Abstract:This study extends our current knowledge of consumer preferences for cultured meat. We explored if personality traits have a role in affecting Chinese urban consumer choice behavior for cultured meat. We performed a choice experiment (CE) and used cultured chicken breast as a case study. The results indicate that personality traits (i.e., agreeableness, neuroticism, and conscientiousness) influence consumer preference for cultured meat. Our findings provide valuable insights into the psychology of consumer preferences and attitudes that can help to effectively communicate the nature of cultured meat to the public. They also have relevant implications for cultured-meat producers, and policy makers.

Abstract:This research investigates the attitudes and intentions of Chinese consumers about cultured "meat" (CM). We also investigate framing effects through the names used for these products ("cultured meat," "artificial meat," and "cell-based meat") and the effect of information provision. Of the 1532 consumers in our sample, most had not heard of "cultured meat" or "cell-based meat" before, although 70% had heard of "artificial meat". Around 44% of the participants indicated that they would be willing to try CM, and 32% would be likely to purchase it. Participants disliked the terms "cultured meat" and "cell-based meat" less than they disliked the term "artificial meat," although the latter was the most familiar to them. The provision of neutral information on the production process increased consumer support for CM, but the effect was limited. Prior knowledge and naming terms were strong predictors of attitudes and willingness to buy. A key implication is that stakeholders should cautiously apply framing strategies when introducing CM to the public.

Consumers’ valuation for cultured meat: a multi-city choice experiment in China

Abstract:Despite the rising interest in the concept of cultured meat, there remains scant information about whether consumers would value it. This study evaluated, for the first time, consumers’ willingness-to-pay (WTP) for cultured chicken breast using a choice experiment in three large Chinese cities: Beijing, Shanghai, and Guangzhou. We also explored the effect of different types of information, including positive information, negative information, and a combination of positive and negative information (i.e. mixed information) on consumers’ WTP for cultured chicken breast. Results showed that consumers were willing to pay a premium price for cultured chicken breast. Information effects depended on consumer demographics and prior beliefs concerning cultured meat. Young consumers with higher education level were more sensitive to mixed information, while consumers who had heard about cultured meat prior to the study and were willing to buy cultured meat in the future were more responsive to negative information. The results have practical implications for pricing, marketing, policy makers, and educational programs related to cultured meat.

Abstract:Plant-based meat could contribute substantially to nutritional security and environmental sustainability. Nevertheless, its diffusion is highly dependent on consumers’ perception and acceptance. Plant-based meat products have various attributes through which nutritional, environmental, and ingredient information are delivered to consumers. To elucidate consumers’ preferences for these attributes, we conducted a large-scale consumer survey in five major cities of the largest national meat consumption market, China, with a total of about 2500 respondents. Best-worst count analysis indicated that “zero cholesterol” is the most preferred and “vegan formula” is the least preferred attribute. Mixed logit model analysis showed that “rich in dietary fiber”, “zero hormones”, and “zero cholesterol” are the three most preferred attributes. Latent class model analysis revealed that respondents with better socioeconomic conditions tended to focus more on the positive nutritional aspects of plant-based meat, whereas respondents with worse conditions tended to place a higher value on avoiding negative health impacts of traditional meat when choosing plant-based meat. This study suggests that Chinese consumers pay more attention to nutritional attributes as compared to other attributes. In addition, apparent market segments exist among different consumers. The findings of this study could contribute to the transformation of sustainable food system.

Abstract:Recent years have seen increasing interest in research on consumer acceptance of clean meat. Whilst some consumers are enthusiastic about the prospect of reducing the health risks, environmental harms, and animal welfare implications associated with conventional meat production, others have concerns about the product's taste, price, safety, and naturalness. Some evidence suggests that acceptance of clean meat will vary substantially across cultures, though there is currently a lack of quantitative research in Asia and country comparisons on this topic. Both are likely to be important areas given the forecasted increase in meat consumption in developing countries. Participants (n = 3.030) were recruited through the research panel CINT to take an online questionnaire about clean meat and plant-based meat. The participants were representative of China, India, and the U.S. in terms of age and gender, though participants in India and China were disproportionately urban, high income, and well-educated. As well as clean meat, participants were asked about plant-based meat, a conceptually similar product with similar potential to displace demand for conventional meat. They also answered the Meat Attachment Questionnaire and the Food Neophobia Scale. We compared these variables between countries, and used regression models to identify which demographic and attitudinal factors predicted purchase intent toward both products. We found significantly higher acceptance of clean and plant-based meat in India and China compared to the USA. We also found significantly higher food neophobia and significantly lower meat attachment in India compared to China and the USA. We identified several demographic patterns of clean and plant-based meat acceptance as well as which beliefs were important predictors of acceptance within each country. In particular, higher familiarity predicted higher acceptance of plant-based and clean meat across all countries. We found high levels of acceptance of clean meat in the three most populous countries worldwide, and with even higher levels of acceptance in China and India compared to the USA. These results underline the importance of clean meat producers exploring new markets for their products, especially as meat consumption in developing countries continues to rise.
Perception of cultured "meat" by Italian, Portuguese and Spanish consumers

Abstract:The aim of this study was to investigate how consumers (n = 2,171) originated from South-Western Europe (Italy, Portugal, and Spain) perceive cultured "meat" (CM) and if their demographic characteristics (origin, gender, age, education, occupation, and meat consumption) are related to their willingness to try (WTT), to regularly eat (WTE) and to pay (WTP) for CM. We found the current respondents had an initially positive attitude towards CM: 49% of them perceived CM as "promising and/or acceptable" and 23% "fun and/or intriguing" whereas 29% considered it as "absurd and/or disgusting". In addition, 66 and 25% would be willing and not willing to try CM, respectively. However, 43% had no WTE for CM and, 94% would not pay more for CM compared to conventional meat. Age and especially occupation were good indicators of consumer acceptance of CM. Respondents of 18-30 years of age had the highest acceptance. Respondents outside the meat sector had the highest WTE and people working within the meat sector had the lowest WTE, scientists (within or outside the meat sector) had the highest WTT, people not scientists but within the meat sector had the lowest WTT. Additionally, we found that men are more likely to accept CM than women, Spanish-speaking consumers had the highest WTT and WTE, people with vegan and vegetarian diets may pay more for CM but generally no more than for conventional meat. The perceptions that CM may be more eco-friendly, ethical, safe and healthy than conventional meat, and to a lower extent, the perception that current meat production causes ethical and environmental problems are likely to be major motives for the current respondents to try, regularly eat and pay for CM. On the opposite, lower perceptions of CM benefits and of conventional meat weaknesses more generally, plus emotional resistance towards CM are main barriers to accept CM.

Abstract:Low consumer acceptance emerges as one important barrier to the introduction of cultivated meat, a novel food which offers an opportunity for more sustainable and ethical meat production. Due to the motives for impression management and self‐esteem, one factor that could contribute to people's acceptance of cultivated meat is their perceptions of other individuals who consume cultivated meat. In the current research, two online survey studies with 393 Singaporean undergraduate students and 401 American adults were conducted to explore the perceptions of cultivated meat eaters. In both studies, participants were randomly assigned to read one of three profiles that described a cultivated meat eater, a conventional meat eater, and a vegetarian. Then they rated the target on a list of traits. In Study 1, cultivated meat eaters were evaluated as more eco‐friendly than conventional meat eaters, and less pure than vegetarians. In Study 2, cultivated meat eaters were perceived as more eco‐friendly than conventional meat eaters, and less healthy than vegetarians; further, the participants tended to believe that others' general perception of cultivated meat eaters is slightly negative, and their belief about others' perception was strongly correlated with their acceptance of cultivated meat. Practical implications and future directions were discussed.

Abstract:Consumer acceptance of cultured meat is expected to depend on a wide diversity of determinants ranging from technology-related perceptions to product-specific expectations, and including wider contextual factors like media coverage, public involvement, and trust in science, policy and society. This paper discusses the case of cultured meat against this multitude of possible determinants shaping future consumer acceptance or rejection. The paper also presents insights from a primary exploratory study performed in April 2013 with consumers from Flanders (Belgium) (n=180). The concept of cultured meat was only known (unaided) by 13% of the study participants. After receiving basic information about what cultured meat is, participants expressed favorable expectations about the concept. Only 9% rejected the idea of trying cultured meat, while two thirds hesitated and about quarter indicated to be willing to try it. The provision of additional information about the environmental benefits of cultured meat compared to traditional meat resulted in 43% of the participants indicating to be willing to try this novel food, while another 51% indicated to be ‘maybe’ willing to do so. Price and sensory expectations emerged as major obstacles. Consumers eating mostly vegetarian meals were less convinced that cultured meat might be healthy, suggesting that vegetarians may not be the ideal primary target group for this novel meat substitute. Although exploratory rather than conclusive, the findings generally underscore doubts among consumers about trying this product when it would become available, and therefore also the challenge for cultured meat to mimic traditional meat in terms of sensory quality at an affordable price in order to become acceptable for future consumers.

Abstract:Cultured meat is presented by its advocates as a good alternative for consumers who want to be more ethically minded but who do not wish to change their diet. This novel food has become an emerging topic in both the scientific field and the press media. From a bibliometric analysis of scientific publications and on a sociometric analysis of the mainstream press, the aim of this study was to identify potential differences between the scientific view and the public perception. This research analyzed the publications indexed by SCI-EXPANDED in the Web of Science Core Collection database owned by Clarivate Analytics, for scientific literature analysis, and indexed by the Factiva database, for the press media. A total of 327 scientific publications were analyzed according to year of publication and country and institution of origin, also including coauthorships, co-citations, and scientific fields' and journals' networks. A knowledge mapping using VOSviewer was used to study the literature in the field. Based on Factiva, 12,900 press articles dealing with artificial meat, mainly in English, have been found through public databases. The main conclusion is that cultured meat is mainly developing in the USA and the UK, with other countries, such as China, observing the trend for potential future applications. Scientific articles seemed initially to focus mainly on technical aspects of artificial meat and more recently on health value, consumer's acceptance, and sustainability. However, the potential environment-friendly effects of this novel food are more and more studied or described in scientific or press articles.

Abstract:The naming and labeling of products can affect consumer attitudes and subsequent behavior, particularly in the case of new food products in the market. The present study explores the effects of name framing on consumer attitudes towards cultured meat (CM), which is currently in the early stages of development. With a sample of 1532 Chinese consumers, we integrated several pathways to explain the name-framing effect by examining three different terms ("cultured," "artificial," and "cell-based") for CM. Results indicate that "cultured meat" and "cell-based meat" are more appealing than "artificial meat." Name framings of CM affect consumers' perception of benefits more than that of risks. Our comprehensive model identified evoked affect (perceived disgust) and naturalness as two crucial predictors of attitudes. These two predictors also act as substantial mediators of perceived benefits, and they activate the mediation of perceived risks (an insignificant mediator in cognitive processing). In addition, perceived naturalness mediates the name-framing effect mainly through perceived disgust. Our findings have implications for future strategies for communicating about novel foods (like CM) to the public.

Abstract:Meat substitutes such as man-made meat are emerging to promote low-carbon healthy consumption, mitigate climate change, and assist healthy economic development; however, most consumers seem reluctant to make the transition. While profound social change may be required to make significant progress in this area, limited efforts have been made to understand the psychological processes that may hinder or facilitate this transition. To clearly identify the factors influencing the public’s intention to consume man-made meat and their influencing paths, this study analyzes the mechanism by which man-made meat information disclosure affects the public’s intention to consume these products based on the social cognitive theory of “awareness-situation-behavior” and using structural equation modeling, with residents of seven Chinese cities as examples (647 respondents). The results of this study yielded three main findings. First, low-carbon awareness, personal social responsibility awareness, and man-made meat risk perception significantly influence the public’s intention to consume man-made meat, with risk perception having the greatest influence (−0.434). Second, low-carbon awareness and man-made meat risk perception have a significant interaction effect on the public’s intention to consume man-made meat (−0.694). Third, man-made meat information disclosure has the most significant moderating effect on the relationship between low-carbon awareness and the public’s intention to consume man-made meat, as well as a moderating effect on the relationship between man-made meat risk perception and the public’s intention to consume man-made meat.

Does the future of meat in France depend on cultured muscle cells? Answers from different consumer segments

Abstract:This research aimed to study the perception of French consumers on "cultured meat". The respondents (n = 5418) are characterised by an over-representation of young people, meat professional or scientists compared to the French population. Approximately 40-50% of them believed that animal husbandry faced ethical and environmental issues. Only 18-26% of them believed that "cultured meat" could solve these difficulties, a majority thought that it would not be healthy or tasty and that "cultured meat" is an "absurd and/or disgusting" idea. However, 23.9% and 16.9% thought it is a "fun and/or interesting" and a "promising and/or feasible" idea and 91.7% were not prepared to buy "cultured meat" at a higher price than meat. The respondents not familiar with "cultured meat", young people or women are more in support of it due to a greater sensitivity to issues related to livestock systems. Older men and meat professionals are the most reluctant. Thus, the "cultured meat" market would represent at best a niche market.

Abstract:Green consumption is an emerging environmental topic receiving global attention. Because livestock production is a primary source of greenhouse gas emission, the "low-carbon diet" has become a new trend in the catering industry. Fast food companies have been launching vegetarian products because artificial meat requires less water and land resources than traditional livestock and has lower carbon emissions. This study explores the influence of consumers' attitude, subjective norms (SNs), and perceived behavioral control (PBC) on their purchase intention for vegetarian burgers from the product knowledge (PK) and environmental concern (EC) perspectives. Based on the theory of planned behavior, the purchase intention of people from different food cultures to pay for fast food burgers is discussed. Five hundred questionnaires were distributed, of which 436 were valid. The results revealed that: (1) consumers' SNs , PBC, and EC significantly affect purchase intention (PI), and SNs and PK have no significant relationship with PI; and (2) vegetarians are willing to pay higher prices than nonvegetarians. This study recommends that industry personnel should attempt to increase consumers' knowledge regarding artificial meat and expand marketing channels to improve the convenience of purchasing artificial meat foods by conducting lectures and media promotion, respectively.

Abstract:To investigate the influence of food culture on the acceptability of meat substitutes, in 2023 we conducted a questionnaire survey on men and women aged 18–69 years (N = 1681) in Japan, a country with a food culture that regards soya as a meat substitute, focusing on 'meaning' in the theory of practice. Analysis of three groups—a flexible group who accept foods processed from soya as meat, a strict group who do not accept such foods as meat, and an intermediate group—showed that the flexible group tended to be more positive about the consumption of meat substitutes than the other groups. However, the flexible group was not simply more accepting, as they expressed aversion and anxiety in response to other questions. Food culture, i.e., what is understood to be meat, influences the acceptability of alternative meats. When examining the social acceptability of meat alternatives in the future, it is also important to look at social practices and historical and cultural backgrounds in a multilayered way, in addition to factors that have been emphasized in previous studies, such as consumers' decision-making process.

Abstract:Consumer attitudes towards genetically modified foods (GMFs) play a crucial role in the development of the technology. Both government and food manufacturers of agricultural products in the US and China are optimistic about the potential market for these foods. This paper compares two national consumer surveys conducted in the US and China. To determine if influential factors are driving consumers' attitudes towards GM plant and animal products in both countries a binary logic model is used. Findings suggest that for the majority of American and Chinese consumers while their overall knowledge of GM food is low, their attitudes toward the technology are generally supportive. Consumers in both countries are more accepting of GM plant products then GM animal products. Interestingly, gender, living place, and awareness of GM foods have similar significant effects for both countries.

Abstract:Cultured meat, i.e. meat produced in-vitro through the cultivation of animal stem cells, is a radical innovation that prepares to enter the market in the near future. It has the potential to substantially reduce the negative externalities of today's meat production and consumption and pave the way for a more sustainable global food system. However, this potential can only be realized if cultured meat penetrates the mass-market, which renders consumer acceptance a critical bottleneck. Using structural equation modeling, the present paper investigates the role of hitherto neglected organizational factors (trustworthiness, corporate social responsibility (CSR), and extrinsic motives) as antecedents of consumer acceptance of cultured meat. To this end, a pre-post intervention design in terms of a two-part online questionnaire was used with the final sample consisting of 966 participants. We found that in addition to established antecedents on the product level, organizational trustworthiness and CSR have a significant influence on consumers' willingness to buy cultured meat. The findings indicate that organizational factors matter for consumer acceptance of cultured meat.

Abstract:The consumption of meat contributes significantly to undesirable effects on the environment. In order to reduce the impact of animal husbandry, one approach is to decrease meat consumption by substituting plant-based meat alternatives. Because the consumption of such meat alternatives is currently rather low, the aim of this research was to identify the barriers that keep people from consuming meat alternatives and increase the probability of future consumption. This was accomplished by exploring free associations people have towards meat and meat alternatives, comparing selected meat products with their respective meat alternatives using the semantic differential, and studying the perceived appropriateness of eating meat alternatives in different consumption situations. To achieve these objectives, we carried out an online survey with participants from Germany (N=1039). Our results suggest that while meat is being associated with positive terms, meat alternatives were viewed more negatively. The previous findings that meat alternatives should be similar to meat with regard to taste, texture, and ease of preparation were confirmed. Results from the direct comparison of meat with corresponding meat alternatives indicate that meat alternatives are similarly perceived to their processed meat counterparts. Regarding different consumption situations, our results show that eating meat alternatives is perceived to be more appropriate in situations where one eats alone or with family and friends. In conclusion, our findings demonstrate that meat alternatives have the best chance of successfully replacing meat when they closely resemble highly processed meat products in taste and texture and are offered at competitive prices. The recommendation for producers of meat alternatives is thus to focus on replicating processed meat products instead of trying to imitate meat cuts such as steak or escalope.
