Abstract:To achieve sustainable development, increasing attention has been paid to the utilization of renewable polysaccharides extracted from plant gum instead of synthetic materials. Peach gum polysaccharide (PGP) is a typical polysaccharide, which can be readily obtained by hydrolysis of peach gum, one of the abundant plant gums in the world. In the past decade, the research on the hydrolysis, structure, properties and applications of PGP has aroused great interest. The PGP with highly branched macromolecular structure shows remarkable merits of numerous functional groups, excellent water solubility, good biocompatibility, favorable emulsifying property, fine antioxidant and antibacterial activity, and low cost. The application of PGP has expanded from the pharmaceutical field to the fields of food, adsorbents, functional carbon materials, binders and gel materials. This review systematically introduces the research progress of PGP, as well as the opportunities and challenges faced by PGP in scientific research and practical application.

Abstract:Guar gum (GG), as a non-exudate gum, is extracted from the seed's embryos of Cyamopsis tetragonoloba (a member of Leguminosae family). Recently, this biopolymer has received extensive attention due to its low cost, notable properties, non-toxic biodegradation, ease of availability, and biocompatibility. However, disadvantages such as uncontrolled hydration rate and susceptibility to microbial attack have led many researchers to further modification of guar gum. Further modifications of guar gum heteropolysaccharide have been performed to improve properties and explore and expand its potential. The favorable biostability, improved solubility, and swelling, increased pH sensitivity, and good antibacterial and antioxidant properties indicate the significant advantages of the modified gum structures with different functional groups. In this review, the rapid growth in research on GG derivatives-based materials has been discovered. Besides, the production methods of GG and its derivatives have been discussed in tissue engineering and regenerative medical. Consequently, this review highlights the advances in the production of guar-based products to outline a promising future for this biopolymer by changing its properties and expanding its applications in potential targets.

Abstract:The global consumption of meat products is on the rise, leading to concerns about sustainability, fat content, and shelf life. Synthetic additives and preservatives used to extend the shelf life of meat often have negative health and environmental implications. Natural polysaccharides such as seed gums possess unique techno-functional properties, including water holding capacity, emulsifying, and film forming, offering potential alternatives in meat processing and preservation. This study explores the use of gums in meat and meat product processing and preservation. The water holding and emulsifying properties of gums can potentially bind fat and reduce overall lipid content, while their antimicrobial and film-forming properties can inhibit the microbial growth and reduce oxidation, thereby extending the shelf life. Incorporating gums as a fat replacer and edible coating shows promise for reducing fat content and extending the shelf life of meat and meat products.

Abstract:Gum polysaccharides, derived from various sources, are considered as renewable and sustainable materials. The tunable physical, chemical, and biological properties make them fit for use in health care, biomedicine, energy, tissue engineering, environment, pharmaceuticals, automobiles, food, and space industries. They are colorless, chemically inert, tasteless, biocompatible, inexpensive, odorless, and nontoxic. Recently, plant gums have opened up a new area in the pharmaceutical and food industries. The ancient history and toxicological reports indicate that gums including tragacanth, ghatti, acacia, and karaya gum have been consumed as safe food. In addition, gums have great advantages to be used as a edible coating agent for fruits and vegetables which improves their shelf-life and post-harvesting quality. Importantly, gums are only the alternative source to produce gluten-free food products. In the pharmaceutical industry, gums have immense demand for the formulation of tablet (disintegrants, diluents, and binders), suspension (protective colloids), oral liquids (thickener), and gels (gelling agent). Due to the diverse physicochemical properties of natural gums, many researchers exploit them in drug delivery, nanofibers, tissue engineering, film formation, nanoparticles, and wound healing dressings. In this book chapter, we have described the source, composition, classification advantages, and food and pharmaceutical application of gum polysaccharides.

Abstract:Recently, there has been an increasing research interest in the development of Pickering emulsions stabilized with naturally derived biopolymeric particles. In this regard, plant gums, obtained as plant exudates or from plant seeds, are considered promising candidates for the development of non-toxic, biocompatible, biodegradable and eco-friendly Pickering stabilizers. The main objective of this review article is to provide a detailed overview and assess the latest advances in the formulation of Pickering emulsions stabilized with plant gum-based particles. The plant gum sources, types and properties are outlined. Besides, the current methodologies used in the production of plant gum particles formed solely of plant gums, or through interactions of plant gums with proteins or other polysaccharides are highlighted and discussed. Furthermore, the work compiles and assesses the innovative applications of plant gum-based Pickering emulsions in areas such as encapsulation and delivery of drugs and active agents, along with the utilization of these Pickering emulsions in the development of active packaging films, plant-based products and low-fat food formulations. The last part of the review presents potential future research trends that are expected to motivate and direct research to areas related to other novel food applications, as well as tissue engineering and environmental applications.

Abstract:A galactomannan polysaccharide extracted from guar beans, known as guar gum (GG), is one of them, which has a wide range of utilities and possesses popularity among scientists and consumers. This study was aimed to investigate the characteristics, mechanisms, and applications of GG in different food technologies. With the world continuing to push toward modernization and the consumption of processed foods growing at an exponential rate, the demand for texturizing agents and natural additives has also risen as a result. It has become increasingly common to use thickening agents in food products to modify their rheological and textural properties and enhance their quality characteristics. They can be divided into (1) animal derived (chitosan and isinglass), (2) fermentation produced (xanthan and curdlan), (3) plant fragments (pectin and cellulose), (4) seaweed extracts (agar and alginate), and (5) seed flours (guar gum and locust bean gum). The primary functions of these materials are to improve moisture binding capacity, modify structural properties, and alter flow behavior. In addition, some have another responsibility in the food sector, such as the main ingredient in the delivery systems (encapsulation) and nanocomposites. Abstract:Hydrogels are ideal for various food applications because of their softness, elasticity, absorbent nature, flexibility, and hygroscopic nature. Polysaccharide hydrogels are particularly suitable because of the hydrophilic nature, their food compatibility, and their non-immunogenic character. Such hydrogels offer a wide range of successful applications such as food preservation, pharmaceuticals, agriculture, and food packaging. Additionally, polysaccharide hydrogels have proven to play a significant role in the formulation of food flavor carrier systems, thus diversifying the horizons of newer developments in food processing sector. Polysaccharide hydrogels are comprised of natural polymers such as alginate, chitosan, starch, pectin and hyaluronic acid when crosslinked physically or chemically. Hydrogels with interchangeable, antimicrobial and barrier properties are referred to as smart hydrogels. This review brings together the recent and relevant polysaccharide research in these polysaccharide hydrogel applications areas and seeks to point the way forward for future research and interventions. Applications in carrying out the process of flavor carrier system directly through their incorporation in food matrices, broadening the domain for food application innovations. The classification and important features of polysaccharide-based hydrogels in food processing are the topics of the current review study.

Abstract:Gels are intermediates between solid and liquid with elastic and flowable characteristics whose three-dimensional networks can restrict water, air, and oil. They have extensive applications in modern times in biomedical engineering, electronics, environmental engineering, etc. However, gels have also been made as foods from ancient times for over a thousand years, such as pudding, tofu, and cheese. Among them, protein-based gel-like foods have continuously garnered significant attention and research. In contrast, some polysaccharide-based gel-like foods in southeast Asia, such as “liangfen”, “green tofu”, “ice jelly”, “tamarind jelly”, “konjac tofu”, and “black grass jelly”, were not noticed until recent years regarding their compositions and gelling mechanisms. This review commences on six traditional gel-like foods mentioned above, which refer to six different types of plants and four kinds of gel-forming polysaccharides, including pectin, tamarind seed xyloglucan, konjac glucomannan, and Mesona chinensis polysaccharide. Recent progress and developments of these gel-forming polysaccharides on different gelling mechanisms are summarized. Due to differences in corresponding gel properties, these polysaccharides are applied in various fields, such as delivery systems, tissue engineering, wound dressings, and adsorbent materials. Future trends of these gels would potentially focus on manipulating the mechanical properties by modifying the flexibility of polysaccharide molecules and designing composite gels, producing stimuli-responsive hydrogels and other desirable aspects to catch up with the properties of synthetic counterparts.

Abstract:Polysaccharides are natural polymers with hydrophilic, biocompatible and biodegradable characteristics and have many opportunities in the food and pharmaceutical sectors. This review focuses on the field of nano and microstructures whose internal structure is based on networked polysaccharide chains in 3D i.e., polysaccharide nanogels (NGs) and microgels (MGs). As it is observed the number of articles on NGs and MGs in peer reviewed scientific journals has been increasing over the last two decades. At the same time, the relative contribution of polysaccharides in this field is gaining place. This review focuses on the different applied methods for the fabrication of a variety of polysaccharide-based NGs and MGs and aims to highlight the recent advances on the subject and present their potentials and properties with regards to their integration in aspects of medicinal and food sciences. The presentation of the recent advances in the application of polysaccharide NGs and MGs is divided in materials with potential as emulsion stabilizers and materials with potential as carriers of bioactives. For applications in the medical sector the division is based on the fabrication processes and includes self-assembled, electrostatically complexed/ionically crosslinked and chemically crosslinked NGs and MGs. It is concluded that many advances are expected in the application of these polysaccharide-based materials and in particular as nutrient-loaded emulsion stabilizers, viscosity modifiers and co-assembled structures in combination with proteins.

Abstract:The genus Polygonatum, a well-known homology plant of medicine and food, has confirmed several biological activities and great market utilization value. A growing number of researches have shown that polysaccharides are one of the primary bioactive components of the Polygonatum spp. and present multiple biological activities both in vitro and in vivo methods, such as antioxidant activity, immunity enhancement effect, anti-inflammatory effect, anti-osteoporosis effect, and treatment of diabetes mellitus. This review summarizes the available information on the approaches used for GPPs extraction, purification, and structural characterization, and discusses the diverse biological activities of GPPs to support their potential application value in the functional foods, pharmaceuticals field, and cosmetics areas. New valuable insights for future research regarding GPPs were also proposed in the fields of the natural production of bio-based functional materials, functional foods, and therapeutic agents.

Abstract:Background: Guar gum is a water-soluble polysaccharide called galactomannan, obtained from the endosperm of Cyamopsis tetragonolobus, plant belonging to Leguminosae family. Galactomannan is a biopolymer rich in functional groups, particularly hydroxyl groups, which expand the possibilities of its chemical modification and, therefore, of biological applications. Objective: This review aims to present and discuss various methods used in the preparation of guar gum composites and their applications in biomedical, pharmaceutical, food and cosmetic industry. Methods: The published data about the extraction procedure of guar gum and its various physico-chemical properties have been collected and analyzed. Further, the published information about various methods used for the preparation of guar gum composite systems including film, hydrogel and beads have been gathered and comprehensively discussed in this review. The applications of guar gum based composites in the field of biomedical, pharmaceutical, food and cosmetics have also been reviewed in detail. Results: Different guar gum composite systems have shown multifunctional properties, including gelling and emulsifying ability, thickening and binding property, quick solubility in water, good biocompatibility, and biodegradability in the domain of biomedical, pharmaceutical, food, and cosmetic industries. Conclusion: Recent advancements in the preparation and applications of guar gum composites summarized in this review will enhance the practical applications of this polymer in various industries.

Abstract:Water-soluble gums (hydrocolloids) are used for various applications as coating agents, packaging films, texture modifiers, thickeners, stabilizers and emulsifiers. Edible coatings are mostly used to increase food products appearance and extending shelf life of the fruits. Several studies have been carried out showing the potential use of natural gums such as chitosan, alginate, xanthan, gellan, mesquite, psyllium, basil seed, guar, tragacanth and arabic gums in edible coatings formulation and improving their properties. This review summarized the characterization of new biodegradable edible coatings based on natural gums on quality and shelf-life of apple, papaya, carrot, guava, plum, mango, apricot, banana, orange, mushroom and tomato. The edible coatings fabricated from natural gums could provide some benefits such as extended shelf life, delaying ripening, decrease the rate of respiration, biocompatibility and environmentally friendly, economically affordable, good mass transfer barrier characteristics, carriers of foods additives such as antioxidants, vitamins and antimicrobial compounds. The addition of 20% glycerol (w/w) to edible coatings solutions containing 1% gum was sufficient to achieve the high reduction of the fruits and vegetables weight loss.

Abstract:The numerous health benefits of pectins justify their inclusion in human diets and biomedical products. This review provides an overview of pectin extraction and modification methods, their physico-chemical characteristics, health-promoting properties, and pharmaceutical/biomedical applications. Pectins, as readily available and versatile biomolecules, can be tailored to possess specific functionalities for food, pharmaceutical and biomedical applications, through judicious selection of appropriate extraction and modification technologies/processes based on green chemistry principles. Pectin's structural and physicochemical characteristics dictate their effects on digestion and bioavailability of nutrients, as well as health-promoting properties including anticancer, immunomodulatory, anti-inflammatory, intestinal microflora-regulating, immune barrier-strengthening, hypercholesterolemia-/arteriosclerosis-preventing, anti-diabetic, anti-obesity, antitussive, analgesic, anticoagulant, and wound healing effects. HG, RG-I, RG-II, molecular weight, side chain pattern, and degrees of methylation, acetylation, amidation and branching are critical structural elements responsible for optimizing these health benefits. The physicochemical characteristics, health functionalities, biocompatibility and biodegradability of pectins enable the construction of pectin-based composites with distinct properties for targeted applications in bioactive/drug delivery, edible films/coatings, nano-/micro-encapsulation, wound dressings and biological tissue engineering. Achieving beneficial synergies among the green extraction and modification processes during pectin production, and between pectin and other composite components in biomedical products, should be key foci for future research.

Abstract:The hydrogels based on natural gums and chemically derivatized natural gums have great interest in pharmaceutical, food, cosmetics, and environmental remediation, due to their: economic viability, sustainability, nontoxicity, biodegradability, and biocompatibility. Since these natural gems are from plants, microorganisms, and seaweeds, they offer a great opportunity to chemically derivatize and modify into novel, innovative biomaterials as scaffolds for tissue engineering and drug delivery. Derivatization improves swelling properties, thereby developing interest in agriculture and separating technologies. This review highlights the work done over the past three and a half decades and the possibility of developing novel materials and technologies in a cost-effective and sustainable manner. Ouabain enhances basal release of nitric oxide from carotid artery.

Abstract:The authors tested the postulate that ouabain releases nitric oxide (NO) from the vascular endothelium of porcine carotid arteries (PCAs) with the technique of perfusion-superfusion bioassay, in which the perfused PCA with endothelium served as the source of NO and superfused left circumflex coronary artery (CMFX) rings with rubbed endothelium served as the bioassay tissue. Selective exposure of the PCA to ouabain (10 microM) enhanced the basal release of NO but did not affect bradykinin-stimulated (BK; 0.1-100 picomoles) release of NO. The effect of ouabain on basal release of NO from PCA persisted after pretreatment of either PCA or circumflex coronary artery with propranolol (1 microM); ibuprofen (1 microM); and hydrocortisone (10 microM). Finally, selective pretreatment of the PCA with L-NG-monomethylarginine (LNMMA; 100 microM) to inhibit 1-arginine-derived NO synthesis inhibited the relaxation of the circumflex coronary artery to basal, BK, and ouabain-stimulated effluent. Since a nonspecific increase in intracellular calcium ion will enhance both basal and agonist-induced release of NO, the authors conclude that a ouabain-sensitive ATPase is involved in basal release of NO from the endothelium of the PCA. Alternatively, ouabain may act on an isozyme of NO synthase in the vascular endothelium. Speculatively, ouabain-induced stimulation of NO release from vascular endothelium may contribute to the beneficial effect of ouabain in congestive heart failure.
Effect of common and new gums on the quality, physical, and textural properties of bakery products: A review

Abstract:Hydrocolloids (gums) have a good functional characteristic such as emulsifying, gelling, solubility, and textural improvement. In the bakery products, hydrocolloids were used to improving dough performance, bread and cake characteristics, sensorial quality, and extension the products shelf life. Several studies reported the potential use of hydrocolloids in breads, biscuits, cakes, and pasta formulation. The present review summarized the effect of the most common and new hydrocolloids (xanthan, guar, Arabic, carrageenan, karaya, alginate, acacia, methylcellulose, carboxy methyl cellulose, hydroxyl propyl methyl cellulose, locust bean, balangu seed, wild sage seed, basil seed, and cress seed gums) on the rheological, physicochemical, textural, and quality characteristics of bakery products. Gums addition improved volume and porosity of the breads and cakes. Gums influence on the gelatinization and retrogradation of starch and decreased the retrogradation of starch. In the bakery products, hydrocolloids were used to improving mixing and increasing the shelf life of the products through moisture preservation and avoidance of syneresis in some frozen foods. This study summarized the influence of the most common and new hydrocolloids on the rheological, physicochemical, textural, and quality characteristics of bakery products. Addition of seeds gum to the breads, biscuits, cakes, and pasta formula led to an increase in the viscosity of the batter. Also, the firmness of bakery products showed that they became softer with increasing gum levels.

Abstract:This review explores the realm of structural modifications and broad spectrum of their potential applications, with a special focus on the synthesis of xanthan gum derivatives through graft copolymerization methods. It delves into the creation of these derivatives by attaching functional groups (-OH and –COOH) to xanthan gum, utilizing a variety of initiators for grafting, and examining their diverse applications, especially in the areas of food packaging, pharmaceuticals, wastewater treatment, and antimicrobial activities. Xanthan gum is a biocompatible, biodegradable, less toxic, bioactive, and cost-effective natural polymer derived from Xanthomonas species. The native properties of xanthan gum can be improved by cross-linking, grafting, curing, blending, and various modification techniques. Grafted xanthan gum has excellent biodegradability, metal binding, dye adsorption, immunological properties, and wound healing ability. Owing to its remarkable properties, such as biocompatibility and its ability to form gels resembling the extracellular matrix of tissues, modified xanthan gum finds extensive utility across biomedicine, engineering, and the food industry. Furthermore, the review also covers various modified derivatives of xanthan gum that exhibit excellent biodegradability, metal binding, dye adsorption, immunological properties, and wound healing abilities. These applications could serve as important resources for a wide range of industries in future product development.

Abstract:As a pharmaceutical component, gum Cordia has been applied to improve crop resistance against many diseases. A large amount of gum appears around the fruit after soaking in an aqueous system. The mucilage possesses outstanding technofunctional properties as an emulsifier, thickening agent, and binding and stabilizing component in food and drug industries. The backbone of gum Cordia is composed of (1-2)-linked L-arabinofuranosyl and (1–6)-linked D-glucopyranosyl residues. This manuscript reviews the technofunctional properties and applications of gum Cordia in food systems. Particularly, our focus has been given to its application as a natural source for the formation of edible films and coatings for increasing the shelf life of food products and for the food preservation as a potential ingredient in formulation. The future research perspectives are also highlighted.
