Abstract:This paper systematically investigates the changes in material properties during electrohydrodynamic (EHD) drying, the discharge characteristics of the EHD system as well as the active ingredients, textural properties (hardness, adhesiveness, etc.) and moisture distribution of yam under EHD, air drying and hot air drying were investigated. The results showed that the active particles and the ionized wind generated during the discharge process of the electrohydrodynamic drying device had a significant effect on the drying. Compared to thermal drying, 21 kV drying resulted in the most complete cellular structure, the best internal bound water content as well as textural properties of yam. It played a positive role in the retention of internal nutrients in yam, and the total phenol and allantoin contents were increased by 25.74% and 81.99%, respectively. These results elucidate the advantages of electrohydrodynamic drying in yam drying and provide a reference for the application of EHD in drying.

Abstract:The study explored the use of current fluid dynamics drying technology for apricot abalone mushroom, examining how different output voltages (15, 25, and 35 kV) affected drying characteristics, microstructure, and volatile components. Comparisons were made with samples dried using hot air drying (HAD) and natural air drying (AD). Results revealed that HAD had the fastest drying rate at 0.29664(g·h-1). However, apricot abalone mushroom treated with electrohydrodynamic drying (EHD) maintained a color closer to fresh samples, exhibited a 21% increase in the ordered structure of protein secondary structure, a 12.5-fold increase in bound water content, and the most stable cell structure compared to HAD and AD treatments. A total of 83 volatile organic compounds were identified in the apricot abalone mushroom, with alcohols and aldehydes being the most prominent in terms of threshold and relative content, peaking in the 35 kV treatment group. These findings provide both experimental and theoretical insights into applying current fluid dynamics for drying apricot abalone mushroom.

Abstract:Electrohydrodynamic drying is a novel non-thermal technique for dehydrating heat-sensitive foods. However, its industrial applications are limited due to the underexplored effects of material properties and environmental conditions on product quality. For this purpose, a multifactorial experiment was designed to study the effects of material thickness, load density, external airflow, and humidity on the EHD drying efficiency and quality of apple slices. The experiments show that the intensity of EHD drying increased with a decrease in humidity, slice thickness, and load density. The effective diffusivity of apple slices with EHD drying was about 5.17·10−12 m2/s, slightly increasing with external airflow. The specific energy consumption of EHD drying was 10–12 times lower than hot air drying. The time of EHD drying at 20 °C was equivalent to hot air drying at 40 °C, but the impact of EHD drying on the product quality was significantly lower. EHD drying better preserved the color and phenolic content in dried apple slices, with less cellular damage. Hence, EHD drying can be employed in industry as a sustainable alternative to hot air drying.

Abstract:To investigate the drying characteristics and mechanism during electrohydrodynamic (EHD) drying with ultrasonic pretreatment, the ultrasonic pretreatment-assisted EHD drying method at different power values was used to carry out the drying experiment of potatoes. To carry out this study, potato slices were pretreated with different ultrasonic power values (150, 180, 210, 240, and 270 W) or without ultrasound for 30 min at 30°C. The corresponding voltage was 18 kV during EHD drying. The moisture ratio, drying rate, color, shrinkage, and rehydration rate of potatoes were determined. The microstructure of potatoes was analyzed using infrared spectroscopy and scanning electron microscopy. Eight mathematical models were used to fit the drying of potatoes. Results showed that, compared with the control group, the ultrasonic pretreatment combined with the EHD drying group had improved the drying rate of potato slices, which was different at varying ultrasonic power values. Ultrasonic pretreatment had a remarkable effect on the color of the potato but had little effect on the shrinkage rate. The maximum rehydration rate is 5.7704 at 180 W. The minimum and maximum values of effective moisture diffusivity (Deff) were 3.4070 × 10−7 m2/s and 4.1160 × 10−7 m2/s, respectively. The effect of ultrasonic power pretreatment on the microstructure of potato in the EHD drying process was significant ( p > 0.05 ). According to the statistical parameter evaluation, eight mathematical models could satisfactorily describe drying curves of potato slices dried under EHD with ultrasonic pretreatment, and the logarithmic model was best suited. This work provides a theoretical basis and practical guidance to further understand the parameter characteristics and mechanism of ultrasonic pretreatment combined with the EHD drying technology.

Investigation of thermal performance, drying characteristics and environomical analysis: direct flow evacuated tube solar drying of okra

Abstract:A direct flow evacuated tube solar dryer (DF_ETSD), a novel drying system, was used for drying pre-treated okra (Abelmoschus esculentus). The performance of DF_ETSD was analysed by determining thermal profiling, dryer and collector efficiency hourly. The maximum 3-day average ambient temperature, collector outlet temperature and solar radiation were 35.6 °C, 66.4 °C and 976 W m-2 respectively. The collector efficiency increased as solar radiation increased over time due to a higher temperature difference between the collector outlet and ambient temperature. The maximum collector and dryer efficiency observed were 30.19% and 21.47%, respectively. A pre-treatment of okra was done in hot water at 70, 80 and 90 °C for 5 min. Okra samples were dried from an initial moisture content of 87.42 ± 1.49% (wb) to a final value of 10.77 ± 1.03% (wb) in 9 h. The pre-treatment temperature of 80 °C is suitable for maximum drying rate, colour retention and rehydration ratio and minimum water activity, which signifies the longer shelf-life of okra. Midilli and Kucuk model was best fitted (highest R2, lowest χ2 and RMSE) for the control and samples pre-treated at 80 °C; however, Verma model was suitably fitted for the sample pre-treated at 70 and 90 °C. The payback period of DF_ETSD was found to be 1.27 years. Environmental analysis shows the CO2 emission and net CO2 mitigation ranged between 1.24 and 18.65 t and 9.86 and 154.05 t respectively for different selected lifecycles of the dryer. Due to its environmental sustainability and low payback period, the presented drying system is recommended for okra and other fruits and vegetables.

Abstract:Increasing global energy demand and the application of more energy-consuming processes has forced food industries to investigate alternative processes. This article pertains to one such novel and promising alternative drying process called electrohydrodynamic (EHD) drying. EHD is a method of inducing electric wind that is generated by gaseous ions under the influence of a high-voltage electric field. This article evaluates the available literature and discusses the experimental investigations carried out to explain the effect of operating parameters on the drying rate and specific energy consumption (kJ/kg water) of the EHD process. Through the review it was established that the corona current increased linearly with an increase in applied voltage (kV) for both positive and negative polarities and a negative corona discharge produced a larger corona current compared to a positive corona discharge. It was also revealed that the specific energy consumption increased with an increase in applied voltage for both polarities but was lower compared to conventional drying processes such as fluidized bed drying; however, it was observed that the specific energy consumed by the EHD process was lower than that of latent heat of vaporization, indicating the removal of water from the surface of the sample by other means in addition to evaporation. Electrode configuration plays an important role in determining the efficiency of the EHD process; the multiple-needle electrode configurations had better efficiency than wire and single-electrode configurations. Recent and past studies on application of EHD both postharvest and in food processing were also reviewed and the benefit of using EHD for food and bioprocessing due to its unique properties supported the feasibility and applicability of EHD as a suitable alternative for processing thermally sensitive biological materials.

Abstract:Solar powered drying is an environment-friendly technique utilized to dry grain. A novel in-store drying system composed of Flat-plate air collectors, a heat pump, fans, air ducts, and grain stirrer is proposed to make full use of solar energy and to reduce the consumption of electricity. A demonstration system was built and tested in Kunming, China. The experimental data was compared with the results derived from a mathematical simulation. The experimental and simulated data demonstrate that the solar assisted heat pump drying system improved the performance of the in-store drying process. An average temperature rise of 8.9 degrees C for the granary inlet air was achieved. The drying rate was increased and the uniformity of grain moisture content was improved. In addition, the grain was maintained in good quality and the level of power consumption was reduced. (C) 2011 Elsevier Ltd. All rights reserved.

Abstract:A laboratory test program was conducted in a self-made test tank to investigate one-dimensional electroosmotic drainage at different supply voltages. By monitoring drainage, voltage profile, water content and current intensity every one hour during the entire test period, results below were acquired: higher voltage would lead larger energy consumption per unit volume drainage; the combination of higher voltage and shorter electroosmosis time would cause the abnormal moisture distribution that the highest was in the middle of electrodes and the lowest was near anode; the gradually decreasing of drainage was because of the increasing electrode contact resistances and the decreasing electroosmotic permeability coefficient; the contact resistance existing on the interface of soil and electrode made the voltage used for electroosmotic drainage lower than the supply voltage; and the higher voltage lead the larger anode contact resistance, but the condition in cathode was different that slow increasing occurred at higher voltage and fast increasing at lower. They related to electroosmotic drainage rate which determined mainly by supply voltage.

Abstract:Abstract Okra pods were dried using the following drying regimes; microwave (MWD), infrared (IRD) and convective hot-air drying (CHD). The objective of this investigate was to report the influences of drying methods on okra quality under different drying conditions. Data analysis showed that rehydration ratio and colour change increased with increase in drying air temperature and air velocity while specific energy consumption and shrinkage ratio decreased with increase in drying air temperature under (CHD). The rehydration ratio and colour of dried okra increased with increase in both infrared intensity but it also increased with a decrease in air velocity under (IRD). In the MWD method, drying time, specific energy consumption and shrinkage ratio decreased with increases in microwave power while the rehydration ratio and colour increased. Optimum drying period, specific energy consumption, colour, shrinkage and rehydration ratio were obtained for microwave drying. The model of Midilli et al. is the greatest for describing the drying curves of okra under all the drying processing conditions.

Abstract:A novel solar assisted heat pump (SAHP) system for in-bin grain drying was proposed to solve the problems of poor uniformity and long drying time of grain in depot with higher initial water content in high grain piles. The effects of different operational parameters on the drying performance were numerically and experimentally investigated. The experimental results indicated that the thermal effi-ciency of the solar collector and the COP of the heat pump reached 63% and 5.03 under given conditions. The average heating capacity of the SAHP system was 130.2 kW, consistent with the simulation results under a typical sunny day in winter. The average water content of 3,760 tons of grain dropped from 12.9% to 12.5% after 42 h of drying. The specific moisture extraction rate of the proposed system and the exergy efficiency of the grain bin were 1.934 kg/kWh and 40.27%, respectively. The operating cost of SAHP grain drying decreased from 5.57 $/t to 1.43 $/t compared with the grain drying machine for the same drying weight. The daily drying capacity increased from 166 t/d to 334 t/d compared with the mechanical ventilation drying for the same water content reduction rate. This investigation provided guidance for expanding future researches on the SAHP system applied for in-bin grain drying. (c) 2021 Elsevier Ltd. All rights reserved.

Abstract:Laboratory experiments were conducted to examine the feasibility and determine the optimal voltage gradient of electrokinetic consolidation of Wenzhou clay slurry with a small amount of fine sand. During the process of electrokinetic dewatering using high voltage gradients of 0.5-1.25 V/cm, the current, temperature, drainage, evaporated water, and electrolytic water were monitored in real-time. The results showed that a steady current was achieved under relatively lower voltage gradients (0.5 V/cm), while higher voltage gradients (1 V/cm) reduced the drainage time. Voltage gradients greater than 1.0 V/cm had no significant effect on the drainage rate. A greater reduction in temperature was achieved under higher voltage gradients than using lower voltage gradients, and the evaporated water and electrolytic water increased with increasing voltage gradient. Taken together, the results of this study can be used to optimize engineering practices during land reclamation efforts.
Electric Dehydration Experiment for Offshore Crude Oil Emulsions by Using High Frequency/High Voltage AC Electric Field

Abstract:By using the self-made rectangular wave high frequency/high voltage pulse AC power and electrostatic coalescer,the static electric-dehydration experiments of two crude oil emulsions with the water-cut of 5% and 20%,respectively,from offshore crude oil were accomplished.The dehydration effect of crude oil emulsion with the high frequency/high voltage pulse AC electric field was compared to that with power-frequency electric field.Then conductivity of the crude oil emulsion was measured before and after the electric-dehydration experiment.The results showed that the dehydration rate of crude oil emulsion with high frequency/high voltage AC electric field was better than that with the power-frequency electric filed,and the best frequency range for crude oil emulsion was 1400—1500 Hz.The conductivity of crude oil emulsion was greatly influenced by the high frequency/high voltage AC electric field and varied under different electric field intensity and frequency,which can be also used as an index to evaluate the dehydration effect.

Abstract:<span>In order to protect the quality of peanuts after harvest and increase the efficiency of hot-air drying, a dryer based on superposition and variable temperature control technology was built. Samples layered with a thickness of 60 mm were dried with hot air temperatures of 70 °C, 90 °C, and 110 °C. Variable temperature drying was performed in three stages, including 110 °C hot air with a sample layer thickness of 30 mm, 90 °C hot air with a sample layer thickness of 60 mm, and 70 °C hot air with a sample layer thickness of 120 mm. The change in the temperature, moisture ratio, and state were monitored during the drying process. It was found that the temperature distribution for peanuts was uneven at the beginning stage of hot-air drying, but gradually became uniform as the drying proceeded. Low-field nuclear magnetic resonance and magnetic resonance imaging (LF-NMR/MRI) analysis showed that the water in fresh peanuts was mainly distributed inside the cotyledons. The amount of free water, immobilized water, and bound water varied during the drying process, when the signal amplitudes of the free water and total water were significantly reduced, and the moisture state moved in the direction closely associated with the organic components. The results of infrared thermography and MRI showed that there was satisfactory moisture and heat diffusion uniformity for peanuts during the process. This study will provide a reference for improving the hot-air drying technology of agricultural products.</span>

Abstract:The drying characteristics of yam slices using heat pump-electrohydrodynamics (EHD) combined drying were studied under the conditions of the drying temperatures of 50–60 °C, the voltages of 80–100 kV and the wind speeds of 1∼3 m/s. The results show that compared with the single heat pump drying, the combined drying can effectively reduce the drying temperature by approximately 5 °C. This is relatively friendly to heat sensitive materials and can also improve the running performance of the heat pump system. Furthermore, the sensory score is increased by approximately 21.4% and the specific energy consumption of combined drying at the voltage of 100 kV is reduced by approximately 27.8%. Under the later stage of the combined drying, the wind speed can be reduced to save energy consumption. Through the analysis of model parameters, Page model is more consistent with the variation law of drying experimental data. This paper provides practical guidance for optimizing the process of yam slices using heat pump-EHD combined drying.

Abstract:The electro-kinetic technique, which involves a direct electric current within porous media, has been studied extensively and applied in many areas. The technique is considered a promising method to dewater soil. However, uncertainty still exists as to the electro-osmotic coefficient, which is of great significance to the electro-kinetic dewatering effect. Therefore, the effective electro-osmotic coefficient and total electro-osmotic coefficient have been distinguished in this article. Influence of external factors (electric potential gradient, electrode material, and electrode spacing) and internal factors (initial water content, types of electrolytes, salt content, and humus content) on the electro-osmotic coefficient were investigated by laboratory experiments with Hangzhou silt. Results demonstrate that the external factors had a significant impact on the total coefficient but little influence on the effective coefficient. Internal factors such as initial water content, salt content, and humus content of the soil were found to have considerable impact on the effective coefficient whereas no obvious effect was noticed for varied electrolyte types. Moreover, critical values of the initial water content, salt content, and humus content were highlighted for the effective coefficient. The trend of the effective coefficient with a certain factor varies when the factor is within or beyond the critical value. As for the Hangzhou silt that was studied, critical values of the water content, salt content, and humus content were suggested to be between 70% and 79%, similar to 0.5%, and between 10% and 20%, respectively. The electro-osmosis technique is believed to be inapplicable for soils with water content less than 70%, salinity higher than 2%, or humus content higher than 20%. The results obtained can provide guidance for evaluation of the applicability of the electro-osmosis technique.
Comparative Study on Drying Characteristics of Sewage Sludge in Two Kinds of Indirect Heat Drying Equipment

Abstract:Sludge samples are taken from Qige Waste Water Treatment Plant in Hangzhou. The drying characteristics of sludge are determined by self-made small batch type drying machine. The paddle dryer and disc dryer are used in the drying tests to explore the effect of blade form on the sludge drying viscosity zone. Different heat source temperature and drying machine speed are set up for the same kind of drying machine to research on the effect of working conditions on the drying characteristics of sewage sludge. It is discovered that the paddle dryer has a better ability to overcome the sludge viscosity zone. High speed and drying temperature can speed up the sludge drying and improve the dry deterioration in the sludge viscosity zone. But it is necessary to consider the factors of equipment stability and safe operation at the same time.

Abstract:This study investigates the effectiveness of microwave-assisted hot air drying (MAHD) on corn drying process, water migration, dielectric properties, microstructure, and quality attributes. The research compares MAHD with conventional hot air drying (HAD), employing various microwave powers (1.2-3.6 kW) and hot air temperatures (35-55 °C). The results demonstrate that MAHD significantly reduces the drying time (by 30.95-64.29%) compared to HAD. Two-term model accurately describes the drying kinetics of corn. Microwave facilitated the transformation and more uniform distribution of water within the corn, observed through LF-NMR/MRI. Additionally, MAHD was effective in preserving the color and carotenoids, while reducing fat acidity, indicating better quality retention. Microstructure analysis revealed that MAHD increases microporosity and cracks in corn, which correlates with the observed enhancement in drying efficiency. These findings underscore the potential of MAHD as a superior method for drying corn, offering benefits in terms of reduced drying time and improved quality preservation.

Abstract:This research investigated the impact of ohmic heating (OH) on the physicochemical properties and resistant starch formation in native corn starch. Electric field strengths (EFS) of 50, 75, and 100 V/cm were applied to native starch, at a starch–water ratio of 1:1 w / v . The conductivity of the medium is a crucial factor in ohmic heating. In this study, the conductivity values at 120 °C were measured at 1.5 mS/m. The study revealed two distinct outcomes resulting from the application of different EFS. Firstly, a thermal effect induced gelatinization, resulting in a reduction in the enthalpy of corn starch, an increase in the water absorption index (WAI) and the water solubility index (WSI), and a decrease in peak viscosity. Secondly, a non-thermal effect of OH was observed, leading to the electrolysis of certain starch compounds and water. This electrolysis process generated radicals (-OH) that interacted with starch components, augmenting the percentage of resistant starch. This increase was associated with elevated levels of carbonyl and carboxyl groups at 75 and 100 V/cm.

Abstract:This study used a graphene far infrared dryer to experimentally evaluate the two varieties of corn (ZD88 and RP909) at three varying temperatures (35, 45, and 55 °C) to analyze the drying process. The experimental finding showed that ZD88 observed a minimum energy consumption of 2.93 kWh at 55 °C. The ZD88 at 35 °C did not show any effect on the structure on the surface of the corn grains with a higher RC of 43.85%. The RP909 showed the starch granules formed an amorphous granular structure on the surface with a lower RC of 37.45% at 55 °C. The color parameter values showed an L* and b* decrease, while the a* values increased. ZD88 and RP909 observed an A-type peak pattern crystal structure. Therefore, this innovative graphene far infrared drying system could be a promising solution to enhance food industrial applications and improve corn characteristics.
