Abstract:Gum polysaccharides, derived from various sources, are considered as renewable and sustainable materials. The tunable physical, chemical, and biological properties make them fit for use in health care, biomedicine, energy, tissue engineering, environment, pharmaceuticals, automobiles, food, and space industries. They are colorless, chemically inert, tasteless, biocompatible, inexpensive, odorless, and nontoxic. Recently, plant gums have opened up a new area in the pharmaceutical and food industries. The ancient history and toxicological reports indicate that gums including tragacanth, ghatti, acacia, and karaya gum have been consumed as safe food. In addition, gums have great advantages to be used as a edible coating agent for fruits and vegetables which improves their shelf-life and post-harvesting quality. Importantly, gums are only the alternative source to produce gluten-free food products. In the pharmaceutical industry, gums have immense demand for the formulation of tablet (disintegrants, diluents, and binders), suspension (protective colloids), oral liquids (thickener), and gels (gelling agent). Due to the diverse physicochemical properties of natural gums, many researchers exploit them in drug delivery, nanofibers, tissue engineering, film formation, nanoparticles, and wound healing dressings. In this book chapter, we have described the source, composition, classification advantages, and food and pharmaceutical application of gum polysaccharides.

Abstract:Gums are biopolymers with many functional and innovative properties in the food industry. They are complex carbohydrate biomolecules capable of bonding with water, generating gel and mucilage structures. Among different gums, plant-based gums (PBGs) are one of the most important groups as they possess key characteristics such as stabilizing potential, viscosity enhancement, emulsifying and surface-active property, extensive adaptability, and affordability leading to their application in the formulation of food products. PBGs are extensively used in the confectionery, encapsulation of flavors and colors, emulsions, carrier agents, as dietary fiber, thickening/foaming agent, formulation of functional foods, and stabilizers in beverages and other food products. More importantly, researchers and food industries have been engrossed to reveal the undisclosed potential of PBGs and the impact of chemical composition and molecular structure on their techno-functional characteristics Therefore, this review study aims to explore the structure and physiochemical/functional properties of PBGs and their application as techno-functional materials in different food industries.

Abstract:Basil seed gum (BSG) is a new hydrophilic colloid of natural plant origin. Extracted from basil seeds, it possesses excellent functional characteristics in terms of emulsification, rheology, gelation, stability, and adsorption, which are just as favorable as those of certain commercial gums. Besides, BSG has been widely used in food, medicine, industry, and many other fields for its physiological functions of weight reduction, detoxification, and control of blood sugar and cholesterol as a good dietary fiber. In this paper, we analyzed and discussed the extraction procedures, composition structures, functional characteristics, and modification strategies of BSG. In addition, we summarized the latest research on the applications of BSG in different industries to provide theoretical references for the high-value processing and utilization of BSG.

Abstract:To achieve sustainable development, increasing attention has been paid to the utilization of renewable polysaccharides extracted from plant gum instead of synthetic materials. Peach gum polysaccharide (PGP) is a typical polysaccharide, which can be readily obtained by hydrolysis of peach gum, one of the abundant plant gums in the world. In the past decade, the research on the hydrolysis, structure, properties and applications of PGP has aroused great interest. The PGP with highly branched macromolecular structure shows remarkable merits of numerous functional groups, excellent water solubility, good biocompatibility, favorable emulsifying property, fine antioxidant and antibacterial activity, and low cost. The application of PGP has expanded from the pharmaceutical field to the fields of food, adsorbents, functional carbon materials, binders and gel materials. This review systematically introduces the research progress of PGP, as well as the opportunities and challenges faced by PGP in scientific research and practical application.

Abstract:Phytoalexins are antimicrobial compounds of low molecular weight that are synthesized and accumulated in plants after exposure to microorganisms.Recent studies have revealed that phytoalexins carry a variety of nutrition and have numerous biological functions including antioxidant activity,anti-inflammation activity and anti-cancer activity.Thus phytoalexins as a crucial secondary metabolite,have a great potential to be applied in the fields of functional food and dietary supplement.This paper was an overall study on the variety,beneficial property,elicitation and accumulation of phytoalexins in plants,which provided an evidence and a guideline for the selectivity of phytoalexins for food functional component.

Abstract:The global consumption of meat products is on the rise, leading to concerns about sustainability, fat content, and shelf life. Synthetic additives and preservatives used to extend the shelf life of meat often have negative health and environmental implications. Natural polysaccharides such as seed gums possess unique techno-functional properties, including water holding capacity, emulsifying, and film forming, offering potential alternatives in meat processing and preservation. This study explores the use of gums in meat and meat product processing and preservation. The water holding and emulsifying properties of gums can potentially bind fat and reduce overall lipid content, while their antimicrobial and film-forming properties can inhibit the microbial growth and reduce oxidation, thereby extending the shelf life. Incorporating gums as a fat replacer and edible coating shows promise for reducing fat content and extending the shelf life of meat and meat products.

Abstract:The potential of plant gum as a bioactive agent and plant growth enhancer has not been exploited well and plant gums are suitable for such purposes as they are non-toxic and biodegradable. Therefore, the aim of this study was to verify the potential of Mangifera indica (MI) gum as a bioactive agent and plant growth enhancer. Plant gum was collected from the bark of MI and polysaccharides were extracted, purified and characterized with ultraviolet-visible (UV-Vis) spectroscopic, Fourier-transform infrared spectroscopy and gas chromatography (GC) analyses. Crude and purified polysaccharides were tested for their antibacterial and antioxidant activity. The crude gum was subjected to plant growth stimulation study like germination percentage, shoot length, root length and wet weight of chilli (Capsicum frutescens). The effect of MI gum on soil porosity and water holding capacity (WHC) was also tested. UV-Vis and GC analyses of gum polysaccharide showed the presence of several types of monosaccharides in MI gum. The plant gum did not show any antibacterial activity against Escherichia coli, Pseudomonas sp., Bacillus sp. and Staphylococcus aureus, but was found to exhibit low antioxidant activity. The gum was found to enhance the seed germination and seedling growth in-vitro and in-vivo.

Abstract:A galactomannan polysaccharide extracted from guar beans, known as guar gum (GG), is one of them, which has a wide range of utilities and possesses popularity among scientists and consumers. This study was aimed to investigate the characteristics, mechanisms, and applications of GG in different food technologies. With the world continuing to push toward modernization and the consumption of processed foods growing at an exponential rate, the demand for texturizing agents and natural additives has also risen as a result. It has become increasingly common to use thickening agents in food products to modify their rheological and textural properties and enhance their quality characteristics. They can be divided into (1) animal derived (chitosan and isinglass), (2) fermentation produced (xanthan and curdlan), (3) plant fragments (pectin and cellulose), (4) seaweed extracts (agar and alginate), and (5) seed flours (guar gum and locust bean gum). The primary functions of these materials are to improve moisture binding capacity, modify structural properties, and alter flow behavior. In addition, some have another responsibility in the food sector, such as the main ingredient in the delivery systems (encapsulation) and nanocomposites. Abstract:Recently, there has been an increasing research interest in the development of Pickering emulsions stabilized with naturally derived biopolymeric particles. In this regard, plant gums, obtained as plant exudates or from plant seeds, are considered promising candidates for the development of non-toxic, biocompatible, biodegradable and eco-friendly Pickering stabilizers. The main objective of this review article is to provide a detailed overview and assess the latest advances in the formulation of Pickering emulsions stabilized with plant gum-based particles. The plant gum sources, types and properties are outlined. Besides, the current methodologies used in the production of plant gum particles formed solely of plant gums, or through interactions of plant gums with proteins or other polysaccharides are highlighted and discussed. Furthermore, the work compiles and assesses the innovative applications of plant gum-based Pickering emulsions in areas such as encapsulation and delivery of drugs and active agents, along with the utilization of these Pickering emulsions in the development of active packaging films, plant-based products and low-fat food formulations. The last part of the review presents potential future research trends that are expected to motivate and direct research to areas related to other novel food applications, as well as tissue engineering and environmental applications.

Abstract:Flaxseed contains significant concentration of mucilage or gum (a type of hydrocolloid). Flaxseed mucilage (FM) predominantly occurs in the outermost layer of the seed's hull and is known to possess numerous health benefits such as delayed gastric emptying, reduced serum cholesterol, and improved glycemic control. FM is typically composed of an arabinoxylan (neutral in nature) and a pectic-like material (acidic in nature). Similar to gum arabic, FM exhibits good water-binding capacity and rheological properties (similar functionality); therefore, FM can be used as its replacement in foods. In this review, an overview of methods used for FM extraction and factors influencing the extraction yield were discussed initially. Thereafter, food applications of FM as gelling agent/gel-strengthening agent, structure-forming agent, stabilizing agent, fat replacer, anti-retrogradation agent, prebiotic, encapsulating agent, edible coatings and films/food packaging material, and emulsifier/emulsion stabilizer were included. At the end, some limitations to its wide application and potential solutions were added.

Abstract:Gum Arabic is a polysaccharide polymer that occurs naturally and is widely employed in the biological industry. It is being gotten primarily from the Acacia Senegal and Acacia Seyal trees. Recently Gum Arabic has been used as a postharvest edible coating and has attracted much interest due to its capability to maintain quality and increase the shelf-life of fresh produce. It has an effective food preservative due to its favorable emulsifying, stabilizing, binding, and shelf-life-extending rates. This review highlights the most relevant and current knowledge on using Gum Arabic in postharvest shelf life extension and preservation of fruits and vegetable quality. The effect of Gum Arabic edible coating on physiological response, physicochemical properties, physiological disorders, phytochemical and antioxidant content, and the sensory quality of fruits and vegetables were discussed. Information regarding the gaps in the literature and prospects of Gum Arabic edible coating application on fruit and vegetables were also highlighted.

Abstract:Natural polymers have many uses, and Tragacanth gum is just one of them. Many people are interested in natural gums because of their many attractive characteristics, such as being ‘green’ bio-based renewable materials, being easily accessible, inexpensive, and structurally diverse. One class of naturally occurring polysaccharides is called gum because of its tendency to create a gel or a thick solution. Among the many plant-based raw materials, these polysaccharide gums are abundant. Hydrogels, which are three-dimensional polymeric webs that can imitate live tissues, have demonstrated remarkable potential as adjustable biomaterials in numerous regenerative techniques due to their high water or biological exudate absorption capacities. Natural polysaccharides, often known as gums, are present in many different types of trees and possess many desirable properties, such as being renewable, biocompatible, biodegradable, non-toxic, and amenable to chemical modification. Many people are curious about certain parts of the food, water, energy, biotech, environmental, and healthcare sectors as of now. Gum, a type of very important and unique food ingredient, has many vital uses in the food business. Cosmetics, coating, photosensitive resin, fertilizer, casting, pharmaceuticals, and tobacco are just a few of the non-food businesses that make use of their strong water-affinity and structural plasticity. There are a lot of benefits to hydrogels made from natural gums as opposed to those made from synthetic sources. Synthesis hydrogel polymers have been the center of interest among these non-food applications because of their extensive use in the pharmaceutical and medical fields. The Tragacanth gum hydrogels used for medication delivery and tissue engineering have been the focus of this study. We also paid close attention to drug delivery, physical-chemical properties, and the extraction of Tragacanth gum. Our research has a wide range of biomedical applications, including tissue engineering for bone, skin, fixation of bone, periodontal, and cartilage. Possible futures based on hydrogels made of Tragacanth gum were likewise our primary focus.

Abstract:Wrinkle Floweringquince (Chaenomeles speciose (Sweet) Nakai) seed, as an unexploited forestry residue, contains considerable amount of bioactive carbohydrates with potential functionality, which was not widely concerned. The aim of this study is to determine the basic characterizations (molecular weight and functional group), specific components (carbohydrate, protein and uronic acid contents), and functional properties of Chaenomeles speciosa seed gum (CSG). Results indicated that carbohydrate (63.80%), protein (13.69%) and uronic acid (10.30%) contents were achieved. The CSG (average molecular weight, 9.85×106 u) consists rhamnose, arabinose, xylose and glucose in a molar percentage of 29.77꞉10.54꞉18.55꞉15.84, respectively. The Fourier transform infrared (FT-IR) analysis revealed hydroxyl, carboxyl and methyl groups and α-glycosidic linkages are founded in the CSG. The CSG was surface active and its ability to decrease surface tension was comparable to commercial gums. Moreover, the CSG solutions showed pseudoplastic flow behavior under dynamic shear rate at high concentrations. The GSC also presented good emulsifying and foaming properties, indicating the potential of the GSC as bioresource stabilizer and thickener in industry.
Effect of common and new gums on the quality, physical, and textural properties of bakery products: A review

Abstract:Hydrocolloids (gums) have a good functional characteristic such as emulsifying, gelling, solubility, and textural improvement. In the bakery products, hydrocolloids were used to improving dough performance, bread and cake characteristics, sensorial quality, and extension the products shelf life. Several studies reported the potential use of hydrocolloids in breads, biscuits, cakes, and pasta formulation. The present review summarized the effect of the most common and new hydrocolloids (xanthan, guar, Arabic, carrageenan, karaya, alginate, acacia, methylcellulose, carboxy methyl cellulose, hydroxyl propyl methyl cellulose, locust bean, balangu seed, wild sage seed, basil seed, and cress seed gums) on the rheological, physicochemical, textural, and quality characteristics of bakery products. Gums addition improved volume and porosity of the breads and cakes. Gums influence on the gelatinization and retrogradation of starch and decreased the retrogradation of starch. In the bakery products, hydrocolloids were used to improving mixing and increasing the shelf life of the products through moisture preservation and avoidance of syneresis in some frozen foods. This study summarized the influence of the most common and new hydrocolloids on the rheological, physicochemical, textural, and quality characteristics of bakery products. Addition of seeds gum to the breads, biscuits, cakes, and pasta formula led to an increase in the viscosity of the batter. Also, the firmness of bakery products showed that they became softer with increasing gum levels.

Abstract:The application of plant proteins in new food products is rapidly expanding worldwide driven by consumers demanding healthy, sustainably produced, and non-animal proteins. Major sources of plant protein include cereal grains, tree nuts, oilseeds, legumes, and pulses. Their protein content ranges from 6 to 45%, but many plant proteins typically have suboptimal levels and ratios of essential amino acids. Plant proteins is associated with many health benefits due to the presence of bioactive compounds which are claimed via in vivo and in vitro studies to show several biological activities and properties related to health promotion such as anti-inflammatory, antimicrobial, antidiabetic, and antioxidant properties. However, some of them are recognised as antinutritional factors and present inhibitory effects on the digestion of proteins. Other adverse effects associated with plant proteins include allergy (induced by the allergenic proteins) and coeliac disease (triggered by the gluten proteins). Beyond their roles in nutrition and health, the value of plant proteins extends to provide functional uses in food applications through processes such as solubilisation, emulsification, foaming, gelation, and dough formation. These functionalities play an integral role in the development of plant proteins-based foods such as meat analogue, beverages, bakery, and pasta products.

Abstract:The attention of dietary fiber has been increasing in recent years. Dietary fiber can regulate blood lipid, blood glucose and intestinal flora, prevent colon cancer and diabetes and plays an active role in promoting human health. The advantages and disadvantages of extraction methods including chemical, fermentation, enzymatic method and multi methods assisted at home and abroad were analyzed. The physicochemical properties of dietary fiber, functional properties and antioxidant capacity were summarized. The physicochemical properties of dietary fiber such as water holding, expansibility, fat and oil holding capacity, the functional properties of dietary fiber including adsorption of glucose, cholesterol, nitrite ion, sodium cholate, cation exchange, adsorption of heavy metals and antioxidant capacity such as DPPH radical and hydroxyl radical scavenging ability were studied,which provided theoretical basis for the development and application in health products and food.

Abstract:Tree gums are important forest produce that has been influenced in society as food and nonfood ingredients for centuries. The development of gums in the medicinal domain and other manufacturing or engineering fields is still challenging and progressing. The major impacts of various industrial tree gums (arabic, karaya, kondagogu, tragacanth, and guar) and their complexes in the form of nanoparticles, nanofibers, hydrogel, nanogel, and other nanocomposite forms in biomedical fields are extensively considered in this chapter. Special emphasis is placed on tree gums and their nano-architectures on tissue engineering, antimicrobial, drug delivery, wound healing, cancer therapy, nanomedicine, and bioimaging. Furthermore, impacts of nontoxicity, biocompatibility, availability, eco-friendliness, and biodegradability of the tree gum-based nanostructures and their influences or benefits on the various biomedical branches are exemplified.

Abstract:As a pharmaceutical component, gum Cordia has been applied to improve crop resistance against many diseases. A large amount of gum appears around the fruit after soaking in an aqueous system. The mucilage possesses outstanding technofunctional properties as an emulsifier, thickening agent, and binding and stabilizing component in food and drug industries. The backbone of gum Cordia is composed of (1-2)-linked L-arabinofuranosyl and (1–6)-linked D-glucopyranosyl residues. This manuscript reviews the technofunctional properties and applications of gum Cordia in food systems. Particularly, our focus has been given to its application as a natural source for the formation of edible films and coatings for increasing the shelf life of food products and for the food preservation as a potential ingredient in formulation. The future research perspectives are also highlighted.
