Comprehensive Reviews in Food Science and Food Safety

Abstract:Chicken is renowned as the most affordable meat option, prized by consumers worldwide for its unique flavor, and universally recognized for its essential savory flavor. Current research endeavors are increasingly dedicated to exploring the flavor profile of chicken meat. However, there is a noticeable gap in comprehensive reviews dedicated specifically to the flavor quality of chicken meat, although existing reviews cover meat flavor profiles of various animal species. This review aims to fill this gap by synthesizing knowledge from published literature to describe the compounds, chemistry reaction, influencing factors, and sensory evaluation associated with chicken meat flavor. The flavor compounds in chicken meat mainly included water-soluble low-molecular-weight substances and lipids, as well as volatile compounds such as aldehydes, ketones, alcohols, acids, esters, hydrocarbons, furans, nitrogen, and sulfur-containing compounds. The significant synthesis pathways of flavor components were Maillard reaction, Strecker degradation, lipid oxidation, lipid-Maillard interaction, and thiamine degradation. Preslaughter factors, including age, breed/strain, rearing management, muscle type, and sex of chicken, as well as postmortem conditions such as aging, cooking conditions, and low-temperature storage, were closely linked to flavor development and accounted for the significant differences observed in flavor components. Moreover, the sensory methods used to evaluate the chicken meat flavor were elaborated. This review contributes to a more comprehensive understanding of the flavor profile of chicken meat. It can serve as a guide for enhancing chicken meat flavor quality and provide a foundation for developing customized chicken products.

Abstract:The processing of low-salt flavor mutton was studied with flavor peptide prepared in our laboratory and traditional craft methods. The result showed that the sensory quality of mutton ,including the clear and bright red muscle slices, the tight muscle tissue, the tender and juicy taste and the typical mutton flavor, had been improved significantly with the content 4%salt, 0.4%flavor peptide, 25%total liquid ingredients (containing 0.1%sodium erythorbate, 0.05%nisin, 0.3%lemon trisodium, 4%sorbitol and 4%xylitol)

Abstract:Mutton possesses a typical flavor, known as "muttony" or "goaty", which significantly limits consumers' acceptability and its further popularization. Generally, this unpleasant flavor originates from mutton tallow. Thus, we first characterized the key volatiles of the cooked mutton tallow (CMT) via gas chromatography-mass spectrometry/olfactometry (GC-MS/O) and odor activity value (OAV). Combined with aroma recombination and omission tests, eleven compounds, involving 4-methyloctanoic acid, 4-methynonanoic acid, octanoic acid, decanoic acid, hexanal, heptanal, (E)-2-octenal, (E)-2-nonenal, (E)-2-decenal, 2-nonanone and 2-penty-furan, were screened out to be responsible for the "muttony" flavor. The objective of this study was to investigate the sensory property and acceptability of CMTs, elaborated with 4 different levels of thyme phenolic extract (TPE), through descriptive sensory analysis and key muttony-related compounds identification. The results showed that, of different TPEs employed, CMT plus TPE3 was the most effective strategy to control the key "muttony" contributors, thereby to improve flavor profile of CMT.

Abstract:The synthesis of mutton flavor aroma from enzymatic hydrolysate of sheep bone protein and other precursors through Maillard reaction was studied in the experiment.And the results showed that there was a noticeable difference among adding different DH of sheep bone hydrolysates(SBHs)for the formation of the mutton flavor aroma,and adding the SBHs with DH from 25.92% to 30.29% might be desirable precursor for sensory characteristics.The uniform designs were studied to arrange reactions and find the optimized formulas and conditions,which were SBH 100.0g,initial reaction pH 6.5,temperature 125℃,time 180min,cysteine 1.369g,alanine 0.2g,taurine 2.5g,thiamine 2.5g,glucose 4.0g,HVP1.428g and oxidized suet 12.0g.

Abstract:In this study, E-nose and GC-MS combined with chemometric methods were used to analyze and identify the key aroma compounds of mutton during the electric roasting process. The results indicated that the mutton roasted for 0-20 min could be discriminated by E-nose. A total of 47 volatile compounds were identified by GC-MS, including 10 alcohols, 14 aldehydes, 6 ketones, 3 esters, 6 acids, 1 furan, and 7 other substances. Thirteen compounds were identified as the key aroma compounds by the odor activity values (OAVs). Significant increases in key aroma compositions and concentrations in samples roasted for 2-8 min were observed during the roasting process, in which hexanal and 1-octen-3-ol had the highest concentration. In comparison with raw meat, the OAVs of eight key aroma compounds were maintained at high levels in mutton roasted for 12 min. Samples with different roasting time could not be discriminated by the concentration of the volatile compound except for roasting for 20 min. The linear model indicated that lower water content and water activity could contribute to the formation of hexanal and 1-octen-3-ol in samples. Novelty Impact Statement Tan sheep are raised in Ningxia of China, with a distinct flavor and silky texture. Thirteen key aroma compounds in roasted tan mutton such as hexanal and 1-octen-3-ol were determined based on OAVs. Water content and water activity affected the formation of key aroma compounds.

Abstract:The objective of this experiment was to investigate the effects of Allium mongolicum Regel powder or probiotic complex preparation on fatty acid and volatile flavor compound composition in longissimus dorsi muscle in Dorper×thin?tailed Han crossbred mutton Lambs, and the correlation between main flavor compound and fatty acid in longissimus dorsi muscle. Thirty?six healthy six?month?old Dorper×thin?tailed Han crossbred F1 mutton lambs with similar body weight [ (42.5±3.1) kg] were randomly divided into 3 groups with 3 repli?cates in each group and 4 lambs in each replicate. Lambs in groupⅠ were fed a basal diet, lambs in groupⅡwere fed the basal diet supplemented with 20 g Allium mongolicum Regel powder per day per lamb, and lambs in group Ⅲ were fed the basal diet supplemented with 100 g probiotic complex preparation per day per lamb. The experiment lasted for 75 days, which consisted of 15 days of per?feeding period and 60 days of formal pe?riod. At the end of experimental, three lambs were randomly selected from each group and slaughtered to collect the longissimus dorsi muscle tissue to measure the fatty acid fatty acid and volatile flavor compound composition. The results showed as follows: 1) for the monounsaturated fatty acids ( MUFA) , the contents of C15∶1cis, C16∶1, C17∶1 cis, C18∶1cis?9 and C24∶1 in groupⅡwere significantly higher than those in groupⅠ( P＜0.05) , the contents of C14∶1 and C24∶1 in group Ⅲ were significantly higher than those in group Ⅰ( P＜0.05). 2) For the polyunsaturated fatty acids ( PUFA) , the contents of C18∶2cis?6, C20∶2, C20∶3n?3, C20∶4n?6, C20∶5n?3 and C22∶6n?3 in group Ⅱ were significantly higher than those in group Ⅰ( P＜0.05) ;the content of C18∶3n?6 in group Ⅲ was significantly higher than that in group Ⅰ( P＜0.05). 3) The content of saturated fatty acid ( SFA) in groups Ⅱ and Ⅲ were significantly lower than that in group Ⅰ( P＜0.05) , the contents of MUFA, PUFA and PUFA／SFA value in groupⅡ were significantly higher than those in groupⅠ( P＜0.05) , the contents of PUFA, n?6 PUFA and PUFA／SFA value in group Ⅲ were significantly higher than those in group Ⅰ( P＜0.05) , and the content of MUFA in group Ⅲ was significantly lower than that in groupⅠ( P＜0.05). 4) The main characteristic flavor compounds of mutton flavor in groupⅠwere nonanal, octanal and 2?undecenal, the main characteristic flavor compounds of mutton flavor in group Ⅱ were trans?2?nonenal, 2?undecenal and trans?2?decenal, and the main characteristic flavor compounds of mutton flavor in group Ⅲ were trans?2?nonenal, trans?2?decenal and nonanal. Accessory flavor substance was benzaldehyde in three groups. 5) The mainflavor compound 2?undecenal had the strongest correlation with n?6 PUFA in longis?simus dorsi muscle ( R2＝0.79,P＝0.01). In summary, Allium mongolicum Regel powder or probiotic complex preparation can increase the contents of MUFA and PUFA in longissimus dorsi muscle to a certain extent, and reduce the content of SFA so as to improve the fatty acid composition of mutton. Diet supplemented with Allium mongilicum Regel powder or probiotic complex preparation can improve the composition and content of fatty acid and volatile flavor compound in longissimus dorsi muscle in Dorper×thin?tailed Han crossbred mutton lambs to a certain extent, and there is a strong correlation between PUFA and main flavor compound.[ Chinese Journal of Animal Nutrition, 2019, 31(9) :4349?4362]

Abstract:The unique aromas of mutton stem from the chemical reactions between the characteristic precursors during cooking. This study aimed to establish the relationship of volatile compounds and aroma precursors (protein, fat, free amino acids and fatty acids) in lamb from different breeds and muscle types. Hong lamb was characterized by greater tenderness and water holding capacity, higher polyunsaturated fatty acids and higher essential/non-essential amino acids in comparison with Hu lamb. Aldehydes, such as heptanal, hexanal, octanal and nonanal were higher in Hong-ST compared with Hu-ST. Principal component analysis (PCA) showed that aroma precursors were closely related to volatile components of cooked lamb. Discriminant analysis results showed that precursors and volatile compounds could be used to identify the breeds and muscle types of lamb. These findings revealed the contributors of lamb aroma and might help understand the regulatory mechanism of aroma in lamb from different breeds and muscle types.

Abstract:Solid phase micro extraction coupled with gas chromatography-mass spectrometry is used to analyze the effect of spices on volatile flavor compounds of hand-grasped mutton and various flavor components are analyzed by the principal component analysis.The results show that adding spices can significantly improve the flavor of hand-grasped mutton.Two principal components cumulative contri-bution rate is 91.365%,which can represent the original data information better.

Abstract:The aim of this study was to investigate the flavor changes of household stir-frying China mutton sao zi, and to evaluate the feasibility of electronic nose (E-nose) and gas chromatography mass spectrometry (GC-MS) in discriminating mutton sao zi at different stir-frying stages. The optimal processing parameters were obtained by sensory evaluation and tenderness analysis of the three stages, stir-frying to remove water (SFRW), stir-frying fat (SFF) and mixed stir-frying (MSF). E-nose was used to recognize mutton sao zi odors at different processing stages, solid phase microextraction (SPME) combined with GC-MS to identify the individual volatile compounds, and data from the samples of both methods further correlated with the fatty acids and crude composition (moisture, fat, protein). A total of 174 volatile compounds were detected by GC-MS, of which 59 key were screened by t-test (P < 0.01). The W1W, W1S, W2W and W2S sensors of E-nose gave higher responses to all samples, and effectively discriminate the samples. The analysis of E-nose and GC-MS confirmed that W1S, W1W, W2S, W2W and W3S sensors were in positive correlations with the abundances of volatile components. Fat exhibited strong positive correlation with octanal, heptanal, 2,3-butanediol, 1-octen-3-ol, 1-pentanol, 2-methyl-3-octanone and 2-nonanone. Hence, this study, for the first time, explored the flavor changes of household stir-frying mutton sao zi with the methods of E-nose and SPME-GC-MS, providing some profound insights for the industrial production and flavor control stir-frying machine of stir-frying mutton products with household flavor.

Abstract:Abstract The study aimed to evaluate the effects of Allium mongolicum Regel (AMR) and its water‐ and fat‐soluble extracts on the quality of fermented mutton sausages. Sausages were produced with mutton and fat. Four treatments: CO, without Allium mongolicum Regel and its extracts, used as control; AMR with Allium mongolicum Regel; AWE with water‐soluble extract of Allium mongolicum Regel; and AFE with liposoluble extract from Allium mongolicum Regel, were produced and analyzed for pH, water activity (a w), free amino acids, fatty acids, and volatiles were, respectively, in fermented mutton sausages during processing (0, 2, 5, and 7 days). The results showed that the pH values of the liposoluble extract from Allium mongolicum Regel (AFE), respectively, are lower than that of sample CO at the end of fermentation and ripening. The a w in all group of sausages significantly dropped to 0.88 at the end of ripening (Day 7). Adding Allium mongolicum Regel and its water‐soluble extract can improve the serine (SER) content of fermented mutton sausage. The contents of five essential amino acids (EAA) were added when adding Allium mongolicum Regel and its fat‐soluble extract. The total fatty acid (TFA) in the treatments increased during drying and ripening. The addition of Allium mongolicum Regel and its extract can increase the content of volatile flavor substances such as 3‐hydroxy‐2‐butanone, 3‐methylbutyraldehyde, hexanal, octanal, and nonanal at the later stage of maturity, so as to improve the flavor substances in fermented mutton sausage. Water‐soluble extract of Allium mongolicum Regel (AWE) and AFE treatments had more intense flavor at the end of ripening (Day 7). The flavor of fermented mutton sausage can be improved by adding Allium mongolicum Regel and its extracts into fermented mutton sausage.

Abstract:To further investigate the nutritional value and availability of the mutton flavor plants,the components and contents of amino acids in seven mutton flavor plants were determined,including Ephedra sinica stapf,Glycyrrhiza,Caragana korshinskii Kom,Allium mongolicum Bgl and so on.The results showed that the contents of TAA,EAA,LAA and flavor AA were the highest in Allium mongolicum Bgl,but the TAA/CP proportion was the highest in Lespedeza davurica(Laxm.)Schindl compared with the others.The EAA/TAA ratios of seven mutton flavor plants were about 40%,reaching the FAO/WHO recommended values.The flavor amino acids accounted from 50% to 60% of TAA in Alfalfa and seven flavor plants.The results indicate that,seen from the amino acid contents and scale,Allium mongolicum Bgl was the best in protein quality,followed by Hedysarum scoparium Fisch,Lespedeza davurica(Laxm.)Schindl,Ephedra sinica stapf,Caragana korshinskii Kom,Glycyrrhiza and Thymus mongolicus Ronn were the worst.

Abstract:To research characteristic aroma compounds of Ningxia Tan mutton,the volatile compounds in the mutton was extracted by headspace solid-phase microextraction(HS-SPME),and analyzed by gas chromatography-mass spectrometry(GC-MS) and gas chromatography-olfactometry(GC-O).The optimum pre-extraction conditions for mutton samples were determined as 75 μm CAR/PDMS,60 ℃ and 30min.Totally 43 volatile flavor compounds werethen identified by GC-MS and GC-O,including 5 hydrocarbons,12 aldehydes,5 ketones,6 alcohols,6 acids,7 ester and 2 cyclo-compounds.Among these volatile flavor compounds,hexanal,heptanal,hexanoic acid-ethyl ester,nonanal,1-nonanol and tetradecanoic acid made a greater contribution to the flavor of Ningxia Tan mutton.

Abstract:The formation of key aroma compounds in roasted mutton during the traditional charcoal process were investigated. The results indicated that the samples roasted for 0-15 min could be discriminated using a flash GC Enose and GC-O-MS combined with multivariate data analysis. A total of 37 odorants were identified, among which 15 odorants were confirmed as key aroma compounds by aroma recombination experiments. Significant increases in key aroma compositions and concentrations in samples were observed during the roasting process, in which hexanal had the highest concentration. The odour activity values (OAVs) of 15 key aroma compounds were maintained at high levels in the samples after roasting for 10 min. The roasted mutton had typical aromas of meaty, fatty, roasty, grassy, and sweet odours. The multivariate linear modeling indicated that a lower specific heat capacity and lower water activity could contribute to the formation of aroma compounds of samples.
