A Meta-Analysis of Major Foodborne Pathogens in Chinese Food Commodities Between 2006 and 2016

Abstract:Prevalence of pathogenic bacteria in food commodities in China have been reported in numerous publications over time. However, the results are scattered and varied. To calculate a robust point estimate with a higher statistical power, we applied meta-analytic approach for investigating the prevalence of common foodborne pathogens in major food items in China. Data, on prevalence of bacteria in various food commodities were extracted and analyzed from 361 (132 English and 229 Chinese) publications. Prevalence of eight most frequently reported pathogens on six broad food categories was used for pooled and subgroup meta-analysis by DerSimonian-Laird method in random-effects model. The estimated overall prevalence of pathogens in the foods was 8.5% (95% CI 8.2-8.7). The highest prevalence, irrespective of the pathogen type, was in the aquatic produce at 12.8% (12.0-13.5), while the least was in the vegetables at 3.0% (2.6-3.4). Among the pathogens, the most prevalent was Vibrio at 21.3% (19.6-23.1), whereas the least was pathogenic Escherichia coli at 4.3% (3.3-5.2). The major food pathogens in Chinese foods in decreasing order of prevalence were Vibrio parahaemolyticus, Campylobacter, Bacillus cereus, Staphylococcus aureus, Salmonella, Enterobacter, Listeria monocytogenes, and pathogenic E. coli. Presence of these organisms in foods equates the risk of microbiological food safety in China with other developed countries rather than the developing countries. This justifies the need of novel perspectives for formulating policies on microbiological food safety and risk mitigation.

Abstract:Foodborne pathogen is the top one cause for foodborne diseases,which is a key obstacle in the development of food safety control system in China.During food processing,foodborne pathogenic bacteria can survive in many stress conditions,such as heat,high pressure,frozen,desiccation,vacuum,oxidation and so on,for that they can become more resistant to these stresses through biofilm formation,recovery of sublethal injured cells and the regulatory of stress-related genes.Moreover,the secretion of some virulent factors such as thermanuclease and enterotoxin also threatens the safety of food processing.These key scientific issues on the control of foodborne pathogens related to food processing were reviewed in this article.

Abstract:Water is vital to agriculture. It is essential that the water used for the production of fresh produce commodities be safe. Microbial pathogens are able to survive for extended periods of time in water. It is critical to understand their biology and ecology in this ecosystem in order to develop better mitigation strategies for farmers who grow these food crops. In this review the prevalence, persistence and ecology of four major foodborne pathogens, Shiga toxin-producing Escherichia coli (STEC), Salmonella, Campylobacter and closely related Arcobacter, and Listeria monocytogenes, in water are discussed. These pathogens have been linked to fresh produce outbreaks, some with devastating consequences, where, in a few cases, the contamination event has been traced to water used for crop production or post-harvest activities. In addition, antimicrobial resistance, methods improvements, including the role of genomics in aiding in the understanding of these pathogens, are discussed. Finally, global initiatives to improve our knowledge base of these pathogens around the world are touched upon.

Abstract:Dairy foods are produced and enjoyed the world over as part of a healthy diet. As with other foods, however, contamination with bacterial pathogens can present a risk to public health, resulting in sporadic illness or outbreaks of disease. Many of the bacterial pathogens associated with dairy food transmission are naturally found in the dairy environment, and understanding their ecology is fundamental to directing appropriate food safety controls. This review will discuss the key pathogenic bacteria associated with modern dairy food production, including their biology, ecology and association with categories of dairy foods. Control measures and their application point along the dairy food supply continuum will be highlighted.

Abstract:The broad spectrum of foodborne infections has changed dramatically over time, as well-established pathogens have been controlled or eliminated, and new ones have emerged. The burden of foodborne disease remains substantial: one in four Americans is estimated to have a significant foodborne illness each year. The majority of these illnesses are not accounted for by known pathogens, so more must remain to be discovered. Among the known foodborne pathogens, those more recently identified predominate, suggesting that as more and more is learned about pathogens, they come under control. In addition to the emergence or recognition of new pathogens, other trends include global pandemics of some foodborne pathogens, the emergence of antimicrobial resistance, the identification of pathogens that are highly opportunistic, affecting only the most high-risk subpopulations, and the increasing identification of large and dispersed outbreaks. New pathogens can emerge because of changing ecology or changing technology that connects a potential pathogen with the food chain. They also can emerge de novo by transfer of mobile virulence factors, often through bacteriophage. Though this is rarely observed, it can be reconstructed. Better understanding of the ecology and dynamics of phage transmission among bacteria will help us to understand the appearance of new pathogens in the future. One may look for emerging foodborne pathogens among the silent zoonoses, and among the severe infections affecting the immunocompromised humans. We should expect the unexpected. In the past, separating human sewage and animal manure from human food and water supplies was critical to improving public health. Now, our health depends increasingly on the safety of the feed and water supplies for the animals themselves. The successes of the 20th century and the new challenges we face mean that public health vigilance, careful investigation of new problems, responsible attention to food safety from farm to table, and partnerships to bring about new foodborne disease control measures will be needed for the foreseeable future.

Abstract:Ingestion of food is the major way for human beings to obtain nutrient substances for basic living, and therefore, the quality and safety of food is a major concern. Foodborne illness includes any illness resulting from the consumption of contaminated food that contains pathogenic bacteria, viruses, or chemical or natural toxins. Consequently, food safety is considered to be a globally expanding issue and thus a leading topic in public health, no longer limited to foodborne illnesses but extended to nearly every safety issue regarding "farm to table" food approaches. Bacterial foodborne infections occur by ingestion of food contaminated with growth of pathogenic bacteria, toxin production, and continuous bacterial growth in intestines. In the past decade, a large number of cases or reports have been available on food containing unhealthy, harmful, or toxic substances (other than food poisoning outbreaks) worldwide. Foodborne microorganisms, primarily associated with pathogenic bacteria and toxic substances produced in food, have presented major challenges for food safety. As a global foodborne pathogen, Staphylococcus aureus is typically capable of causing a large number of infections, including food poisoning. Thus, this chapter aims to review several factors contributing to the rise of staphylococci as a growing concern for the food safety industry, including the growth of S. aureus, production and regulation of staphylococcal enterotoxins, the viable putative but nonculturable (VPNC) state, and antimicrobial resistance of Staphylococcus caused by the indiscriminate use of antibiotics in both clinical and veterinary settings.

Abstract:Food contamination is a worrying condition faced by us today. We often discuss on the food safety aspect and how to manage contamination. Food products can be tainted by bacteria at any level of food production to human consumption, subsequently developing gastroenteritis. The people from developed and developing countries are at high risk from harmful effects of unsafe food. Of all the foodborne pathogens, Vibrio parahaemolyticus has been accounted for many outbreaks globally and still at rise even with proper management methods. V. parahaemolyticus infection occurs as a result of improper food handling and preparation, ability of the bacterium to withstand human gut to launch virulence, antibiotic resistant bacterium, and failure of regulatory bodies to safe-guard food quality. This scenario poses a global health issue that warrants rapid control measures to ensure food safety from production to consumption by consumers. For that reason, this review aims to provide an overview of the epidemiology of V. parahaemolyticus as well as discuss the challenges faced to encounter this bacterium.
Comprehensive analysis of predominant pathogenic bacteria and viruses in seafood products

Abstract:Given the growing global demand for seafood, it is imperative to conduct a comprehensive study on the prevalence and persistence patterns of pathogenic bacteria and viruses associated with specific seafood varieties. This assessment thoroughly examines the safety of seafood products, considering the diverse processing methods employed in the industry. The importance of understanding the behavior of foodborne pathogens, such as Salmonella typhimurium, Vibrio parahaemolyticus, Clostridium botulinum, Listeria monocytogenes, human norovirus, and hepatitis A virus, is emphasized by recent cases of gastroenteritis outbreaks linked to contaminated seafood. This analysis examines outbreaks linked to seafood in the United States and globally, with a particular emphasis on the health concerns posed by pathogenic bacteria and viruses to consumers. Ensuring the safety of seafood is crucial since it directly relates to consumer preferences on sustainability, food safety, provenance, and availability. The review focuses on assessing the frequency, growth, and durability of infections that arise during the processing of seafood. It utilizes next-generation sequencing to identify the bacteria responsible for these illnesses. Additionally, it analyzes methods for preventing and intervening of infections while also considering the forthcoming challenges in ensuring the microbiological safety of seafood products. This evaluation emphasizes the significance of the seafood processing industry in promptly responding to evolving consumer preferences by offering current information on seafood hazards and future consumption patterns. To ensure the continuous safety and sustainable future of seafood products, it is crucial to identify and address possible threats.
Food Safety : The Future of Food Safety : An Issue of National Importance

Abstract:The leading bacterial causes of foodborne illness and several other significant foodborne pathogens are largely associated with livestock and/or poultry as primary asymptomic carriers. Included are Campylobacter, Salmonella and enterohemorrhagic E. coli O157:H7. Recent reports by the Centers for Disease Control and Prevention of risk factors of sporadic infections in the United States attribute chicken and nonpoultry meat prepared at restaurants to 45% of Campylobacter infections, chicken prepared outside the home to 27% of Salmonella Enteritidis infections, and eating pink hamburger, visiting a farm with cows and living on or visiting a farm to 31% of E. coli O157:H7 infections. Manure from livestock and poultry is a primary vehicle for transmitting these pathogens, with cell numbers of 102 to 108 cfu/g frequently present in feces. Trends in antibiotic sensitivity and resistance of foodborne pathogens as determined by the National Antibiotic Resistance Monitoring System for Enteric Bacteria indicate for Salmonella between 1996 and 2001 an increase in pansusceptible isolates from 63% to 72%; however, the percentage of isolates resistant to eight or more antibiotics has increased from 0.3% in 1996 to 4% in 2002, largely due to the spread of multi-drug resistant Salmonella Newport. For E. coli O157:H7, 79% of isolates were pansusceptible in 1996 compared to 91% in 2001. For Campylobacter, 48% of isolates were pansusceptible in 1997 compared to 50% in 2001; however, resistance to ciprofloxacin has increased from 9.4% in 1998 to 14.7% in 2003, although methods for testing changed and may have affected the results.

Comprehensive Reviews in Food Science and Food Safety

Abstract:Microorganisms play a crucial and unique role in fish and fish product safety. The presence of human pathogens and the formation of histamine caused by spoilage bacteria make the control of both pathogenic and spoilage microorganisms critical for fish product safety. To provide a comprehensive and updated overview of the involvement of microorganisms in fish and fish product safety, this paper reviewed outbreak and recall surveillance data obtained from government agencies from 1998 to 2018 and identified major safety concerns associated with both domestic and imported fish products. The review also summarized all available literature about the prevalence of major and emerging microbial safety concerns, including Salmonella spp., Listeria monocytogenes, and Aeromonas hydrophila, in different fish and fish products and the survival of these pathogens under different storage conditions. The prevalence of antibiotic‐resistant bacteria (ARB) and antibiotic‐resistant genes (ARGs), two emerging food safety concerns, is also reviewed. Pathogenic and spoilage microorganisms as well as ARB and ARGs can be introduced into fish and fish products in both preharvest and postharvest stages. Many novel intervention strategies have been proposed and tested for the control of different microorganisms on fish and fish products. One key question that needs to be considered when developing and implementing novel control measures is how to ensure that the measures are cost and environment friendly as well as sustainable. Over the years, regulations have been established to provide guidance documents for good farming and processing practices. To be more prepared for the globalization of the food chain, harmonization of regulations is still needed.

Abstract:Foodborne disease is an increasing public health problem worldwide.With the emergence of antimicrobial resistance due to intensive application of antibiotics as well as the banned application of antibiotics,the public concern has triggered global efforts in developing effective strategy to control foodbrone diseases.Bacteriophages,as the nature enemy to bacteria,are of increasing interest for a potential treatment to foodborne pathogens with some unique advantages over antibiotics such as extreme specificity against target bacteria,self-replication capability,antibacterial ability and short development cycle.In this paper,the application of phage in the control of foodborne pathogenic bacteria has been reviewed,which will establish a scientific reference for the application of bacteriophages to improve food safety of animal origin.

Abstract:The food safety of livestock is a critical issue between animals and humans due to their complex interactions. Pathogens have the potential to spread at every stage of the animal food handling process, including breeding, processing, packaging, storage, transportation, marketing and consumption. In addition, application of the antibiotic usage in domestic animals is a controversial issue because, while they can combat food-borne zoonotic pathogens and promote animal growth and productivity, they can also lead to the transmission of antibiotic-resistant microorganisms and antibiotic-resistant genes across species and habitats. Coevolution of microbiomes may occur in humans and animals as well which may alter the structure of the human microbiome through animal food consumption. One Health is a holistic approach to systematically understand the complex relationships among humans, animals and environments which may provide effective countermeasures to solve food safety problems aforementioned. This paper depicts the main pathogen spectrum of livestock and animal products, summarizes the flow of antibiotic-resistant bacteria and genes between humans and livestock along the food-chain production, and the correlation of their microbiome is reviewed as well to advocate for deeper interdisciplinary communication and collaboration among researchers in medicine, epidemiology, veterinary medicine and ecology to promote One Health approaches to address the global food safety challenges.

Abstract:While food markets and food production chains are experiencing exponential growth, global attention to food safety is steadily increasing. This is particularly crucial for ready-to-eat products such as fresh-cut salads and fruits, as these items are consumed raw without prior heat treatment, making the presence of pathogenic microorganisms quite frequent. Moreover, many studies on foodborne illnesses associated with these foods often overlook the transmission links from the initial contamination source. The prevention and control of the dissemination of foodborne pathogens should be approached holistically, involving agricultural production, processing, transport, food production, and extending to final consumption, all while adopting a One Health perspective. In this context, our objective is to compile available information on the challenges related to microbiological contamination in minimally handled fruits and vegetables. This includes major reported outbreaks, specific bacterial strains, and associated statistics throughout the production chain. We address the sources of contamination at each stage, along with issues related to food manipulation and disinfection. Additionally, we provide potential solutions to promote a healthier approach to fresh-cut fruits and vegetables. This information will be valuable for both researchers and food producers, particularly those focused on ensuring food safety and quality.

Escherichia coli O157:H7 is a natural member of the gastrointestinal microflora of domestic ruminants (e.g., cattle, goats, sheep) and has been isolated from several wildlife species (e.g., deer, rabbits), and transmission may occur from any of these reservoirs. Although E. coli O157:H7 is primarily thought of as a foodborne pathogen, recent outbreaks have demonstrated other important routes that lead to human exposure, such as contaminated water and dust. Because E. coli O157:H7 represents a significant and widespread environmental health hazard, much effort has been directed toward the development of intervention strategies. Because of the relationship between ruminant animals, wildlife, and E. coli O157:H7, many of the strategies have focused on reducing levels in live animals. In this review article, we examine this virulent pathogen and explore several of the recently developed pre-harvest intervention strategies (including pro-biotic and anti-pathogen strategies, as well as environmental/management changes) and their potential to reduce zoonotic transmission of E. coli O157:H7 and other EHEC to man.
