Abstract:A new simple system for accurately measuring overall total volume changes in unsaturated soil specimens with a triaxial apparatus is introduced in this paper. The basic principle of the measuring system is to record changes in the differential pressure due to changes in the water level inside an open-ended, bottle-shaped inner cell caused by volume change in the specimen and inside a reference tube using an accurate differential pressure transducer. Several important steps were taken to improve the accuracy and sensitivity of the measuring system. Detailed calibrations were carried out to account for apparent volume changes as a result of changes in cell pressure, fluctuation in the ambient temperatures, creep in the inner cell wall, and relative movement between the loading ram and the inner cell. The calibration results demonstrate that the measuring system is reasonably linear, reversible, and repeatable. The estimated accuracy of the measuring system is in the order of 32 mm(3) (or 0.04% volumetric strain for a triaxial specimen 38 mm in diameter and 76 mm in height) once the system is properly calibrated.
Relationships Between Cooking Properties and Physicochemical Properties in Brown and White Rice

Abstract:Brown rice presently attracts a growing number of customers due to its perceived health benefits, but its cooking properties differ from white rice. This study aims to investigate the relationship between physicochemical properties and cooking properties of brown rice and white rice. Brown rice samples generally are found to have higher thousand kernel weight, and minimum cooking time, but lower length/breadth ratio, pasting viscosity values (except setback), swelling power, water uptake ratio, gruel solid loss, cooked length/breadth ratio, and elongation ratio than white rice. Brown and white rice from the same cultivar show some differences regarding their gelatinization properties. The cooking property differences between brown and white rice may be explained by impact of embryo and protection by bran layers. Correlation analysis indicate that cooking properties are little correlated to the flour physicochemical properties, except minimum cooking time. Although apparent amylose content show strong correlations with most flour physicochemical properties, gelatinization temperature may be preferred to be used for prediction of minimum cooking time in both brown and white rice.

Abstract:Small-scale concentrated solar power systems have a higher levelized cost of electricity than large-scale systems. Therefore, this ‎study aims to evaluate small-scale concentrated solar ‎power ‎systems, ‎which use thermal energy ‎directly without having to produce ‎electricity, with particular emphasis on the use of solar ‎cooking. ‎ The sun's rays are reflected using a huge number of mirrors and focused on a ‎focal ‎point (the target), in this study, the bottom of the ‎cooking pot.‎ ‎The study encompasses three ‎main ‎parts: 1) the design and manufacture of a small-scale central receivers model for solar cooking; 2) the installation of an automated solar tracking system; and 3) the ‎experimental studies. The area of the proposed model is 1 ‎m 2 , while the ‎heliostat ‎area is 0.56 ‎m 2 . For the tracking procedure, the astronomical almanac method was utilized to estimate the sun's position; this technique is not affected by ‎ambient ‎conditions like ‎clouds.‎ Despite employing normal flat mirrors and conducting the tests in inclement weather (winter), the results were excellent and suggested a possible interest. A half-liter of water took 20 minutes to heat up to the point of starting boil, and 193°C was the oil's highest measured temperature‎. This result can be improved by using high-absorptivity cooking pots and specialized mirrors such as Fresnel lenses. Efficiency for the water studies varied from 50% to 76%, where a half litter took only 18 minutes to get to the highest temperature, while for a half litter of oil, efficiency was 79%.

Abstract:A dynamic model that considers heat transfer laws, internal heat distribution, and different cooking strategies was developed to simulate dumpling cooking. The cooking strategies that were considered include refilling water, changing heating power, and adding dumplings. The concept of degree of doneness (DoD) was used to gauge the appropriate level of cooking dumplings. Experiments were designed to determine the acceptable range of DoD. The developed model enables the prediction of water and dumpling temperatures, water evaporation, and dumpling quality. The model, which reflected the evolution of dumpling cooking, may be used as a basis to optimize the process for energy saving and full automation purpose.

Abstract:Innovations in fluid mechanics are leading to better food since ancient history, while creativity in cooking inspires applied and fundamental science. Here, we review how recent advances in hydrodynamics are changing food science, and we highlight how the surprising phenomena that arise in the kitchen lead to discoveries and technologies across the disciplines, including rheology, soft matter, biophysics and molecular gastronomy. This review is structured like a menu, where each course highlights different aspects of culinary fluid mechanics. Our main themes include multiphase flows, complex fluids, thermal convection, hydrodynamic instabilities, viscous flows, granular matter, porous media, percolation, chaotic advection, interfacial phenomena, and turbulence. For every topic, we first provide an introduction accessible to food professionals and scientists in neighbouring fields. We then assess the state-of-the-art knowledge, the open problems, and likely directions for future research. New gastronomic ideas grow rapidly as the scientific recipes keep improving too.

Here, I am reporting some very attractive contents that we can find in these books. The reader will see the discussion proposed in fours case studies: concretes, coatings, amorphous materials and colloidal crystals, to describe them in modern words.

Abstract:The paper discusses the tale that we can find in "The Architecture" by Vitruvius, on a method used by Archimedes to determine the percentage of gold and silver in a crown. The method is based on the immersion of bodies, allowing the evaluation of their volume in the case of irregular shapes. The measurement, as reported in "The Architecture", seems to be difficult to realize. But, using a vessel for a water-clock, the approach that Vitruvius described is possible. Here the discussion and experiments.

Abstract:This chapter introduces some finite-volume formulations-based numerical methodology to explain heat and mass transfer associated with food products and their processing. Given the growing need for understanding various food processing techniques (like sterilization, drying, cooling, and freezing) from a fundamental point of view, finite-volume formulations are used widely. We attempt to introduce such formulations through the representation of a control volume in a Euclidean space. This is followed by developing a solution strategy based on finite-volume methods, suitable for the cases most straightforward. The chapter explicitly discusses discretization and interpolation procedures for the simplest of the scenarios. Besides, there is a mention of relevant boundary conditions that may be present in a problem. The chapter ends by showcasing finite-volume methodology in heat and mass transfer in some food processing techniques. One gets an idea regarding how a food processing problem is formulated, followed by setting up boundary conditions and solving the same for a numerically adequate domain, leading up to rigorous parametric analysis in the end.
An automatic electronic instrument for accurate measurements of food volume and density

Abstract:Objective: Accurate measurements of food volume and density are often required as 'gold standards' for calibration of image-based dietary assessment and food database development. Currently, there is no specialised laboratory instrument for these measurements. We present the design of a new volume of density (VD) meter to bridge this technological gap. Design: Our design consists of a turntable, a load sensor, a set of cameras and lights installed on an arc-shaped stationary support, and a microcomputer. It acquires an array of food images, reconstructs a 3D volumetric model, weighs the food and calculates both food volume and density, all in an automatic process controlled by the microcomputer. To adapt to the complex shapes of foods, a new food surface model, derived from the electric field of charged particles, is developed for 3D point cloud reconstruction of either convex or concave food surfaces. Results: We conducted two experiments to evaluate the VD meter. The first experiment utilised computer-synthesised 3D objects with prescribed convex and concave surfaces of known volumes to investigate different food surface types. The second experiment was based on actual foods with different shapes, colours and textures. Our results indicated that, for synthesised objects, the measurement error of the electric field-based method was <1 %, significantly lower compared with traditional methods. For real-world foods, the measurement error depended on the types of food volumes (detailed discussion included). The largest error was approximately 5 %. Conclusion: The VD meter provides a new electronic instrument to support advanced research in nutrition science.

Abstract:The STEM (science, technology, engineering and mathematics) approach to education has acquired considerable prominence among teachers in recent years. Putting forward integrated proposals is nonetheless complex and many educators opt to implement the ones set out in textbooks. We consequently deemed it worthwhile to analyse how content common to mathematics and science is addressed in primary school textbooks with a view to determining whether the approaches adopted complement one another and are compatible with STEM education. More specifically, in light of the importance of measurement in both areas of learning and in everyday life, we describe the meaning of mass and volume found, in two publishers’ textbooks. Based on the components of the meaning of measurement and deploying content analysis techniques, we analysed the explanations and tasks set out in these mathematics and science books to identify the similarities and differences in the handling of those magnitudes in the two subjects. Our findings showed the proposals for teaching mass to pursue similar objectives in the earliest grades, addressing matters that could be included in STEM proposals. On the contrary, inconsistencies were detected in the distribution of volume measurement-related content, as well as in the strategies, units and tools used in the two areas.

Abstract:Abstract Chemical analyses of carbonized and absorbed organic residues from archaeological ceramic cooking vessels can provide a unique window into the culinary cultures of ancient people, resource use, and environmental effects by identifying ingredients used in ancient meals. However, it remains uncertain whether recovered organic residues represent only the final foodstuffs prepared or are the accumulation of various cooking events within the same vessel. To assess this, we cooked seven mixtures of C 3 and C 4 foodstuffs in unglazed pots once per week for one year, then changed recipes between pots for the final cooking events. We conducted bulk stable-isotope analysis and lipid residue analysis on the charred food macro-remains, carbonized thin layer organic patina residues and absorbed lipids over the course of the experiment. Our results indicate that: (1) the composition of charred macro-remains represent the final foodstuffs cooked within vessels, (2) thin-layer patina residues represent a mixture of previous cooking events with bias towards the final product(s) cooked in the pot, and (3) absorbed lipid residues are developed over a number of cooking events and are replaced slowly over time, with little evidence of the final recipe ingredients.

Abstract:Great attention has been given in recent years to the relationships between metrology, agriculture, and food. This study aims at providing an analysis of the literature regarding the relationships between metrology, agriculture, and food. The Scopus online database has been used to extract bibliometric data throughout the search string: TITLE-ABS-KEY (Metrology* AND Agriculture* OR Food*), and the VOSviewer bibliometric software was used to visualize results as bubble maps. The novelty character of this perspective paper is to indicate and point out the main research themes/lines addressing the relationships between metrology, agriculture, and food by analyzing: (i) the authors of the published papers; (ii) the type of paper; (iii) the countries and institutions where the research is developed. Bibliometrics allows one to holistically examine entire scientific areas or sub-fields to get new qualitative and quantitative insights. These results represent a useful tool for identifying emerging research directions, collaboration networks, and suggestions for more in-depth literature searches.
Volatility Characterization of Cooking-Generated Aerosol Particles

Abstract:Cooking-generated aerosol characterization is crucial for providing an accurate evaluation of human exposure to particle concentrations. In addition, when evaluating the dimensional properties of aerosols emitted from cooking activities, one key aspect to be investigated is the composition of the particles emitted. To this end, an evaluation of the volatility of cooking-generated aerosol particles was performed in this study. Total concentration and size distribution measurements were carried out using a thermal conditioning device, along with a scanning mobility particle sizer (SMPS) and an aerodynamic particle sizer (APS), in order to evaluate the amount of volatile material emitted by different cooking activities (frying and grilling), as well as those involving different kinds of food (fatty and vegetable foods). The results showed a shift in the dominant size distribution mode toward smaller diameters with higher aerosol conditioning temperatures. The corresponding total number concentrations were roughly constant when fatty foods were cooked, but a significant reduction in total particle concentration was observed when vegetable foods were fried or grilled. These results seem to demonstrate the presence of a nonvolatile core when cooking fatty foods. The larger volatile fraction associated with vegetable food cooking is also demonstrated by comparing the nonvolatile surface area and volatile mass distributions for each cooking activity, in order to evaluate the particle's chemical and physical effects on human being.

Abstract:Food science is a domain of life science. Applications of thermal analysis and calorimetry (TAC) to food products deal with many investigation targets spanning from the characterization of the systems at molecular and supramolecular level to the description of the microbial metabolism. Food products are multi-phase and multi-component metastable systems where several processes can occur simultaneously during the preparation process and the shelf life. One therefore has to disentangle various contributions to the overall instrumental outputs, using appropriate data treatments and kinetic models, and/or results from other experimental approaches. The paper reports an updated survey of TAC applications to food products through specific examples of data treatments.

Abstract:In order to explore the indoor air quality during different cooking procedures, a very common kitchen in China is selected for experimental research. An indoor air quality meter is used to measure the temperature, relative humidity, and CO and CO2 concentrations of the indoor air above the stove when people cook four different dishes under different ventilation patterns in the kitchen. The results indicate that the heat and gas consumed during cooking are closely related to the temperature and concentrations of CO and CO2. Some cooking procedures such as boiling water are related to the indoor air temperature and relative humidity in the kitchen. In addition, in kitchens without mechanical ventilation, natural ventilation shows a more significant positive effect on controlling temperature, relative humidity, and concentrations of CO and CO2 during cooking procedures.

Abstract:This study investigates the effects of three cooking methods (boiling, steaming and microwaving) on the nutritional and physical properties of cauliflowers, carrots and sweet potatoes; e-senses were applied to interpret the sensory characteristics according to physico-chemical aspects. The nutritional quality was evaluated by determining the concentrations of key components and the antioxidant activity; e-sense data, combined with texture parameters, were processed by a principal component analysis. The cooking method and time significantly influenced the quality of the three products. Boiling, which detrimentally affected ascorbic acid, total phenolic concentration and antioxidant activity, enhanced carotene accessibility. Steaming produced losses in ascorbic acid, increasing total phenolics and carotenoids. Microwaving resulted in minor changes in ascorbic acid concentrations, preserved carotenoids and increased total phenolics. The nutritional quality was better preserved or enhanced using shorter cooking times. The elaboration of the data collected by the e-senses showed a clear evolution according to the cooking method and time. The results helped to determine the cooking method that best preserves the nutritional properties of the vegetables, highlighting the applicability of rapid instrumental methods to interpret the evolution of sensory characteristics.

Abstract:Understanding the hydration behavior of cereals during cooking is industrially important in order to optimize processing conditions. In this study, barley porridge was cooked in a sealed tin can at 100, 115, and 121 degrees C, respectively, and changes in water uptake and hygroscopic swelling in dehulled barley grains were measured during the cooking of canned porridge. In order to describe and better understand the hydration behaviors of barley grains during the cooking process, a three-dimensional (3D) numerical model was developed and validated. The proposed model was found to be adequate for representing the moisture absorption characteristics with a mean relative deviation modulus (P) ranging from 4.325% to 5.058%. The analysis of the 3D simulation of hygroscopic swelling was satisfactory for describing the expansion in the geometry of barley. Given that the model represented the experimental values adequately, it can be applied to the simulation and design of cooking processes of cereals grains, allowing for saving in both time and costs.

Abstract:Some physical aspects of Chinese cuisine are discussed. We start from the cultural and historical particularities of the Chinese cuisine and technologies of food production. What is the difference between raw and boiled meat? What is the difference in the physical processes of heat transfer during steaming of dumplings and their cooking in boiling water? Why is it possible to cook meat stripes in a "hot pot" in ten seconds, while baking a turkey requires several hours? This article is devoted to discussion of these questions.

Abstract:Cooking is essential for preparing starch-based food, however thermal treatment promotes the complexation of biopolymers, impacting their final properties. Comprehensive Multiphase (CMP) NMR allows all phases (liquids, gels, and solids) to be differentiated and monitored within intact samples. This study acts as a proof-of-principle to introduce CMP-NMR to food research and demonstrate its application to monitor the various phases in spaghetti, black turtle beans, and white long-grain rice, and how they change during the cooking process. When uncooked, only a small fraction of lipids and structurally bound water show any molecular mobility. Once cooked, little "crystalline solid" material is left, and all components exhibit increased molecular dynamics. Upon cooking, the solid-like components in spaghetti contains signals consistent with cellulose that were buried beneath the starches in the uncooked product. Thus, CMP-NMR holds potential for the study of food and related processes involving phase changes such as growth, manufacturing, and composting.
