Abstract:More understanding of the relationship among the microstructure, mechanical property, and digestive behavior is essential for the application of emulsion gels in the food industry. In this study, heat-denatured pea protein isolate particles and κ-carrageenan were used to fabricate cold-set emulsion gels induced by CaCl2, and the effect of κ-carrageenan concentration on the gel formation mechanism, microstructure, texture, and digestive properties was investigated. Microstructure analysis obtained by confocal microscopy and scanning electron microscopy revealed that pea protein/κ-carrageenan coupled gel networks formed at the polysaccharide concentration ranged from 0.25% to 0.75%, while the higher κ-carrageenan concentration resulted in the formation of continuous and homogenous κ-carrageenan gel networks comprised of protein enriched microdomains. The hydrophobic interactions and hydrogen bonds played an important role in maintaining the gel structure. The water holding capacity and gel hardness of pea protein emulsion gels increased by 37% and 75 fold, respectively, through increasing κ-carrageenan concentration up to 1.5%. Moreover, in vitro digestion experiments based on the INFOGEST guidelines suggested that the presence of 0.25% κ-carrageenan could promote the digestion of lipids, but the increased κ-carrageenan concentration could delay the lipid and protein hydrolysis under gastrointestinal conditions. These results may provide theoretical guidance for the development of innovative pea protein isolate-based emulsion gel formulations with diverse textures and digestive properties.

Abstract:The exceptional biocompatibility of emulsion systems that rely on stabilizing protein-polysaccharide particles presents extensive possibilities for the transportation of bioactive carriers, making them highly promising for various biological applications. The current work aimed to explore the phenomenon of complex coacervation between sesame protein isolate (SPI) and four distinct polysaccharides, namely, Arabic gum (GA), carrageenan (CAR), sodium carboxymethyl cellulose (CMC), and sodium alginate (SA). The study objective was achieved by fabricating emulsions through the blending of these polymers with oil at their maximum turbidity level (φ = 0.6), followed by the measurement of their rheological properties. The turbidity, ζ-potential, and particle size were among the techno-parameters analyzed to assess the emulsion stability. The microstructural characterization of the emulsions was conducted using both transmission electron microscopy (TEM) and scanning electron microscopy (SEM). Furthermore, the functional properties were examined using Fourier-transform infrared spectroscopy (FTIR) and X-ray diffraction (XRD). The SPI incorporated with SA, CMC, and CAR reached the maximum turbidity (0.2% w/v) at a ratio of 4:1, corresponding to the pH values of 4.5, 3, or 3.5, respectively. The SPI-GA mixture exhibited the maximum turbidity at a ratio of 10:1 and pH 4.5. Results from the FTIR and XRD analyses provided evidence of complex formation between SPI and the four polysaccharides, with the electrostatic and hydrogen bond interactions facilitating the binding of SPI to these polysaccharides. SPI was bound to the four polysaccharides through electrostatic and hydrogen bond interactions. The SPI-CMC and SPI-SA emulsions were more stable after two weeks of storage.

Abstract:Stable, elastic and optical transparent microcapsules containing tetrachloroethylene as core material were prepared from gelatin, sodium dodecyl sulfate (SDS) and sodium carboxymethylcellulose (NaCMC) by complex coacervation method for electrophoretic display. Microcapsules were characterized by scanning electron microscopy, optical microscopy, and thermogravimetric analysis. It is suggested that SDS plays an important role during the process of microencapsulation, i.e. the existence of SDS increases the interaction between gelatin and NaCMC and facilitates the progress of complex coacervation. Because of the compact structure of the capsule wall, the microcapsules represent high thermal stability and good barrier property, both of which prevent core materials from penetrating outside the capsules.

Abstract:The scarcity of radio resources coupled with the high data rate demands in the last few years, induced incremental relaying techniques one of the most promising technologies. This is simply because it allows reaping spatial diversity and saving the channel resources at the same time. In this contribution, we make use of the Decode and Forward incremental relaying technique in OFDM cooperative systems by proposing and analyzing two subcarrier mapping algorithms. Based on outage probability, diversity order and power gain analysis, we derive the optimal parameters for these algorithms to enhance the outage performance of DF cooperative system by reducing the effect of error propagation. Also, an incremental relay sharing scheme is proposed allowing multiple sources to share the same relay and results in an improved spectral efficiency, which is critical given the high cost and scarcity of RF spectrum driven by the growing big data.
Co-encapsulation of hydrophilic and hydrophobic bioactives stabilized in nanostarch-assisted emulsion for inner core gel of coaxial 3D printing

Abstract:3D printing technology, especially coaxial 3D mode of multiple-component shaping, has great potential in the manufacture of personalized nutritional foods. However, integrating and stabilizing functional objectives of different natures remains a challenge for 3D customized foods. Here, we used starch nanoparticle (SNP) to assisted soy protein (SPI) emulsion to load hydrophilic and hydrophobic bioactives (anthocyanin, AC, and curcumin, Cur). The addition of SNP significantly improved the storage stability of the emulsion. Xanthan gum (XG) was also added to the SNP/SPI system to enhance its rheology and form an emulsion gel as inner core of coaxial 3D printing. Low field nuclear magnetic resonance and emulsification analyses showed that AC/Cur@SNP/SPI/XG functional inner core had a strong water binding state and good stability. After printing with outer layer, the SNP/SPI coaxial sample had the lowest deviation rate of 0.8 %. Also, SNP/SPI coaxial sample showed higher AC (90.2 %) and Cur (90.8 %) retention compared to pure starch (S), pure SNP, pure SPI, and S/SPI samples as well as SNP/SPI sample printed without outer layer. In summary, this study provides a new perspective for the manufacture of customized products as multifunctional foods, feeds and even potential delivery of drugs.
Core–Shell Microcapsules from Unpurified Legume Flours

Abstract:Plant-based ingredients are key building blocks for future sustainable advanced materials. Functionality is typically higher for highly purified plant-based ingredients, but this is at the expense of their sustainability value. Here, a method is introduced for creating a soft functional material, with structural elements ranging from the nanometer to the millimeter scale, directly from legume flours. Globulins from soy and pea flours are extracted in their native state at acidic pH and mixed with gum arabic, resulting in liquid–liquid phase separation into a dilute phase and a viscoelastic complex coacervate. Interfacial tensions of the coacervates, determined via AFM-based probing of capillary condensation, are found to be very low (γ = 48.5 and 32.3 μN/m for, respectively, soy and pea), thus promoting the deposition of a shell of coacervate material around oil droplets. Despite the complex nature of the starting material, the dependence of interfacial tensions on salt concentrations follows a scaling law previously shown to hold for model complex coacervates. Curing of the coacervate material into a strong and purely elastic hydrogel is shown to be possible via simple heating, both in bulk and as a shell around oil droplets, thus providing proof of principle for the fabrication of precise core–shell microcapsules directly from legume flours.This article has not yet been cited by other publications.

Abstract:Recently, starch-based packaging materials have become one of research hot points. In the present study, glycerol-plasticized composite films based on high amylose corn starch (HCS) and konjac glucomannan (KGM) were developed. The influence of KGM on the film-forming properties of HCS and the physicochemical properties of the resulting films were characterized by X-ray diffraction (XRD), Fourier transform infrared spectroscopy (FTIR), scanning electron microscopy (SEM), thermogravimetric (TG) analysis and water vapor permeability (WVP). The crystallinity and the proportion of short-range order structure of the films increased first and then declined with the addition of KGM. The micromorphology of the films exhibited the more even texture after KGM was incorporated in. The tensile strength, elongation at break and water resistance of HCS film were also improved significantly. The synergistic effect between HCS and KGM improved the film-forming ability of HCS. The optimal addition amount of KGM was 0.3 %.

Abstract:Ambient storage of dry powdered probiotics is necessary for manufacturer's cost reduction and customer's convenience. Complex coacervation is a promising microencapsulation technique. In this work, a probiotic matrix of type-A gelatin/gum arabic/sucrose (GE/GA/S) with high coacervation pH was designed, based on the alkaline isoelectric point of type-A gelatin. Bacterial survival during ambient storage at room temperature and certain relative humidity were detected. To clarify the protection factors of the coacervation matrix of GE/GA/S, dry microcapsules of GA, GE, GE/sucrose and GE/GA were prepared as controls and compared in terms of their morphology, moisture content, dynamic vapor absorption and cell viability. Probiotics in GE/GA/S5.5 microcapsules behaved the best during spray drying, ambient storage and heat treatment. The results proved that sucrose addition was necessary for cell viability against environmental stresses, and that encapsulation by complex coacervation was a positive factor in cell protection, especially at neutral coacervation pH.

Abstract:A mixed polysaccharide system is an important strategy to improve the performance of a single polysaccharide. Herein, quaternary polysaccharide gels were prepared by konjac glucomannan (KGM), xanthan gum (XG), κ-carrageenan (κ-CA), and agar (AR). The effects of KGM were evaluated by combining water holding capacity (WHC), rheological analysis, scanning electron microscopy (SEM), Fourier transform infrared spectroscopy (FTIR), differential scanning calorimetry (DSC), and texture profile analysis (TPA). More KGM gradually increased the springiness of the compounded gels. WHC increased and then decreased with the addition of KGM, performing best at KGM4 (KGM: κ-CA:XG:AR = 2:2:1:2). Rheological analysis showed that the compounded gels exhibited a pseudoplastic characteristic of shear thinning, KGM endowed the gel with a stronger shear thinning behavior and improved the solid-like nature of the gels at high temperatures. The thermal stability of the composite gel was improved by the participation of KGM. FTIR analysis showed that the interactions were mainly related to intermolecular hydrogen bonds and acetyl groups. The microscopic morphology of KGM4 was significantly continuous, smooth, and compact, exhibiting the best practical performance and taking the maximum advantage.

Electrostatic spray drying: A new alternative for drying of complex coacervates

Abstract:Complex coacervation can be used for controlled delivery of bioactive compounds (i.e., flaxseed oil and quercetin). This study investigated the co-encapsulation of flaxseed oil and quercetin by complex coacervation using soluble pea protein (SPP) and gum arabic (GA) as shell materials, followed by innovative electrostatic spray drying (ES). The dried system was analyzed through encapsulation efficiency (EE) and yield (EY), morphological and physicochemical properties, and stability for 60 days. Small droplet size emulsions were produced by GA (in the first step of complex coacervation) due to its greater emulsifying activity than SPP. Oil EY and EE, moisture, and water activity in dried compositions ranged from 75.7 to 75.6, 76.0-73.4 %, 3.4-4.1 %, and 0.1-0.2, respectively. Spherical microcapsules were created with small and aggregated particle size but stable for 60 days. An amount of 8 % of quercetin remained in the dried coacervates after 60 days, with low hydroperoxide production. In summary, when GA is used as the emulsifier and SPP as the second biopolymer in the coacervation process, suitable coacervates for food applications are obtained, with ES being a novel alternative to obtain coacervates in powder, with improved stability for encapsulated compounds. As a result, this study helps provide a new delivery system option and sheds light on how the characteristics of biopolymers and the drying process affect coacervate formation.

Abstract:A CMOS electrothermal frequency-locked-loop (FLL) is presented, whose output frequency is determined by the temperature-dependent thermal diffusivity of the silicon substrate. Measurements show that this temperature dependence is essentially process independent. After a batch calibration, the electrothermal FLL has an untrimmed inaccuracy of less than plusmn0.7degC (3sigma) over the temperature range -40degC to 100degC.
Acid-induced hydrogels of edible Chlorella pyrenoidosa protein with composite biopolymers network

Abstract:This study aimed to prepare Glucono-δ-lactone (GDL)-induced Chlorella pyrenoidosa protein (CPP) hydrogel and further investigate the effect of polysaccharides on the mechanical properties and stability enhancement of the composite hydrogels. Polysaccharides composed of different ratios of low acyl gellan gum (GE) and guar gum (GU) imparted dense honeycomb-like networks and adjustable textural properties to the composite hydrogels induced by CaCl2. In particular, the hardness of hydrogels increased significantly from 14 to 833 g. Scanning electron microscopy results revealed that CPP-GE/GU composite hydrogels had better stable spatial porous structures. Moreover, fourier transform infrared spectroscopy (FTIR) indicated hydrogen bonding interaction between CPP and GE/GU. The composite network showed improved viscoelasticity, increased thermal stability, and self-healing ability of hydrogels. The composite hydrogels also showed high water holding (89-98%) and swelling (747-862%) properties compared to the pure CPP hydrogel. These findings further expand CPP hydrogel products and broaden application in plant protein-based food.

Abstract:Gastric retention drug delivery is experiencing significant demand for hydrogels that exhibit in situ controllable forming in the stomach, resistance against severe gastric degradation, and exceptional biocompatibility. However, current studies lack comprehensive investigations on these requirements. In this study, resistant starch is chosen as a kind of novel dietary fiber with remarkable gastric retention effects compared to conventional natural polymers. To address its limited solubility, resistant starch was modified by carboxymethyl groups. Moreover, a semi-dissolution acidification sol–gel transition method was employed to enable in situ gelation under gastric acid conditions and fabricate physically crosslinked polyelectrolyte composite hydrogels (CMRS/CTS) based on carboxymethylated resistant starch and chitosan. This method obviates the need for toxic chemical crosslinkers and initiators, ensuring favorable biocompatibility. The influence of carboxymethyl substitution degree and the anion-to-cation ratio of the composite hydrogels on the mechanical, rheological, and swelling properties was thoroughly investigated. Compared to conventional carboxymethyl starch-based hydrogels, CMRS/CTS maintained a relatively intact structure even after immersion in simulated gastric fluid for 30 days owing to the enzymatic stability of the hydrogel. Upon drug loading, CMRS/CTS exhibited sustained and controlled drug release, facilitating prolonged therapeutic effects. Simultaneously achieving in situ gastric drug release, biocompatibility, resistance to degradation, and sustained release, CMRS/CTS represents a promising avenue for the development of long-term gastric retention hydrogels.

Abstract:Complex coacervation is an effective process to deliver ingredients for functional food applications. A stable oil-in-water (O/W) emulsion with desired characteristics significantly affects the complex coacervation and the quality of final microcapsules. In this study, tuna oil was partially hydrolyzed using TL100 and ADL lipases to produce acylglycerols TL100-AC and ADL-AC, respectively. These lipids were subsequently stabilized by gelatin in the O/W emulsion, followed by the complex coacervation with sodium hexametaphosphate. The effect of lipids on emulsion properties, such as interfacial properties, rheological properties, protein conformation and microcapsule formation during complex coacervation, was investigated. Compared with tuna oil-based emulsion, acylglycerol-based ones exhibited reduced droplet size (75%). These changes were beneficial to the formation of coagulant and flocculant so that gelatin-stabilized acylglycerol-based O/W emulsion resulted in improved complex coacervation between gelatin and sodium hexametaphosphate. This study provides a scientific basis for designing specific gelatin O/W emulsions and microencapsulation for the stabilization and delivery of omega-3 fatty acids.

The effect of male fern extract on biliary secretion.

Abstract:Extract of male fern (Dryopterisfelix-mas) has been widely used in the treatment of tapeworm infestation. The extract produces toxic effects, including gastrointestinal symptoms, impairment of vision and jaundice. Nosslin (1963) showed that male fern extract produced an unconjugated hyperbilirubinaemia together with bromsulphthalein retention in patients treated for tapeworm infestation; he suggested that male fern extract reduced the uptake of bilirubin from the blood by liver cells. This paper describes a study of the effect of male fern extract on glucuronide conjugation in rat and rabbit liver in vitro and on the excretion of pigments by rat liver into the bile in vivo, with a view to determining the site of action of male fern extract which causes jaundice.
[Mechanics of palatal expansion in the occlusal plane].

Abstract:The mechanics of a transpalatal arch in the occlusal plane (symmetrical V-bends, asymmetrical V-bends and step-bends) is studied through four methods: simulation of the teeth movements with a typodont, measure of the forces and the moments with a mechanical system composed of pulleys and dead load devices, photo-elastic stress analysis, finite element stress analysis. Typodont experimentations display the dental movements: the easiest one is rotation; it is more difficult to observe distalization and mesialisation that occur with a version of the tooth. An experimental apparatus, composed of pulleys and dead load devices, allows to measure forces and moments released by a transpalatal arch, depending on the level of the activations. The authors notice that the distalization force for an asymmetrical V-bend activation is low, about 0.2 Newton for 5 degrees of activation. Photo-elastic stress analysis affords a visualization of the shear stresses induced by a transpalatal arch within the supporting structures of a root, thanks to the observation of colored fringes in a model constituted with two molars included in a birefringent resin. Meanwhile, the manipulation of the photo-elastic resin is not easy and the interpretation of the results remains difficult. The finite element method is a numerical analysis and consists in the fragmentation of the studied structure in a certain number of elements, where forces and moments can be applied: the three dimensional program analyses the stress and strains in these elements. Thus, we can: 1.--visualize strains and stresses of a transpalatal arch, when it is inserted in the lingual molar sheaths; 2.--observe the dental movements due to the activations of the transpalatal arch (rotation, version, mesialisation, distalization); 3.--study the stress induced in the periodontal tissue. The results of these studies are complementary and in agreement. Particularly, the second method (measure of forces and moments) and the finite element method provide a mathematical and visual model that could explain clinical results: thus, the main purpose of this research is to understand the orthodontic mechanics used in the edgewise or segmented technique.
The effects of three polysaccharides on the gelation properties of myofibrillar protein: Phase behaviour and moisture stability

Abstract:The effects of three polysaccharides on the textural properties and microstructure of myofibrillar protein (MP) gels were studied. The gel strength and rheological properties of composite MP gels were significantly improved with insoluble dietary fibre (DF) and modified starch (MS) addition, while konjac glucomannan (KG) had limited effects at 1% addition. The SEM images indicated that moisture extrusion formed moisture channels and deteriorated the aggregation of MP gel networks during the thermal process. The polysaccharides stabilized moisture and reduced the appearance of moisture channels in the gel network, thereby promoting the formation of compact and integral gel networks. The MP-polysaccharide mixture is a thermally incompatible system and presented two main forms after the thermal process: 1) the "trapped" structure and 2) the "interpenetrated" structure. In the "trapped" structure, the MP was the dominant structure of the composite gel network. In the "interpenetrated" structure, the continuous polysaccharide hydrogel substantially hindered the aggregation of MP gel networks. Principal component analysis showed that the phase behaviour and moisture stability of polysaccharides significantly influenced the textural quality and microstructure of composite MP gelation. The study indicated that polysaccharides that contribute to moisture stability and form a "trapped structure" (phase behaviour) are ideal fat replacements for improving composite gel properties, especially DF.

Abstract:A series of ternary polysaccharide hydrogels were facile prepared by incorporating carboxymethyl cellulose (CMC) into the carboxymethyl chitosan/carboxymethyl β-cyclodextrin (CMCS/CMCD) complex solution based on multiple physical interactions. Structure properties of the CMC/CMCS/CMCD hydrogels were revealed by FTIR, XRD, SEM, and TG. The rheological and texture properties, temperature/pH-response behaviors, biocompatablity, and antimicrobial activity of the hydrogels were determined in detail. These results showed that the existence of electron force and hydrogen bond among three components leading to formation of the hydrogels, displaying good mechanical characteristic, stable solid-like rheological properties, controllable swelling and degradation behaviors, and excellent biocompatibility. Additionally, the swelling kinetics can be well described by the Schott's pseudo second order model. Moreover, the hydrogels loaded with cinnamic acid (CA) exhibited good antimicrobial activity against both Staphylococcus aureus and Escherichia coli , and the antimicrobial activity was related to the composition of the prepared hydrogels. The novel ternary polysaccharide hydrogels may have good application prospects in food and bio-medicine.

Abstract:The fungal protease 400 was applied to mildly hydrolyze soybean protein isolate(SPI) for improving its solubility and emulsifying properties. Afterwards, the hydrolytic soybean protein isolate (HSPI)/sodium alginate (SA) polymer was prepared by complex coacervation reaction and the formation mechanism of the reaction was investigated. The HSPI/SA complex achieved better heat stability than SPI/SA complex when they were applied as microcapsule wall material for the embedding of sweet orange oil. The complex coacervation of soybean protein isolate and polysaccharide has been widely applied for preparing biopolymer materials like microcapsule. In this study, hydrolytic soy protein isolate (HSPI) was prepared by mild hydrolysis of soy protein isolate (SPI) with fungal protease 400 (F400). The degree of hydrolysis (DH) for the enzymatic products was controlled at 1%–5%. Emulsification, oxidation resistance, and thermal stability were used to evaluate the performances of HSPI with different DH. The results showed that the HSPI with the hydrolysis degree of 2% had the optimal property. Subsequently, the complex polymer of HSPI/SA was prepared by the coalescence reaction of HSPI and sodium alginate (SA). The turbidity curves manifested the optimal complex coacervation occurred at the ratio of 7:1 (HSPI:SA). Fourier transform infrared spectroscopy (FTIR) presented that the reaction involved electrostatic interactions between ‐NH3+ in HSPI and ‐COO− in SA. Isothermal titration calorimetry experiments indicated that the complex coacervation reactions of HSPI and SA arose spontaneously. The microencapsulation by complex coacervation of HSPI and SA was further produced for embedding sweet orange oil. The thermogravimetric analysis (TGA) result revealed that the microencapsulation system of HSPI/SA had a better heat resistance than that using the SPI/SA complex polymer.

Abstract:<p>Compounding is a safe method to avoid limitations of a singular gel. Here, composite gels were prepared with konjac glucomannan (KGM) and gum arabic (GA) and evaluated by Fourier transform infrared spectroscopy (FTIR), scanning electron microscopy (SEM), water solubility index (WSI), water absorption index (WAI), texture profile analysis (TPA) and rheological analysis. The gel stratified when GA concentration ≥ 2.5%. FTIR indicated that the interactions of KGM and GA were mainly related to hydrogen bonds and acetyl groups, and the solution separated from gels only included GA and water molecules. The microstructures became denser and contained smaller holes at high GA concentrations as seen by SEM. WSI and WAI both increased with GA increasing. Hardness and springiness dropped when GA concentration increased from 0 to 2.0%, but they increased when GA increased from 2.0% to 4.0%. Rheological analysis showed the gels were non-Newtonian pseudoplastic fluids, with anti-thixotropy (GA ≤ 3.5%) and thixotropy (GA ≥ 4.0%). Furthermore, the gels could be classified as non-covalent gels, with higher gel strength at high GA concentrations. The non-covalent linkages included hydrogen bonding and hydrophobic interaction, and hydrogen bonding held the dominated status. Therefore, KGM and GA have antagonistic and synergistic effects.</p>
