Abstract:Gene editing contributes to enhancing food security through the creation of novel foods. However, public perception of gene-edited (GE) foods is crucial to their acceptance and adoption. This study expanded the knowledge-attitude-practice model and constructed an integrated framework comprising four dimensions: demographic factors, scientific literacy and beliefs, social trust, and perceptions of gene technology, aimed at explaining the public's attitudes toward GE foods. A questionnaire survey was conducted (N = 649), revealing a positive attitude toward GE foods, with over 80% expressing a certain willingness to pay (WTP) for them. Factors such as income level, subjective knowledge, scientific beliefs, trust in scientists, trust in government, and trust in national technological capabilities and perceived benefits positively correlated with WTP. Conversely, objective knowledge, perceived risks, and perceived ethical concerns were negatively correlated with WTP. The impact of objective knowledge on attitudes toward GE foods demonstrated a significant, nonlinear relationship. Additionally, it is noteworthy that the Chinese public currently exhibits relatively low trust in national technological capabilities, necessitating vigilance against the emergence of conspiracy theories akin to those surrounding genetically modified foods. This research contributes theoretical insights into the public communication of GE foods.
Canadian consumer acceptance of gene‐edited versus genetically modified potatoes: A choice experiment approach

Abstract:<p>In 2016, second‐generation genetically modified (GM) potatoes were approved for production and sale in Canada. In this study, we analyze how consumer acceptance of GM potatoes may be affected by various factors, including the trait introduced (i.e., the product benefits), the type of breeding technology used, and the developer of the potato using any technology. We conduct an online survey and use a stated choice experiment to collect data on consumer acceptance of GM and other potatoes in Canada. Random utility models are used to analyze the economic value consumers place on the various attributes of the potatoes. Our results show that consumers are willing to pay more for a health attribute (reduced acrylamide produced when potatoes are fried) and an environmental attribute. Respondents in general need to face discounted prices to buy potatoes created by either gene editing or GM (either transgenic or cisgenic/intragenic) technologies. However, consumers are in general more accepting of the gene editing technology than the GM technologies. Our results also show that government is the most preferred developer of the potatoes, regardless of technology. Results from this study can help guide public and private management of the introduction of new foods when the products are developed with unpopular technologies.</p>

Abstract:This study estimates consumers’ willingness to pay for specific product (quality) and process (agronomic) attributes of table grapes, including taste, texture, external appearance, and the expected number of chemical applications, and for the breeding technology used to develop the plant. Considering varietal traits, on average our survey respondents were willing to pay the highest price premiums for specific offers of improvements in table grape taste and texture, followed by external appearance and expected number of chemical applications. Considering breeding methods, on average our respondents were willing to pay a small premium for table grapes developed using conventional breeding rather than gene editing (e.g., CRISPR). Results from a latent class model identify four different groups of consumers with distinct preferences for grape quality attributes and breeding technologies. The group of consumers most likely to reject gene editing considers both genetic engineering and gene editing to be breeding technologies that produce foods that are morally unacceptable and not safe to eat.

Abstract:The CRISPR gene-editing (GE) breeding method is used to increase the resilience of high-yielding tomato cultivars against pests and diseases, reducing crop protection requirements. This study investigated consumers’ willingness to buy CRISPR GE tomatoes in a repeated discrete-choice experiment. We observed a strong positive effect of providing information on the CRISPR breeding technology, while the sensory experience of the CRISPR GE tomatoes in a visit to a greenhouse had a rather weak, predominantly negative effect on the participants’ willingness to buy CRISPR GE tomatoes. We found that roughly half of the 32 participants demonstrated constant CRISPR GE tomato choices during the experiments, and these participants were mainly employed as scientists. However, the rest of the participants changed their CRISPR GE tomato choices, with the majority showing an increase in their willingness to buy CRISPR GE tomatoes; these “changers” were dominated by non-scientists. Science communication on CRISPR GE breeding technology should target people with little knowledge about the technology, and consumers of organic tomatoes seem to have more specified, stable preferences regarding the technology. Further, scientific information about the CRISPR GE methodology should preferentially be provided when new technology and information about it are not yet widespread and people have not yet formed a strong opinion about the technology.

Abstract:In contrast to the widespread adoption of agricultural commodities modified using biotechnology, the adoption rate of bioengineered specialty crops by growers remains low. The use of bioengineered crops has been controversial since their introduction in the 1990s due to concerns about their potentially harmful effects to human health, the environment, and other socioeconomic issues. To identify grower preferences, perceived opportunities, and barriers to growing bioengineered crops, we surveyed Minnesota specialty crop growers using a web‐based survey. The survey measured whether adoption rates are influenced by the specific trait of the modification, the method of bioengineering (genetically modified [GM] vs. genetically edited [GE]), or the end use of the crop being grown (ornamental vs food). Overall willingness‐to‐pay for both GM and GE potatoes was significantly lower than for conventional potatoes, and nearly a quarter (25%) of our respondents never chose a bioengineered option no matter the benefits. Results were similar for petunias, but fewer respondents (18%) refused to consider the bioengineering option. The type of bioengineering did not have as significant an impact on adoption rate as price or end use. The bioengineered ornamental crop had a higher willingness to adopt than the bioengineered food crop. Abstract:Despite the rising interest in the concept of cultured meat, there remains scant information about whether consumers would value it. This study evaluated, for the first time, consumers’ willingness-to-pay (WTP) for cultured chicken breast using a choice experiment in three large Chinese cities: Beijing, Shanghai, and Guangzhou. We also explored the effect of different types of information, including positive information, negative information, and a combination of positive and negative information (i.e. mixed information) on consumers’ WTP for cultured chicken breast. Results showed that consumers were willing to pay a premium price for cultured chicken breast. Information effects depended on consumer demographics and prior beliefs concerning cultured meat. Young consumers with higher education level were more sensitive to mixed information, while consumers who had heard about cultured meat prior to the study and were willing to buy cultured meat in the future were more responsive to negative information. The results have practical implications for pricing, marketing, policy makers, and educational programs related to cultured meat.

Abstract:Many technologies face disapproval from some portion of the general public due to perceived risks or externalities. Individuals can respond to these controversial technologies either as consumers by choosing favorable alternatives or as voters by supporting regulation. We examine the relationship between willingness to pay a premium for products that avoid a controversial technology and willingness to vote in favor of a ban or mandatory labeling, with a focus on how this relationship is influenced by income and perceived risks. In a survey regarding genetically modified (GM) food, we find that the majority of respondents make consumer and voter choices that can be explained by a standard utility maximization framework. However, certain respondent characteristics are correlated with inconsistent choice patterns. In particular, low‐income voters appear to be overly supportive of regulation relative to their private willingness to pay. Voters who are uncertain about the safety of GM food also tend to be more in favor of regulation than their consumer choices would imply.

Abstract:Unlike genetic modification, genome editing (GE) technologies can be used to yield transgene‐free outcomes, which is an important aspect in promoting consumer acceptance of GE foods. In addition, with the advent of the clustered regularly interspaced short palindromic repeats/Cas9 (CRISPR/Cas9) system, which is known to be exceptional among genome editing tools, GE has numerous potential applications in plant breeding technology to create diverse desirable traits, especially consumer‐targeted traits such as improved product quality and nutrition. It is expected that the GE foods market will overtake that of genetically modified (GM) foods. Although few GE products have been introduced to the market, some studies have already evaluated consumer acceptance and valuation of GE foods in comparison with GM and conventional foods. However, these studies mainly focused on traits relevant to cultivation efficiency and ignored consumer preferences for desirable traits. Further, it has been shown that consumers evaluate GE foods somewhat higher than GM foods; yet, as observed for GM foods, consumers expect a discounted price for GE foods. GE application for consumer‐targeted traits could, however, have a potentially positive effect on consumer acceptance. This study was conducted to evaluate consumer acceptance and valuation of quality‐improved consumer‐targeted GE products. We defined the determinants and estimated the willingness to pay a price premium for GE rice compared to GM and conventional rice by using the double‐bounded contingent valuation method under different information treatments. The survey was conducted in Vietnam, where consumers have not been exposed to information regarding GE via social media that could lead to a biased perspective. This context is ideal for investigating the effect of information provision during the introductory stage of GE products to the market. Our main findings suggest that consumers will widely accept quality‐improved GE foods targeted at consumer preferences, as well as the positive influence of in‐depth information provision on potential consumer acceptance. Abstract:There is no consensus about whether the food traceability system planned for construction in China or other countries should record detailed information like the beef traceability system in Japan, or simple abbreviated information similar to that provided in the USA. Using apple as a research subject, we adopted random nth price experimental auction to investigate the willingness to pay (WTP) for traceability based on abbreviated and detailed information among consumers in China. Totally 88 participants attended the experimental auction. The results showed that consumers had a positive WTP for both types of food traceability system, but the average premium that consumers were prepared to pay for traceability with detailed information was 10% higher than that with abbreviated information. Males, married subjects, and those with a relatively low educational level placed a higher premium on traceability with detailed information, but consumers with good self-reported health did not want to pay a high premium for traceability with detailed information. The results also showed that consumers were most interested in a food traceability system that provides quality certificates and details of the chemical fertilizers/pesticides used in food production. We discuss the implications of these results for the implementation of a food traceability system.

The results also show that consumers show much interest in information of quality certificate and chemical fertilizers/pesticides used in food production provided by food traceability system. Implications for implementing food traceability system were discussed.

Abstract:This study centers on analyzing Mexican consumers' willingness to pay (WTP) for imported US fresh apples subjected to irradiation, contrasting it with the more prevalent postharvest chemical treatments. We collect data using a survey tool in Qualtrics designed to explore the impact of information dissemination through two distinct narrative styles: scientific and layman. The study uses a between‐subjects approach and apply the propensity score matching to address potential confounding factors across respondents' samples. We apply the generalized multinomial logit models in WTP space, taking into consideration respondent's certainty when answering to the choice experiment questions. Our findings reveal that respondents are willing to pay less for apples treated with irradiation compared to untreated ones but more than apples treated with chemicals. The WTP for irradiation increases when respondents receive information about this technology from both the scientific and layperson narrative styles. Similar to findings in previous studies, WTP for irradiated food is affected by gender, age, income, family size, and level of education. This study contributes to the literature by identifying the key factors that strongly influence consumers' decisions to opt for irradiation‐treated fresh fruits. Psychological determinants of willingness to taste and purchase genetically modified food

Abstract:Decreasing acceptance of biotechnologies over time has been reported in Europe. Studies claim that attitudes are negative, even hostile, and that people are very worried about genetic engineering in food and medicine. However, such studies are mostly based on surveys and these have significant methodological problems, such as low response rates, which may indicate that only those with strong views respond, thus biasing the sample. Here an alternative method, involving "topic-blind" recruitment of participants and a behavioral measure (food tasting), was used. We show that in a topic-blind sample of 100 individuals, 93% willingly tasted and ate what they believed to be genetically modified (GM) food in an experimental setting, and 48% said they would buy GM food in the future, results that are surprising in the context of other reports about attitudes and intentions toward GM food. Purchasers and nonpurchasers differed in their attitudes toward GM food on key risk-related scales (particularly on a dread-not dread scale--a measure of integral affect--and an ethical-unethical scale). Despite these differences, however, and despite their negative attitude, most nonpurchasers (85.7%) still tasted the GM apple. Incidental affect (state stress and trait worry) was not found to influence risk-related judgments about GM food. Integral affect (dread of GM plants and animals used for food) and concerns about the future risks of GM animals in food were found to be key predictors of willingness to purchase GM food.

Abstract:Genome editing (GE) has emerged as a technology that could revolutionize food and agricultural production. While its advent has evoked enthusiasm for a more sustainable food system, there exists heterogeneity in regulations and public opinions regarding the technology. This review discusses evidence on the implications of government regulations on GE, and perceptions of genome-edited (GEd) food and related regulations. The review highlights consumers' positive attitude and preference for GEd foods when compared with genetically modified foods, despite the limited awareness and knowledge of GE technology. While policy changes might trigger debates, providing tailored benefits, information to consumers could further improve their attitude toward GE.

Abstract:Consumer attitudes towards genetically modified foods (GMFs) play a crucial role in the development of the technology. Both government and food manufacturers of agricultural products in the US and China are optimistic about the potential market for these foods. This paper compares two national consumer surveys conducted in the US and China. To determine if influential factors are driving consumers' attitudes towards GM plant and animal products in both countries a binary logic model is used. Findings suggest that for the majority of American and Chinese consumers while their overall knowledge of GM food is low, their attitudes toward the technology are generally supportive. Consumers in both countries are more accepting of GM plant products then GM animal products. Interestingly, gender, living place, and awareness of GM foods have similar significant effects for both countries.

Abstract:CRISPR-Cas9 (gene editing) increases the speed and precision of genetic improvements in plant breeding; however, relatively little is known about how consumers will respond to this innovation. Drawing upon Cultural Cognition Theory, the paper examines the influence of cultural worldviews on consumer acceptance of gene editing. Data from an online survey of Canadians show that a hierarchical (versus egalitarian) worldview, positive attitudes toward science and technology, and lower levels of prior risk perceptions influence public acceptance. Attitudes toward the use of gene editing in plant breeding appear less firmly entrenched than for genetic modification, with implications for the scientific community and policymakers.

Abstract:Food products containing genetically modified (GM) ingredients have entered the market over the past decade. The biotech industry and environmental groups have disseminated conflicting private information about GM foods. This paper develops a unique methodology for valuing independent third‐party information in such a setting and applies this method to consumers’ willingness to pay for food products that might be GM. Data are collected from real consumers in an auction market setting with randomized information and labeling treatments. The average value of third‐party information per lab participant is small, but the public good value across U.S. consumers is shown to be quite large. (JEL C91, D12, D82)

Abstract:Estimating the demand for greener products may be challenging when these products are not yet on the market. We design an experiment to elicit the willingness-to-pay (WTP) for a novel product in a non-hypothetical way, despite the fact that the product is not marketed and thus cannot be delivered to participants. We consider a cultured meat product which is presented to participants using the producer's advertising. The basic experimental device consists in eliciting (i) how much a participant is willing to pay for the product under uncertainty about product delivery, and (ii) her beliefs about the probability that the product will be actually delivered. In our sample of 158 French students, under 20% of participants never want to buy the product, and below 10% assign a probability of zero that the product will be delivered if purchased. The average WTP is fairly low, at about 3 Euros per 100 g. A number of factors increase (e.g., education and low meat consumption) or decrease (e.g., neophobia and disgust) this WTP. The simple exposure to the new meat substitute during this experiment reduces subjects' pro-meat justifications. We investigate the external validity of our results using a hypothetical survey on a representative sample (N = 1200). We also discuss methodological issues such as deception and incentive compatibility.

Consumers' Willingness to Pay for Biotech Foods in China: A Contingent Valuation Approach

Abstract:Based on a large-scale survey, this study employs the contin- gent valuation method to estimate consumers' willingness to pay (WTP) for biotech foods in China and to account for the effects of respondents' characteristics on the likelihood of pur- chasing biotech foods and WTP. The survey, covering 1,100 consumers in 11 small-to-large cities (including Beijing and Shanghai) along China's eastern coast, was conducted in the fall of 2002. Although the survey covers eight different kinds of biotech foods, soybean oil made from imported biotech soy- beans and insect-resistant biotech rice are the focus. A major- ity—about 60% or higher—of respondents were willing to purchase biotech foods without any price discounts. However, about 20% of them would only accept non-biotech foods. Price premiums that respondents were willing to pay for non-biotech foods averaged about 23-53% for non-biotech soybean oil and 42-74% for non-biotech rice. The lower bound WTP comes closer to the true value in light of hypothetical bias associated with the contingent valuation method.
