Abstract:This article proves that different cultures of the East and the West have different influences on Hong Kong through a detailed introduction to various food flavors in Hong Kong. Hong Kong was colonized and ruled by the British for nearly a hundred years in the last century. Even though it has long since returned to the mainland, the British culture and Western food flavor of many years have been deeply embedded in the cultural flavor of Hong Kong. But on this basis, as a part of China for more than a thousand years, its cultural heritage and food flavor also contain a strong oriental flavor.

Abstract:Hong Kong is adrift between its British colonial past and its upcoming political reunification with the ancestral Chinese motherland. Hong Kong has endured a prolonged identity crisis in recent years, as it struggles to reconcile conflicts between its transnational worldview and the cultural identity, or Chineseness, of its majority population. A growing wave of nostalgia for the colonial era has frustrated Beijing’s efforts to win the hearts and minds of Hongkongers. This essay analyzes how Hong Kong’s distinctive local character is reflected in several socio-cultural arenas: the heritage industry, filmmaking, efforts to preserve historic structures and intangible heritage, public education, and tourism. With reunification on the horizon, Hongkongers want to assert an independent cultural identity but still seem to exist at the “intersection of different spaces”.

Abstract:This cultural study examines how contradictory yet coherent Hong Kong identities are constructed and solidified through constant interactions between its ethnic community and changing political, economic, and social environments from late colonization to the present. To conduct evidence-based observations and analysis, pineapple bun is selected as the research object. Its historical emergence and modern variations serve as metaphorical representations of Hong Kong vernacular cultures, embodying local people's negotiations with the land and their identifications toward the collective Self. The paper illustrates that different pineapple buns served in bing sutt, cha chaan teng, nouvelle restaurant, convenience store, and home kitchen signify distinct aspects of Hong Kong identities coexisting within contemporary complexities. These binary oppositions harmoniously imprinted in local ethnicity – flexibility and persistence, nativism and globalism, and utilitarian and hedonism – demarcate Hongkongese as a unique community apart from British colonists and mainland Chinese.

Abstract:This article uses the heritigization of milk tea making technique as a lens to explore post-colonial cultural governance, placemaking and identity building in post-colonial Hong Kong. Based on the data and information collected through ethnographic study, personal interviews, and media researches on milk tea production and consumption, this study investigates how the Hong Kong government, the entrepreneurs and consumers interactively commodify tradition and culinary skills in tea-making for city branding, economic development and identity politics. This paper reveals that the meaning of milk tea in the official narrative supports the government vision of a harmonious society with docile labor. In contrast, the younger generation considers milk tea an icon representing an alternate Hong Kong spirit of rebelliousness, indicating a widening gap in the interpretation of cultural values and political orientation between the Hong Kong government and the younger generation under the background of Hong Kong's rapid political change.

Abstract:This article examines how food practices contribute to the lived experience of the West African diaspora in Hong Kong. Drawing on in-depth interviews and participant observations of Africans in different African restaurants, grocery stalls and cultural events, this article proposes the concept of a “culinary diaspora space” to examine how they navigate spaces of solidarity and struggle during their integration process through African food-related practices. It highlights the point at which boundaries of inclusion and exclusion are contested by revealing the practical and symbolic roles played by migrants’ traditional food culture throughout the integration process. This research argues that African food outlets are a space of social frictions but also of possible cultural encounters between the Africans and Hong Kong Chinese. By focusing on food-related practices, this research demonstrates how the West African diaspora is felt, embodied and perceived by the host society.

Abstract:Among various types of breakfast in China, Cantonese morning tea (Yum Cha) is unique in its form and feature. Morning tea is a Cantonese tradition of morning activity, originated in the Qing dynasty. After years of change, it has evolved to the current form, serving an assortment of small dishes (dim sum) alongside Chinese tea. The classification of Chinese tea is based on the colors, shapes, aroma, and fermentation degree. Several types of dim sum dishes in Guangdong are categorized according to the region, ingredients selection, taste, and cooking methods. Yum Cha has a unique etiquette that is different from the folk cultures in other areas. Morning tea plays an essential role in influencing the dietary patterns and eating habits of Cantonese people. In addition, morning tea supports social interactions and connections of daily human life, providing a practical and acceptable channel for old friendships to nurture and new bonds to build. As a symbol of local culture, morning tea shapes Cantonese people physically and mentally. Therefore, the Yum Cha culture should be valued and propagated.

Abstract:Throughout the 1980s and early 1990s, construction in Shenzhen symbolized both the transformation of Chinese socialism and the concomitant integration of Chinese society into global capitalist networks. This article tells the story of Shenzhen from the perspective of this first generation of immigrants, the so-called Old Shenzheners, who use nostalgia about food to define, debate, and ultimately retreat from conversations about what Shenzhen culture was and what it ought to be. Their food nostalgia is part of a larger cultural tradition of Chinese alimentary politics and has allowed Shenzheners to indigenize capitalist globalization to make the city their own. Old Shenzheners' food nostalgia represents an important moment in the Chinese transition to a post socialist political economy, redefining what it means to be both Chinese and global in a post–cold war world order.

Abstract:Chinese regional cuisines have developed their own flavors and presentation styles. Huaiyang cuisine (淮揚菜) in the Jiangsu area emphasizes excellent cutting skills, culinary techniques, and the use of ingredients cultivated in the Yangtze River Delta area. There is no doubt that regional cuisines have distinctive local characteristics. However, with increased migration since the 1950s, it has become important to investigate how these local cuisines have changed in relation to the culinary skills and tastes of people in different regional contexts. To gauge the discrepancy between the historical construction of the cuisine in modern times and everyday food practices, Hong Kong will be used as a case study. Since most people in Hong Kong are unfamiliar with Huaiyang cuisine, this paper explains why there has been an overemphasis on official historical discourse from the national perspective and how the change of regional should be understood as a living practice from the diasporic context.
Sensorial Place-Making in Ethnic Minority Areas: The Consumption of Forest Puer Tea in Contemporary China

Abstract:This article examines sensorial place-making through analysing the taste and other sensory experiences of forest Puer tea in its consumption among the urban middle class in mainland China. In the process of creating the ‘terroir’ of forest Puer tea, sensorial experience has been frequently linked to its place of origin. I argue that ethnic minorities who cultivate the tea play a vital part in the imagination of the tea's terroir. Trips by consumers to the mountains where the tea is cultivated, which aim at facilitating a ‘full experience’ of the tea and its culture, have generated a special pattern of interactions between the urban middle class who consume the tea and the ethnic minorities who cultivate it. The consumption of Puer tea, which brings about social imaginary and transcendent economic value, has become a driving force for producing the locality of ethnic minority areas.
When East meets West: The politicization of kei pou (qipao) or cheongsam in Hong Kong

Abstract:Kei pou ( qipao in Mandarin) or cheongsam, the oft-interchangeable style of dress has been labelled as the ‘Chinese national dress’ due to western media. However, the perception originally stems from colonial mindset lacking understanding to the diverse Chinese diaspora. This article argues not only is kei pou or cheongsam the representation of Hong Kong’s local culture, but also the symbolism of Hongkonger’s cultural identity. Through object-based research, the article engages with a rare red quilted kei pou purchased in Hong Kong in the 1980s. The dress illustrates the true Oriental beauty with the symbolism of elegance and sophistication of Hong Kong women from an East Asian perspective. The article clarifies the etymological confusion between kei pou and cheongsam through their stylistic taxonomy and historical development and examines the cultural-political connotations of these two styles of dress and their semiotics in constructing the identity of Hongkongers. Consequently, the research proposes the interconnected relationship between the city and the dress, in which exists not only within the contexts of marginalized culture in the Eurocentric world, but also within the authoritarian-ruled China.
Food as a medium: The framework and cross-culture implications of short videos of overseas Chinese sharing Chinese food in foreign countries

Abstract:Focusing on foreigners’ experience of Chinese food, a group of overseas Chinese released a series of short videos on social media about sharing Chinese food with their family and friends abroad. By analyzing the framework of such videos at high, medium and low levels, we find that the food narratives of overseas Chinese reflect both their main consciousness of spreading Chinese food culture and follow the basic logic of platform traffic. Therefore, elevating this cross-cultural practice to foreign communication requires them to shift from spontaneity to consciousness in cultural communication. On the other hand, we can also see the coexistence and intermingling of Chinese and foreign cultures, which reveals that we should turn to a communication view of civilizational diversity and inclusiveness, and transcend civilizational superiority with civilizational coexistence.

Abstract:Once a part of the Chinese Empire, Hong Kong then became a British colony and changed its status again in 1997 to that of a Special Administrative Region of the People's Republic of China. The implications of this history for heritage and cultural identity are discussed with particular reference to their representation and promotion as tourist attractions. Hong Kong is seen to be using its unique heritage in a time of transition and uncertainty to assist in defining a distinct identity that is partly expressed through tourism. There are, however, certain potential conflicts of meaning and interpretation amongst the interested parties that have still to be resolved. The experience of Hong Kong provides an insight into the dynamics of the relationship between identity, heritage and tourism that are especially complex within the context of decolonisation.

Abstract:In the early twentieth century, Chinatowns in the West were ghettoes for Chinese immigrants who were marginalized and considered 'other' by the dominant society. In Western eyes, these areas were the no-go zones of the Oriental 'other'. Now, more than a hundred years later, traditional Chinatowns still exist in some cities but their meaning and role has been transformed, while in other cities entirely new Chinatowns have emerged. This article discusses how Chinatowns today are increasingly contested sites where older diasporic understandings of Chineseness are unsettled by newer, neoliberal interpretations, dominated by the pull of China's new-found economic might. In particular, the so-called 'rise of China' has spawned a globalization of the idea of 'Chinatown' itself, with its actual uptake in urban development projects the world over, or a backlash against it, determined by varying perceptions of China's global ascendancy as an amalgam of threat and opportunity.

Abstract:In recent decades a style of preparing and drinking tea modelled largely on gongfu tea associated with the Chaoshan region of north-eastern Guangdong Province, China, has been taken up as a contemporary tea art in Taiwan, Hong Kong, the Chinese mainland and elsewhere. This paper draws on fieldwork conducted in Chaoshan to examine gongfu tea as contemporary practice in its home setting. Three aspects are considered: gongfu tea as an everyday practice, as a refined practice, and as commercialised leisure in tea-houses. I argue that, as an everyday practice in Chaoshan, gongfu tea primarily serves to nourish social connectedness with family, friends and associates. It is regarded as an integral part of day-to-day life rather than a tea art. However, some people separate it from the everyday world by cultivating discernment and knowledge with regard to selected aspects, such as high-quality teapots or appreciation of different teas.
The power of nostalgic emotion: how Hong Kong traditional tong sui influences generation Z's purchase intentions

Abstract:Purpose Of the studies covering culinary tourism and traditional culture, Generation Z remains an underexplored group despite being the primary consumers of future tourism. Research into young consumers' motivations is hoped to clarify, protect, and sustain Hong Kong Tong sui among this generation. As such, this study focuses on Generation Z to understand the types of novel experiences Tong sui can create for them, and it is worth exploring in depth the diet that young people are interested in from the perspective of traditional food. Design/methodology/approach Based on Creswell's guidelines for quantitative research, we investigated the relationships among multiple elements of Hong Kong Tong sui and Generation Z tourists. A corresponding questionnaire was designed to gather information for statistical analysis and contains five sections. The first part solicited basic respondent information. Sections 2–5 presented several key terms (nostalgic emotion, food authenticity, FCV, and purchase intention) to frame the questionnaire in terms of our hypotheses. Items were scored on 7-point Likert-type scales for ease of processing in SPSS 26.0. Findings All hypotheses were supported, with nostalgia having the most significant influence on Generation Z's purchase intentions. Besides, young generations are willing to buy traditional food when exposed to the restaurants or enterprises have nostalgic elements and inspire nostalgia in consumer. Generation Z's thoughts about food authenticity notably played a more significant role than FCV in terms of the nostalgia of traditional food. In addition, food authenticity and FCV were found to indirectly mediate the relationship between nostalgic emotion and purchase intention. Research limitations/implications Examining these types of campaigns geared toward Generation Z tourists to advertise traditional food has enriched this tactic's applicability. The approach also constructs a foundation to scrutinize the appeal of traditional dishes among young consumer groups to potentially strengthen such food's influence. Practical implications This study highlights the importance of leveraging nostalgia and understanding the emotional connection that Generation Z has with traditional cuisine. It suggests that enterprises can develop new products or revive traditional recipes that cater to the nostalgic preferences of Generation Z. Marketing innovations, such as using social media influencers, can also be employed to create awareness and generate interest in traditional food. Traditional food can contribute to tourist destinations' promotion and differentiate them from competitors, boosting the tourism and catering industries and creating employment opportunities. Social implications The promotion and preservation of traditional food can contribute to the preservation of cultural identity and heritage. By engaging local communities in culinary initiatives and fostering community pride, traditional food tourism can strengthen the connection to cultural heritage and encourage the preservation of traditional culinary practices. This engagement can lead to sustainable development by promoting local traditions and ensuring the participation of the local community in tourism activities. Originality/value This study offers novel theoretical insights into traditional food consumption and food marketing, thus narrowing gaps in research on young consumers and traditional food. Results enrich the understanding of Generation Z's intentions to purchase traditional food by highlighting tourists' preferences. Guidelines are also provided for the operators on creating nostalgic campaigns that appeal to young generations.

Abstract:This article introduces the Chinese bookstore-café, which indicates a change of lifestyle occurring in the contemporary big cities of China. Based on the concept of “third place,” which was first introduced by sociologist Ray Oldenburg to indicate places that are neither home nor a workplace, we argue that the bookstore-café represents the emergence of a new lifestyle. Oldenburg’s “third place” concept is deployed as a framework to explore the role of the bookstore-café in Hangzhou, China, based on a study conducted at three popular bookstore-cafés in central Hangzhou, to clarify its involvement in urban life. As part of the study, we used the observational method to help determine consumers’ visual behavior and an on-site survey questionnaire to collect data for measuring the qualities of the bookstore-café. The research findings contribute profound insights into the bookstore-café in Chinese urban life and deepen our understanding of Oldenburg’s “third place” concept.
