Abstract:Proteins are a ubiquitous class of biomolecules that play a major role in the food industry as ingredients to impart nutritional, functional, and sensory properties to food formulations. The ability of proteins to act in these capacities is based on their unique physicochemical properties, which are in turn dependent on the structure of proteins at the various organization levels (i.e., primary, secondary, tertiary, and quaternary). This chapter discusses the chemistry and molecular basis of the interrelations of protein structure and functionality, and how these are affected by different food processing methods.
