Abstract:The effect of germination and parboiling treatment on distribution of water molecular, physicochemical profiles and microstructure of rice was investigated. The results showed that the water molecular was evenly distributed in rice kernel after germination, but after subjecting to parboiling treatment, mobile water molecular might be confined to small region, which diffused from the outer regions into the rice kernel core. The reason may be that parboiling treatment produced macromolecular matrix where dispersed amylose chains form double-helical associations between starch granules so that water molecular is restrained and not entrapped within the starch crystallites. Meanwhile, the changes of microstructure and distribution of water molecular may be attributed to softness of germinated rice and hardness of parboiling rice. In addition, parboiling treatment had significant (p < 0.05) effect on the physicochemical properties of germinated rice. The viscosity and pasting temperature significantly (p < 0.05) increased. The storage modulus (G′), loss modulus (G′′), tan δ and shear stress had lower value compared to untreated germinated rice. Colour difference significantly (p < 0.05) increased, the microstructure of surface became smoother and compacter.
Relationships Between Cooking Properties and Physicochemical Properties in Brown and White Rice

Abstract:Brown rice presently attracts a growing number of customers due to its perceived health benefits, but its cooking properties differ from white rice. This study aims to investigate the relationship between physicochemical properties and cooking properties of brown rice and white rice. Brown rice samples generally are found to have higher thousand kernel weight, and minimum cooking time, but lower length/breadth ratio, pasting viscosity values (except setback), swelling power, water uptake ratio, gruel solid loss, cooked length/breadth ratio, and elongation ratio than white rice. Brown and white rice from the same cultivar show some differences regarding their gelatinization properties. The cooking property differences between brown and white rice may be explained by impact of embryo and protection by bran layers. Correlation analysis indicate that cooking properties are little correlated to the flour physicochemical properties, except minimum cooking time. Although apparent amylose content show strong correlations with most flour physicochemical properties, gelatinization temperature may be preferred to be used for prediction of minimum cooking time in both brown and white rice.

Abstract:Non-glutinous rice is always less sticky than glutinous rice. By soaking two non-glutinous rice (Jingmi and Xianmi) with different concentrations of NaOH solution, the stickiness of cooked non-glutinous rice is significantly increased, which is closely associated with the removal of surface proteins of these treated rice grains. By investigating starch leaching characteristics and the molecular structure of leached starch, we find: (i) total solids and amylopectin amount in the leached materials increase by raising NaOH concentration; (ii) the molecular size and chain-length distributions (CLDs) of leached starch significantly differ between samples with different soaking treatments; (iii) a strong correlation between stickiness of cooked rice and total amount of leached amylopectin is established. (iv) molecular causes for the increased stickiness of alkali-soaked rice are put forward to explain the above observations. This study could broaden the applications of non-glutinous rice by altering its stickiness attribute with alkali soaking.

Abstract:Understanding the hydration behavior of cereals during cooking is industrially important in order to optimize processing conditions. In this study, barley porridge was cooked in a sealed tin can at 100, 115, and 121 degrees C, respectively, and changes in water uptake and hygroscopic swelling in dehulled barley grains were measured during the cooking of canned porridge. In order to describe and better understand the hydration behaviors of barley grains during the cooking process, a three-dimensional (3D) numerical model was developed and validated. The proposed model was found to be adequate for representing the moisture absorption characteristics with a mean relative deviation modulus (P) ranging from 4.325% to 5.058%. The analysis of the 3D simulation of hygroscopic swelling was satisfactory for describing the expansion in the geometry of barley. Given that the model represented the experimental values adequately, it can be applied to the simulation and design of cooking processes of cereals grains, allowing for saving in both time and costs.

Abstract:A dynamic model that considers heat transfer laws, internal heat distribution, and different cooking strategies was developed to simulate dumpling cooking. The cooking strategies that were considered include refilling water, changing heating power, and adding dumplings. The concept of degree of doneness (DoD) was used to gauge the appropriate level of cooking dumplings. Experiments were designed to determine the acceptable range of DoD. The developed model enables the prediction of water and dumpling temperatures, water evaporation, and dumpling quality. The model, which reflected the evolution of dumpling cooking, may be used as a basis to optimize the process for energy saving and full automation purpose.

Abstract:<p>Increasing demands for better palatability of cooked rice is driving innovations in cooking control of rice cooker. Cooking procedure is the core of rice cookers. To fully understand the differences of different rice procedures, the cooking curves of 12 rice cookers were acquired and analyzed by pattern recognition methods in this study. The results suggested that the initial heating stage (0–1400 s) was the major factor affecting the hardness and stickiness of the cooked rice. Meanwhile, the effect of heating rate on the texture of cooked rice was verified using a power-regulated rice cooker that the lower heating rates led to lower hardness (from 3608.2 g to 2692.9 g), stickiness (from 385.8 g s to 282.4 g s), and viscoelastic (from 0.05 to 0.06 to 0.08–0.09) of the cooked rice. The gelatinization temperatures of starch increased with heating rate, while the enthalpy increased firstly (2.22 J/g to 4.76 J/g) and then decreased (4.76 J/g to 2.96 J/g). Proton distribution in rice cooked at different heating rates was found responsible for the varied distribution and combination state of water in rice. These results indicated that the structural transformation of kernel were varied at different heating rates.</p>

Abstract:The pasting characteristics induced by different milling degrees on the cooking quality of quinoa were investigated. The results showed that significant variations were observed in the basic composition of quinoa with different milling degrees, which indicated the existence of effects due to the degree of milling. The combination of starch and water promoted the pasting of quinoa, and with increasing milling, quinoa textural properties tended to produce softer and more viscous. LF NMR results indicated that more water was present in the dense network formed by the starch gelatinization. Rheological properties further demonstrated that milling degree enhanced the interactions between starch molecules and correspondingly increased the energy storage modulus and loss modulus. The microstructures (SEM and CLSM) confirmed that the physical property changes in quinoa were attributed to a dense network structure caused by starch pasting, which was similar to the results of RVA. The higher the amylose/amylopectin ratio (between 0.113 and 0.167), the more pronounced the characteristic peaks. The different degrees of milling of quinoa changed the quinoa crystallinity. Consequently, the degree of milling improved the cooking characteristics and enhanced the physicochemical properties. These results help the quinoa processing industry to develop healthy quinoa products with moderate milling.

Abstract:This study evaluated the changes in physicochemical properties and appearance quality of long-grain rice during the grinding process using image technologies and aimed to provide reference for future research. The brown rice milling process was divided into three stages, and flatbed scanning, scanning electron microscopy (SEM), X-ray micro-computed tomography (micro-CT), low-field nuclear magic resonance (LF-NMR), and headspace-gas chromatography-ion mobility spectrometry (HS-GC-IMS) were employed to examine the physicochemical and volatile properties of the samples. Results revealed a continuous increase in the degree of milling, with a broken rice rate and a whiteness value increasing by 50.84% and 21.13%, respectively, compared with those during the initial stage; dietary fiber and vitamin B1 contents were reduced by 54.41% and 66.67%, respectively. The image results visualized showed that the cortex of brown rice was gradually peeled off with the increase in milling degree; the cortical thickness was gradually reduced, the endosperm was gradually exposed, and the surface was smoother and shinier. T2 populations exhibited a shift toward longer relaxation times, followed by a decrease in relaxation time during the milling process. Additionally, 31 target compounds impacting rice flavor, mainly ketones, alcohols, and esters, were identified, and the concentration of volatile substances in the B region decreased with the reduction in the bran layer; the concentration of volatile substances in the C region provided rice flavor, which increased with the milling process. This study showed changes in the physicochemical properties and appearance quality of long-grain brown rice during milling. Furthermore, the use of various image processing techniques offers significant insights for optimizing processing parameters and enhancing overall quality and taste.

Abstract:Sensory deterioration exists in marketed cooked rice. The migration and interaction of intrinsic components occur under multiple conditions in each industrial production process and cause relevant physicochemical changes in cooked rice. This review aims to establish a scientific knowledge system of intrinsic component transition and migration in cooked rice kernel during processing to solve qualitative deficiencies in cooked rice products. The main influencing factors of intrinsic component structural change in cooked rice and the quality control points that should be considered are summarized. Further studies are needed to establish proper evaluation standards for cooked rice products to meet the growing consumer demands.
Dynamic Change of Chalkiness and Observation of Grain Endosperm Structure with Scanning Electron Microscope under Controlled Temperature Condition

Abstract:Based on the experiment with two chalkiness types of indica rice variety (Xinong8116 and Guang'er'ai 104) and two different temperature treatment (the daily average temperature was 33℃ and 23℃, respectively) in climatic chamber, chalkiness change of rice grain during grain filling stage and its relationship with the endosperm starch structure characteristics such as starch shape, size, developing degree and arrange pattern which was observed by scanning electron microscope were analysed.The result showed that the key stage of the chalkiness change of rice grain during the filling stage was from 5 days to 15-20 days after heading, but at the other stage the chalkiness change was not clear; the difference of chalkiness change between 33℃ high temperature treatment and 23℃ proper temperature treatment was mainly at the stage of 10 days to 20 days after heading; through the observation of grain endosperm structure with scanning electron microscope, it was found that the distinguish between “uncovered endosperm starch” and “ covered endosperm starch” had close relationship with starch developing degree in endosperm cell, no inevitable relative to the chalkiness type of rice variety.

Abstract:The constitution and forms of rice determine its processing and cooking properties and further control the cooked rice quality. As the two main components, starch and protein content correlations and their characteristics have been extensively explored. However, rice is mainly consumed as polished kernels, components distribution, cytoplasmic matrix, and cell walls work together, and the properties of extracted components or flour are difficult to reflect the quality of cooked rice accurately. Thus, this review summarizes the multi-scale structure changes of main components during real rice cooking conditions. The dynamic thermal changes and leaching behaviors in rice kernels are compared with pure starch or rice flour. The in situ changes and interactions of starch granules, protein bodies, and cell walls during cooking are reviewed. Based on this, different textural evaluation methods are compared, and the advantages and disadvantages are pointed out. The oral chewing perception and bionic chewing simulation for textual evaluation have gradually become hot. Both rice quality controllers and eating quality evaluators attempt to establish an accurate quality evaluation system with the increased demand for high-quality rice.

Abstract:In this study, annealed glutinous rice flour treated under different conditions (ANN1, ANN2 and ANN3) were prepared. The structure as well as physicochemical characteristics of the flour and its dumpling products were investigated. The crystallinity of the annealed flour samples increased, while the hydration ability decreased. The content of bound water raised, and immobilized water as well as the freezing enthalpy value decreased for the fast-frozen dumplings made from annealed flour samples. It showed that annealed treatment could reduce the formation of large ice crystals, thus decrease the cracking of fast-frozen dumplings. The freezing enthalpy value of annealed dumplings decreased which was conducive to protect the structure and quality of products. The boiled dumplings made of annealed flour had better eating quality as demonstrated by the increase in the transmittance of the soup. It indicated that moderate annealed glutinous rice flour ANN2 had optimal physicochemical properties to make high quality dumplings. This study would pave the way for further study of the annealing glutinous rice flour and provide theoretical guidance for the application of annealing treatment in starchy food product.

Abstract:Glutinous rice (GR), an important food crop in Asia, provides prolonged energy for the human body due to its high amylopectin content. The non-volatile metabolites generated by different cooking methods that affect the nutritional value and color of GR are still poorly understood. Herein, a widely targeted metabolomics approach was used to understand the effects of different cooking methods (steaming, baking, and frying) on the metabolite profiles of GR. Compared with other treatments, steamed GR had a brighter color and significantly lower contents of total sugar, starch, amylopectin, and amylose, at 40.74%, 14.13%, 9.78%, and 15.18%, respectively. Additionally, 70, 108, and 115 metabolites were significantly altered in the steaming, baking, and frying groups respectively, and amino acid and carbohydrate metabolism were identified as the representative metabolic pathways based on KEGG annotations. Further evaluation of 14 amino acids and 12 carbohydrates in steamed GR, especially 4-aminobutyric acid, suggested its high nutraceutical value. Additionally, multivariate analysis indicated that total sugar content, amylose content, beta-alanine methyl ester hydrochloride, and 4-aminobutyric acid played a critical role in color formation in raw and cooked GR. Finally, the levels of major amino acids and carbohydrates were quantified by conventional methods to verify the reliability of the metabolome. Consequently, this in-depth understanding of metabolite profiling in normal cooking methods has provided a foundation for the processing of GR products.

Abstract:In order to develop production technology of instant rice, this study was undertaken with the soaking and processing conditions to improve the quality of instant rice. Soaking temperature, soaking time and adding amount of water were all investigated to select the optimal soaking condition by measuring water absorption and moisture content. Pseudo-level method of L9 (3 4 ) orthogonal design tests were adopted to optimize the cooking process by physical properties mainly including hardness, adhesiveness and moisture content. Results showed that physical properties had significant linear relationship with three processing factors by multiple linear regressions and the optimal cooking process was maintaining pressure at 80 KPa for 4 min and stewing rice for 15 min.

Abstract:The effect of cooking process on quality properties (sensory evaluation, water absorption, expansion ratio and textural properties) and in vitro digestibility of cooked rice were investigated. The eating quality of cooked rice and in vitro digestibility of starch and protein from cooked rice depended strongly on the varieties of rice and cooking process. In contrast to linear heating, heating at low temperature (40~70°C) for several minutes during the cooking process improved the color, shape, mouth-feel and texture of cooked rice after cooling. This process also led to the increase in the water absorption, expansion ratio, and adhesiveness of cooked rice with the decrease in the hardness. Furthermore, higher releases of reducing sugar and soluble nitrogen during digestion were also observed for cooked rice prepared by this process, suggesting better nutritional value.

Abstract:Brown rice flour (BRF) and corresponding brown rice noodle (BRN) were prepared by different methods and the mechanism of impact of extruded rice bran on cooking stability of BRN was investigated. The particle size distribution, damaged starch content and pasting properties of BRFs were evaluated and the texture properties, microstructure and moisture distribution during cooking of BRNs were investigated. The average particle size and damaged starch of brown rice flour refilled with extruded rice bran (BRF-E) and brown rice flour refilled with nonextruded rice bran (BRF-NE) were obviously less than that of the brown rice flour by fully crushed brown rice (BRF-F). The peak viscosity (PV), setback viscosity (SV) and pasting temperature (PT) of BRF-E and BRF-NE were significantly higher than that of BRF-F. The results of scanning electron microscopy (SEM) and confocal laser scanning microscopy (CLSM) showed that the microstructure of BRN-E was most compact, which indicated that using BRF refilled with extruded rice bran to produce BRN could promote BRN formed a compact texture structure. Meanwhile, water migration and texture properties analysis demonstrated that BRN-E had better cooking stability and chewiness.

Abstract:The relationships between chemical composition, structure and physicochemical properties such as pasting, thermal, and textural properties of twelve temperate rice cultivars grown in Heilongjiang Province, China were investigated in this study. There were significant differences in the content of fat, protein, ash, amylose, damaged starch among twelve cultivars. Brabender Viscograph results showed that gelatinization time, peak viscosity, pasting and peak temperature ranged from 9 to 15 min, 2100 to 2500 BU, 58.75 to 72.00 ℃ and 63.75 to 84.45 ℃, respectively, except for the waxy one Longjing 9. To, Tp, Tc and ΔH were found in the range of 58.34 to 67.96 ℃, 65.39 to 75.38 ℃, 78.47 to 90.69 ℃ and 2.036 to 3.127 J/g respectively. Scanning Electron Micro-photograph results showed that all starch granules were polyhedral with irregular shapes, except Longjing 9 showing signs of the loss of physical integrity. The hardness, adhesiveness, springiness, gumminess, cohesiveness and resilience ranged from 395.87 g to 1161.76 g, -90.842 g·mm to -36.4 g·mm, 0.498 to 0.747, 78.631 g to 466.837 g, 0.199 to 0.569, 0.321 to 0.504, respectively. Correlation studies indicated that amylose, damaged starch, protein, fat and ash played a more important role in determining the rice properties of pasting, thermal, crystallinity and texture.

Abstract:Background: The objective of this experiment was to investigate the role of endogenous proteins and lipids in the structural and physicochemical properties of starch in heat-moisture treatment (HMT) rice flour and to reveal their effect on starch digestibility under heat. Results: The findings indicate that, in the absence of endogenous proteins and lipids acting as a physical barrier, especially proteins, the interaction between rice flour and endogenous proteins and lipids diminished. This reduction led to fewer starch-protein inclusion complexes and starch-lipid complexes, altering the granule aggregation structure of rice flour. It resulted in a decrease in particle size, an increase in agglomeration between starch granules, and more surface cracking on rice granules. Under HMT conditions with a moisture content of 30%, slight gelatinization of the starch granules occurred, contributing to an increased starch hydrolysis rate. In addition, the elevated thermal energy effect of HMT enhanced interactions between starch molecular chains. These resulted in a decrease in crystallinity, short-range ordering, and the content of double-helix structure within starch granules. These structural transformations led to higher pasting temperatures, improved hot and cold paste stability, and a decrease in peak viscosity, breakdown, setback, and enthalpy of pasting of the starch granules. Conclusion: The combined analysis of microstructure, physicochemical properties, and in vitro digestion characteristics has enabled us to further enhance our understanding of the interaction mechanisms between endogenous proteins, lipids, and starches during HMT. © 2024 Society of Chemical Industry.
Effect of curdlan addition and thermal sterilization on the structural and properties of rice starch gel

Abstract:This study delves into the effects of curdlan integration and thermal sterilization on the rheological properties, structure, and quality attributes of concentrated rice starch gel. Acting as a heat-set polysaccharide, curdlan established a dual-network gel structure with rice starch gel, displaying strong interactions with rice starch, as confirmed by confocal laser scanning microscopy and Fourier-transform infrared spectroscopy. The addition of curdlan expedited the gel formation of rice starch, yielding a denser gel structure. Consequently, this enhanced G', solid-like behavior, textural properties, and cooking quality while reducing frequency-dependence. Given the cooling-induced gelation behavior of pure rice starch, thermal treatment disrupted inter-chain hydrogen bonding, compromising the structural integrity of the gel. This disruption manifested in a softer texture and diminished mechanical properties and cooking quality. Notably, this decline in mechanical properties and cooking quality of rice starch gel was markedly ameliorated with the incorporation of curdlan, particularly at a content of ≥1.0 %. Compared with pure RS, 1.0 % CD inclusion showed a reduction in cooking breakage rate by 30.69 % and an increase in hardness by 38.04 %. This work provides valuable insights for the advancement of fresh starch gel-based foods that exhibit exceptional quality and an extended shelf life.
Differences in cooking taste and physicochemical properties between compound nutritional rice and common rice

Abstract:In this study, it was compared the physicochemical properties and cooking taste quality between four different types of compound nutritional rice (rice flour with the addition of other coarse grains, legumes, potatoes, and other powders, extruded as artificial rice grains) and common rice. We found that the protein and apparent amylose contents of compound nutritional rice were higher than that of common rice, up to 9.775% and 19.45% respectively. The γ-aminobutyric acid (GABA) and resistant starch contents were much lower than in common rice, and the dietary fiber content did not differ from that in common rice. The results of Fourier transform infrared spectroscopy (FTIR) and X-ray diffraction (XRD) analysis revealed that the starch properties and structure of the compound nutritional rice changed due to high temperature and high pressure processing. In particular, the crystalline structures of starch became V-shaped. In addition, the results of artificial tasting and tasting meter showed that the taste of compound nutritional rice was generally inferior to that of common rice. In summary, compound nutritional rice had problems such as nutritional imbalance and poor taste. There was still a lot of room for improving the taste quality of compound nutritional rice. Therefore, the future development of compound nutritional rice should focus on both nutritional balance and taste improvement. The results of this paper also provided a certain theoretical basis for this.
