Abstract:Objective To investigate the influence of different drying methods on the contents of active ingredients in Tetrastigma hemsleyanum. Methods The contents of the active ingredients total flavonoids,total polyphenols and polysaccharides in fresh,freeze-dried,vacuum-dried and hot air-dried Tetrastigma hemsleyanum were analyzed with total flavonoids,total polyphenols and polysaccha-rides as the evaluation indexes. Results The total flavonoid contents were 7. 68,7. 73,6. 65,6. 36 mg/g respectively;the total polyphe-nols contents were 8. 69,8. 88,8. 32,6. 51 mg/g respectively;the polysaccharides contents were 6. 39%,6. 52%,4. 87%,5. 11% respec-tively in the three different drying methods. The loss of total flavonoids,total polyphenols and polysaccharide contents caused by the conventional hot air-drying method were 17. 18%,25. 09% and 20. 03% respectively,and the loss caused by the vacuum-drying method were 13. 41%,4. 25% and 23. 79% respectively,while the total flavonoids,total polyphenols and polysaccharide contents by the freeze-drying method were similar to those in fresh Tetrastigma hemsleyanum with hardly any loss. Conclusion Different drying meth-ods have great impact on the active ingredients contents of Tetrastigma hemsleyanum The freeze-drying method is able to preserve the active ingredients of Tetrastigma hemsleyanum to the maximum extent and is most suitable to serve as the drying method for Tetrastig-ma hemsleyanum.
Study on the Application of the Vacuum Microwave Drying and Vacuum Freeze-Drying Technology in Surimi Products

Abstract:With the conventional hotair drying technology (AL)) as control, vacuum treeze- drying tecnnology (FD) and vacuum microwave drying technology (MD)were used to dry the imitating noodles made from surimi. By determining the index such as the moisture content, chromaticity, rehydration ratio, water absorption index (WAI) and water solubility index(WSl) ,the effects on the quality dried by the three drying technologies was studied, and the drying effects were compared.The results showed that the FD product had the best index, with the data of moisture content, chromaticity, rehydration ratio, water absorption index( WAI ) and water solubility index( WSI ) were 4.03% ,5.60,18.66% ,91.82, while AD were 11.84%, 2.35,27.65% ,72.54 respectively, MD were 6.16% ,5.52,15.01%, 80.24 respectively.As a result,vacuum freeze-drying technology was considered to be the most suitable method for the drying of imitating noodles made from surimi.
Effect of Different Drying Methods on the Physicochemical Properties and Phycobiliprotein Structure of Porphyra Haitanensis

Abstract:This study explored the effects of four drying methods, namely vacuum freeze-drying (VFD), hot-air drying (HD), microwave drying (MD) and shade drying (SD) on the sensory quality, amino acids composition, phycobiliproteins structure and rehydration rate of Porphyra haitanensis. It showed that VFD dried P. haitanensis had the highest protein (35.44 +/- 0.87%), polysaccharide (18.91 +/- 0.64%), umami amino acids (484.67 +/- 5.03 mg/100 g, dry weight) and essential amino acids (9.89 +/- 0.27 g/100 g, dry weight) than another three dried products. Drying affected secondary structure of phycobiliproteins, and the phycobiliproteins from VFD laver contained the most alpha-helix structure and the least random coil. In addition, VFD processed laver was rich in water-soluble polysaccharides and hydrophilic amino acids, which resulted in its quick rehydration and high-water absorption capacity. The results showed that VFD was suitable for producing high-quality P. haitanensis with excellent flavor and high contents of nutritional compounds.

Abstract:The effect of solar drying (SD), room-temperature shaded drying (RSD), hot-air drying (HD), vacuum freeze drying (VFD), and microwave drying (MD) was compared on the sensory quality, nutrient substances, bioactive constituents, and antioxidant activities of dried Stropharia rugosoannulata. The results revealed that, in comparison with SD, RSD, HD, and MD, VFD mushrooms exhibited a better appearance with less shrinkage and an ideal colour with lower a colour difference. Meanwhile, a significantly higher content ( p < 0.05 ) of protein, carbohydrate, total sugar, and vitamin C was retained in VFD samples. The HD and VFD samples both had abundant total free amino acids and best met the ideal protein standard. Furthermore, VFD had advantages in terms of better preserving bioactive constituents and stronger antioxidant activities compared to other treatments. Therefore, the VFD-dried S. rugosoannulata obtained a better overall quality compared to the other four drying methods.

Abstract:Quality control still remains a big issue, affecting herbs, formulations, and even the practice of Traditional Chinese Medicine. A promising solution to the problem is to take advantage of innovative process techniques including alternative drying methods within the pharmaceutical processing. Nowadays, vacuum belt drying (VBD) has gained more and more importance in food and pharmaceutical processing. In this work, Panax notoginseng extract was made into powder by the gentle VBD as well as by classical spray drying (SD), freeze drying (FD), and vacuum drying (VD). Certain chemical and physical properties of the dried powders such as moisture content, drying time, porosity, density, saponins content, pH value and hydroxyl radicals scavenging activity were evaluated. The results showed the qualities of dried products were influenced to different extent by drying methods certainly. Vacuum belt drying was suggested to dry P. notoginseng extract for its high quality assurance of hygroscopic products and suitable for sticky or high viscous products.

Abstract:In this study, the drying kinetics and multidimensional quality of Gastrodia elata (GE) obtained through five different drying methods were analyzed. The Page model provided the best fit. Though widely used, hot-air drying (HA-D) showed mediocre performance. Due to strong heat penetration, microwave drying (MV-D) and infrared drying (IR-D) effectively reduced drying time and energy consumption. However, they experienced Maillard and caramelization reactions, resulting in notable cell structure shrinkage, severe browning, pronounced caramel taste, and poor retention of active ingredients. Conversely, freeze-drying (F-D) and vacuum drying (V-D), due to the involvement of low-temperature or vacuum environments, demonstrated optimal performance in preserving microstructure, antioxidant activity, active ingredients, and flavor. However, F-D was time-consuming (1320 min) and had an energy consumption of 2.69 times that of HA-D, limiting its large-scale application. V-D struck the best balance between energy consumption and product quality, making it a highly promising drying method for GE.

Abstract:Drying treatments are an effective method of preserving the beneficial properties of postharvest mushrooms. The effects of natural-air drying (ND), hot-air drying (HD), vacuum-freeze drying (FD), heat pump drying (HPD) and microwave-vacuum drying (MVD) on the microstructure, flavor- and health-related compounds of F. velutipes root were investigated. The results showed that FD had the least impact on the microstructure of F. velutipes root and its original porous fiber structure appeared complete. It also possessed the highest content of volatile compounds. MVD gave the highest contents of umami amino acids, total phenolics and total flavonoids, and its extract exhibited high antioxidant activity. In addition, different drying treatments had significant effect on the chemical components of F. velutipes root, with FD and MVD may be the potent drying strategies for preservation of flavor and nutraceuticals respectively. Therefore, our results provided essential data support for F. velutipes root processing and functional product development.

Abstract:Numerous sugar radicals have been observed by EPR and ENDOR spectroscopy in X-irradiated nucleosides and nucleotides. However, no sugar radicals have been observed in irradiated DNA. One possibility exists that sugar radicals may be present in relatively small abundance and therefore have so far escaped detection. Another possibility is that each of the five carbon-centered H-abstraction sugar radicals may exist in a wide range of conformations. Adding together various groups of radicals with different hyperfine couplings and anisotropic g factors may result in very broad EPR lines which would be difficult to detect. Using the crystal structure of a B-DNA dodecamer, the conformations of the five H-abstraction sugar radicals have been computed at all sites. The X-band EPR spectra for each radical were then simulated using typical alpha-proton and beta-proton couplings computed from the various radical conformations. The results suggest considerable broadenings of the EPR lines for the C2', C3' H-abstraction radicals. Composite EPR spectra were simulated by adding 15% of an H-abstraction radical to the DNA spectrum. The results indicate that the outer lines of the C1' radical are visible and should be easy to identify. The broad spectra of the C2' and C3' radicals are barely visible. The simulated spectra of the C4' and C5' radicals are basically doublets and are obscured by the DNA signal.

Abstract:This study explored the impact of sun drying (SD), freeze drying (FD), oven drying (OD), and microwave drying (MD) on the morphology, rehydration properties, metabolomic profile, and taste formation of Porphyra yezoensis. FD elicited a brighter colour, smooth surface, porous microstructure, and strong rehydration properties in P. yezoensis, while dramatically maintaining the umami, sweetness, and saltiness. OD and MD decreased structural openness owing to tissue collapse and affected water absorption. Metabolomic analysis revealed 1030 metabolites, among which taste-related compounds, especially free amino acids, nucleotides, organic acids, and their derivatives, were the main biomarkers for distinguishing the different drying methods. Their related metabolic pathways, such as taurine and hypotaurine metabolism; purine metabolism; glyoxylate and dicarboxylate metabolism; and citrate cycle, were the most active. A metabolic pathway network of the main taste compounds was built to provide novel insights into the mechanisms underlying the taste profile changes associated with different drying methods.

Abstract:The present study aimed to investigate the effect of rotary microwave vacuum drying (RMVD), radio frequency vacuum drying (RFVD), vacuum far infrared drying (VFID), vacuum drying (VD), hot air drying (HD) and natural drying (ND) on the drying characteristics, active ingredients and microstructure of Codonopsis pilosulae slices. Compared with the fitting results of the four models, the Weibull model is the most suitable drying model for Codonopsis. The RFVD and HD color difference values were smaller compared to ND. The effective moisture diffusivity (Deff) under different drying methods was between 0.06 × 10−8 m2/s and 3.95 × 10−8 m2/s. RMVD-dried products had the shortest drying time and retained more active ingredients. The microstructure analysis revealed that the porous structure of RMVD is more favorable for water migration. RMVD is a promising dehydration method for obtaining high-value-added dried Codonopsis products.

Abstract:Different drying methods, including drying in the sun, sulphur fumigation, hot air drying, microwave drying, infrared drying and various coupling techniques,were used to dry fresh Gastrodiae Rhizoma. Characteristics, extracts and the contents of active components of all samples were compared to investigate the effects of different drying methods on quality of Gastrodiae Rhizoma. The results showed that the characteristics of the samples would be better with use of sulphur fumigation, hot air drying, and hot air-microwave drying. Different drying methods had little effects on extracts. Among them, the extract content was higher after hot air drying. The stilbene glycosides would transformation and the contents of Gastrodiae Rhizoma polysaccharides would decline with use of sulphur fumigation, microwave drying and infrared drying. In the comprehensive analysis of characteristics, content of active components, production cost and other factors, hot air drying or hot air-microwave drying was recommended as the first choice.
Difference in Quality and Volatile Flavor Compounds of Zingiber officinale Roscoe with Different Drying Methods

Abstract:In order to study the effect of different drying methods on the quality of ginger (Zingiber officinale Roscoe) in Guizhou Province, the study comparatively analyzed the edible quality, functional components, and volatile flavor compounds of dried ginger. The results revealed that vacuum freeze-drying (VFD) was superior to vacuum microwave drying (WAD), hot air drying (HAD), and natural drying (ND) in terms of retaining ginger color change, rehydration rate, flavonoids, and ginger spicy element. The polyphenol retention in VFD ginger was second only to that in WAD ginger. A total of 86 volatile flavor compounds were detected in fresh ginger and all four drying samples. Ester and aldehyde compounds were identified as the main flavor components in dried ginger, with variations observed among the different drying methods. Principal component analysis (PCA) and the nearest neighbor algorithm successfully distinguished the ginger samples treated with different drying methods. The aroma activity value (OAV) was calculated based on the threshold, and 12 volatile flavor compounds with OAV ≥1 were identified as the key aroma components of ginger. The aroma profiles of ginger were generally similar across the four different drying methods, among which WAD ginger exhibited distinct flavor characteristics associated with drying. This study employed physicochemical properties, active components, and GC-IMS to evaluate the effect of different drying methods on ginger, providing valuable insights for the processing and flavor quality control of drying ginger.

Abstract:In continuation of our work on the plant Echinops echinotus Roxb. (Compositae) (1), we report here the isolation of apigenin, apigenin 7-O-glucoside, and a new acylfiavone glucoside from the flowers of E. echinatus. The ethyl acetate fraction of the alcoholic extract of the flowers (3kg) of Echinops echinatus was chromatographed over an SiO2 gel column. The C6H6-EtOAc (1:1) and EtOAc eluates furnished apigenin (22 mg) and its 7-O-glucoside (31 mg) and the EtOAc-MeOH (20: 1) eluates gave light yellow granules of an acylfiavone glucoside (74 mg) designated as echitin (1). Echitin (1), m.p. 245—248°C, C30H26012 (M=578), [a]°: —61.2° (c 1.40, MeOH), UV: max (MeOH, nm) = 227 (sh), 266, 318 (log E 2.95, 2.85, 3.07), showed in its IR spectrum (KBr, cm) a strong adsorption bands for hydroxy (3200—3550), ester carbonyl (1684), chelated carbonyl (1660), and aromatic ring (1600) units. Acid hydrolysis of 1 gave apigenin (2), glucose (co-PC), and an aromatic acid.
Optimization of Cold-Air Drying of Apostichopus japonicus and Comparison with Other Drying Methods

Abstract:The present work was done to optimize the process conditions for cold-air drying (CAD) of pickled Apostichopus japonicus by the combined use of one-factor-at-a-time method (OFAT) and response surface methodology (RSM).The response variable was the weighted average of sensory scores and dehydration rate.A comparison of CAD,vacuum freeze drying (VFD),hot-air drying (HAD) and vacuum microwave drying (VMD) was performed in terms of the quality of dried products.Results showed that the optimal cold-air drying conditions were determined as follows:vacuum desalination time,4.2 h;drying temperature,19 ℃;and wind speed,1.70 m/s,resulting in a weighted average of 0.77.With respect to nutrient retention,VFD and CAD were better than HAD and VMD.In terms of heat shrinkage,the drying methods were in the decreasing order of HAD,VMD,CAD and VFD with only a marginal difference being observed between CAD and VFD,while they followed the decreasing order of CAD,VFD,HAD and VMD in terms of rehydration rate.In terms of textural characteristics,CAD and VFD were better than HAD and VMD.These results showed that CAD was more practical in industrial production.

Abstract:This study investigated the effects of hot air drying (HAD), infrared-assisted hot air drying (IR-HAD), vacuum freeze drying (VFD), and pulsed-vacuum drying (PVD) on the drying characteristics, color, microstructure, total phenolic content (TPC), total flavonoid content (TFC), vitamin C (Vc) content, and the odor analysis using electronic nose of sea buckthorn pomace. The results showed that IR-HAD exhibited the highest drying rate and the shortest drying time (250 min). PVD exhibited the highest TPC, TFC, and Vc content while maintaining a color difference ΔE value closest to that of the fresh sample. PVD microstructure exhibited no collapse, fewer pores, and smaller cracks than the IR-HAD and VFD microstructures. Furthermore, the PVD pomace displayed the lowest reactivity to sulfides and ethanol compounds. The comprehensive analysis suggests that PVD holds promise as a drying method for sea buckthorn pomace and provides valuable insights for selecting an appropriate drying method for sea buckthorn pomace.

Abstract:Ginseng (Panax ginseng C. A. Meyer) is a valuable plant resource which has been used for centuries as both food and traditional Chinese medicine. It is popular in health research and markets globally. Fresh ginseng has a high moisture content and is prone to mold and rot, reducing its nutritional value without proper preservation. Drying treatments are effective for maintaining the beneficial properties of ginseng post-harvest. In this study, we investigated the effects of natural air drying (ND), hot-air drying (HAD), vacuum drying (VD), microwave vacuum drying (MVD), and vacuum freeze drying (VFD) on volatile organic compounds (VOCs) in ginseng. The results showed that the MVD time was the shortest, followed by the VFD, VD, and HAD times, whereas the ND time was the longest, but the VFD is the most beneficial to the appearance and color retention of ginseng. A total of 72 VOCs were obtained and 68 VOCs were identified using the five drying methods based on gas chromatography–ion mobility spectrometry (GC-IMS) technology, including 23 aldehydes, 19 alkenes, 10 alcohols, 10 ketones, 4 esters, 1 furan, and 1 pyrazine, and the ND method was the best for retaining VOCs. GC-IMS fingerprints, principal component analysis (PCA), Euclidean distance analysis, partial least squares discriminant analysis (PLS-DA), and cluster analysis (CA) can distinguish ginseng from different drying methods. A total of 29 VOCs can be used as the main characteristic markers of different drying methods in ginseng. Overall, our findings provide scientific theoretical guidance for optimizing ginseng's drying methods, aromatic health effects, and flavor quality research.

Abstract:Abstract In this study, we determined the influences of different drying techniques such as natural air (ND), hot-air (HD), vacuum (VD), infrared (ID), microwave (MD), and freeze drying (FD) methods on the color, shrinkage ratio (SR), rehydration ratio (RR), firmness, crispness, microstructures, nutritional components, and free amino acids of Pleurotus eryngii . The results showed that these parameters were markedly influenced by different drying techniques. Among them, FD was the most effective drying method which retained the main characteristics of the fresh P. eryngii in above mentioned indexes, followed by ND and HD at 40 °C. Finally, despite the least drying time, MD treatment was not suitable to the drying process of P. eryngii slices since it damaged physicochemical properties and caused massive losses of the main nutrients and free amino acids. The results will provide a theoretical basis for industrial processing of P. eryngii .

Abstract:To investigate the effects of six common drying methods on the quality of different specifications of Sophorae Flos, in order to select their suitable drying methods. According to appearance and morphology, Sophorae Flos was divided into the following three specifications: flower bud type(HL), half-open type(BK) and blooming type(SK). All specifications of samples were treated with shade-drying method(25 ℃, natural temperature), sun-drying method, hot-air-drying method(60, 105 ℃), and drying method(60 ℃) after steaming. The contents of total flavonoids, rutin, narcissus, quercetin, isorhamnetin, and Fe~(3+) reducing ability, DPPH free radical scavenging ability, ABTS free radical scavenging ability and fluorescence recovery after photobleaching(FRAP) were detected by UV, HPLC and colorimetry, respectively. Principal component analysis(PCA), cluster analysis(CA) and correlation analysis were used to comprehensively evaluate the quality of samples. According to the results, there were significant differences in the effect of drying methods on different specifications of samples. The drying method(60 ℃) after steaming was suitable for HL and BK, while the hot-air-drying method(60 ℃) was suitable for SK. When the fresh medicinal materials could not be treated in time, they should be spread out in a cool and ventilated place. Under high and low temperature conditions, the quality of three specifications of Sophorae Flos would be reduced. The hot-air-drying method(105 ℃) and shade-drying method(25 ℃) were not suitable for the treatment of fresh flowers and flower buds of Sophora japonicus. There were obviously differences of chemical compositions and antioxidant activities among the three specifications of samples. Therefore, the specifications of medicinal materials should be controlled to ensure the uniform quality. The study provided the abundant data reference for the selection of appropriate drying methods for the three specifications of Sophorae Flos, and useful exploration for the classification and processing of medicinal materials of flowers.
