Abstract:The effect of fermented soybeans from three different origin places (Hunan, Guangdong, and Sichuan in China) on protein oxidation and freshness of largemouth bass (Micropterus salmoides) was investigated during repeated freezing-thawing (FT) cycles. The Hunan fermented soybean exhibited the best antioxidant capacity according to the capacity of Fe3+ reducing power, DPPH radical scavenging activity, super oxide radical scavenging assay, hydroxyl radical scavenging assay, and reduced glutathione (GSH). As expected, 0.1% fermented soybean significantly (P < 0.05) delayed protein oxidation including the decline of reactive and total sulphydryls, Ca2+ ATPase activity, and freshness as well as the increase of total volatile base nitrogen (TVB-N) during repeated freezing-thawing cycles treatments. It was concluded that the fermented soybean was not only a seasoning, but also an antioxidant in prepared fishes.

Abstract:The influence of storage conditions on the freshness of silver carps(Hypophthalmichthys molitrix) was investigated.Silver carps were stored under 10 ℃,-1 ℃ and-20 ℃,respectively,and sensory changes and quality indicators such as total volatile basic nitrogen(T-VBN),trimethylamine(TMA) and K value were determined.The sensory evaluation results showed the storage time was confined to 3 days and 9 days under 10 ℃ and-1 ℃,respectively.According to the pattern of sodium dodecyl sulfate-polyacrylamide gel electrophoresisc(SDS-PAGE),the degradation of myosin heavy chain occurred after 3 days' storage under 10 ℃.And the appearance of low molecular weight bands was observed after 9 days under-1 ℃ and-20 ℃,but the degradation of proteins under-1 ℃ and-20 ℃ was indistinctive with time.The values of T-VBN,TMA and K increased significantly with time,and the rate was improved by high temperature,in accordance with the result of sensory analysis.Therefore,the formation of TMA and the degradation of proteins and ATP have been shown to provide a clear interpretation on the freshness decrease of silver carps.Moreover,the results show that frozen storage is an effective method to slow down the rate of freshness decrease of silver carps.

Abstract:Deodorant effect of yellow wine,aqueous extraction of ginger,onion and garlic and yellow wine together with extraction of ginger,onion and garlic were compared in fresh grass carp deodorization,and the most effective deodorant,yellow wine together with extraction of ginger,onion and garlic was used to keep the preservation quality of grass carp fillets.The effects on preservation quality were determined by biochemical(pH,total volatile basic nitrogen,thiobarbituric acid),microbiological(total bacterial count) and sensory determinations during storage at 4°C.The extraction exhibited a beneficial effect on inhibiting lipid oxidation and bacterial growth in the fillets.Increases of pH,total volatile basic nitrogen,thiobarbituric acid and total bacterial count in fillets during storage were significantly reduced by the extraction.

Abstract:The profiling of physicochemical properties, nonvolatile flavour compounds and bacterial community during the fermentation of Chinese dry-salted and brine-pickled radishes was performed. Dry-salted radishes matured on the 30th day, and the pH, total titratable acid, and water activity of the matured samples were 4.7, 0.43 g/100 g lactic acid, and 0.90, respectively. Brine-pickled radishes matured in only 5 days, and the pH, total titratable acid, and water activity were 3.4, 0.31 g/100 g lactic acid, and 0.96, respectively. The contents of reducing sugars, organic acids, and free amino acids generally increased with the fermentation of dry-salted radishes, reaching 15.8 g/100 g, 1009.1 mg/100 g, and 300.3 mg/100 g on the 30th day, respectively. Lactic acid was the characteristic flavour substance of brine-pickled radishes. Exiguobacterium, Glutamicibacter, and Leuconostoc were the dominant genera when the dry-salted radishes matured. Lactobacillus dominated brine-pickled radish fermentation and was correlated to lactic acid, Arg, Val, and His (P<0.05). This study could improve our understanding of the effects of dry salting and brine pickling on the flavour and bacterial characteristics of salted vegetables.

Abstract:To investigate the effect of steaming time (0, 5, 10, 15, 20, and 25 min) on the protein degradation and non-volatile flavor substances of swimming crab (Portunus trituberculatus), the moisture content, total nitrogen (TN), non-protein nitrogen (NPN), free amino acids (FAAs), flavor nucleotides, electronic tongue analysis, and sensory evaluation were determined. The results showed that the contents of NPN and total FAAs were the highest after crabs steamed for 10 min. Meanwhile, the AMP (adenosine monophosphate) content reached the maximum value (332.83 mg/100 g) and the taste active value (TAV) reached 6.67, which indicated that AMP contributes the most to the taste of steamed crab at 10 min. The electronic tongue distinguished the taste difference well, and the sensory score was the highest at 15 min. Combined with equivalent umami concentration (EUC) and TAV value, swimming crab (weight = 200 ± 20 g) steamed for 10–15 min tasted best.

Abstract:The effects of different temperatures during previous storage on the quality of cooked silver carp(Hypophthalmichthys molitrix) was investigated.Whole silver carp were sacrificed and stored in-1 ℃ and-20 ℃,respectively.They were cooked after 0,3,6,9 and 12 days' storage,and the flesh was then evaluated by chemical,physical and sensory techniques.The results showed that non-protein(NPN),total volatile basic nitrogen(TVB-N) and trimethylamine(TMA) of fish increased after cooking.The content of TN(total protein) in cooked fish decreased while NPN,TVB-N and TMA increased with previous storage time.This trend of changes in chilled fillets was much more significant than that of frozen ones.Since the structure of fish became more breakable with previous storage time,a 12 days limitation of 12 days for frozen fillets and 9days for chilled ones were suggested and the frozen condition appeared to be better for the storage a silver fish.

Abstract:The flavor alterations in bighead carp subjected to varying storage temperatures and the underlying metabolic mechanism were elucidated. Analysis of volatile flavor compounds, electronic nose, free amino acids, ATP-related compounds, and sensory evaluations uncovered a progressive flavor deterioration during storage, especially at 25 °C. Metabolomics-based flavor relating component profiling analysis showed that free fatty acids formed various fatty aldehydes including (E, E)-2,4-heptadienal and nonanal under lipoxygenase catalysis. Alcohol dehydrogenase and alcohol acyltransferases were intimately involved in alcohol and ester generation, while alkaline phosphatase, 5'-nucleotidase, and acid phosphatase were closely associated with IMP, Hx, and HxR conversion, respectively. Aeromonas, Serratia, Lactococcus, Pseudomonas, and Peptostreptococcus notably influenced flavor metabolism and enzyme activities. The metabolism disparities of valine, leucine, isoleucine, lysine, and α-linolenic acid could be the primary factors contributing to flavor metabolism distinctions. This study offers novel insights into the flavor change mechanisms and potential regulation strategies of bighead carp during storage.

Abstract:This study aimed to reveal amino acid deamination and decarboxylation activities of spoilage microbiota in chill-stored grass carp fillets. Results showed that microbial deamination activities of umami/sweet-taste amino acids were higher than that of bitter-taste amino acids. The total deamination activity of tested amino acids decreased during the late period of storage, which inhibited the increase of ammonia in fish flesh. Microbial decarboxylation activity of ornithine was much higher than lysine and histidine, which was consistent with the rapid increase of putrescine in fish fillets. Meanwhile, putrescine could be produced in large quantities through arginine deiminase pathway of spoilage bacteria. Glucose utilization by spoilage microbiota was active during the late period of storage, which was consistent with the rapid consumption of lactate and total sugar in fish flesh. Overall, results of this study could be beneficial for revealing fish spoilage mechanisms and providing theoretical guidance for developing fish preservation technologies.

Abstract:Changes in the flavor and taste profiles of Paddy Field Carp after deodorization with perilla juice (PJ), cooking wine (CW) and a mixture of the two (PJ-CW) were analyzed using the E-nose, E-tongue, gas chromatography-ion mobility spectrometry (GC-IMS), free amino acid analysis and taste nucleotide analysis. The E-nose and E-tongue revealed that deodorization reduced the content of sulfur-containing compounds, enhanced umami, bitterness, sourness and astringency, and decreased saltiness. PCA and OPLS-DA analysis successfully distinguished between the effects of the treatments. Free amino acids increased from 8777.67 to 11,125.98 mg/100 g and umami amino acids increased from 128.24 to 150.37 mg/100 g after PJ-CW deodorization (p < 0.05). Equivalent umami concentration (EUC) comparisons showed that PJ-CW treatment produced the greatest synergistic umami enhancement (to 3.15 g MSG equiv./100 g). GC-IMS detected 52 aroma compounds; PJ treatment produced the greatest diversity of aldehydes, including heptanal, nonanal, hexanal, 3-methylbutanal, (E)-2-heptenal and (E,E)-2,4-heptadienal. The total content of volatile flavor compounds was the highest after PJ-CW treatment, and the content of many characteristic flavor substances (3-hydroxy-2-butanone, benzaldehyde, 5-methyl-2(3H)-furanone) increased. These findings provided a theoretical basis for the further development of deodorization methods for Paddy Field Carp.
Changes in protein and volatile flavor compounds of low-salt wet-marinated fermented Golden Pomfret during processing

Abstract:In this experiment, the changes in protein hydrolysis, protein oxidation, and flavor of low-salt wet-marinated fermented golden pomfret were studied during processing. During processing, a decrease in sulfhydryl content (P < 0.05), a significant increase in protein surface hydrophobicity (P < 0.05), a significant increase in carbonyl content and TCA-soluble peptide (P < 0.05), an increase in TVB-N and amino acid nitrogen (P < 0.05), and a significant increase in the content of free amino acids (P < 0.05), indicating that proteins were gradually oxidized and degraded to small molecules and flavor precursors under the action of bacterial reduction pretreatment, deodorization, marination and fermentation processes, small molecules and aroma precursors was generated by gradual oxidative decomposition. In the course of processing, a total of 113 volatile flavor compounds were identified using GC-MS analysis, while OPLS-DA analysis and VIP value determination led to the identification of 10 characteristic flavor compounds. The results showed that an abundance of flavor compounds was generated during the processing, thereby imparting a more pronounced taste profile to the low-salt wet-marinated fermented golden carp. The results showed that a large number of flavor substances were generated during the processing to give a richer flavor to low-salt wet-marinated fermented golden pomfret that could provide data and theoretical support for the subsequent processing industry of golden pomfret.

Abstract:In recent years, Asia has seen an increase in demand for golden pomfret (Trachinotus ovatus). Especially in instant (ready-to-eat) and prepared (ready-to-cock) food processing industry. Thermal processing is a vital part of food processing. However, no comprehensive analysis has been reported on its flavor, nutrition and edible quality changes during the key thermal processing. Accordingly, in this study, we evaluated the effects of different cooking methods (steaming, frying, microwaving and baking) on the color, texture, cooking loss, nutrition composition, volatile flavor substances and other indicators of golden pomfret fillets. The results showed that the steamed samples (SS) had the lowest cooking loss and fat content, the highest moisture content, complete appearance and the lowest levels of hardness and chewiness. Fried samples (FS) had a notable difference in fatty acid composition. The content of unsaturated fatty acids (UFAs) increased significantly, while the relative content of eicosapentaenoic acid (EPA)+docosahexaenoic acid (DHA) decreased from 7.88% to 1.42%, lower than other groups. The essential amino acid index (EAAI) of microwaved samples (MS) was 94.89, which was higher than other groups. Baked samples (BS) had the highest relative content of umami amino acids (UAAs) and sweet amino acids (SAAs), which was 8.08 mg/100 mg and 5.19 mg/100 mg, respectively. Hexanal and nonanal were detected in control samples (CK), SS, FS, MS and BS. This is a provisional file, not the final typeset article While pyrazine compounds were detected only in FS and BS. Steaming and microwaving treatment of golden pomfret resulted in better nutritional preservation, which was more conducive to human health. Frying and baking treatment of golden pomfret had better taste and flavor and higher sensory scores. The nutrition, flavor and edible quality of golden pomfret under different cooking methods were related and interactive. Cooking loss and fat content can be used as simple evaluation indicators to compare the overall quality of different cooking methods. This study provides a reference for the thermal processing technology and industrial production of golden pomfret.

Abstract:The effects of different thermal processing conditions on the flavor profiles of channel catfish were evaluated in terms of fatty acids, volatile flavor and taste compounds using steaming, boiling, roasting, and microwaving with different degrees. After thermal processing, 72 volatile organic compounds were detected, including 20 hydrocarbons, 5 ketones, 20 aldehydes, 7 heterocyclic compounds, 12 alcohols and others. Meanwhile, the contents of unsaturated fatty acids like oleic acid and linoleic showed a significant decline due to their heat-sensitive properties. With regard to taste compounds, thermal processing contributed to umami amino acids and free nucleotides conversion, with the initial glutamate and IMP contents of 15.87 and 164.91 mg/100 g in raw samples mainly increasing by 2.8-10.3 and 14.4-105.5 mg/100 g in processed ones. Compared to other methods, microwaving had limited effects on flavor compounds, and steaming and roasting had better performance to improve the flavor complexity of channel catfish.

Abstract:Abstract In this study, the effect of tea polyphenols (TP) combined with modified atmosphere packaging on the quality change of Cri fish fillets in cold storage was studied, expecting to provide a new strategy for the biological preservation of fish fillets. Fresh fillets were packed in three different methods as follows: Sprayed in 0.5% tea polyphenols solution (CP group);Sprayed in 0.5% tea polyphenols combining 50% CO 2 + 50% N 2 modified atmosphere packaging (MAPC group);50% CO 2 + 50% N 2 modified atmosphere packaging (MAP group) and fresh filletsb was control group. All four groups were storaged at 0°C condition. Total bacterial count, TVB-N, TBA, K and pH were periodically assessed. The microscopic morphology of muscle tissue after 10 days cold storage was observed. After 10 d of cold storage, the TVC in the MAPC group (4.43±0.25 lg cfu/g) was obviously lower than that in the MAP group (5.04±0.65 lg cfu/g) or CP group (4.90±0.21 lg cfu/g), and even lower than that in the control group (6.14±0.17 lg cfu/g). The control group revealed the most obvious growth trend, increasing from 0.15±0.03 mg MDA/kg to 0.65±0.14mg MDA/kg, followed by MAP group (0.15±0.08 mg MDA/kg to 0.52±0.07mg MDA/kg), and CP group (0.13±0.05 mgMDA/kg to 0.47±0.03mg MDA/kg), and the last was the MAPC group with the minimum amplification (0.14±0.02 mg MDA/kg to 0.47±0.13 mg MDA/kg).Tea polyphenols combining with modified atmosphere packaging is a new strategy in maintaining the quality of crisped grass carp during cold storage.

Abstract:The effects of six cooking styles, including boiling, steaming, microwaving, grilling, pan-frying and deep-frying, on the lipid oxidation and fatty acid composition of grass carp (Ctenopharyngodon idellus) fillets were investigated. All treatments reduced the moisture contents and increased the relative ratio of protein. Compared with raw samples, the proportions of polar lipid fractions of all samples were increased, while free amino acid contents were significantly decreased. Peroxide values decreased during pan-frying and deep-frying, but remained constant in the samples subjected to the other four cooking methods. Microwave baking and grilling increased the p-anisidine values and resulted in higher lipid oxidative extents. Boiling, steaming, microwave baking and grilling did not affect the fatty acid composition. Pan-frying and deep-frying increased the general polyunsaturated fatty acid content and decreased the n3/n6 ratio, especially for the deep-frying cooking method. PRACTICAL APPLICATIONS Fish consumption has been linked to health benefits such as reduced risk of coronary heart disease. This is largely attributed to the lipid, cholesterol, fatty acid composition and the polyunsaturated fatty acids present in fish oils. The 3:6 and polyunsaturated fatty acid/saturated fatty acid ratios are considered to be useful criteria for comparing relative nutritional and oxidation values of fish oils. This study was therefore conducted to determine the influence of different cooking styles on the lipid oxidation of grass carp. These features and information are very important to the food health industry because they could be potential guidelines for the clinical, community, foodservice and research dieticians to recommend the proper cooking methods to get better health effects. It is also useful for academic studies on food composition and nutrition.

Abstract:This work aimed to explore the influence of four different cooking methods (Boiling, roasting, frying, and microwaving) on the sensory characteristics of scallop muscles. Headspace-gas chromatography-ion mobility spectrometry (HS-GC-IMS) and electronic nose (e-nose) were combined to analyze the aroma of scallops. Combined with the results of free amino acids and electronic tongue (e-tongue), the taste changes of different samples were analyzed. Furthermore, texture profile and microstructure analysis jointly showed the influence of cooking methods on texture. The results showed that frying was the most suitable cooking method for scallop muscle because it resulted the best tasted products, boiled scallops retain the highest similarity to fresh scallops. Besides, a higher level of lipid oxidation and Maillard reaction resulted in significant increase in aldehydes, ketones, furans, umami, and sweet amino acid. For the boiled sample, the loss of water-soluble compounds and less fat oxidation resulted in fewer flavor substances and free amino acids, along with looser organizational structure and poorer sensory quality. The research showed that besides the texture of scallop muscle, volatile organic compounds and free amino acids as well as their mutual roles in taste and smell were also important to sensory receptivity.

Abstract:In conventional fish soup processing, valuable aquatic resources like fish skins, bones, and scales are often squandered. This study was aimed at investigating if comminution combined with pressure-conduction treatment has the potential to enhance the reutilization of cooking residues. The different blending ratios of original soup (OS), made from the initial cooking of fish, and residue soup (RS), produced from processed leftover fish parts, were alternatively investigated to satisfy the new product development. Comminution combined with pressure-conduction treatment significantly increased the nutrient contents of calcium, soluble proteins and total solids in crucian carp soup (p < 0.05). With the increase in RS ratio, the decomposition of inosine monophosphate (IMP) and free amino acids was accelerated, but the accumulation of aromatic compounds was promoted simultaneously. In addition, the Maillard reaction may lead to a reduction in aldehydes, causing a diminution in the characteristic flavor of fish soup, while the formation of 1-octen-3-ol can enhance the earthiness of the fish soup. The electronic tongue test results and the sensory results showed that the blend ratio of OS and RS at 7:3 had a more significant umami and fish aroma (p < 0.05). Under this condition, the mixed soup has better nutritional values and flavor characteristics.

The impacts of cold plasma on the taste and odor formation of dried silver carp products

Abstract:This study investigated non-thermal pretreatment (cold plasma, CP) on the flavor (taste and odor) profiles of dried fish products. CP treatment of 5 min contributed to accumulation of umami nucleotides adenosine 5'-monophosphate (AMP) from 30.96 to 40.82 μg/g and inosine 5'-monophosphate (IMP) from 2009.29 to 2132.23 μg/g, and significant reduction of bitter hypoxanthine ribonucleoside (HxR) and hypoxanthine (Hx), respectively (P < 0.05) in the dried fish products. A noticeable enhancement in sweet glycine (from 429.41 to 490.03 mg/100 g) and umami glutamic acid (from 55.68 to 67.76 mg/100 g) accompanied with the CP treatment (P < 0.05) based on taste activity value (TAV > 1). And the characteristic odor volatiles (nonanal, hexanal and 1-octen-3-ol) were strengthened 2.13-, 2.16- and 2.17- folds, respectively (P < 0.05). The results of equivalent umami concentration and Gibbs free energy calculation, combining with the correlation analysis, indicate that nucleotides and free amino acids synergically enhanced the taste improvement of dried fish products. Moderate lipids oxidation favored the formation of characteristic volatiles. The CP pretreatment offered new strategies for enhancing flavor of dried fish products.
