Abstract:The effect of γ irradiation on the cooked rice texture and amylopectin structure is studied with three varieties(Zhefu 504.Zhefu 802 and Zaogeng T2)subjected to 4kGy,8kGy and 12kGy irradiation.The results indicate that irradiation has significant effect on the texture of the cooked rice;the hardness,cohesiveness,gumminess and chewiness reduce significantly with the increase of the irradiation dose.Irradiation also affects the chain length distribution of the amylopectin,the side-chains of amylopectin of Zhefu 504 with the 12≥DP,Zhefu 802 with 24≥DP≥13 and Zaogeng T2 with 24≥DP≥13and 36≥DP≥25 are broken.

Abstract:Effect of γ-irradiation on improving zein's characteristics was studied in order to investigate the performance of zein as a polymer matrix in composites.This aim has been achieved by irradiating zein powder with Co~60 gamma ray at the doses of 5,10,15,20 and 25kGy.Results indicated that the zein solutions produced by irradiated powder showed pseudoplastic fluid characteristic with shear thinning phenomenon.The irradiation dose,shear temperature and shear rate had remarkable effects on the rheological properties of zein.The viscosity of solution showed an ascending-descending trend with increasing the radiation dose.The radiation dose of the highest viscosity was found at 10kGy.Meanwhile the increase of temperature resulted in an initial decrease following by a further increase in the viscosity of irradiation modified zein solution.The shear temperature of the lowest viscosity was found at 308K.With increasing the shear rate,the viscosity of solution decreased,and reached a plateau when the shear rate was close to 100s~-1.
Influence of 10 MeV electron beam irradiation on the lipid stability of oat and barley during storage.

Abstract:This study investigated the effect of electron beam irradiation (EBI) on the lipid stability of oat and barley during long-term storage. Results showed that the initial free fatty acid content in oat was higher than that in barley. This may mean that lipid hydrolysis started under the function of lipase when oat and barley were milled into flours. Both storage and EBI factors influenced lipid-degrading enzyme activity and promoted lipid oxidation in oat and barley. However, it seemed that storage had higher impacts because the DPPH scavenging activity decreased greatly, and the contents of both malondialdehyde and volatile lipid oxidation products increased in all samples. Thus, the antioxidant capacity and level of lipid oxidation after EBI treatment should be considered when producing oat and barley foods. Overall, this study shows the high potential of EBI for use as a non-thermal technique in stabilising the storage quality of oat and barley.

Abstract:In China, breeding efforts to create Indica-type rice cultivars with textural and functional properties similar to Japonica-type rice have not been successful. An alternative strategy is to develop a processing method to modify the end-use quality of Indica-type rice. Milled rice samples with low, intermediate and high apparent amylose content (AAC) were treated with Co-60 gamma rays. AAC was impacted only by high doses of gamma rays while gel consistency was significantly increased. Increasing levels of gamma irradiation (GIR) reduced rice flour viscosity and increased the temperature of gelatinization onset. Exposure to gamma rays caused the RVA setback (rice pasting properties) but not the instrumental texture properties of an Indica-type cultivar to become more like that of the Japonica-type rice. GIR of milled rice for human consumption would be limited to between 2 and 4 kGy because of its negative effects at higher doses on rice color and aroma. However, that level will destroy insects and some microorganism and change rice of unacceptable quality for some consumers closer to being acceptable and may also broaden the functionality of rice for industrial uses.
Influence of Electron Beam Irradiation on the Moisture and Properties of Freshly Harvested and Sun-Dried Rice

Abstract:Moisture content is an important factor that affects rice storage. Rice with high moisture (HM) content has superior taste but is difficult to store. In this study, low-dose electron beam irradiation (EBI) was used to study water distribution in newly harvested HM (15.03%) rice and dried rice (11.97%) via low-field nuclear magnetic resonance (LF-NMR). The gelatinization, texture and rheological properties of rice and the thermal and digestion properties of rice starch were determined. Results showed that low-dose EBI could change water distribution in rice mainly by affecting free water under low-moisture (LM) conditions and free water and bound water under HM conditions. HM rice showed smooth changes in gelatinization and rheological properties and softened textural properties. The swelling power and solubility index indicated that irradiation promoted the depolymerization of starch chains. Overall, low-dose EBI had little effect on the properties of rice. HM rice showed superior quality and taste, whereas LM rice exhibited superior nutritional quality. This work attempted to optimize the outcome of the EBI treatment of rice for storage purposes by analyzing its effects. It demonstrated that low-dose EBI was more effective and environmentally friendly than other techniques.

Electron beam irradiation induced aggregation, structural and functional changes of soybean 11S globulin

Abstract:This study investigated the effects of different irradiation doses of an electron beam (e-beam) (0, 2, 4, 6, 8, and 10 kGy) on the structure, emulsification, foaming, and rheological and gel properties of soybean 11S globulin. The irradiation treatment at 4 and 6 kGy significantly increased the solubility, surface hydrophobicity, disulfide bonding, and ζ-potential of 11S globulin, decreased the particle size of the protein solution, and effectively improved the emulsifying activity and foaming stability of the protein solution. Moreover, irradiation induced moderate cross-linking and aggregation of the proteins, thereby increasing the apparent viscosity and shear stress of the protein solution. In addition, the low-field NMR and microstructure analysis results revealed that protein gels formed a dense and homogeneous three-dimensional mesh structure after irradiation (6 kGy), along with increased content of bound water (T2b) and water not readily flowable (T21) and a decrease content of free water (T22). Overall, our results confirmed that e-beam irradiation could significantly improve the physicochemical properties of soybean 11S globulin. Our study thus provides a new technical means for the application of electron beam irradiation technology toward protein modification and broadens the high-value utilization of soybean 11S globulin in the food processing industry.

Abstract:Background: Insoluble dietary fiber (IDF) has beneficial physiological effects, such as the promoting of intestinal peristalsis, the improving of intestinal flora, and the absorbing of some harmful substances. Okara, a byproduct of soybean processing, is a potential source of IDF. But the larger particle size and poor water solubility of okara IDF have adverse effects on sensory properties and functional characteristics. Therefore, we used an emerging type of physical method is electron beam irradiation (EBI) to modify okara, and investigated that the effects of EBI doses on the structure and functional properties of okara IDF. Results: It was found that the electron beam treatment damaged the crystalline structure of IDF. Observation of the surface of EBI-treated IDF revealed a loose and porous morphology rather than the typical smooth structure. At a dose of 6 kGy, a smallest particle size and largest specific surface area of IDF was obtained, and these factors increased the apparent viscosity of an IDF dispersion. The water holding capacity, swelling capacity and the oil holding capacity upon irradiation at 6 kGy increased 74.13%, 84.76% and 41.62%, respectively. In addition, the capacity for adsorption of cholesterol, sodium cholate, glucose and nitrite ion were improved after electron beam treatment. Conclusion: The modified okara IDF showed improved particle sizes and hydration properties, and these changes correlated with an improvement to the rough taste of IDF and improvements to the texture and storage period upon supplementation into food. © 2022 Society of Chemical Industry.
Effect of γ-Ray Irradiation Pre-treatment on Embryo Structure and Germination Characteristics of Rice Seeds

Abstract:Rice was irradiated with dose up to 10 kGy after harvest.It is showed from microscopic observation that the embryonal structure of rice(Oryza sativa L.),including structure of embryo bud and radicle,is affected by the γ-ray irradiation;the outline and venations of the irradiated embryo and radicle gradually blur with increasing irradiation dose.These changes are due to the breakage of embryo cells.It can also be seen that the influence of γ-ray irradiation on the structure of radicle is heavier than that on embryo bud.The results of microscopic observation are confirmed by a germination experiment,showing that the lengths of buds of irradiated rice are diminished,the roots of irradiated rice disappear,and the germination rate of irradiated rice is 0 %.The changes of germination of the irradiated rice after storage are shown.After long-term storage,the germination rate of the irradiated rice increases from 0 %,and some irradiated rice samples even give comparatively high values of germination rate within two year's storage.These changes may due to the self-repair of irradiated rice.The effects of store time on germination characteristics of non-irradiated and irradiated rice samples were also studied.
Characterization of Physical Properties of Flour and Starch Obtained from Gamma-Irradiated White Rice

Abstract:Physical and structural characteristics of rice flour and starch obtained from gamma-irradiated white rice were determined. Pasting viscosities of the rice flour and starch, analyzed by using a Rapid Visco Analyser, decreased continuously with the increase in irradiation dosage. Differential scanning calorimetry showed that gelatinization onset, peak and conclusion temperatures of rice flour and starch changed slightly but the enthalpy change decreased significantly with increase of irradiation dosage. All irradiated starch displayed an A-type X-ray diffraction pattern like the native starch. Gel permeation chromatography showed that the blue value ratio of the first peak (amylopectin) to the second one (amylose) decreased with the increase of the irradiation dosage. The weight-average molecular weight (M-w) and gyration radius (R-z) of amylopectin analyzed by using HPSEC-MALLS-RI (high-performance size-exclusion chromatography equipped with multiangle laser-light scattering and refractive index detector) decreased gradually from 1.48 x 10(9) (M-w) and 384.1 nm (R-z) of native rice starch to 2.36 x 10(8) (M,,) and 236.8 nm of 9 kGy-irradiated starch. The branch chain-length distribution of amylopectins determined by HFAEC-ENZ-PAD (high-performance anion-exchange chromatography with amyloglucosidase post-column on-line reactor and pulsed amperometric detector) showed that gamma irradiation had no significant effect on the amylopectin branch chains with 13 <= DP <= 24 and 37 <= DP, but produced more branch chains with 6 <= DP <= 12 when the irradiation dosage was less than 9 kGy. It might be deduced that gamma irradiation caused the breakage of the amylopectin chains at the amorphous regions, but had little effects on the crystalline regions of starch granules, especially at low dosage irradiation.

The dehydration rate and the surface temperature of rice increased with the increasing dose. At the same dehydration rate, the surface temperature increased with increasing dose. However, at the same moisture content, the surface temperature decreased with increasing dose. The dose did not affect the milling qualities, but it affected the eating and cooking qualities of rice, such as apparent amylose content (AAC), gel consistency (GC), and gelatinization temperature (GT).
Structural characterization and functional properties of egg white protein treated by electron beam irradiation

Abstract:This study investigated the functional properties and structural characteristics of egg white protein (EWP) powder treated by electron beam irradiation (EBI) at the doses of 5, 10, 20, 30, 50, 70 and 100 kGy. In comparison with the untreated sample (0 kGy), the EBI-induced EWP showed generally better solubility and higher antioxidant capacity by ABTS• + radical scavenging assay. Furthermore, the emulsifying activity index of EBI-induced EWP increased with increased EBI dose, reaching the maximum value of 15.8 ± 0.4 m 2 /g at 100 kGy. The emulsifying stability index and ϛ-potential of EBI-induced EWP showed fluctuating tendencies. These functional property changes of protein were attributed to the conformational changes caused by EBI. SDS-PAGE patterns confirmed that high-dose EBI would result in protein depolymerization to low-mass molecules at 11 kDa, contributing to the increased solubility. Circular dichroism data demonstrated that EBI-induced EWP exhibited partial denaturation and a flexible structure, which was responsible for the improved emulsifying properties. Fluorescence spectra revealed that high EBI doses led to an increase in the polar environment around tryptophan, which could enhance the solubility and antioxidant activity of EWP. In addition, high EBI doses decreased the content of free and total sulphydryl groups, and changed the intermolecular forces of protein, including ionic bonds, hydrogen bonds, hydrophobic interactions, and disulfide bonds. These findings can provide solid support for practical applications of EBI technology in EWP food processing.

Abstract:A new technology of pretreating late short-grain rice by gamma-irradiation and then drying the rice with hot-air was introduced in this work.It was found by microstructure observation that the starch granules in the irradiated rice endosperm were tore up more with increasing the irradiation dose.The milling and eating quality of the irradiated rice were studied.Results show that the irradiation pretreatment leads no decrease to rice milling quality;on the contrary,it leads the improvement of rice eating quality evidently.Further more,for the eating quality improvement,the technics of irradiation before drying is more effective than the technics of irradiation after drying.A quadratic rotation-orthogonal composite experimental design,with three variables(irradiation dose,drying temperature,and initial moisture content,at five levels) and three response functions(apparent amylose content,gel consistency,and gelatinization temperature) were employed to study the effects of the three variables on the response functions.The three response functions significantly correlate with these variables by second order polynomials consisting of linear,quadratic and interaction terms.The optimum levels of the three variables for obtaining optimum magnitude(maximum or minimum) of the three response functions are obtained.The response surfaces analysis,with X and Y axes representing two of the most influential variables while keeping another variable constant at their optimum point,are presented to aid in visualizing the effect of the variables.

Abstract:Three rice genotypes with different color were gamma irradiated at a dose of 2, 4, 6, 8and 10kGy. The aim of this study was to investigate the effect of gamma irradiation on the phenolics content and the antioxidant activity, as well as physicochemical properties of whole grain rice. The bound phenolics content in all the genotypes were significantly increased with the increase of dose of irradiation. Gamma irradiation at high dose significantly increased the free, bound and total antioxidant activities of three rice genotypes except for the free antioxidant activities of red rice. Though the color parameters were slightly changed, these changes could not be visibly identified. Rapid visco-analyzer (RVA) viscosities and gel hardness decreased continuously with the increase of the irradiation doses. It is suggested that gamma irradiation enhanced the antioxidant potential and eating quality of whole grainrice.

Abstract:Three rice cultivars (RS3M, RS4H and RS5L) differing in resistant starch contents but similar in genetic background were chosen to study the effects of gamma irradiation on starch physicochemical properties and digestibility. Irradiation increases the resistant starch content in all the three cultivars and in a dose-dependent manner in rice with low-resistant starch content (RS5L). Irradiation decreases apparent amylose content and gelatinisation temperature and changed the starch granule structure, while increasing V-type crystallinity. Starch enzymatic hydrolysis rate was reduced following irradiation, and the effect of irradiation on reducing starch digestibility was negatively correlated with resistant starch content. Treatment with gamma irradiation has therefore a potential for increasing resistant starch content and producing low digestibility of starch in common rice.
Effect of electron-beam irradiation on the rheological properties of starches separated from stored wheat

Abstract:In this paper,the effects of electron-beam irradiation on the rheological properties and the molecular mass distribution of starches separated from irradiated wheat were investigated.The experimental wheat was irradiated with different irradiation doses(0,1.0,2.75,4.4kGy).The analysis using the Brabender Viscoamylograph showed that with the increasing of irradiation doses,the Brabender peak viscosity of wheat starches decreased significantly and the cold stability increased,while the retrogradations were weakened.When the irradiation dose reached 4.4kGy,the peak viscosity reduced from 85.0BU to 42.0BU,decreased by 50.6%,the setback reduced by 88.2%.As determined by HPSEC-MALLS-RI,the molecular masses of wheat starches degraded gradually with increasing irradiation dose,when the irradiation dose upped to 4.4kGy the molar mass of starch decreased by one order of magnitude.The results indicated that the electron-beam irradiation made wheat starch degradation and lead to the changes of rheological properties and the decrease of viscosity of wheat starches.

Abstract:Irradiation, an effective method to change starch structure and its functionalities, was carried out before traditional air-drying. Effect of irradiation on the structural and physicochemical properties of rice starch and contrast with that of non-irradiated and traditional air-dried rice was studied in this research. Micrology observation of microstructure of starch, at outer and inner layer rice endosperm, showed that the starch granules would be destroyed by gamma irradiation, and the breakage was increased with increasing dose. Effect of gamma irradiation on microstructures of inner endosperm was greater than that of outer endosperm. Chemistry examination and RVA rice viscosity analysis were carried out on the air-dried rice. Apparent amylose content, gel consistency and gelatinisation temperature were all affected by irradiation pre-treatment. Apparent amylose content was decreased, and gel consistency and gelatinisation temperature were increased with increasing dose. These affects generally related to the changes of starch structure. With the analysis of RVA, six major parameters of starch pasting properties, peak viscosity (PKV), hot pasting viscosity (HPV), cool pasting viscosity (CPV), setback (CPV minus PKV), breakdown (PKV minus HPV), and peak time (PKT), were significant decreased with the increasing dose by different velocity. There were high correlation coefficient between dose and individual major parameters of starch pasting properties (range from 0.961 to 0.998). These changes of pasting properties were also due to the breakage of starch granules caused by gamma irradiation.
Electron Beam Irradiation Alters the Physicochemical Properties of Chickpea Proteins and the Peptidomic Profile of Its Digest

Abstract:Irradiation can be used for the preservation of chickpea protein as it can destroy microorganisms, bacteria, virus, or insects that might be present. However, irradiation may provoke oxidative stress, and therefore modify the functionality and nutritional value of chickpea protein. In order to study the effects of irradiation on the physicochemical properties and digestion behaviour of chickpea protein, chickpea protein concentrate (CPC) was treated with electron beam irradiation (EBI) at doses of 5, 10, 15, and 20 kGy. After irradiation, protein solubility first increased at 10 kGy and 15 kGy, and then decreased at the higher dose of 20 kGy. This was supported by SDS-PAGE, where the intensity of major protein bands first increased and then decreased. Increased doses of EBI generally led to greater oxidative modification of proteins in CPC, indicated by reduced sulfhydryls and increased carbonyls. In addition, the protein structure was modified by EBI as shown by Fourier transform infrared spectroscopy analysis, where α-helix generally decreased, and β-sheet increased. Although the protein digestibility was not significantly affected by EBI, the peptidomic analysis of the digests revealed significant differences among CPC irradiated with varying doses. A total of 337 peptides were identified from CPC irradiated with 0 kGy, 10 kGy, and 20 kGy, with 18 overlapping peptides and 60, 29, and 40 peptides specific to the groups of 0, 10, and 20 kGy respectively. Theoretical calculation showed that the distribution of peptide length, hydrophobicity, net charge, and C-terminal residues were affected by irradiation. The 2, 2′-azino-bis (3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) radical scavenging activity showed a marginal decrease with an increasing dose of irradiation. In conclusion, EBI led to oxidative modification and structural changes in chickpea protein, which subsequently affected the physicochemical properties of peptides obtained from in-vitro digestion of CPC, despite similar digestibility.

Abstract:Electron beam irradiation (EBI) is an environmentally friendly physical modification technology. In this study, pea starch nanocrystals (SNC) were prepared by EBI-assisted pretreatment, and investigated the effects of EBI on the multiscale structure and physicochemical properties of SNC. EBI-assisted pretreatment didn't change the particle morphology, crystalline type and FT-IR spectra of SNC. However, EBI-SNC's relative crystallinity and short-range orderliness index (R 1047/1022 ) significantly increased with increasing irradiation dose (5 KGy-20 KGy). In addition, EBI-assisted pretreatment caused the long chains of SNC's amylopectin to break into short chains. Moreover, EBI-assisted treatment significantly reduced the mean size, molecular weight, apparent amylose content, swelling power and SDS + RS content of SNC, while increasing the solubility, zeta potential and RDS content. Furthermore, the flow properties of the EBI-SNC samples were increased. The results show that EBI effectively changed the structural and functional properties of SNC, and the excellent functional properties are expected to broaden the application range of SNC.

Abstract:After rice seed was irradiated, the embryonal structure (structure of embryo bud and radicle) was affected by gamma-ray. The result revealed that the outline and venations of embryo and radicle were unclear with the increasing dose. These changes of embryonal structure caused by increasing irradiation dose were due to the increasing breakage degree of embryo (including embryo bud and radicle) cells. The influence of gamma-ray irradiation on the structure of radicle was more significant than that of embryo. The results were confirmed by a germination experiment, which showed that the lengths of buds of irradiated rice were diminished, the roots of irradiated rice were found to disappeare, and the germination of irradiated rice was 0%. After long-term storage, the germination rate of irradiated rice seed increased and that of some irradiated samples were found to reach to comparatively high values after different storage time.
