Results The total flavonoid contents were 7. 68,7. 73,6. 65,6. 36 mg/g respectively;the total polyphe-nols contents were 8. 69,8. 88,8. 32,6. 51 mg/g respectively;the polysaccharides contents were 6. 39%,6. 52%,4. 87%,5. 11% respec-tively in the three different drying methods. The loss of total flavonoids,total polyphenols and polysaccharide contents caused by the conventional hot air-drying method were 17. 18%,25. 09% and 20. 03% respectively,and the loss caused by the vacuum-drying method were 13. 41%,4. 25% and 23. 79% respectively,while the total flavonoids,total polyphenols and polysaccharide contents by the freeze-drying method were similar to those in fresh Tetrastigma hemsleyanum with hardly any loss. Conclusion Different drying meth-ods have great impact on the active ingredients contents of Tetrastigma hemsleyanum The freeze-drying method is able to preserve the active ingredients of Tetrastigma hemsleyanum to the maximum extent and is most suitable to serve as the drying method for Tetrastig-ma hemsleyanum.

Abstract:The effects of drying on the quality, antioxidant activity and anthocyanin components of blueberry pomace were investigated using hot air drying (HAD), freeze-drying (FD), microwave vacuum drying (MVD) and microwave freeze vacuum drying (MFD). The quality, antioxidant activity, and individual anthocyanin compositions of blueberry pomace were evaluated and compared with the non-dried control. MVD produced the highest levels of total phenols, total anthocyanins, total sugars and color values in blueberry pomace while HAD gave the lowest. The ABTS +and DPPH radical scavenging abilities of blueberry pomace were significantly high when MVD was used. Moreover, FD, MVD, and MFD resulted in the retention of significantly more anthocyanin species than HAD as determined by HPLC coupled to the mass spectrometer. Overall, MVD proved to be the best technique for preservation of antioxidant capacity and natural color. Therefore, MVD of blueberry pomace can improve efficiency and productivity of the blueberry fruit processing industry while reducing the environmental burden.

Abstract:Numerous sugar radicals have been observed by EPR and ENDOR spectroscopy in X-irradiated nucleosides and nucleotides. However, no sugar radicals have been observed in irradiated DNA. One possibility exists that sugar radicals may be present in relatively small abundance and therefore have so far escaped detection. Another possibility is that each of the five carbon-centered H-abstraction sugar radicals may exist in a wide range of conformations. Adding together various groups of radicals with different hyperfine couplings and anisotropic g factors may result in very broad EPR lines which would be difficult to detect. Using the crystal structure of a B-DNA dodecamer, the conformations of the five H-abstraction sugar radicals have been computed at all sites. The X-band EPR spectra for each radical were then simulated using typical alpha-proton and beta-proton couplings computed from the various radical conformations. The results suggest considerable broadenings of the EPR lines for the C2', C3' H-abstraction radicals. Composite EPR spectra were simulated by adding 15% of an H-abstraction radical to the DNA spectrum. The results indicate that the outer lines of the C1' radical are visible and should be easy to identify. The broad spectra of the C2' and C3' radicals are barely visible. The simulated spectra of the C4' and C5' radicals are basically doublets and are obscured by the DNA signal.

Abstract:Drying treatments are an effective method of preserving the beneficial properties of postharvest mushrooms. The effects of natural-air drying (ND), hot-air drying (HD), vacuum-freeze drying (FD), heat pump drying (HPD) and microwave-vacuum drying (MVD) on the microstructure, flavor- and health-related compounds of F. velutipes root were investigated. The results showed that FD had the least impact on the microstructure of F. velutipes root and its original porous fiber structure appeared complete. It also possessed the highest content of volatile compounds. MVD gave the highest contents of umami amino acids, total phenolics and total flavonoids, and its extract exhibited high antioxidant activity. In addition, different drying treatments had significant effect on the chemical components of F. velutipes root, with FD and MVD may be the potent drying strategies for preservation of flavor and nutraceuticals respectively. Therefore, our results provided essential data support for F. velutipes root processing and functional product development.

Abstract:This study investigated the effects of hot air drying (HAD), infrared-assisted hot air drying (IR-HAD), vacuum freeze drying (VFD), and pulsed-vacuum drying (PVD) on the drying characteristics, color, microstructure, total phenolic content (TPC), total flavonoid content (TFC), vitamin C (Vc) content, and the odor analysis using electronic nose of sea buckthorn pomace. The results showed that IR-HAD exhibited the highest drying rate and the shortest drying time (250 min). PVD exhibited the highest TPC, TFC, and Vc content while maintaining a color difference ΔE value closest to that of the fresh sample. PVD microstructure exhibited no collapse, fewer pores, and smaller cracks than the IR-HAD and VFD microstructures. Furthermore, the PVD pomace displayed the lowest reactivity to sulfides and ethanol compounds. The comprehensive analysis suggests that PVD holds promise as a drying method for sea buckthorn pomace and provides valuable insights for selecting an appropriate drying method for sea buckthorn pomace.

Abstract:In this study, the drying kinetics and multidimensional quality of Gastrodia elata (GE) obtained through five different drying methods were analyzed. The Page model provided the best fit. Though widely used, hot-air drying (HA-D) showed mediocre performance. Due to strong heat penetration, microwave drying (MV-D) and infrared drying (IR-D) effectively reduced drying time and energy consumption. However, they experienced Maillard and caramelization reactions, resulting in notable cell structure shrinkage, severe browning, pronounced caramel taste, and poor retention of active ingredients. Conversely, freeze-drying (F-D) and vacuum drying (V-D), due to the involvement of low-temperature or vacuum environments, demonstrated optimal performance in preserving microstructure, antioxidant activity, active ingredients, and flavor. However, F-D was time-consuming (1320 min) and had an energy consumption of 2.69 times that of HA-D, limiting its large-scale application. V-D struck the best balance between energy consumption and product quality, making it a highly promising drying method for GE.

Abstract:This study explored the effects of four drying methods, namely vacuum freeze-drying (VFD), hot-air drying (HD), microwave drying (MD) and shade drying (SD) on the sensory quality, amino acids composition, phycobiliproteins structure and rehydration rate of Porphyra haitanensis. It showed that VFD dried P. haitanensis had the highest protein (35.44 +/- 0.87%), polysaccharide (18.91 +/- 0.64%), umami amino acids (484.67 +/- 5.03 mg/100 g, dry weight) and essential amino acids (9.89 +/- 0.27 g/100 g, dry weight) than another three dried products. Drying affected secondary structure of phycobiliproteins, and the phycobiliproteins from VFD laver contained the most alpha-helix structure and the least random coil. In addition, VFD processed laver was rich in water-soluble polysaccharides and hydrophilic amino acids, which resulted in its quick rehydration and high-water absorption capacity. The results showed that VFD was suitable for producing high-quality P. haitanensis with excellent flavor and high contents of nutritional compounds.

Abstract:Stropharia rugosoannulata is an extremely perishable edible fungi product, and drying can delay its deterioration, however, drying will affect its flavor, especially the non-volatile taste substances dominated by amino acids, nucleotides, organic acids and carbohydrates. Currently, which drying method is the most suitable for the drying of S. rugosoannulata remains unknown, we need to fully consider the economic efficiency of the method and the impact on flavor. But we have limited comprehensive knowledge of the changed non-volatile taste metabolites as caused by drying processes. Here, an LC-MS/MS-based widely targeted metabolome analysis was conducted to investigate the transformation mechanism of S. rugosoannulata non-volatile taste components after undergoing hot air drying (HAD), vacuum freeze drying (VFD), and microwave vacuum drying (MVD). A total of 826 metabolites were identified, 89 of which—48 amino acids, 25 nucleotides, 8 organic acids, and 8 carbohydrates—were related to non-volatile taste. The drying method used and the parts of S. rugosoannulata (stipe and pileus) influenced the differences found in these metabolites. The possible mechanisms responsible for such chemical alterations by different drying methods were also investigated by a Kyoto Encyclopedia of Genes and Genomes (KEGG) pathway analysis. Amino acid metabolism (alanine, aspartate, and glutamate metabolism; glycine, serine, and threonine metabolism; arginine and proline metabolism; valine, leucine, and isoleucine biosynthesis) was the main metabolic pathway involved. Pathway enrichment analysis also identified differences in non-volatile taste components among three drying methods that may be closely related to the applied drying temperature. Altogether, the results indicated that as an economical and convenient drying method, HAD is conducive to improving the flavor of S. rugosoannulata and thus it harbors promising potential for practical applications.

Abstract:Large amounts of waste result from licorice mold rot; moreover, prompt drying directly influences product quality and value. This study compared various glycyrrhiza drying methods (Hot air drying (HAD), infrared combined hot air drying (IR-HAD), vacuum freeze drying (VFD), microwave vacuum drying (MVD), and vacuum pulsation drying (VPD)) that are used in the processing of traditional Chinese medicine. To investigate the effects of various drying methods on the drying characteristics and internal quality of licorice slices, their color, browning, total phenol, total flavonoid, and active components (liquiritin and glycyrrhizic acid) were chosen as qualitative and quantitative evaluation indices. Our results revealed that VFD had the longest drying time, but it could effectively maintain the contents of total phenol, total flavonoid, and liquiritin and glycyrrhizic acid. The results also showed that VFD samples had the best color and the lowest degree of browning, followed by HAD, IR-HAD, and VPD. We think that VFD is the best approach to ensure that licorice is dry.

Abstract:The effect of solar drying (SD), room-temperature shaded drying (RSD), hot-air drying (HD), vacuum freeze drying (VFD), and microwave drying (MD) was compared on the sensory quality, nutrient substances, bioactive constituents, and antioxidant activities of dried Stropharia rugosoannulata. The results revealed that, in comparison with SD, RSD, HD, and MD, VFD mushrooms exhibited a better appearance with less shrinkage and an ideal colour with lower a colour difference. Meanwhile, a significantly higher content ( p < 0.05 ) of protein, carbohydrate, total sugar, and vitamin C was retained in VFD samples. The HD and VFD samples both had abundant total free amino acids and best met the ideal protein standard. Furthermore, VFD had advantages in terms of better preserving bioactive constituents and stronger antioxidant activities compared to other treatments. Therefore, the VFD-dried S. rugosoannulata obtained a better overall quality compared to the other four drying methods.

Abstract:Mulberry perishes easily due to its high water content and thin skin. It is important to extend the shelf life of mulberry by proper processing methods. In the present study, the influence of three drying techniques, including hot air drying (HAD), vacuum drying (VD), and vacuum freeze-drying (VFD) on the quality maintenance of mulberry was comprehensively evaluated. Bioactive compounds, antioxidant activity, and the sensory and volatile flavor compounds of mulberry have been researched. The results showed that VFD treatment maintained the highest anthocyanins (6.99 mg/g), total flavones (3.18 mg/g), and soluble sugars (2.94 mg/g), and exhibited the best DPPH· (81.2%) and ABTS+· (79.9%) scavenging ability. Mulberry also presented the lowest hardness and the greatest brittleness after VFD. Additionally, VFD maintained the optimal color and presented the best sensory attributes. Furthermore, 30, 20, and 32 kinds of volatile flavor compounds were detected in HAD, VD, and VFD, respectively, among which aldehydes, esters, and ketones were the most abundant compounds. This study indicated the potential application value of VFD for the drying of fruit and vegetable foodstuffs.

Abstract:Abstract In this study, we determined the influences of different drying techniques such as natural air (ND), hot-air (HD), vacuum (VD), infrared (ID), microwave (MD), and freeze drying (FD) methods on the color, shrinkage ratio (SR), rehydration ratio (RR), firmness, crispness, microstructures, nutritional components, and free amino acids of Pleurotus eryngii . The results showed that these parameters were markedly influenced by different drying techniques. Among them, FD was the most effective drying method which retained the main characteristics of the fresh P. eryngii in above mentioned indexes, followed by ND and HD at 40 °C. Finally, despite the least drying time, MD treatment was not suitable to the drying process of P. eryngii slices since it damaged physicochemical properties and caused massive losses of the main nutrients and free amino acids. The results will provide a theoretical basis for industrial processing of P. eryngii .

Abstract:The gardenia flower not only has extremely high ornamental value but also is an important source of natural food and spices, with a wide range of uses. To support the development of gardenia flower products, this study used headspace gas chromatography–ion mobility spectrometry (HS-GC–IMS) technology to compare and analyze the volatile organic compounds (VOCs) of fresh gardenia flower and those after using four different drying methods (vacuum freeze-drying (VFD), microwave drying (MD), hot-air drying (HAD), and vacuum drying (VD)). The results show that, in terms of shape, the VFD sample is almost identical to fresh gardenia flower, while the HAD, MD, and VD samples show significant changes in appearance with clear wrinkling; a total of 59 volatile organic compounds were detected in the gardenia flower, including 13 terpenes, 18 aldehydes, 4 esters, 8 ketones, 15 alcohols, and 1 sulfide. Principal component analysis (PCA), cluster analysis (CA), and partial least-squares regression analysis (PLS-DA) were performed on the obtained data, and the research found that different drying methods impact the VOCs of the gardenia flower. VFD or MD may be the most effective alternative to traditional sun-drying methods. Considering its drying efficiency and production cost, MD has the widest market prospects.

Abstract:This study explored the impact of sun drying (SD), freeze drying (FD), oven drying (OD), and microwave drying (MD) on the morphology, rehydration properties, metabolomic profile, and taste formation of Porphyra yezoensis. FD elicited a brighter colour, smooth surface, porous microstructure, and strong rehydration properties in P. yezoensis, while dramatically maintaining the umami, sweetness, and saltiness. OD and MD decreased structural openness owing to tissue collapse and affected water absorption. Metabolomic analysis revealed 1030 metabolites, among which taste-related compounds, especially free amino acids, nucleotides, organic acids, and their derivatives, were the main biomarkers for distinguishing the different drying methods. Their related metabolic pathways, such as taurine and hypotaurine metabolism; purine metabolism; glyoxylate and dicarboxylate metabolism; and citrate cycle, were the most active. A metabolic pathway network of the main taste compounds was built to provide novel insights into the mechanisms underlying the taste profile changes associated with different drying methods.
Difference in Quality and Volatile Flavor Compounds of Zingiber officinale Roscoe with Different Drying Methods

Abstract:In order to study the effect of different drying methods on the quality of ginger (Zingiber officinale Roscoe) in Guizhou Province, the study comparatively analyzed the edible quality, functional components, and volatile flavor compounds of dried ginger. The results revealed that vacuum freeze-drying (VFD) was superior to vacuum microwave drying (WAD), hot air drying (HAD), and natural drying (ND) in terms of retaining ginger color change, rehydration rate, flavonoids, and ginger spicy element. The polyphenol retention in VFD ginger was second only to that in WAD ginger. A total of 86 volatile flavor compounds were detected in fresh ginger and all four drying samples. Ester and aldehyde compounds were identified as the main flavor components in dried ginger, with variations observed among the different drying methods. Principal component analysis (PCA) and the nearest neighbor algorithm successfully distinguished the ginger samples treated with different drying methods. The aroma activity value (OAV) was calculated based on the threshold, and 12 volatile flavor compounds with OAV ≥1 were identified as the key aroma components of ginger. The aroma profiles of ginger were generally similar across the four different drying methods, among which WAD ginger exhibited distinct flavor characteristics associated with drying. This study employed physicochemical properties, active components, and GC-IMS to evaluate the effect of different drying methods on ginger, providing valuable insights for the processing and flavor quality control of drying ginger.

Abstract:This study investigated the effects of convective drying(CD) and freeze drying(FD) on bioactive and volatile components in jujube. No significant difference in total phenolic, total flavonoids and antioxidant capacity among CD60, CD70, CD80 and FD samples (<i>P</i> > 0.05). LC-MS/MS analysis showed that this trend mainly originated from the dynamic equilibrium relationships between caffeic acid, chlorogenic acid, <i>p</i>-hydroxybenzoic acid, rutin, epicatechin, and quercetin. HS-SPME-GC-MS identified 31 volatile organic compounds (VOCs) comprising more than 80% aldehydes and acids. Principal component analysis distinguished the VOC characteristics of samples subjected to different drying methods. Six VOCs had an odor activity value (OAV) >1, most of which were fatty acid oxidation or Maillard reaction products. Combined with the precursor components, these reactions were speculated to be the major VOC-producing pathways in dried jujube. Considering the bioactive components and flavor retention, CD at 60 °C was an effective drying method with potential to replace FD.

Abstract:The impact of heat pump dehumidifier drying (HPD) on the sensory qualities of shiitake mushroom was comprehensively evaluated in comparison with hot air drying (HAD) and vacuum freeze drying (VFD). The data showed that HPD substantially improved the characteristic flavors (volatile sulfide levels and equivalent umami concentration) of dried mushrooms by partially inhibiting enzymatic and Maillard reactions. The rehydration, shrinkage, and microstructural characteristics of HPD mushrooms were intermediate between VFD and HAD mushrooms. Results of sensory quality analysis indicated that HPD mushrooms outperformed HAD and VFD mushrooms in terms of overall quality. Additionally, HPD (0.85 kWh kg−1) had significantly (P < 0.05) lower energy consumption than HAD (2.65 kWh kg−1) and VFD (6.67 kWh kg−1). It can be concluded that HPD is a commercially attractive low-energy technique for the production of high sensory caliber dried shiitake mushrooms.
