Abstract:ABSTRACTChanges in water quality significantly shape fish behavior, a crucial index reflecting the growth and welfare status of fish. Given the centrality of this relationship to aquaculture practices, a comprehensive understanding of how water quality dynamics influence fish behavior is imperative. While there have been some summaries of the effects of water quality parameters on fish physiology and growth, few reviews on their effects on fish behavior have been reported yet. This article reviews several water quality parameters which are of great concern in aquaculture from multiple facets of actual production, including physical parameters (water temperature and turbidity), chemical parameters (dissolved oxygen, salinity, pH, and inorganic nitrogen), and chemical pollutants (microplastics and crude oil), which have gained increasing attention from the researchers and aquaculture practitioners over the past decades. Variations in these water quality parameters can exert profound effects on fish physiology, metabolism, internal tissues and organs, and sensory perception, which influences fish behaviors such as swimming, schooling, feeding, predation, anti‐predation, aggression, courtship, as well as adaptive and stress‐related behaviors such as exploration, avoidance response, and anxiety‐like behavior. By synthesizing the behavioral changes caused by specific water quality parameters, this review aims to provide strong support for further water quality‐related research, thereby fostering environments conducive to both fish welfare and aquaculture productivity.

Abstract:Lipids and their constituent fatty acids are, along with proteins, the major organic constituents of fish, and they play major roles as sources of metabolic energy for growth including reproduction and movement, including migration. Furthermore, the fatty acids of fish lipids are rich in ω3 long chain, highly unsaturated fatty acids (n-3 HUFA) that have particularly important roles in animal nutrition, including fish and human nutrition, reflecting their roles in critical physiological processes. Indeed, fish are the most important food source of these vital nutrients for man. Thus, the longstanding interest in fish lipids stems from their abundance and their uniqueness. This review attempts to summarize our present state of knowledge of various aspects of the basic biochemistry, metabolism, and functions of fatty acids, and the lipids they constitute part of, in fish, seeking where possible to relate that understanding as much to fish in their natural environment as to farmed fish. In doing so, it highlights the areas that require investigation in greater depth and also the increasing application of molecular technologies in fish lipid metabolism, which will further fascilitate advances through molecular biological and genetic techniques, including genomics and proteomics.

Abstract:In the previous edition, this chapter was part of the diet formulation and manufacture chapter. In this edition, a separate chapter is devoted to the topic. There are two reasons for this change. First, alternative ingredients increasingly used in fish feeds are less familiar, so identifying appropriate chemical tests to assess quality of alternative ingredients is needed. Second, as fishmeal levels in feeds are being reduced, fish feeds must be formulated to more precisely meet nutritional needs of fish, i.e., precision formulation. This makes it crucial to have tools to assess quality of feeds and ensure that available levels of essential nutrients are provided. The first portion of the chapter explains which chemical tests are appropriate to use to measure ingredient quality. Different ingredients present different potential quality problems. Interpretation of the results of chemical testing allows feed producers to select high-quality ingredients. In addition to chemical tests, microscopic examination of feed ingredients, somewhat of a lost art, is a valuable tool to detect adulteration of ingredients or heat damage. In the second portion of the chapter, in vivo methods of diet evaluation are presented. This includes digestibility measurements and calculations, feeding trials and their evaluation, and approaches to assess effects of diet on fish quality and safety to consumers. Finally, approaches used for economic evaluation of feeds are discussed.

Abstract:The global population has rapidly expanded in the last few decades and is continuing to increase at a rapid pace. To meet this growing food demand fish is considered a balanced food source due to their high nutritious value and low cost. Fish are rich in well-balanced nutrients, a good source of polyunsaturated fatty acids and impose various health benefits. Furthermore, the most commonly used preservation technologies including cooling, freezing, super-chilling and chemical preservatives are discussed, which could prolong the shelf life. Non-thermal technologies such as pulsed electric field (PEF), fluorescence spectroscopy, hyperspectral imaging technique (HSI) and high-pressure processing (HPP) are used over thermal techniques in marine food industries for processing of most economical fish products in such a way as to meet consumer demands with minimal quality damage. Many by-products are produced as a result of processing techniques, which have caused serious environmental pollution. Therefore, highly advanced technologies to utilize these by-products for high-value-added product preparation for various applications are required. This review provides updated information on the nutritional value of fish, focusing on their preservation technologies to inhibit spoilage, improve shelf life, retard microbial and oxidative degradation while extending the new applications of non-thermal technologies, as well as reconsidering the values of by-products to obtain bioactive compounds that can be used as functional ingredients in pharmaceutical, cosmetics and food processing industries.

Abstract:This book is a unique cross fertilization of aquatic ecology and aquaculture. It shows how diets structure the digestive tract and its microbiota and, in turn, the microbiota influences life history traits of its host, including behavior. Short-term starvation can have beneficial effects on individuals themselves and succeeding generations which may acquire multiple stress resistances – a mechanism strengthening the persistence of populations. From terrestrial, but not yet from aquatic animals, it is understood that circadian the rhythmicity makes toxins or good food. On the long-term, the dietary basis impacts succeeding generations and can trigger a sympatric speciation by (epi)-genetics. This volume defines gaps in nutritional research and practice of farmed fishes and invertebrates by referring to knowledge from marine and freshwater biology. It also points out that dietary benefits and deficiencies have effects on several succeeding generations, indicating that well designed diets may have the potential to successfully improve broodstock and breeding effort.

Abstract:Fileting is a popular form of processing methods and in addition to being sold fresh or frozen, filets are used for preparation products battered and breaded filets. This generates considerable amount of side streams like skin, frames, and cut-offs which forms around 30–70% of the total body weight. The European Waste Framework Directive 2008 and recent amendments [EU WFD (2018/851)] stipulates comprehensive regulations which the manufacturers must follow while handling the side streams generated during the processing. This demands a detailed compilation of information regarding the yield, classification and valorization potential of side streams associated with the fileting operations of the cold-water finfishes. The side streams are a rich source of proteins including structural proteins like collagen and biominerals such as hydroxyapatite which find multiple application in food and pharmaceutical industry. Previously, the recovery of these components was performed by extensive chemical treatment with acids or bases, including subsequent washing steps. Nowadays, green extraction methods, defined as technologies with reduced energy and chemical consumption, should be considered to achieve a green shift in the food industry. Nevertheless, industrial upscaling of green extraction methods and subsequent refinement of the isolated compounds must be further evaluated and improved in order to achieve a green shift in food industry by using side-stream derived compounds as ingredients. Moreover, legislations as well as national and international regulations must be considered and evaluated. Even though a number of articles are recently available regarding seafood side stream valorization, this review focus on side streams generated predominantly from cold water fish species and also discusses sustainable green technologies to be included during the recovery process.

Abstract:Abstract Fishes are the most edible protein source worldwide and generate several remnants such as scales, viscera, head, bone, and skin. Fish wastes are not disposed of properly, which adversely affects the environment, especially the water bodies where fish processing industries dispose of their waste. Fish waste mainly contains nitrogen, oil, fat, salts, heavy metals, and organic compounds, which increase the biological oxygen demand (BOD) and chemical oxygen demand (COD). Fish waste can degrade in various ways, such as physicochemical or by enzymatic action, but using microbes is an environmentally friendly approach that can provide valuable compounds such as products such as collagen, chitin, minerals, and fish protein concentrates. This review is designed to focus on the suitability of microbes as tools for fish waste degradation and the production of certain associated. This study also provides insight into the production of other compounds such as protease, chitinase, and chitin applicability of these products. After processing, fish waste as a microbial growth media for enzyme production since microorganisms synthesize enzymes such as proteases, protein hydrolysates, lipids, and chitinase, which have broader applications in the pharmaceutical, cosmetic, biomedical material, and food processing industries.

Abstract:Fermentation technology is a biorefining tool that has been used in various industrial processes to recover valuable nutrients from different side streams. One promising application of this technique is in the reclamation of nutritional components from seafood side streams. Seafood processing generates significant amounts of waste, including heads, shells, and other side streams. These side streams contain high quantities of valued nutritional components that can be extracted using fermentation technology. The fermentation technology engages the application of microorganisms to convert the side stream into valuable products like biofuels, enzymes, and animal feed. Natural polymers such as chitin and chitosan have various purposes in the food, medicinal, and agricultural industry. Another example is the fish protein hydrolysates (FPH) from seafood side streams. FPHs are protein-rich powders which could be used in animal nutrition and nutraceutical industry. The resulting hydrolysate is further filtered and dried resulting in a FPH powder. Fermentation technology holds great possibility in the recovery of valuable nutrients from seafood side streams. The process can help reduce waste and generate new value-added products from what would otherwise be considered a waste product. With further research and development, fermentation technology can become a key tool in the biorefining industry.

Abstract:The present paper presents an overview of the effects of gut microbiota and probiotics on lipid-, carbohydrate-, protein- and amino acid metabolism in fish and shrimp. In probiotic fish studies, the zebrafish (Danio rerio) model is the most frequently used, and probiotic administration reveals the effect on glucose homeostasis, anti-lipidemic effects and increasing short-chain fatty acids, and increased expressions of genes related to carbohydrate metabolism and innate immunity, along with down-regulation of oxidative stress-related genes. Further, improved length of the intestinal villi and expression of nutrient transporters in fish owing to probiotics exposure have been documented. The present review will present an appraisal of the effect of intestinal microbiota and probiotic administration on the metabolism of nutrients and metabolites related to stress and immunity in diverse fish- and shrimp species. Furthermore, to give the reader satisfactory information on the topics discussed, some information from endothermic animals is also presented.

Abstract:The most important processing technologies used for fish and their effect on the product quality are reviewed. Among the traditional processes are smoking, salting, drying and their combinations as well as marinating. Canning, sous-vide cooking, preparation of surimi and ready-to-eat products belong to the technologies of modern times. In addition, also the effects of the preparation of fish at home and some specialties like fermented and graved fish are included. It is stressed that the quality of fish products will be influenced by each action during processing and preparation. It is important to adapt the processes to the special requirements that easily spoiled products as fish have. If processing techniques are applied in an innovative way, quality products with high nutritional value will be achieved. Dialogue with the industry and the consumers is needed to assure a high nutritional value and quality of the final fish products.

Abstract:Consumer demand for convenience has led to large quantities of seafood being value-added processed before marketing, resulting in large amounts of marine by-products being generated by processing industries. Several bioconversion processes have been proposed to transform some of these by-products. In addition to their relatively low value conventional use as animal feed and fertilizers, several investigations have been reported that have demonstrated the potential to add value to viscera, heads, skins, fins, trimmings, and crab and shrimp shells by extraction of lipids, bioactive peptides, enzymes, and other functional proteins and chitin that can be used in food and pharmaceutical applications. This chapter is focused on reviewing the opportunities for utilization of these marine by-products. The chapter discusses the various products and bioactive compounds that can be obtained from seafood waste and describes various methods that can be used to produce these products with the aim of highlighting opportunities to add value to these marine waste streams.

Abstract:The subcellular compartmentalization of metals within aquatic organisms reflects their internal behavior after metal uptake and can provide important information about their potential toxicity. Commonly, the fractionation protocol used to determine subcellular metal partitioning in aquatic organisms consists of mechanically homogenizing the tissue, separating subcellular components into fractions by differential centrifugation and heat‐denaturation steps, and determining the amount of metals associated with each fraction. However, the accurate separation of subcellular cell components is challenging and the nature and purity of the operationally defined subcellular fractions are rarely assessed. In the absence of this type of validation, however, the interpretation of subcellular metal fractionation results could be compromised. The aim of the present study was to adjust a subcellular fractionation protocol for the liver of field‐collected fish and to test the adjusted protocol using fraction‐specific enzyme markers. Overall, our results illustrate the need to optimize fractionation procedures when studying a new species or organ. In the course of this study, the categorization of some fractions was revised in accordance with the enzymatic results obtained, in order to yield a more credible subcellular fraction distribution scheme. In addition, trial assays aimed at isolating nuclear materials from the cellular debris were conducted, using DNA as a marker for nuclear material. Tested protocols failed to isolate the nuclei and results suggested that nuclei were probably trapped by disrupted cellular membranes. Recommendations on how to improve future subcellular fractionation studies on freshwater fish are discussed.

Abstract:The goal of water quality management is to regulate the physical, chemical and biological environment of the culture system so that conditions favour the optimum growth of the fish crop. Changes in water quality occurring during fish culture directly or indirectly are the result of the feeds added to the pond to increase fish growth. Some water quality parameters are largely unaffected by the addition of the fish feeds. Concentration of total alkalinity, hardness, and chloride are initially dictated by the quality of the water supplying the pond. Oxygen consumption rates by fish vary with dissolved oxygen concentration, feeding status, weight of fish, and water temperature. Food conversion values are higher for fish in ponds with chronically dissolved oxygen concentrations than in ponds with higher dissolved oxygen concentrations. Phytoplankton die-offs can cause severe depression of dissolved oxygen concentration. Dissolved oxygen concentrations will decline drastically, and they may fall low enough to cause fish kills.

Abstract:Fish and fishery products are among the food commodities of high commercial value, high-quality protein content, vitamins, minerals and unsaturated fatty acids, which are beneficial to health. However, seafood products are highly perishable and thus require proper processing to maintain their quality and safety. On the other hand, consumers, nowadays, demand fresh or fresh-like, minimally processed fishery products that do not alter their natural quality attributes. The present article reviews the results of studies published over the last 15 years in the literature on: (i) the main spoilage mechanisms of seafood including contamination with pathogens and (ii) innovative processing technologies applied for the preservation and shelf life extension of seafood products. These primarily include: high hydrostatic pressure, natural preservatives, ozonation, irradiation, pulse light technology and retort pouch processing.

Abstract:Membrane technologies play a very important role in water and wastewater treatments. These membrane processes provide key advantages over the conventional processes, such as lower energy requirement, lower footprint, easier to operate, and more effective contaminants removal. This chapter introduces different membrane processes: (1) pressure-driven membrane processes which are the most widely used in water and wastewater treatments, and (2) several advanced membrane processes. These processes perform physical or physicochemical separations. Most of the separations occur between liquid-liquid phases, but liquid-gas and gas-gas separation phases are also performed in the latest membrane development. The contemporary membrane bioreactor is the heart of membrane technologies that are used in various applications. However, fouling is a common phenomenon that reduces the efficiency of the membrane operation. Thus, the concept of critical flux and introduction of some control and preventive mechanism could prevent or reduce the fouling in membrane bioreactors.
