Abstract:Abstract. Rice bran is a significant by-product of the processing of rice, and rice bran oil (RBO) can be extracted from it to provide a very valuable product. It has a high smoke point but is less stable in the heating process. Further research is carried out to increase the stability of Rice Bran Oil in its utilization. Many environmentally friendly methods are being developed in storing and packaging food, including the application of microencapsulation. This study aims to determine the effect of the use of glutaraldehyde crosslinking agent on rice bran oil microencapsulation by utilizing the natural polymers of kappa carrageenan, glucomannan, and chitosan as encapsulants using the coacervation method. Microcapsules were analyzed for their encapsulation efficiency and yield and were characterized using Fourier Transform Infrared Spectrophotometer (FTIR), Scanning Electron Microscope (SEM), and Particle Size Analyzer (PSA). Results show that increasing the amount of glutaraldehyde tends to increase the yield and efficiency of encapsulation. A yield of 49.20% was obtained by adding 1 mL of glutaraldehyde with an encapsulation efficiency of 48.22%. All samples have irregular shapes and the surfaces were rough and folded. FTIR spectra show that all samples indicated the presence of RBO as well as other polymers used in the research: carrageenan, chitosan, and glucomannan. The results of PSA show that particles are in micron size except for the addition of 1 mL glutaraldehyde. Keywords: Rice Bran Oil. Glutaraldehyde, Complex Coacervation

Abstract:The ginger essential oil/β-cyclodextrin (GEO/β-CD) composite, ginger essential oil/β-cyclodextrin/chitosan (GEO/β-CD/CTS) particles and ginger essential oil/β-cyclodextrin/chitosan (GEO/β-CD/CTS) microsphere were prepared with the methods of inclusion, ionic gelation and spray drying. Their properties were studied by using scanning electron microscopy (SEM), differential scanning calorimetry (DSC), thermo-gravimetry analysis (TGA), Fourier transform infrared spectroscopy (FT-IR) and X-ray diffraction (XRD). The results showed that the particle size of GEO/β-CD composite was smaller than that of β-CD and GEO/β-CD/CTS particles were loose and porous, while the microsphere obtained by spray drying had certain cohesiveness and small particle size. Besides, results also indicated that β-CD/CTS could modify properties and improve the thermal stability of GEO, which would improve its application value in food and medical industries.

Abstract:ABSTRACT. Garlic Oil is widely used as a raw material for fragrances with volatile active compounds at room temperature. It is easily affected by environmental changes and this problem can be solved by microencapsulation using coacervation methods to protect active compounds. Garlic Oil was encapsulated using gelatin and sodium alginate as coating materia with glutaraldehyde as the crosslinking agent. The purpose of this research was to study the effect of the composition of polymers and the mass of garlic oil on encapsulation characteristics. The resulting microcapsules were analyzed using a digital microscope, SEM, FTIR, and encapsulation efficiency. The result showed that microcapsules have an irregular shape with a textured surface. The FTIR spectrum showed an indication of garlic oil with allicin content in microcapsules. The encapsulation efficiency is 34.23% with a yield of 29.43%.

Abstract:Encapsulation by Coacervation is a process used to create microcapsules. Coacervation is a process that has been used in the food and pharmaceutical industry to produce microspheres with an active ingredient, such as drugs, flavors or fragrances encapsulated by them. It is common in pharmacies, food preparation, cosmetics, and agriculture. This phase separation process is called Coacervation, where a colloidal (in this case polymer) solution will separate into two distinct liquid phases: a Polymer-rich phase, which we refer to as the coacervate, and the other is known as Polymer-poor or solvent-based. This can be accomplished by varying the temperature or pH of a non-solvent being introduced. In this study, essential oils of lemon and eucalyptus were encapsulated by the complex coacervation process using gum Arabic, gelatin, and chitosan as wall materials. Glutaraldehyde was used as a cross-linking agent in the methodology. FT-IR and GC characterized the essential oils used. The microcapsules were analyzed using a digital microscope, scanning electron microscopy (SEM), and thermogravimetric analysis. Conclusively, microcapsules were formed in spherical form. Encapsulation efficiencies were obtained between 75-78%. In conclusion, microencapsulated essential oils offer a technology that makes essential oils more effective, long-lasting, and customized. These advantages reveal their widespread impact, offering various uses for a variety of industries and applications.

Abstract:Sunflower oil (SFO) and Flaxseed oil (FSO) were microencapsulated using simple and complex coacervation techniques with Opuntia (Cactaceae) mucilage (Mu) and with a combination of Mu with chitosan (Chit). The encapsulation efficiency (EE) of SFO and FSO in emulsions using Mu/Chit shells was 96.7% and 97.4%, respectively. Morphological studies indicated successful entrapment of oils in core shells with particle sizes ranging from 1396 ± 42.4 to 399.8 ± 42.3 nm. The thermogravimetric analyses demonstrated enhanced core protection with thermal stability noted for microcapsules regardless of encapsulation method. The stability of the microcapsules, during in vitro digestion was studied. The obtained results revealed that the microcapsules are intact in oral conditions and have a slow release of oil over stomach digestion and rapid release in the small intestine. The results showed that Mu and Mu/Chit coacervates can be used as effective carrier systems to encapsulate sensitive ingredients and functional oils.

Abstract:Proanthocyanidins are important compounds known for their antioxidant and radical scavenging properties, but they are highly sensitive to light, heat, oxygen, and pH. In our study, proanthocyanidin was encapsulated using sodium alginate and carboxymethyl cellulose to enhance controlled release, pH stability, metal ion tolerance, temperature resistance, time release, the microencapsulation of food additives stability, antioxidant capacity analysis, and the storage period tolerance of proanthocyanidin. Fourier transforms infrared (FTIR) analysis and full-wavelength UV scanning indicated the successful immobilization of proanthocyanidins into the polymeric microcapsules. The flowability and mechanical properties of the microcapsules were enhanced. Moreover, proanthocyanidin microcapsules exhibited higher thermal, pH, metal ion, time, and microencapsulation food additive stability. In addition, due to their high antioxidant properties, the proanthocyanidin microcapsules retained a greater amount of proanthocyanidin content during the gastric phase, and the proanthocyanidin was subsequently released in the intestinal phase for absorption. Thus, the study provided a systematic understanding of the antioxidant capabilities and stability of proanthocyanidin microcapsules, which is beneficial for developing preservation methods for food additives.

Abstract:This study aimed to evaluate the potential of maltodextrin (MD) combination with gum arabic (GA), and whey protein isolate (WPI) on the microencapsulation of gurum seeds oil by a spray-drying method. Three formulations of protein-based (PB) (WPI: MD, 2:1), carbohydrate-based (CHOB) (GA: MD, 2:1), and mixed (MIX) (WPI: GA: MD, 1:1:1) wall materials were designed. The moisture content and water activity were in the range of 1.65–3.67% and 0.17–0.31, respectively, which is suitable for long-term storage. The best results were achieved when gurum seed oil was microencapsulated with carbohydrate-based, where it had the highest microencapsulation yield (92.80%) and microencapsulation efficiency (97.38%). Carbohydrate-based showed the highest relative crystallinity (32.25%) and the temperature of the glass transition (58.20 °C). FT-IR revealed that the oil was well encapsulated in the microcapsules. SEM of microcapsules showed spherical shapes without any apparent cracking on the surfaces. During the oxidative stability study, carbohydrate-based microencapsulation was the wall material that best protected the active materials against lipid oxidation.

Abstract:Rice bran protein is an emerging protein source from rice milling that possesses health benefits and emulsifying capacity suitable for hypoallergenic encapsulation applications, especially for lipophilic compounds such as β-carotene. The purpose of this study is to develop and characterize β-carotene encapsulates with maltodextrin and rice bran protein. Rice bran protein was prepared using conventional alkali extraction. β-carotene was added to the composite wall materials (50:50 of 4%, 8%, 12%, and 16% solids content) and spray-dried. Encapsulation efficiency (85–98%) and radical scavenging activity (11–43%) varied proportionally with rice bran protein. Across increasing maltodextrin and rice bran protein content of the feed, carbohydrate content of the microcapsules varied proportionally (50–66%) but protein content was uniform (10–13%). Scanning electron microscopy, differential scanning calorimetry, and Fourier transform infrared spectroscopy data suggested successful encapsulation. Release profiles showed decreasing trend with increasing rice bran protein content; co-digestion with rice mitigated negative impacts of rice bran protein. Microcapsules with nutritive potential and health-promoting properties were developed as potential carotenoid delivery systems.

Abstract:Gamma oryzanol (γ-oryzanol), a bioactive ingredient in rice bran oil, has potential as a nutraceutical, pharmaceutical, and cosmeceutical. γ-Oryzanol is normally degraded through oxidation by oxygen and sunlight. Microencapsulation is a good alternative to preserve the organoleptic properties, antioxidants and bioactive compounds, and oxidative degradation of γ-oryzanol in rice bran oil. Thus, this study aimed to study and optimize the microencapsulation of rice bran oil by spray drying. The effects of carrier composition (mixtures of maltodextrin (MD) with whey protein concentrate (WPC), from 1 to 4 of MD, or sodium caseinate (NaCas), from 6 to 10 of MD), homogenization pressure (150-300 bar), and carrier to oil ration (1-4) on microencapsulation efficiency and yield, bulk density and moisture content of microcapsules were investigated. To optimize the rice bran oil microencapsulation, a carrier composed of MD and NaCas (8:1), moderate pressures (200–250 bar), and carrier to oil ratios of 3:1 were required. The significant influences of these factors on microencapsulation efficiency and yield were found. Meanwhile, the bulk density and moisture of microcapsules were only affected by carrier mixtures. The results of microencapsulation efficiency and yield of γ-oryzanol that obtained in optimal conditions were 85.23% and 72.12%, respectively. Microencapsulation was a potential method for protection of γ-oryzanol in rice bran oil.

Abstract:The aim of this study was to encapsulate garlic extract by complex coacervation method using whey protein isolate (WPI)/chitosan (CH) and gum Arabic (GA)/CH as wall materials. Two anionic biopolymers (GA and WPI) were used to find the most suitable wall materials to interact electrostatically with cationic CH. The complex coacervates were freeze-dried to obtain microparticles powders. The microparticles were examined for the nitrogen adsorption/desorption, Fourier transform infrared spectroscopy (FTIR), X-ray diffraction (XRD), thermogravimetric analysis (TGA), differential scanning calorimeter (DSC), sorption isotherms, zeta potential, antioxidant activity, total phenolic content, solubility, moisture content, hygroscopicity, size distribution, and water activity. X-ray diffractograms evidenced microparticles with amorphous structure. WPI/CH and GA/CH microparticles showed surface area of 2.23 and 2.40 m2 g−1 and mean pore diameter of 5.20 and 5.37 nm, respectively. The nitrogen adsorption/desorption assay showed that microparticles presented mesopores and macropores that resulted in quick completion of microparticles surface monolayer with nitrogen. The sorption characteristics of microparticles followed the type II isotherm and Guggenheim-Anderson-de Boer (GAB) model was the best model to fit the experimental data. FTIR spectrum of microparticles reveals physical interactions between garlic compounds and functional groups of wall materials, indicating that garlic compounds were intact and encapsulated. TGA results indicated that the wall materials were effective in protecting the garlic sensitive compounds. The negative carboxyl groups (–COO−) of GA were better than WPI for coacervation with positive amino groups (NH3+) of chitosan in terms of less hygroscopicity, smaller particle size, and higher retention of garlic phenolic compounds.

Abstract:Orange essential oil was microencapsulated by complex coacervation with whey protein isolate (WPI): carboxymethylcellulose (CMC), WPI:sodium alginate (SA) and WPI:chitosan (CH). Effect of pH, protein:polysaccharide ratio and solid concentration on coacervation efficiency were selected for the best coacervation conditions. Tannic acid (TA), sodium tripolyphosphate, oxidised tannic acid and transglutaminase enzyme (TG) were used as cross-linking agents. Highest encapsulation efficiency (EE) for wet coacervated microcapsules ranged from 88% to 94%. Microcapsules were freeze and spray dried to evaluate their effect on its integrity. EE was higher than 80% in freeze dried coacervated microcapsules with and without cross-linking agent, but they formed a solid cake. Spray-dried samples formed a free fluid solid (10-20 µm), where the systems WPI:CMC and WPI:CH cross-linked with TA and TG, respectively showed the highest EE (47% and 50% respectively), representing 400% improvement compared to the samples without cross-linking.

Abstract:Tannase microencapsulated by a chitosan-alginate complex coacervate membrane has been used for synthesis of the food additive antioxidant, propyl gallate. Matrix experiments using standard L9 orthogonal array were used to evaluate the effects of the microencapsulation process on the synthesis of propyl gallate in biphasic media. The statistical analysis of signal-to-noise ratio and decomposition of variance (ANOVA) were performed to estimate the optimum levels and determine the relative magnitude of the effects of the three control factors which were chitosan, alginate and hardening time. The optimized capsule for synthesis was formed by dropwise addition of a 15 kg m(-3) chitosan and 20 kg m(-3) CaCl2 solution into a 14 kg m(-3) alginate solution, stirred for 20 min, then hardened for 30 min in 20 kg m(-3) CaCl2. Abstract:Nanocomplexes (NCs) were formed through electrostatic complexation theory using Na-caseinate (NaCa), gum Arabic (GA), and Prunus armeniaca L. gum exudates (PAGE), aimed to encapsulate Conjugated linoleic acid (CLA). Encapsulation was optimized using NaCa (0.1 %–0.5 %), GA/PAGE (0.1 %–0.9 %) and CLA (1 %–5 %), and central composite design (CCD) was employed for numerical optimization. The optimum conditions for NC containing GA (NCGA) were 0.336 %, 0.437 %, and 3.10 % and for NC containing PAGE (NCPAGE) were 0.403 %, 0.730 %, and 4.177 %, of NaCa, GA/PAGE, and CLA, respectively. EE and particle size were 92.46 % and 52.89 nm for NCGA while 88.23 % and 54.76 nm for NCPAGE, respectively. Fourier transform infrared spectroscopy (FTIR) indicated that CLA was physically entrapped. Scanning electron microscopy (SEM) and transmission electron microscopy (TEM) confirmed the electrostatic complex formation. The elastic modulus was predominant for NCGA and NCPAGE dispersions while the complex viscosity of NCPAGE suspension was slightly higher than that of NCGA. The CLA in NCGA-CLA and NCPAGE-CLA exhibited higher oxidative stability than free CLA during 30 days of storage without a significant difference between the results of CLA oxidative stability tests obtained for NCs. Consequently, NCPAGE and NCGA could be applied for the entrapment and protection of nutraceuticals in the food industry.

Abstract:The aim of this paper is to discuss on the preservation of bioactive compound by using microencapsulation techniques. Microencapsulation is a process of building a functional barrier between the core and wall material to prevent any chemical or physical reactions. Microencapsulation provides an important technique in various food, pharmaceutical industry and textile product because has the ability to improve shelf-life, oxidative stability, provide protection and controlled biological activity release of active agents. Microencapsulation of plant extract, essential oils, vegetable has been developed and commercialized by employing various method including freeze drying, coacervation, spray drying, in situ polymerization and melt-extrusion. The most commonly used techniques for microencapsulation of oils are by using spray drying and coacervation method. Microencapsulation methods have been developed in order to modify the efficiency based on several factors such as types of active agents, shell material used, generating particles with a variable range of sizes, shell thickness and permeability. Abstract:The exceptional biocompatibility of emulsion systems that rely on stabilizing protein-polysaccharide particles presents extensive possibilities for the transportation of bioactive carriers, making them highly promising for various biological applications. The current work aimed to explore the phenomenon of complex coacervation between sesame protein isolate (SPI) and four distinct polysaccharides, namely, Arabic gum (GA), carrageenan (CAR), sodium carboxymethyl cellulose (CMC), and sodium alginate (SA). The study objective was achieved by fabricating emulsions through the blending of these polymers with oil at their maximum turbidity level (φ = 0.6), followed by the measurement of their rheological properties. The turbidity, ζ-potential, and particle size were among the techno-parameters analyzed to assess the emulsion stability. The microstructural characterization of the emulsions was conducted using both transmission electron microscopy (TEM) and scanning electron microscopy (SEM). Furthermore, the functional properties were examined using Fourier-transform infrared spectroscopy (FTIR) and X-ray diffraction (XRD). The SPI incorporated with SA, CMC, and CAR reached the maximum turbidity (0.2% w/v) at a ratio of 4:1, corresponding to the pH values of 4.5, 3, or 3.5, respectively. The SPI-GA mixture exhibited the maximum turbidity at a ratio of 10:1 and pH 4.5. Results from the FTIR and XRD analyses provided evidence of complex formation between SPI and the four polysaccharides, with the electrostatic and hydrogen bond interactions facilitating the binding of SPI to these polysaccharides. SPI was bound to the four polysaccharides through electrostatic and hydrogen bond interactions. The SPI-CMC and SPI-SA emulsions were more stable after two weeks of storage.

Abstract:Beta-carotene (β-C) is a natural pigment with the potential to combat vitamin A deficiency but is unstable in light, high temperatures, oxygen, and humidity. The objective of this research was to microencapsulate β-C by complex coacervation of amaranth carboxymethyl starch (CMS) and lactoferrin (LF) for application in gummy candies. The results indicated that high affinity electrostatic attraction between CMS and LF can occur at pHs between 3.5 and 5.5 for complex coacervates formation. About 98% of β-C was microencapsulated in CMS/LF complex coacervates, at pH = 5. The microcapsules presented spherical morphology, and good photolytic and thermal stabilities. About 70% of β-C was released in the intestines; 86% was released in soybean oil, and only 19% in 50% ethanol. The addition of β-C microcapsules in gummy candies reduced its hardness and allowed 22% bioaccessibility. These results indicate that microencapsulate β-C in CMS/LF complex coacervates can be used for gummy candies fortification.

Abstract:Stable, elastic and optical transparent microcapsules containing tetrachloroethylene as core material were prepared from gelatin, sodium dodecyl sulfate (SDS) and sodium carboxymethylcellulose (NaCMC) by complex coacervation method for electrophoretic display. Microcapsules were characterized by scanning electron microscopy, optical microscopy, and thermogravimetric analysis. It is suggested that SDS plays an important role during the process of microencapsulation, i.e. the existence of SDS increases the interaction between gelatin and NaCMC and facilitates the progress of complex coacervation. Because of the compact structure of the capsule wall, the microcapsules represent high thermal stability and good barrier property, both of which prevent core materials from penetrating outside the capsules.

Abstract:Background: Modified polysaccharides have greatly expanded applications in comparison with native polysaccharides due to their improved compatibility and interactions with proteins and active compounds in food-related areas. Nonetheless, there is a noticeable dearth of research concerning the utilization of carboxymethyl starch (CMS) as a microcapsule wall material in food processing, despite its common use in pharmaceutical delivery. The development of an economical and safe embedding carrier using CMS and gelatin (GE) holds immense importance within the food-processing industry. In this work, the potential of innovative coacervates formed by the combination of GE and CMS as a reliable, stable, and biodegradable embedding carrier is evaluated by turbidity measurements, thermogravimetric analysis (TGA), X-ray diffraction (XRD), Fourier transform infrared (FTIR) spectroscopy, and rheological measurements. Results: The results indicate that GE-CMS coacervates primarily resulted from electrostatic interactions and hydrogen bonding. The optimal coacervation was observed at pH 4.6 and with a GE/CMS blend ratio of 3:1 (w/w). However, the addition of NaCl reduced coacervation and made it less sensitive to temperature changes (35-55 °C). In comparison with individual GE or CMS, the coacervates exhibited higher thermal stability, as shown by TGA. X-ray diffraction analysis shows that the GE-CMS coacervates maintained an amorphous structure. Rheological testing reveals that the GE-CMS coacervates exhibited shear-thinning behavior and gel-like properties. Conclusion: Overall, attaining electroneutrality in the mixture boosts the formation of a denser structure and enhances rheological properties, leading to promising applications in food, biomaterials, cosmetics, and pharmaceutical products. © 2023 Society of Chemical Industry.
Enhanced Oxidative Stability and Bioaccessibility of Sour Cherry Kernel Byproducts Encapsulated by Complex Coacervates with Different Wall Matrixes by Spray- and Freeze-Drying

Abstract:Sour cherry (Prunus cerasus L.) seeds are obtained as byproducts of the processing of sour cherries into processed foods. Sour cherry kernel oil (SCKO) contains n-3 PUFAs, which may provide an alternative to marine food products. In this study, SCKO was encapsulated by complex coacervates, and the characterization and in vitro bioaccessibility of encapsulated SCKO were investigated. Complex coacervates were prepared by whey protein concentrate (WPC) in combination with two different wall materials, maltodextrin (MD) and trehalose (TH). Gum Arabic (GA) was added to the final coacervate formulations to maintain droplet stability in the liquid phase. The oxidative stability of encapsulated SCKO was improved by drying on complex coacervate dispersions via freeze-drying and spray-drying. The optimum encapsulation efficiency (EE) was obtained for the sample 1% SCKO encapsulated with 3:1 MD/WPC ratio, followed by the 3:1 TH/WPC mixture containing 2% oil, while the sample with 4:1 TH/WPC containing 2% oil had the lowest EE. In comparison with freeze-dried coacervates containing 1% SCKO, spray-dried ones demonstrated higher EE and improved oxidative stability. It was also shown that TH could be a good alternative to MD when preparing complex coacervates with polysaccharide/protein networks.
