Abstract:The compounds that are responsible for the species-related characterizing flavors of mutton were reviewed,and the article also introduced some usual methods used now to reduce the odor of mutton.Short branched-chain fatty acids such as 4-methyloctanoic acid;4-methylnonanoic acid and so on were considered the main compounds that were responsible for the species-related flavors of mutton.The methods that were used to improve the flavors include Chinese traditional ways,the physical and chemical ways and microbiological ways,but,there was not an effective method to industrialized produce at present.
Effects of Allium mongolicum Regel Powder or Probiotic Complex Preparation on Fatty Acid and Volatile Flavor Compound Composition in Longissimus Dorsi Muscle of Dorper× Thin?Tailed Han Crossbred Mutton Lambs

Abstract:The objective of this experiment was to investigate the effects of Allium mongolicum Regel powder or probiotic complex preparation on fatty acid and volatile flavor compound composition in longissimus dorsi muscle in Dorper×thin?tailed Han crossbred mutton Lambs, and the correlation between main flavor compound and fatty acid in longissimus dorsi muscle. Thirty?six healthy six?month?old Dorper×thin?tailed Han crossbred F1 mutton lambs with similar body weight [ (42.5±3.1) kg] were randomly divided into 3 groups with 3 repli?cates in each group and 4 lambs in each replicate. Lambs in groupⅠ were fed a basal diet, lambs in groupⅡwere fed the basal diet supplemented with 20 g Allium mongolicum Regel powder per day per lamb, and lambs in group Ⅲ were fed the basal diet supplemented with 100 g probiotic complex preparation per day per lamb. The experiment lasted for 75 days, which consisted of 15 days of per?feeding period and 60 days of formal pe?riod. At the end of experimental, three lambs were randomly selected from each group and slaughtered to collect the longissimus dorsi muscle tissue to measure the fatty acid fatty acid and volatile flavor compound composition. The results showed as follows: 1) for the monounsaturated fatty acids ( MUFA) , the contents of C15∶1cis, C16∶1, C17∶1 cis, C18∶1cis?9 and C24∶1 in groupⅡwere significantly higher than those in groupⅠ( P＜0.05) , the contents of C14∶1 and C24∶1 in group Ⅲ were significantly higher than those in group Ⅰ( P＜0.05). 2) For the polyunsaturated fatty acids ( PUFA) , the contents of C18∶2cis?6, C20∶2, C20∶3n?3, C20∶4n?6, C20∶5n?3 and C22∶6n?3 in group Ⅱ were significantly higher than those in group Ⅰ( P＜0.05) ;the content of C18∶3n?6 in group Ⅲ was significantly higher than that in group Ⅰ( P＜0.05). 3) The content of saturated fatty acid ( SFA) in groups Ⅱ and Ⅲ were significantly lower than that in group Ⅰ( P＜0.05) , the contents of MUFA, PUFA and PUFA／SFA value in groupⅡ were significantly higher than those in groupⅠ( P＜0.05) , the contents of PUFA, n?6 PUFA and PUFA／SFA value in group Ⅲ were significantly higher than those in group Ⅰ( P＜0.05) , and the content of MUFA in group Ⅲ was significantly lower than that in groupⅠ( P＜0.05). 4) The main characteristic flavor compounds of mutton flavor in groupⅠwere nonanal, octanal and 2?undecenal, the main characteristic flavor compounds of mutton flavor in group Ⅱ were trans?2?nonenal, 2?undecenal and trans?2?decenal, and the main characteristic flavor compounds of mutton flavor in group Ⅲ were trans?2?nonenal, trans?2?decenal and nonanal. Accessory flavor substance was benzaldehyde in three groups. 5) The mainflavor compound 2?undecenal had the strongest correlation with n?6 PUFA in longis?simus dorsi muscle ( R2＝0.79,P＝0.01). In summary, Allium mongolicum Regel powder or probiotic complex preparation can increase the contents of MUFA and PUFA in longissimus dorsi muscle to a certain extent, and reduce the content of SFA so as to improve the fatty acid composition of mutton. Diet supplemented with Allium mongilicum Regel powder or probiotic complex preparation can improve the composition and content of fatty acid and volatile flavor compound in longissimus dorsi muscle in Dorper×thin?tailed Han crossbred mutton lambs to a certain extent, and there is a strong correlation between PUFA and main flavor compound.[ Chinese Journal of Animal Nutrition, 2019, 31(9) :4349?4362]

Abstract:The feeding experiment was done with 28 Inner Mongolia wether which were randomly divided into 4 groups according to similar weight principle.At the end of feeding experiment,the motton was sampled to study the effect of the Allium mongolicum Regel,Oilseed and Allium mongolicum Regel +Oilseed on motton quality.The results indicated that: The Allium mongolicum Regel,Oilseed and Allium mongolicum Regel +Oilseed have not significant effect on lost water percent,cooking percent,pH(p0.05).The tenderness of the group feeding with Allium mongolicum Regel + seed is significantly higher than that of control group(p0.05).

Abstract:To further investigate the nutritional value and availability of the mutton flavor plants,the components and contents of amino acids in seven mutton flavor plants were determined,including Ephedra sinica stapf,Glycyrrhiza,Caragana korshinskii Kom,Allium mongolicum Bgl and so on.The results showed that the contents of TAA,EAA,LAA and flavor AA were the highest in Allium mongolicum Bgl,but the TAA/CP proportion was the highest in Lespedeza davurica(Laxm.)Schindl compared with the others.The EAA/TAA ratios of seven mutton flavor plants were about 40%,reaching the FAO/WHO recommended values.The flavor amino acids accounted from 50% to 60% of TAA in Alfalfa and seven flavor plants.The results indicate that,seen from the amino acid contents and scale,Allium mongolicum Bgl was the best in protein quality,followed by Hedysarum scoparium Fisch,Lespedeza davurica(Laxm.)Schindl,Ephedra sinica stapf,Caragana korshinskii Kom,Glycyrrhiza and Thymus mongolicus Ronn were the worst.

Abstract:This study aimed to evaluate the impact of dietary energy and protein levels on the meat quality and metabolomic profile of Yunshang black goats. For this, 80 Yunshang black goats (male, 6 months old, with a mean live body weight of 35.82 ± 2.79 kg) were used in a completely randomized design with a 2 × 2 factorial dietary arrangement. The dietary treatments were (1) high energy (9.74 MJ/kg) with high protein (12.99%) (HEHP), (2) high energy (9.76 MJ/kg) with low protein (10.01%) (HELP), (3) low energy (8.18 MJ/kg) with high protein (13.04%) (LEHP), and (4) low energy (8.14 MJ/kg) with low protein (10.05%) (LELP). The experiment lasted 64 days, including 14 days for dietary adaptation and a 50-day feeding trial. At the end of the experiment, four animals from each treatment were slaughtered to assess their meat quality and metabolomic profiles. The pH value was greater for the goats fed the LELP diet compared with the other treatments. The LEHP-fed group's meat was brighter (L*) than that of the other three groups. The HEHP-fed group had considerably more tender meat (p < 0.05) compared with the LEHP-fed group. Moreover, 72 and 183 differentiated metabolites were detected in the longissimus muscle samples by using gas chromatography-mass spectrometry and liquid chromatography-tandem mass spectrometry, respectively. The hydropathy and volatilities of raw meat were different (p < 0.05), suggesting changes in the meat flavor because of the dietary treatments. Based on the results, it can be concluded that feeding a high-energy- and high-protein-containing diet improved the tenderness, flavor, and fatty acid contents of mutton.

Abstract:The effects of Allium Mongolia Regel extractive on edible quality of Mutton,with complete block experimental design was studied.The feeding experiment was done with 60 Inner Mongolia wether sheep according to similar weight principle divided into four groups,which were control group,0.03%,0.06%,0.09% Allium Mongolia Regel group.The end of feeding 45 d,select 3 sheep from each group randomly and slaughtered,then sampling longissimus dorsi musculus,buttock musculus and semimembranous muscle of the motton to study the effect of the different treatments on motton physichemical index and its edible quality.The results of physico-chemical determining indicated that,the difference between the experimental gronps with the control group was not significant(p>0.05) in pH value,water loss rate,cooked rate and tenderness.The difference between with each group was not significant(p>0.05) in color was inconsistent.Overall,the group added 0.06% Allium Mongolia Regel Extractive impacted greaterly in the color of different muscle parts.

Abstract:The processing of low-salt flavor mutton was studied with flavor peptide prepared in our laboratory and traditional craft methods. The result showed that the sensory quality of mutton ,including the clear and bright red muscle slices, the tight muscle tissue, the tender and juicy taste and the typical mutton flavor, had been improved significantly with the content 4%salt, 0.4%flavor peptide, 25%total liquid ingredients (containing 0.1%sodium erythorbate, 0.05%nisin, 0.3%lemon trisodium, 4%sorbitol and 4%xylitol)

Abstract:Solid phase micro extraction coupled with gas chromatography-mass spectrometry is used to analyze the effect of spices on volatile flavor compounds of hand-grasped mutton and various flavor components are analyzed by the principal component analysis.The results show that adding spices can significantly improve the flavor of hand-grasped mutton.Two principal components cumulative contri-bution rate is 91.365%,which can represent the original data information better.

Abstract:Two untargeted metabolomics approaches based on gas chromatography mass spectrometry and ultra-highperformance liquid chromatography quadrupole time-of-flight mass spectrometry were used to identify the effects of different feeding regimes (concentrate, corn silage, alfalfa silage, mulberry leaf silage) on the potential meat flavor and taste components of Tan-lamb. Among 31 identified volatiles, hexanal was affected by the alfalfa silage diet, and 3-hydroxydodecanoic acid was changed by the mulberry leaf silage diet. L-Pipecolic acid (area under the curve = 1, fold change = 0.18-0.48) and trimethylamine N-oxide (area under the curve = 1, fold change = 5.26-22.84) was the potential best discriminant biomarker under alfalfa silage and concentrate feeding, respectively. The hydrophilic components were more readily changed by feeding regimes than volatile flavor compounds. Our findings are helpful for the illustration of Tan-lamb meat chemistry and producing highquality lamb meat with improved flavor and taste by corn silage, alfalfa silage, or mulberry leaf silage.

Abstract:The mutton flavor is affected by cooking water significantly, and the flavor of mutton is delicious and widely loved by consumers through an extremely simple processing in northwest China, such as Inner Mongolia, Ningxia, and Xinjiang. The flavor shows obvious changes if get out of these areas even use the same raw meat, which may be caused by different cooking water. To determine whether and how the cooking water affect the mutton soup flavor, the elements in water, the flavor was studied by inductively coupled plasma mass spectrometry (ICP-MS), amino acid analyzer, and thermal desorption (TDS)–gas chromatography–mass spectrometry (GC-MS). Specifically, three water samples from different sources, Ningxia (NXW), Beijing (BJW), and ultrapure water from the laboratory (PUW), were used for cooking with Tan sheep's ribs to get different mutton soups. The inductively coupled plasma mass spectrometry (ICP-MS) results showed that the elements and the concentration of solutes in different water sources were significantly different. The NXW batch had the highest Na, Mg, K, and Sr concentrations, and Na in NXW water reached to 50.60 mg/L, which existed as Na+, significantly (p < .05) higher than BJW (8.63 mg/L) and PUW, which were important to the flavor of mutton soup. The PUW batch had the highest content of free amino acids, and the content of glutamic acid (Glu) reached to 17.89 μg/mL. The NXW batch had the highest content of taste nucleotides, and the content of 5´-IMP reached to 68.68 μg/ml. The volatiles of the three batches had significant differences, and only 40 volatiles were detected in all batches. Further flavor studies using electronic nose and electronic tongue showed significant differences in overall aroma and overall taste, especially bitterness, saltiness, and astringency. The results could provide a basis for improving the flavor quality for the mutton soup.

Abstract:The feeding experiment was done with 28 Inner Mongolia wether by feeding Allium Mongolicum Regel and Oilseed which were randomly divided into 4 groups according to similar weight principle.At the end of feeding experiment,we sample longissimus dorsi(LD) and buttock muscle(BM) of mutton to study the effect of the Allium Mongolicum Regel,Oilseed and Allium Mongolicum Regel +Oilseed on color and physico-chemical characteristics.The results indicated that: The Allium Mongolicum Regel,Oilseed and Allium Mongolicum Regel +Oilseed have not significant effect on protein,fat,moisture,and ash content(P0.05) of LD and BM of sheep,but the protein content of LD and BM in the Allium Mongolicum Regel is slightly higher than in the control.Hunter a and a/b of BM of the treatment group are significantly lower than those of the control.Hunter a/b of LD of oilseed group is 1.74 and significantly higher than that of control and other groups(P0.05).

Abstract:To research characteristic aroma compounds of Ningxia Tan mutton,the volatile compounds in the mutton was extracted by headspace solid-phase microextraction(HS-SPME),and analyzed by gas chromatography-mass spectrometry(GC-MS) and gas chromatography-olfactometry(GC-O).The optimum pre-extraction conditions for mutton samples were determined as 75 μm CAR/PDMS,60 ℃ and 30min.Totally 43 volatile flavor compounds werethen identified by GC-MS and GC-O,including 5 hydrocarbons,12 aldehydes,5 ketones,6 alcohols,6 acids,7 ester and 2 cyclo-compounds.Among these volatile flavor compounds,hexanal,heptanal,hexanoic acid-ethyl ester,nonanal,1-nonanol and tetradecanoic acid made a greater contribution to the flavor of Ningxia Tan mutton.

Abstract:In order to study the quality differences between Kazakh sheep meat and common commercial mutton, nutritional qualities such as protein, amino acid, fat, minerals and vitamins as well as volatile flavor substances were determined by the Kjeldahl method, liquid chromatography (LC) and gas chromatography- mass spectrometry (GC-MS). The results showed that the contents of protein and essential amino acids in Kazakh sheep meat were 20.81% and 86.69 mg/g, respectively, which were significantly higher than those of the control sample (P < 0.05), along with a significant increase in the contents of oleic acid, linoleic acid, linolenic acid and arachidonic acid (P < 0.05) as well as an increase in the contents of Fe, Cu and vitamin E. On the other hand, there was no significant difference in vitamin A (P < 0.05). Additionally, Kazakh sheep meat contained more kinds of volatile flavor compounds and higher amounts of ketones, esters and sulphur-containing compounds than did the control sample. Trans,trans-2, 4-decadienal, 3, 6-dimethyl-2-octanone and camphor were detected only in Kazakh sheep meat.

Abstract:The objective of this study was to evaluate the effect of feeding system on muscle fiber composition, antioxidant capacity, and nutritional and organoleptic traits of goat meat. Goats that grazed on flatland (whole area with about 0% inclination, FG group) and mountain range (whole area with about 40% inclination, MG group) were selected for the analysis. The results showed that grazing on flatland increased oxidized-twitch fiber percentage, the expression of the MyHC IIa gene (p < 0.001), the activity of glutathione peroxidase (GSH-Px) (p < 0.05), total antioxidant capacity (T-AOC) (p = 0.001), and radical scavenging ability (RSA) (p < 0.05); meanwhile, the MyHC IIb gene expression (p < 0.01) and malondialdehyde (MDA) content (p = 0.001) were decreased. Feeding system affected nutritional and organoleptic traits of goat meat, and grazing on flatland increased protein content, total content of monounsaturated fatty acid (MUFA), polyunsaturated fatty acid (PUFA), pH45min, a* value, and variety of volatile flavor compounds but decreased the content of saturated fatty acid (SFA), shear force, and b* value. In addition, the key flavor substances were screened using relative odor activity value (ROAV), including hexanal, heptanal, (E)-2-octenal, octanal, nonanal, decanal, (E)-2-nonenal, and 1-octen-3-ol. Among them, 1-octen-3-ol and (E)-2-nonenal were the most contributing flavor compounds in the FG and MG groups, respectively, providing distinctive odor to goat meat.

Abstract:Mutton possesses a typical flavor, known as "muttony" or "goaty", which significantly limits consumers' acceptability and its further popularization. Generally, this unpleasant flavor originates from mutton tallow. Thus, we first characterized the key volatiles of the cooked mutton tallow (CMT) via gas chromatography-mass spectrometry/olfactometry (GC-MS/O) and odor activity value (OAV). Combined with aroma recombination and omission tests, eleven compounds, involving 4-methyloctanoic acid, 4-methynonanoic acid, octanoic acid, decanoic acid, hexanal, heptanal, (E)-2-octenal, (E)-2-nonenal, (E)-2-decenal, 2-nonanone and 2-penty-furan, were screened out to be responsible for the "muttony" flavor. The objective of this study was to investigate the sensory property and acceptability of CMTs, elaborated with 4 different levels of thyme phenolic extract (TPE), through descriptive sensory analysis and key muttony-related compounds identification. The results showed that, of different TPEs employed, CMT plus TPE3 was the most effective strategy to control the key "muttony" contributors, thereby to improve flavor profile of CMT.
Evaluation of Mutton Quality Characteristics of Dongxiang Tribute Sheep Based on Membership Function and Gas Chromatography and Ion Mobility Spectrometry

Abstract:Dongxiang tribute sheep have a history of use in food dishes such as “Dongxiang Handgrip,” which dates back hundreds of years and is a favorite halal food in northwestern China. However, little is known about the mutton quality characteristics of Dongxiang tribute sheep. Here, we measured the sensory characteristics, nutritional quality, and flavor substances to comprehensively evaluate the mutton quality characteristics of these sheep. The mutton qualities of Dongxiang tribute, Tibetan, Ujumqin, and Hu sheep were comprehensively evaluated by membership function. Subsequently, the volatile components in mutton samples from 30 Dongxiang tribute sheep were detected via gas chromatography and ion mobility spectrometry (GC-IMS), and their fingerprints were established. The result of meat quality revealed that the shear force, the contents of protein, essential amino acid (EAA), non-essential amino acid (NEAA), and n-6/n-3 ratio of Dongxiang tribute mutton were better than the other three breeds. Membership functions were calculated for 10 physical and chemical indexes of mutton quality, and the comprehensive membership function values of the four breeds in order of highest to lowest mutton quality were Tibetan sheep (0.76) > Dongxiang tribute sheep (0.49) > Hu sheep (0.46) > Ujumqin sheep (0.33). Thirty volatile compounds were identified via GC-IMS: seven alcohols, eight aldehydes, five ketones, two esters, two phenols, one ether, one furan, one acid, two hydrocarbons, and one pyrazine. Ketones, aldehydes, and alcohols were the main volatile compounds forming the flavor of Dongxiang tribute sheep mutton. The reliability of the results was validated by PCA (principal component analysis) and similarity analyses. Our results provide reference value for consumers of mutton in China.
