Abstract:A low pressure steam‐heater for use in a brewery copper takes the form of concentric, truncated conical sleeves, with devices for ensuring substantially uniform heat distribution; the rate of wort circulation achieved in the copper is high and efficiency figures are most satisfactory. For recovery of latent heat, plant is available for condensation of brewery copper vapours, and the condensate may be used with the aid of a heat‐exchanger for heating brewing liquor. Factors involved in ensuring controlled carbonation of beer are discussed, and a chart is presented relating saturation pressure, chilling rate, orifice diameter and carbon dioxide pressure required; application of this chart is shown. Means are described for the disposal of spent materials from mash tun and hopback, and recent developments in bulk pasteurization are discussed.
