Abstract:Plant tannins are widely found in plants and can be divided into hydrolyzed tannins and condensed tannins. In recent years, researchers have become more and more interested in using tannin-rich plants and plant extracts in ruminant diets to improve the quality of animal products. Some research results show that plant tannins can effectively improve the quality of meat and milk, and enhance the oxidative stability of the product. In this paper, the classification and extraction sources of plant tannins are reviewed, as well as the biological functions of plant tannins in animals. The antioxidant function of plant tannins is discussed, and the influence of their structure on antioxidation is analyzed. The effects of plant tannins against pathogenic bacteria and the mechanism of action are discussed, and the relationship between antibacterial action and antioxidant action is analyzed. The inhibitory effect of plant tannins on many kinds of pathogenic viruses and their action pathways are discussed, as are the antiparasitic properties of plant tannins. The anti-inflammatory action of tannins and its mechanism are analyzed. The function of plant tannins in antidiarrheal action and its influencing factors are discussed. In addition, the effects of plant tannins as feed additives on animals and the influencing factors are reviewed in this paper to provide a reference for further research.

Abstract:Backgrounds Tannic acid (TA), as a plant-derived phenolic substance, is involved in regulating the activity of starch digestive enzymes, but its underlying mechanism remains unclear. Methods and Results In the present study, inhibition rate and inhibition kinetics assays were performed and confirmed that TA had a strong inhibitory effect on both alpha-amylase and alpha-glucosidase with IC50 values of 0.1585 mg/mL and 0.00542 mg/mL, respectively, through a mixed inhibition mode. The secondary structures of both enzymes were confirmed to be modified by TA through circular dichroism (CD) spectra. Fluorescence quenching analysis revealed that the interaction between TA and two enzymes was a static process of pontaneous complex formation. Finally, molecular docking revealed that non-covalent bonds were the main interaction forces between TA and both enzymes. Conclusions Thus, TA was a promising candidate for the inhibition of starch-digesting enzymes, and the present research provided insight into postprandial glucose regulation through polyphenols.

Abstract:Tannins are a complex group of plant secondary compounds widely found in plant kingdom.Tannins mainly exist in various organs and tissues of plants.Tannins are conventionally classified into three groups: hydrolysable tannins,condensed tannins and complex tannins,according to the structures and properties.Tannins,as important anti-nutrients,exhibit detrimental effects to various animals by reducing voluntary feed intake,nutrient bioavailability and toxicity.The mechanisms of reducing nutrient bioavailability to animals were reported mainly as decreasing digestibility and absorption of nutrients,decreasing nitrogen balance in animals,changing microorganism diversity in the gastrointestinal tract,and producing toxicity to digestive systems.Treatments including physical-chemical and biological processes were reported to successfully avoid negative effects of tannins.Physical-chemical treatments mainly are soaking,drying,de-hulling,extruding,alkali treatment,polyethylene glycol(PEG) treatment and radiation.The biological treatment meanly includes solid-state fermentation.The anti-nutritional effects and methods of degradation of tannins are reviewed in this article.

Abstract:Tannins are polyphenols characterized by different molecular weights that plants are able to synthetize during their secondary metabolism. Macromolecules (proteins, structural carbohydrates and starch) can link tannins and their digestion can decrease. Tannins can be classified into two groups: hydrolysable tannins and condensed tannins. Tannins are polyphenols, which can directly or indirectly affect intake and digestion. Their ability to bind molecules and form complexes depends on the structure of polyphenols and on the macromolecule involved. Tannins have long been known to be an "anti-nutritional agent" in monogastric and poultry animals. Using good tannins' proper application protocols helped the researchers observe positive effects on the intestinal microbial ecosystem, gut health, and animal production. Plant tannins are used as an alternative to in-feed antibiotics, and many factors have been described by researchers which contribute to the variability in their efficiencies. The objective of this study was to review the literature about tannins, their effects and use in ruminant nutrition.

Abstract:Tannins, an abundant group of plant secondary compounds, raise interest in different fields of science, owing to their unique chemical characteristics. In chemical ecology, tannins play a crucial role in plant defense against pathogens, herbivores, and changing environmental conditions. In the food industry and in medicine, tannins are important because of their proven positive effect on human health and disease treatment. Such wide interests fueled studies on tannin chemistry, especially on their flagship ability to precipitate proteins. In this Review, we expand the basic knowledge on tannin chemistry to the newest insights from the field. We focus especially on tannin reactions with different non-protein organic N compounds, as well as the complex interactions of tannins with enzymes, resulting in either an increase or decrease in enzyme activity.

Abstract:By reviewing the literature on the efficacy of tannins in traditional Chinese medicine in the last decade or so, we have classified the anti-tumor mechanism of tannins in conjunction with the latest mechanism exploration in the field of oncology. Tannins, a class of multi-phenolic compounds widely present in the diet, have been studied by scholars worldwide in recent years because of their relatively outstanding pharmacological activities. The mechanisms of anti-tumor action of tannins can be summarized as follows: the arrest of the cell cycle, arrest of tumor migration, enhancement of immune competence, induction of apoptosis, and antioxidant effects.

Abstract:The quality of wheat flour is largely determined by the properties of gluten proteins. Chemical components that influence gluten proteins are used as flour improvers in the flour industry. In this study, tannins which are natural occurring polyphenols were found to improve dough mixing properties. The effects of tannins on the physicochemical and structural properties of gluten proteins were examined, and the results showed that tannins promoted the non-covalent interactions among gluten proteins, although they induced SH/SS interchange reactions in the dough. The β-turn and α-helix conformations were increased, whereas the β-sheet conformation was decreased in dough containing tannins as detected by FTIR. Moreover, the addition of tannins promoted the aggregation of gluten proteins, modified the microstructure of gluten networks, and improved the mixing properties. The positive effects of tannins on dough properties implied the potential of tannins as a new flour improver.

Abstract:Objectives . Tannins with complex structures are important plant resources, which are abundant in the genus Terminalia . Various Terminalia species have been playing an important role in traditional medicine system. A systematic scoping review of Terminalia Linn. research literature for tannins was conducted to summarize the structures of tannins and analysis fragmentation pathway characteristics, which could provide references for the structural analysis of tannins from Terminalia Linn. Methods . After an update of the literature search up to September 2018, the terms of Terminalia in all publications were analyzed. Electronic searches were conducted in scifinder and PubMed, and the information from 197 articles in all with regard to the tannin structure study was extracted. Results . The compounds of 82 tannins from the genus Terminalia were reviewed. According to the structural differences, they can be divided into three categories, hydrolysable tannins, condensed tannins, and complex tannins, respectively. The fragmentation pathways of 46 identified tannins were analyzed, and the fragmentation rules of tannins were speculated according to different types. Conclusion . This review has attracted attention to the active substances in this species such as the tannins summarized in further study. How to improve the extraction and purification technology of tannins from genus Terminalia is an urgent problem to be solved.

Abstract:BACKGROUND: The effects of tannic acid, which is present in many plants, on the structure of gluten proteins and the properties of dough and bread were studied. Tannic acid was added at levels of 0.01, 0.02 and 0.03 g kg(-1) during the dough-making process.RESULTS: The added tannic acid acted negatively on disulfide bond formation but interacted with gluten proteins via other covalent bonds, as detected by UV spectroscopy and dynamic rheometry. Rheological properties and texture of the bread were measured by farinograph, extensograph and texture profile analyser. Texture analysis indicated little change in adhesiveness and resilience of the bread at all three levels of tannic acid compared with the control, but changes in hardness and chewiness of the bread made with added tannic acid indicated that tannic acid could delay bread staling.CONCLUSION: The effect of tannic acid on flour and dough is different from that of other flour redox agents. It breaks down disulfide bonds but also has positive effects on dough properties and bread quality. Disulfide bonds are commonly considered to be the most important factor affecting changes in the quality of bread. However, this study presents the new concept that other covalent bonds can also improve the quality of flour and bread and uses this property to investigate new, safe and efficient flour additives. Abstract:Tannins are a heterogeneous group of high MW, water‐soluble, polyphenolic compounds, naturally present in cereals, leguminous seeds and, predominantly, in many fruits and vegetables, where they provide protection against a wide range of biotic and abiotic stressors. Tannins exert several pharmacological effects, including antioxidant and free radical scavenging activity as well as antimicrobial, anti‐cancer, anti‐nutritional and cardio‐protective properties. They also seem to exert beneficial effects on metabolic disorders and prevent the onset of several oxidative stress‐related diseases. Although the bioavailability and pharmacokinetic data for these phytochemicals are still sparse, gut absorption of these compounds seems to be inversely correlated with the degree of polymerization. Further studies are mandatory to better clarify how these molecules and their metabolites are able to cross the intestinal barrier in order to exert their biological properties. Abstract:Nowadays, many researches have been made on gallotannin biodegradation and have gained great success in further utilization. Some of industrial applications of these findings are in the production of tannase, the biotransformation of tannic acid to gallic acid or pyrogallol and detannification of food and fodder. Although ellagitannins have the typical C-C bound which is more difficult to be degraded than gallotannins, concerted efforts are still in progress to improve ellagitannin degradation and utilization. Currently, more attention is mainly focused on intestinal microflora biodegradation of tannins especially ellagitannins which can contribute to the definition of their bioavailability for both human beings and ruminants. Also there have been endeavours to utilize the tannin-degrading activity of different fungi for ellagitannin-rich biomass, which will facilitate application of tannin-degrading enzymes in strategies for improving industrial and livestock production. Due to the complicated structures of complex tannins and condensed tannins, the biodegradation of them is much more difficult and there are fewer researches on them. Therefore, the researches on the mechanisms of gallotannin and ellagitannin biodegradation can result in the overall understanding to the biodegradation of complex tannins and condensed tannins. Biodegradation of tannins is in an incipient stage and further studies have to be carried out to exploit the potential of various tannins for largescale applications in food, fodder, medicine and tannery effluent treatment.

Abstract:Abstract As a major class of dietary polyphenols, tannins are demonstrated to have various health-promoting properties. Although tannins have been widely utilized in food, pharmaceutical and many other industries, the applications of tannins are quite limited due to their poor stability, sensory attributes and bioavailability. Encapsulation helps improve all of these properties. Complex coacervation, one of the most effective encapsulation techniques, is known for its simplicity, low cost, scalability and reproducibility in encapsulation of functional components. In recent years, complex coacervation has been successfully used for encapsulation of tannins and tannin-rich plant extracts. In this article, the research progress in encapsulating tannins and tannin-rich plant extracts by complex coacervation to improve their physicochemical properties and biological activities is critically reviewed for the first time. Encapsulation of tannins and tannin-rich plant extracts can effectively improve their sensory characteristics, stabilities, bioavailability, anti-hypercholesterolemia, anti-diabetic, antioxidant, anticancer and antimicrobial activities. In particular, the enhancement of biological activities of tannins and tannin-rich plant extracts is usually correlated to their improved physicochemical properties imparted by the encapsulation technique. Moreover, we introduce the issues that need to be further resolved in future studies on encapsulation of tannins and tannin-rich plant extracts by complex coacervation.
