Abstract:The relationship between emulsion stability and amount of emulsifiers is examined, which occurs in a series of emulsions of rapeseed oil and water stabilized by combination of Span80 and Tween series. It shows that the emulsions are stable in a wide range of HLB values for Span80-Tween20 when the emulsifiers are offered sufficiently, whereas for Span80-Tween40, Span80-Tween60 and Span80-Tween80 there is an optimum amount of emulsifiers corresponding to the optimum HLB. In addition, the optimum HLB will shift slightly right along the abscissa of HLB for Span80-Tween20 and Tween80-Tween60 if the amount of the emulsifiers increases. All the above observations are explained in terms of an empirical rule and further discussed on the basis of compactibility of emulsifier molecules at interfacial films of oil and water.

Abstract:Using the nonionic surfactant AEO 3,AEO 9,TX 4,TX 14 as the emulsifier,the stability of O/W emulsion prepared from paraffin oil was measured.By changing the weight ratio(HLB value),total quantity,type of the emulsifier and deploying ultrasonic emulsification,different emulsion stability was observed and analyzed.All the system investigated conform to the HLB interfacial model proposed last article quite well,also the impact of ultrasonic emulsification,type and total quantity of emulsifier was discussed.The phenomena that increasing total quantity of emulsifier leads to the increase of the optimum HLB was interpreted as increased emulsifier consumption tends to produce smaller liquid drop which need higher HLB value of emulsifier used.

Abstract:OBJECTIVE To prepare curcuma zedoaria oil-loaded submicron emulsion and investigate the effect of HLB on its physicochemical properties. METHODSThe high pressure homogenization method was employed to prepare curcuma zedoaria oil-loaded submicron emulsion. The particle distribution and zeta-potential were determined by using zetasizer. The stability of the submicron emulsion was investigated by centrifugalization. The solubilities of zedoaria oil in aqueous phase with various HLB value were determined. The dialysis method was established for determination of drug release behavior of curcuma zedoaria oil in the submicron emulsion. RESULTSCurcuma zedoaria oil-loaded submicron emulsion was charged negative and with the mean particle size between 123 nm and 154 nm. Solubilizations were observated obviously with emulsifiers of various HLB value, and solubilization multiples were between 5.5 and 8.2. In vitro drug release experiments indicated the drug release from submicron emulsion was lasted to 48 hours, and the release behavior was consistent with Higuchi equation. CONCLUSIONThe curcuma zedoaria oil-loaded submicron emulsions with various HLB value of emulsifier were prepared. Their physicochemical properties such as particle distribution and stability were different accompany with various HLB value of emulsifiers. Moreover, as HLB value of emulsifiers increased, more solubilizations were observated, and accelerated releases were observated when released in vitro, and was represented a sustained release.

Abstract:Although the stability of emulsions is widely discussed in the literature, most of them dealt with oil-in-water emulsions or water-in-oil systems with solid and semi-solid structures, which are easier to stabilize. In this study, the stability mechanism of liquid water-in-oil emulsions was investigated in different systems. The combination of two different oils (soybean oil and hexadecane) and three emulsifiers (PGPR, Span 80 and lecithin) at two water:oil ratios was investigated. Emulsions with higher kinetic stability – water and soybean oil emulsion stabilized with PGPR and water and hexadecane with Span 80 – presented an interface with low initial interfacial tension and practically constant complex viscoelastic modulus with time. Therefore, small droplets were formed and their coalescence was hindered by a stable elastic interface. The molecular structure of both oil and emulsifier were important to define the emulsion stability. Better chemical affinity of the hydrophobic moieties of the emulsifier and the oil led to more stable interface. Steric stability was obtained in more viscous systems, such as those at higher water volume fraction content. However, the water incorporation capacity into the emulsion depended on the molecular structure of hydrophilic portion of the emulsifier. Moreover, the water – soybean oil systems with Span 80 or lecithin emulsifiers did not form a macroemulsion, but a gelled structure. This study discussed the many factors that affect the emulsion formation and stability, which can contribute to the development of new water-in-oil emulsion based products with higher stability.

Abstract:Optimal condition was determined to prepare horse oil-in-water (O/W) emulsion stabilized by different HLB system. Span 60 and Tween 60 were used to achieve the predetermined HLB values ranging from 10 to 14 and the surfactant concentrations were adjusted to 10–20%. Fifteen formulated O/W emulsions were characterized by mean particle diameter, zeta-potential (ZP), polydispersity index, and encapsulation efficiency (EE, %). Mean particle diameter decreased with increasing HLB value and surfactant concentration. Particles of the emulsion with HLB 12 and surfactant concentration at 15% were distributed in the size of below 500 nm. The particle diameter and EE (%) of the emulsion with HLB 11 or 12 and surfactant concentration at 15 or 20% were not significantly changed during storage at 40 °C for 15 days. These results suggest the characteristics of horse oil O/W emulsion are dependent on HLB values and surfactant concentration so that affect to emulsion properties during storage.

Abstract:An innovational test method was developed on the basis of redefinition of the emulsion stability. The stability was characterized by relative volume percentage of disperse phase demulsified thoroughly from the top part and the bottom part of an emulsion sample, each weighting the same amount, after being settled for a given time at constant temperature. Three series of emulsions were prepared and tested successfully, which were emulsions of paraffin oil and water stabilized with polyoxyethylene lauryl ether series (AEO3 and AEO9) at various HLBs, and emulsions of rapeseed oil and water stablized with sorbitan monoleate (Span80) and each of polyoxyethylene (20) sorbitan carboxylic esters (Tween20, Tween40, Tween60, Tween80 and Tween85) at different HLBs. It proved that this method is especially workable while the boundaries are opaque in a wide range of HLBs and is capable of offering an accurate optimum HLB.

Abstract:Emulsifiers are added to enhance product stability to obtain a satisfactory shelf-life. For this reason, stable emulsions that do not form peroxides nor change the fatty acid composition of food, as well as safe treatments to obtain them, are aspects of utmost importance. High-pressure homogenization is a conventional approach to prepare emulsions because of its high efficiency. In addition, the beneficial effects of ultrasound on the processing efficiency are known. Therefore, the impact of high-pressure homogenization (30 MPa, 50M Pa) or ultrasound power (270 W) on the emulsion stability and emulsifying properties of 5% coconut oil-in-water emulsion were discussed in this study. The complexes (3:7and 4:6, by weight) of propylene glycol alginate and xanthan gum were selected as emulsifier. The apparent viscosity, particle size and distribution, emulsifying properties and ζ-potential of 5% coconut oil-in-water emulsion before and after ultrasound treatment or high-pressure homogenization were investigated and compared. The micro structure of the emulsion was observed under the fluorescence microscope. The experimental results showed that both high-pressure homogenization and ultrasonic treatment effectively reduced the apparent viscosity, average droplet size and narrowed the distribution range of the emulsion, compared with the pre-emulsion. However, aggregation in the emulsion appeared only after being subjected to high-pressure homogenization, while the emulsion made by the ultrasound treatment remained stable during 30 days storage. In conclusion, this study provides valuable information regarding emulsion preparation methods that can be feasible in food and beverage industries, demonstrating a better performance of ultrasound in optimizing and extending food shelf-life in food and beverage industries.

Abstract:Experimental study on the physico-chemical properties of bio-oil and diesel emulsification has been carried out in this paper, which was based on the preliminary experiment. The effect of surface tension and viscosity on the stability of emulsions were particular concerned. It was found that the longest stable time, the lowest viscosity and lowest surface tension can be obtained simultaneously when the hydrophile and lipophile balance (HLB) value was of the optimal value, i.e. 6.5. Experimental results indicated that the stable time of emulsion decreased rapidly with the increase of bio-oil content, while the value of surface tension and viscosity increased. Meantime, it was shown that the most stable emulsions had the lowest value of viscosity and surface tension.

Abstract:Tbe optimum stability of O/W emulsions stabilized by 1:1 molar ratios of Spans and Tweens is due to association between the emulsifier molecules adsorbed at the oil—water interface. Emulsion stability is related to both surface elasticity and surface viscosity, as derived from interfacial rheological measurements, with a greater dependence on the first named parameter. Discrepancies between activation energies calculated from the temperature dependence of emulsion stability and of surface elasticity suggest that some additional factor is also involved in globule coalescence, e.g., dehydration of the Tween polyoxyethylene chains. Coalescence may be due to the force pressing adjacent globules together giving rise to a compressive stress which increases with time. When it exceeds a critical value, which will be related to the maximum deformation which the globules can withstand, the interfacial film around the globules begins to break down and coalescence begins.'The various analytical procedures for determining HLB values of emulsifiers do not account for interaction between the emulsifiers and the aqueous and oil phases. It may be possible to derive more meaningful values from phase inversion temperature determinations on the emulsions.

Abstract:Oil-water emulsions have wide range of applications in the field of petrochemicals,food, medicine and others. The stability of emulsion has been a research hotspot. This paper reviewed research methods of emulsion stability in recent years,summarized the progress of research techniques from three aspects and made brief comparison of the advantages and disadvantages of different methods of the same scale. On the macro-scale,emulsion stability analyzers and low-field NMR are used to characterize the phase separation process,which simplifies the test operation and renders a more accurate result. On mesoscopic scale,thein situ characterization of emulsion droplet size can be achieved by fitting calculation of the optical and NMR results. On the micro-scale,the accurate characterization of interfacial film stability is realized by the development and introduction of micropipette,microscopic observation technologies and others,which includes the research of mechanical strength,thickness and morphology of interfacial film. In addition,this article also identified the integrated use of different methods in in-depth inquiring the stability mechanism, analyzed trends of research methods in oil-water emulsion stability,and noted thatin situ characterization technology is the development direction of emulsion stability research.
Synergistic stabilization of oil in water emulsion with chitin particles and tannic acid

Abstract:The aim of the present study was to explore the effect of CP and TA on stability of oil in water emulsion stabilized by the two components, so as to fabricate the most efficient chitin based emulsifying agents. It was found that there was synergistic effect for CP and TA in stabilizing emulsion, specifically, the complex of chitin particles (CP) (3 g/L) with tannic acid (TA) (2 g/L) produced the most physically and oxidatively stable oil-in-water emulsion compared with other groups in this study. This is because CP-TA (3/5) complex had the lowest zeta potential, the lowest the oil water interfacial tension, the highest viscosity and the highest content of TA with excellent antioxidant activity. Furthermore, this is because there was intense interaction between CP and TA in CP-TA complex from results of FTIR, XRD and ITC, which then result in the formation of large CP-TA particles.

Abstract:Two-stage emulsification was used to prepare oil-in-water-in-oil(O/W/O) three-phase emulsion.In this study,the emulsification properties of an O/W/O three-phase emulsion were investigated.The effect of HLB value and water content on characteristics of an O/W/O emulsions was studied.Experimental results show that when Span60 and/or Tween60 are added into the emulsions as the surfactant emulsifier.When the amount of water is 100/0 and HLB values in the range of 6 to 9 with 20/0 surfactant,the O/W/O emulsions has an appropriate viscosity and stability,and it is suitably used as an alternative fuel for diesel engines.

Abstract:The effects of different ultrasound emulsification conditions (20 kHz at 50-55 W cm-2, 40% amplitude for 2, 6, 12 or 18 min) on the physicochemical properties of soybean protein isolate-stabilized emulsions containing medium chain triglycerides (MCT), and long chain triglycerides (LCTs, palm, soybean and rapeseed oils) were investigated. It was found that MCT oil emulsions had the minimum droplet size (d4,3) of 0.5 ± 0.0 µm after ultrasound emulsification for 18 min. Moreover, results indicated that MCT oil emulsions had better emulsion stability (using distilled water as a water phase at neutral pH and room temperature) and higher adsorbed protein amounts at their interface than the LCTs emulsions. However, the absolute zeta (ζ)-potential values of MCT oil emulsions were the lowest among all the oil-in-water emulsions. Interestingly, the particle size of palm oil emulsion decreased after heat treatment at 90 °C for 30 min. In conclusion, high intensity ultrasound (HIU) could be considered as a useful emulsification technology to produce emulsions stabilized by soy protein isolate. However, the physicochemical properties of emulsions were different based on the types of oils as well as HIU time.

Abstract:In this paper, four nonionic binary mixed surfactant systems (Tween 80/Span 80, Tween 80/Span 85, OP 10/Span 80 and OP 10/Span 85) were used to emulsify water/octane mixture. The influence of emulsion composition and preparation method on the stability of water-in-octane emulsion was investigated systematically. The mixture of Tween 80/Span 80 had the best synergistic effect. Those mixed surfactant systems with HLB=9 stabilized water-in-octane emulsion the best. Under optimal condition, water-in-octane nano-emulsion (the effective diameter of water droplets=200nm) could be made. These water-in-octane nano-emulsions could be stored for more than 26days at 25°C without phase separation.

Abstract:In this study, the stability mechanism of grape seed oil/rice hydrolyzed protein emulsion was studied. The grape seed oil (10% v/v) and rice hydrolyzed protein (2% w/v) were homogenized under high pressure to prepare the emulsion. It was observed by CLSM and Multiple light scatterometer that the emulsion had long-term storage stability, and the average particle size of droplets was 0.984–1.363 μm. ζ-potential ranged from −37.733 mV to −25.633 mV. It is found that the emulsion has strong resistance to temperature, ions and other environmental factors from the macroscopic and microscopic structure, and no emulsion stratification phenomenon occurs. The composite emulsion can be used in the field of food industry and fine chemical industry, which can provide nutrition and functionality of products, its research has certain value and has a wide space for development.

Abstract:In this paper,using A-7 as water-oil emulsifier,under extremely high internal phase content(water phase content to 87%),we experiment about kinds and dosages of emulsified lipids.The results proved: the emulsified products by Emulsifier A-7 have good stability.The more lipids we used,the less viscosties the emulsions have.The larger molecular weight of lipids,the thicker viscosities of them.The ability of emulsifier A-7 to emulsify hydrocarbon fat and oil is better than to other ones.

Abstract:The poor interfacial stability of protein-stabilized high internal phase Pickering emulsions (HIPEs) is a major hurdle to realize their practical applications in food processing. The emulsifying stability is not only related to the protein itself, but also dependent upon the oil phases. In this study, four plant-based oils were studied to understand their respective effects on the interfacial stability of HIPEs prepared by ovalbumin (OVA) and ovalbumin-tannic acid complex (OVA-TA). Our findings revealed that the interfacial activities were closely related to the physicochemical properties of the oil phase, such as the number of carbon‑carbon double bonds in the unsaturated fatty acids, melting point, and polarity. The emulsifying abilities were ranked as palm oil > soybean oil > olive oil > perilla oil. OVA-TA stabilized HIPEs exhibited excellent emulsifying stability compared with free OVA stabilized ones. This work provided a unique insight into understanding the interfacial stabilization mechanisms for protein-stabilized HIPEs with different kinds of oil phases.

Abstract:Different compositions and emulsification protocols were used to prepare stable water-in-oil (w/o) emulsions. Water, mineral oil, and a mixture of Span 80 and Tween 80 surfactants were combined to form emulsions that can be used as reference for electrolyte-free systems. Here, we have proposed emulsions wherein different properties were evaluated. Electrical conductivity measurements indicated that conductivity increases linearly with increasing surfactant content. The emulsions’ flow curves and viscoelastic behaviors were delineated by rheological measurements. Stability studies by centrifugal testing have shown that smaller the surfactant content, lower the stability, for any used stirring speeds. Furthermore, higher the applied mixing rate to make the emulsion, higher the stability, regardless of the amount of surfactant. Electrical field stability analysis showed, for all systems, that critical electric field (CEF) values were dependent on either surfactant amount and emulsion elastic modulus.
