

Abstract:Frozen dough is suitable for industrial cold chain transportation, but usually experiences temperature fluctuations through the cold chain to the store after being refrigerated in a factory, seriously damaging the product yield. In order to analyze the influence mechanism of temperature fluctuation during the terminal cold chain on frozen dough, the effects of terminal freezing and thawing (TFT) on the quality (texture and rheology) and component (water, starch, protein) behaviors of dough were investigated. Results showed that the TFT treatment significantly increased the hardness and decreased the springiness of dough and that the storage modules were also reduced. Furthermore, TFT increased the content of freezable water and reduced the bound water with increased migration. Additionally, the peak viscosity and breakdown value after TFT with the increased number of cycles were also increased. Moreover, the protein characteristics showed that the low-molecular-weight region and the β-sheet in the gluten secondary structure after the TFT treatment were increased, which was confirmed by the increased number of free sulfhydryl groups. Microstructure results showed that pores and loose connection were observed during the TFT treatment. In conclusion, the theoretical support was provided for understanding and eliminating the influence of the terminal nodes in a cold chain.
Impact of Different Frozen Dough Technology on the Quality and Gluten Structure of Steamed Buns

Abstract:To advance the industrialization production of steamed buns, the current study explored the freeze-stability of unfermented, pre-fermented and par-steamed frozen dough. The results showed that the steamed bun made from unfermented dough with 2.0% yeast, the pre-fermented dough with a pre-fermented time of 30 min and the par-steamed dough with a pre-steamed time of 15 min showed the best sensory properties quality upon frozen storage. The gassing power of un- and pre-fermented dough gradually decreased, and dough with longer pre-fermented time exhibited more evident loss of gassing power. Freeze-induced depolymerization of gluten protein was the least distinct in the par-steamed dough, followed by the pre- and un-fermented dough, which was probably related to the superior freeze stability of glutenin-gliadin macro-crosslinks upon the pre-steaming stage. The surface hydrophobicity of gluten proteins of frozen dough decreased during the initial storage and was enhanced subsequently, which was related with the combined effects of the unfolding and synchronous aggregation induced by freezing and steaming, respectively. Moreover, the surface hydrophobicity of gluten in par-steamed frozen dough and steamed buns was more resistant to frozen storage, which was probably attributed to the established stable structure during the pre-steaming process.

Abstract:This study aimed to investigate the effect of static magnetic field (SMF, 0-10 mT) on the quality of rice dumplings subjected to 7, 14, 21, and 28 freeze-thaw cycles. The underlying mechanism was explored by monitoring changes in water phase transition, water distribution, and structural and physicochemical properties of rice flour. Results suggested that SMF enables the formation of small ice crystals by accelerating freezing rate, shortening phase transition time, and increasing bound water content, which attributes to reducing the mechanical damage on starch granules and thus improves the quality of frozen rice dumpling. After 7-28 freeze-thaw cycles, SMF treatment increased the whiteness by 0.08-1.58, reduced the cracking ratio by 1.67 %-8.34 %, decreased the water loss ratio by 0-0.75 %, and significantly improved the texture of cooked rice dumplings. This study confirmed the feasibility of SMF in improving the quality of rice dumpling, which contributes to expanding the applications of magnetic freezer in the preservation of starch-based foods.

Abstract:The near‐net shaping of gelcast ceramic parts can be achieved using freeze‐drying technology. It was discovered that the cracks probably occurred inside the part during freeze drying due to the formation of liquid water. To explain the formation mechanism of cracks, the electrical resistance method was employed to measure the part's eutectic temperature which can be used to determine the freezing and melting state of the part. Affecting factors on cracking were investigated by testing the temperature and water loss of the part during the drying stage, and the cracks inside the part were detected through computed tomography (CT). It was found that when the temperature of the part was higher than the eutectic temperature, the ice crystals at the sublimation front would melt, resulting in the formation of wet green body. The cracks will occur inside the part because great capillary forces are formed in the wet green body. Cracks could be controlled through reducing heat supply by lowing shelf temperature, decreasing pressure of the drying chamber or lowering the dried layer resistance against water vapor by improving the freezing temperature or reducing the solid loading of the part.

Abstract:To the problem of longitudinal edge cracks on plate surface,the cracks formation mechanism is studied.The effects of heating process,work roll diameter and roll speed matching on edge deformation uniformity of top and bottom surfaces of the plate during rolling process were analyzed.The results show that the deformation uniformity of top and bottom surfaces of the plate is improved by adjusting heating process and work roll speed.The cracks are away from the plate edge within 30mm so that the cracks can be removed after shearing.As a result,the pass rate of plate is higher than 90%.

Abstract:Frozen staple food, attributed to its favorable taste and convenience, has a promising development potential in the future. Frequent freezing and thawing, however, will affect its quality. This study simulated several freeze–thaw cycles (FTC) that may occur during the cold chain process of frozen oatmeal cooked noodles (FOCN) production to consumption. The quality changes and their mechanisms were elucidated using methods such as differential scanning calorimetry (DSC), low-field nuclear magnetic resonance (LF-NMR), Fourier-transform infrared spectroscopy (FTIR), confocal laser scanning microscopy (CLSM), texture analysis, and sensory evaluation. The freezable water content of the FOCN decreased because of the FTC treatment, and the relative content of total water in FOCN also decreased accordingly. The increase in β-Turn after FTC induced disorder in the secondary structure of proteins, causing the protein microstructure to become loose and discontinuous, which in turn reduced the water-holding capacity of FOCN. Additionally, FTC reduced the chewiness and sensory score of FOCN. This research will contribute a theoretical foundation for optimizing the cold chain process.

Abstract:Curdlan has been applied to weaken the quality deterioration of frozen cooked noodles (FCN) during frozen storage. However, the underlying mechanism is still unclear. In this paper, an A/LKB-F probe was used for texture profile analysis and mercury intrusion was firstly used for analyzing ice crystals state in three dimensions. Meanwhile, a systematic study on the water state was conducted, as well as the freeze-thawed stability of FCN under curdlan intervention during frozen storage. The results showed that 0.5% curdlan significantly (P < 0.05) alleviated the decrement in hardness, chewiness and extension, and enhanced the freeze-thawed stability of FCN. This was closely associated with the fact that the addition of curdlan minimized freezable water content, inhibited water mobility and migration, and raised the homogeneity of ice crystals in FCN. This study provides more comprehensive theories for the strengthening effect of curdlan on FCN quality from the perspective of water state.
Effect of canna edulis ker flour on quality of quick‐frozen dumpling wrappers

Abstract:Canna edulis ker flour (CEKF) is one of the best substitutes for wheat flour. The properties of its mixed powder and its effects on the product quality are the focus of the research. The optimal addition amount of CEKF in dumpling wrappers and the changes of 20% CEKF frozen dumpling wrappers stored at different temperatures were investigated. The results showed that the optimal amount of CEKF was 20%, which showed the longest stabilization time, the smallest weakening degree, the best texture properties, and the short cooking time. When frozen storage at different temperatures for 15 days, the texture of dumpling wrappers containing 20% CEKF at −12°C was closer to the samples at −24°C. There were no obvious differences in color, water migration, and microstructure between −12°C and −18°C. In short, the quality of dumpling wrappers frozen at −12°C and −18°C was similar. The dumpling wrappers containing 20% canna edulis ker flour (CEKF) had the best texture properties and a shorter cooking time. The dumpling wrappers containing 20% CEKF were frozen and stored at different temperatures for 15 days, and it was found that the quality of the dumpling wrappers frozen at −12°C and −18°C was similar. It provides a new way to improve the quality of dumpling wrappers in the selection of the supplementary materials, expands the application range of CEKF in food, and provides a certain theoretical basis for the frozen storage temperature of dumpling wrappers.
