Abstract:The aim of this study was to evaluate the preservation effect of chitosan (CS) and lysozyme (Lys) coating on the quality of large yellow croaker (Larimichthys crocea) via physicochemical analyses, microbiological and sensorial assessments during refrigerated storage. Results showed that CS films incorporated with 0.6 mg.mL(-1) of lysozyme exhibited the strongest inhibition effect against S. aureus, whose inhibition zone was 16.10 +/- 0.71 mm. The utilization of CS singly, or CS-lysozyme (Lys) coating significantly reduced lipid oxidation (thiobarbituric acid value, TBA) and improved the sensorial scores of fishes. Control and treated groups exceeded the maximum permissible level (30 mg N/100 g) of total volatile basic nitrogen (TVB-N) in fishery products on days 6 (control) and 9 (CS or CS-Lys treated), respectively. Fish samples reached the value of 7.0 Log CFU/g (Total Viable Count, TVC) on days 15 (control), whereas both CS and CS-Lys treated flesh samples never exceed this limit value during the refrigerated storage. Results of our study indicate CS-Lys have high efficiency in inhibiting microorganism growth and lipid oxidation and in maintaining sensorial quality, which is a promising method to maintain the quality and extend the shelf life of refrigerated fishes. Abstract:Deodorant effect of yellow wine,aqueous extraction of ginger,onion and garlic and yellow wine together with extraction of ginger,onion and garlic were compared in fresh grass carp deodorization,and the most effective deodorant,yellow wine together with extraction of ginger,onion and garlic was used to keep the preservation quality of grass carp fillets.The effects on preservation quality were determined by biochemical(pH,total volatile basic nitrogen,thiobarbituric acid),microbiological(total bacterial count) and sensory determinations during storage at 4°C.The extraction exhibited a beneficial effect on inhibiting lipid oxidation and bacterial growth in the fillets.Increases of pH,total volatile basic nitrogen,thiobarbituric acid and total bacterial count in fillets during storage were significantly reduced by the extraction.

Abstract:The influence of storage conditions on the freshness of silver carps(Hypophthalmichthys molitrix) was investigated.Silver carps were stored under 10 ℃,-1 ℃ and-20 ℃,respectively,and sensory changes and quality indicators such as total volatile basic nitrogen(T-VBN),trimethylamine(TMA) and K value were determined.The sensory evaluation results showed the storage time was confined to 3 days and 9 days under 10 ℃ and-1 ℃,respectively.According to the pattern of sodium dodecyl sulfate-polyacrylamide gel electrophoresisc(SDS-PAGE),the degradation of myosin heavy chain occurred after 3 days' storage under 10 ℃.And the appearance of low molecular weight bands was observed after 9 days under-1 ℃ and-20 ℃,but the degradation of proteins under-1 ℃ and-20 ℃ was indistinctive with time.The values of T-VBN,TMA and K increased significantly with time,and the rate was improved by high temperature,in accordance with the result of sensory analysis.Therefore,the formation of TMA and the degradation of proteins and ATP have been shown to provide a clear interpretation on the freshness decrease of silver carps.Moreover,the results show that frozen storage is an effective method to slow down the rate of freshness decrease of silver carps.

Abstract:This study assessed the combined effect of slightly acidic electrolyzed water (SAEW) and slightly acidic electrolyzed water ice (SAEW-ice) on the quality of pomfrets over a period of 18 d of cold storage at 4 degrees C. A presoak for 5 min in SAEW solution (22 mg/L) was used before the pomfrets were placed on SAEW-ice (pH: 6.45; ORP: 803 mV; ACC: 18 mg/L); The changes in physicochemical properties (i.e., pH, thiobarbituric acid, total volatile basic nitrogen and texture profile), microbial loads and sensory characteristics were all analyzed. Compared with the tap water (TW) group, the total bacterial counts of the SAEW group significantly decreased by 1.27 log(10) CFU/g after immersion (p<0.05). The shelf life of the pomfrets was prolonged by 9 d by the combined treatment of SAEW and SAEW-ice during storage at 4 degrees C. On the 18th day, the gumminess and chewiness values of the pomfrets in the SAEW+SAEW-ice group were 195 g and 3.97 mJ, respectively, which were significantly higher than those of the other groups (p<0.05). The results suggested that SAEW+SAEW-ice treatments have great potential as a novel method to maintain the quality and extend the shelf life of pomfrets during refrigerated storage.

Abstract:Quality changes in grass carp during superchilled storage at -2C were evaluated in terms of the microstructure, drip loss, pH value, total volatile basic nitrogen (TVB-N), trimethylamine nitrogen (TMA-N), water holding capacity (WHC), salt soluble protein (SSP) and Ca2+-ATPase activity by comparison with frozen storage at -18C. The microstructure of grass carp muscle was seriously damaged with the exhibition of myofibril shrinkage and breakage under frozen storage. Both TVB-N and TMA-N contents in superchilled grass carp were controlled under the acceptable values within 21 days of storage. Significant lower drip loss and higher WHC under superchilled storage was observed compared with frozen storage. Superchilling attenuated the denaturation of myofibrillar protein and the damage of muscle structure associated with freezing, where extractability of SSP and Ca2+-ATPase activity were reduced. A shelf life of 21 days for superchilled grass carp could be estimated by the overall quality evaluation.PRACTICAL APPLICATIONSTraditional frozen fish can be extended for a long time. However, large amounts of water frozen out lead to serious texture change and drip loss after thawing. This study evaluated the potential of superchilling technology to keep the quality of grass carp with little damage caused by freezing storage. The results confirmed that superchilled grass carp could maintain the fresh quality up to 3 weeks. The present study provided a possible application of superchilling for medium period storage of freshwater fish.
The Beneficial Effects of Grape Seed, Sage and Oregano Extracts on the Quality and Volatile Flavor Component of Hairtail Fish Balls During Cold Storage at 4 °C

Abstract:Fishy odor was always generated in hairtail fish balls, decreasing the quality and reducing commercial acceptance. Improving the flavor of hairtail fish balls is a challenge in recent seafood industry. Extracts from sage leaves, oregano leaves and grape seeds (SOG) were proved to be effective in reducing the fishy odor in hairtail fish balls. The primary antioxidants were catechin, epicatechin and rosmarinic acid in SOG with the antioxidant capacity of 0.09 +/- 0.01 mg gallic acid equivalents (GAE)/mL. Gas chromatography mass spectrometry (GC-MS) showed that about 50% volatility off-flavor compounds including aldehydes, ketones, alcohols and hydrocarbons, were reduced by the application of SOG. Inhibition of fishy odor by SOG was directly related with the reduced thiobarbituric acid reactive substances value (TBARs value) and total volatile basic nitrogen (TVB-N), which was likely due to the decreased lipid oxidation and bacteria growth, respectively. These results suggested the beneficial potential for SOG in inhibiting fishy odor formation and improving flavor of hairtail fish balls during storage.
Effect of Chitosan to Keep the Preservation Quality of Fish Ball Made from Silver Carp(Hypophthalmichthys Molitrix)

Abstract:Chitosan was added to fish ball made from silver carp(Hypophthalmichthys molitrix),and the effects on preser-vation quality were determined by biochemical(pH,total volatile basic nitrogen,thiobarbituric acid,peroxide value) and microbiological(total bacterial count) determinations during storage at 4°C.Application of chitosan,at a level of 1%(W/W),exhibited a beneficial effect on inhibiting lipid oxidation and bacterial growth in the gels.The preservative function was relat-ed to the molecular weight of chitosans.Relative low molecular weight chitosan showed a higher antioxidant capacity than high molecular weight chitosan.However,mixture of 300 kDa and 10 kDa chitosans exhibited the highest antibacterial activ-ity.Increases of pH,total volatile basic nitrogen,thiobarbituric acid and peroxide values in gels during storage were signifi-cantly reduced when chitosan was applied.
Chitosan-glucose Maillard reaction products and their preservative effects on fresh grass carp (Ctenopharyngodon idellus) fillets during cold storage

Abstract:Background: A decreasing freshness occurrs in Ctenopharyngodon (C.) idellus during post-mortem storage. In the present study, chitosan-glucose Maillard reaction products (CG-MRPs) were prepared by heating chitosan and glucose at different reaction temperatures and then used for preserving the freshness and quality of C. idellus fillets during cold storage (4 °C). Results: High temperature enhanced the chitosan-glucose Maillard reaction and promoted the accumulation of melanoidins and intermediate compounds. The reducing power of CG-MRPs increased with an increasing reaction temperature. CG-MRPs inhibited the microbial growth rate and retarded the oxidation of proteins, lipids and nucleotides in C. idellus fillets by suppressing total bacterial count, total volatile basic nitrogen, thiobarbituric acid reactive substances and K values during cold storage. Furthermore, CG-MRPs prolonged shelf-life. The fillets treated with the CG-MRPs prepared at 120 °C showed an especially longer shelf-life (7 days). The preservative effect of CG-MRPs on fillets was the result of antibacterial components (melanoidins, reductone and furfural) in CG-MRPs and a reducing power against the oxidative degradation of proteins, nucleotides and lipids in C. idellus fillets. Conclusion: The present study demonstrates that, for C. idellus fillets, treatment with CG-MRPs prepared at 120 °C for 40 min could be a feasible approach for maintaining the freshness of C. idellus fillets and prolonging shelf-life during cold storage. © 2018 Society of Chemical Industry.
Effects of ε-polylysine and chitooligosaccharide Maillard reaction products on quality of refrigerated sea bass fillets

Abstract:Background: The Maillard reaction is a promising and safe method for obtaining chitooligosaccharide conjugates with proteins or peptides as food preservatives. This study aims to investigate the moisture state, physicochemical properties, and shelf-life of sea bass fillets treated with ε-polylysine (ε-PL) and chitooligosaccharides (COS), which are Maillard reaction products (LC-MRPs), during refrigerated storage. Results: The results of microbiological analysis and confocal laser scanning microscope (CLSM) revealed that LC-MRPs could retard microbial growth effectively. Compared with control, other treated groups could strongly retard the increase in the thiobarbituric acid (TBA) value, the K-value and the total volatile basic nitrogen (TVB-N) value, and also inhibited the softening of texture and the accumulation of biogenic amines in fish. The results of low-field nuclear magnetic resonance (LF-NMR) and magnetic resonance imaging (MRI) indicate that LC-MRPs could delay the water migration of fillets and increase water holding capacity (WHC). Through sensory evaluation, the application of LC-MRPs increased the shelf-life of refrigerated sea bass fillets for another 9 days. Conclusion: Maillard reaction products derived from chitooligosaccharides and ε-polylysine have strong potential for preserving sea bass. © 2022 Society of Chemical Industry.
Effects of Fish-Derived Biological Preservatives on Cold Storage of Grass Carp ( Ctenopharyngodon idellus ) Fillets

Abstract:Two kinds of fish-derived natural antimicrobial substances, protamine and catfish ( Clarias fuscus ) epidermal mucus extract (CEME), were evaluated for their effect on the quality of grass carp fillets. Fillets were atmosphere packaged in cast polypropylene bags and were stored at 4°C in a low-temperature incubator without light. Solutions (0.5%, wt/vol) of CEME and protamine were used for dip pretreatment, respectively. Bacteriological (aerobic plate count, Shewanella putrefaciens , Pseudomonas fluorescens ) and physicochemical (pH, total volatile basic nitrogen, K value, surface color, texture profiles, water distribution) parameters and volatile odor compounds were measured on days 0, 3, 6, 9, 12, and 15. The results indicated that CEME and protamine could improve all bacteriological and physicochemical indexes, except water distribution within muscle. In comparison, CEME had a more inhibitory effect, as determined by the aerobic plate count, and was more effective in inhibiting the growth of P. fluorescens ; however, protamine was more effective in preventing the production of sulfur-organic (H2S) group substances. Protamine was more effective in inhibiting the growth of S. putrefaciens . This research suggests that protamine and CEME have the potential to improve the quality and extend the shelf life of grass carp fillets.
Effects of modified atmosphere packaging combined with tea polyphenol treatment on the quality of grass carp during cold storage

Abstract:Abstract In this study, the effect of tea polyphenols (TP) combined with modified atmosphere packaging on the quality change of Cri fish fillets in cold storage was studied, expecting to provide a new strategy for the biological preservation of fish fillets. Fresh fillets were packed in three different methods as follows: Sprayed in 0.5% tea polyphenols solution (CP group);Sprayed in 0.5% tea polyphenols combining 50% CO 2 + 50% N 2 modified atmosphere packaging (MAPC group);50% CO 2 + 50% N 2 modified atmosphere packaging (MAP group) and fresh filletsb was control group. All four groups were storaged at 0°C condition. Total bacterial count, TVB-N, TBA, K and pH were periodically assessed. The microscopic morphology of muscle tissue after 10 days cold storage was observed. After 10 d of cold storage, the TVC in the MAPC group (4.43±0.25 lg cfu/g) was obviously lower than that in the MAP group (5.04±0.65 lg cfu/g) or CP group (4.90±0.21 lg cfu/g), and even lower than that in the control group (6.14±0.17 lg cfu/g). The control group revealed the most obvious growth trend, increasing from 0.15±0.03 mg MDA/kg to 0.65±0.14mg MDA/kg, followed by MAP group (0.15±0.08 mg MDA/kg to 0.52±0.07mg MDA/kg), and CP group (0.13±0.05 mgMDA/kg to 0.47±0.03mg MDA/kg), and the last was the MAPC group with the minimum amplification (0.14±0.02 mg MDA/kg to 0.47±0.13 mg MDA/kg).Tea polyphenols combining with modified atmosphere packaging is a new strategy in maintaining the quality of crisped grass carp during cold storage.

Abstract:Five different drying methods, sun drying, intermittent drying, low-temperature drying at 5°C, low-temperature drying at 15°C, and hot-air drying at 45°C, were comparatively evaluated based on physicochemical properties and sensory properties of dry-cured Layú. Sun drying and intermittent drying Layú showed superior sensory qualities compared with other dried samples. Based on the comprehensive comparison of sensory qualities and safety concerns, intermittent drying Layú was more acceptable compared to other dry-cured Layú and thus was recommended for dry-curing fish products as it could shorten the drying time with relative constant drying rate, increased flavor amino acid content, and fewer safety concerns.

Abstract:The quality of freshwater fish is easy to deteriorate during postmortem storage, so it is necessary to find an effective method to extend the shelf life of fish fillets. The aim of this study is mainly to develop a novel bilayer active film with curcumin/nisin-loaded pectin nanoparticles (CZ-NPs) and evaluate its effect on the quality of fish fillets. The selected sensory, physicochemical (pH, color qualities, TVB-N, TBARS, biogenic amines, moisture state) and microbial properties (microbial enumeration and high-throughput sequencing) were analyzed to confirm the preservative mechanism of films on the fillets. During storage at 4 °C, better sensory evaluation feedback and lower total volatile base nitrogen in the film treated samples was observed when compared to the control samples. Additionally, CZ-NPs film effectively inhibited oxidation, with the final reductions of 1.04 mg MDA/kg flesh when compared to control. As suggested by low-field NMR and magnetic resonance imaging, film treated fillets presented higher water holding capacity by controlling transformation from immobilized to free water. Meanwhile, lower microbial enumerations were also recorded in the CZ-NPs film treated group, which was reduced by a range of 1.8–2.3 log CFU/g on day 10 when compared to control. High-throughput sequencing results showed that the Pseudomonas constituted the main spoilage bacteria of fillets, and CZ-NPs film contributed to the notably suppressed growth of Pseudomonas . As a result, CZ-NPs film showed a desirable application to extend the shelf life of refrigerated flesh, as an alternative for fishery product packaging and preservation.

Biochemical changes and amino acid deamination & decarboxylation activities of spoilage microbiota in chill-stored grass carp (Ctenopharyngodon idella) fillets

Abstract:This study aimed to reveal amino acid deamination and decarboxylation activities of spoilage microbiota in chill-stored grass carp fillets. Results showed that microbial deamination activities of umami/sweet-taste amino acids were higher than that of bitter-taste amino acids. The total deamination activity of tested amino acids decreased during the late period of storage, which inhibited the increase of ammonia in fish flesh. Microbial decarboxylation activity of ornithine was much higher than lysine and histidine, which was consistent with the rapid increase of putrescine in fish fillets. Meanwhile, putrescine could be produced in large quantities through arginine deiminase pathway of spoilage bacteria. Glucose utilization by spoilage microbiota was active during the late period of storage, which was consistent with the rapid consumption of lactate and total sugar in fish flesh. Overall, results of this study could be beneficial for revealing fish spoilage mechanisms and providing theoretical guidance for developing fish preservation technologies.
Study on biological antioxidant effect of Bamboo Leaves as a novel refrigeration preservative on large yellow croaker

Abstract:To prolong the shelf life of large yellow croaker(Pseudosciaenacrocea),water solution of Antioxidants of Bamboo Leaves(AOB)with concentrations of 0.1% and 0.2% were applied to soak the fish samples before refrigeration at(4±1)℃,meanwhile 0.2% of Tea Polyphenols(TP)and saline were used as positive control and blank control,respectively. During the refrigeration process,the thiobarbituric acid(TBA)value,pH,texture,the volatile basic nitrogen(TVB-N)value and the K value were determined to evaluate the effect of AOB as a biological preservative. The results showed that AOB and TP both could effectively extend the shelf life of refrigerated large yellow croaker,and AOB showed even better effect than TP under the same concentration. The best performance of AOB was observed at the concentration of 0.1%,indicating the potential of AOB applied as biological preservative of aquatic.
Effects of Konjac Glucomannan/ε-polylysine Hydrochloride/Ferulic Acid Composite Coating on the Freshness Preservation Performance and Flavor of Refrigerated Sea Bass Fillets

Abstract:Coating preservation has a remarkable effect on the preservation of aquatic products. This work prepared a composite coating using konjac glucomannan (KGM) as the film-forming matrix and ε-polylysine hydrochloride (ε-PL) and ferulic acid (FA) as the preservative. Three types of treated sea bass (KGM, KGM-ε-PL, and KGM-ε-PL-FA) and untreated sea bass were stored at 4 °C for 20 days to compare freshness changes under different treatment conditions. The results showed that the surface color and texture of sea bass in refrigerated storage changed dramatically and deteriorated as storage time increased. The composite coating treatment was significantly different from the control group. Using Gas-phase ion migration spectrometry (GC-IMS) technology, 32 volatile compounds, such as aldehydes, alcohols, and ketones, were found in fillets during flavor quality analysis. The composite coating can successfully inhibit the formation of odor compounds such as 2-nonenone, isoamyl alcohol monomer, ammonia, and trimethylamine, delaying the deterioration of fish and improving freshness. Among them, KGM-ε-PL-FA composite coating has the most remarkable preservation performance, which significantly inhibits the occurrence of rotten odor, and has a potential application prospect in the field of food preservation.

Abstract:This research was conducted to investigate the effect of active coatings composed of locust bean gum (LBG) and sodium alginate (SA) containing daphnetin emulsions (DEs) combined with modified atmosphere packaging (MAP) on the microbiological and physicochemical properties of turbot during 4 °C refrigerated storage for 32 days. The results revealed that LBG-SA-DE coatings together with high CO2 MAP (60% CO2/35% N2/5% O2) maintained the total viable count (TVC) of H2S-producing bacteria in 4–6 lg CFU/g, which is lower than the limit (7 lg CFU/g). In addition, LBG-SA-DE coatings together with high CO2 MAP (60% CO2/35% N2/5% O2) inhibited the production of odor compounds, including thiobarbituric acid (TBA), trimethylamine-nitrogen (TMA-N), K value, and total volatile basic nitrogen (TVB-N). The low-field NMR analysis (LF-NMR) and magnetic resonance imaging (MRI) indicated that LBG-SA-DE coatings together with high CO2 MAP (60% CO2/35% N2/5% O2) treatments could delay the release of water located in muscle fiber macromolecules or convert it into free water based on muscle fiber destruction, thus maintaining the water content and migration. The results of the sensory evaluation showed that turbot treated with LBG-SA-DE coatings together with MAP could maintain its freshness during refrigerated storage.

Abstract:The effect of the natural preservatives, tea polyphenols and rosemary extract, on microbiological [total viable count (TVC)], chemical [pH, total volatile base nitrogen (TVB-N), K-value and thiobarbituric acid (TBA) values], texture and sensory changes of air-packaged whole crucian carp (Carassius auratus) stored at 4±1°C was investigated for 20days. The shelf-life of crucian carp was found to be 7–8days for untreated group (control), 13–14days for tea polyphenols group and 15–16days for rosemary extract treated group according to sensory assessment results, for which the corresponding microbiological assessment also showed an increased shelf-life. Meanwhile, the increases of pH, TVB-N, K-value and TBA values were significantly delayed in both treated groups of samples compared to the control group. Thus, either tea polyphenols or rosemary extract could be used as potential preservatives to extend the shelf-life of crucian carp during chilled storage.

The segment contains a stretch of 31 uncharged amino acid residues and is localized between the NH2-terminal and the COOH-terminal hydrophilic regions of the molecule.
