Abstract:Double emulsions are complex emulsion systems with a wide range of applications across different fields, such as pharmaceutics, food and beverage, materials sciences, personal care, and dietary supplements. Conventionally, surfactants are required for the stabilization of double emulsions. However, due to the emerging need for more robust emulsion systems and the growing trends for biocompatible and biodegradable materials, Pickering double emulsions have attracted increasing interest. In comparison to double emulsions stabilized solely by surfactants, Pickering double emulsions possess enhanced stability due to the irreversible adsorption of colloidal particles at the oil/water interface, while adopting desired environmental-friendly properties. Such advantages have made Pickering double emulsions rigid templates for the preparation of various hierarchical structures and as potential encapsulation systems for the delivery of bioactive compounds. This article aims to provide an evaluation of the recent advances in Pickering double emulsions, with a special focus on the colloidal particles employed and the corresponding stabilization strategies. Emphasis is then devoted to the applications of Pickering double emulsions, from encapsulation and co-encapsulation of a wide range of active compounds to templates for the fabrication of hierarchical structures. The tailorable properties and the proposed applications of such hierarchical structures are also discussed. It is hoped that this perspective paper will serve as a useful reference on Pickering double emulsions and will provide insights toward future studies in the fabrication and applications of Pickering double emulsions.

Abstract:Pickering emulsions are an attractive type of emulsion. These particlestabilized emulsions possess many advantages that conventional emulsions do not have. Recently, novel hybrid materials derived from Pickering emulsions have become an emerging research topic. These novel structures include spheres, hollow capsules, and porous foams, depending on the design of the Pickering emulsion template. Polymerization is always involved in order to support the structure after removal of the Pickering emulsion template. We present an overview of recent advances in the development of polymeric materials from Pickering emulsion templates. Developments are organized according to the physical morphologies (spheres, capsules, and foams) of materials derived from Pickering emulsions and the particles (inorganic and organic stabilizers) employed in stabilizing the emulsions.

Abstract:We demonstrate the fabrication of amphiphilic nano-sheets, which are either surface-or edge-modified plates with thickness at the atomic scale, one of the thinnest amphiphilic particles reported so far. They are obtained by exfoliation of functionalized layered crystals, the first time that laminar structures have been utilized to produce such particles. Stable emulsions were made utilizing these nano-sheets. The adsorption of the amphiphilic nano-sheets onto the oil-in-water interfaces and the reduction of surface tension between the PDMS and the amphiphilic nano-sheet suspensions were quantitatively characterized.

Abstract:Pickering emulsions, water or oil droplets stabilized solely by solid particles, are attracting increasing attention, due to the fascinating possibilities for applications in food, pharmaceuticals and preparation of hybrid materials. In this paper, we report oil-in-water (O/W) Pickering emulsions stabilized solely by polymerization-induced selfassembly (PISA) synthesized diblock copolymer spherical nanoparticles. Poly (N,N-dimethylaminoethyl methacrylate)-b-poly (benzyl methacrylate) (PDMA-b-PBzMA) diblock copolymer nanoparticles with 20 wt% solid content were prepared in ethanol via RAFT dispersion polymerization. Then PDMA-b-PBzMA nanoparticles were used as emulsifiers to prepare O/W Pickering emulsions by homogenization. The regulation of droplet size of the O/W Pickering emulsion was systemically investigated by adjusting the size of emulsifiers, the concentration of emulsifiers, and the ratio of oil/water. Moreover, Pickering emulsion polymerization was successfully applied to prepare poly (laurate methacrylate) microparticles. These results provide instructive insights to choose proper nanoparticles for the preparation of Pickering emulsions and control over the size of emulsion droplets.

Abstract:Poly(ethylene glycol)-b-poly(ε-caprolactone) diblock copolymers (PEG-b-PCL) with predesigned hydrophilic/hydrophobic block length ratios have been synthesized and self-assembled to form micelles, then used to emulsify medium-chain triglycerides with an aqueous phase. The morphologies and sizes of PEG-b-PCL copolymer micelles have been characterized by transmission electron microscopy and dynamic light scattering. Interfacial tension testing between micellar dispersions and oil, combined with water contact angle measurements, have been performed to assess the ability of these micelles to adjust interfacial tension and micellar hydrophobicity, respectively. Relationship between the wettability of PEG-b-PCL copolymer micelles and their emulsification properties has been proved through phase diagram, optical microscopic observation, droplet sizes evolution and phase separation behavior of Pickering emulsion samples. Results show that both oil-in-water and water-in-oil Pickering emulsions, as well as water-in-oil-in-water (W/O/W) double-Pickering emulsions, may be controllably prepared through one-step homogenization. Double microstructure of W/O/W Pickering emulsion has proved to be extremely stable during long-term storage.

Abstract:Pickering emulsions are emulsions stabilized by colloidal surfactants, i.e. solid particles. Compared with traditional molecular surfactant-stabilized emulsions, Pickering emulsions show many advantages, such as high resistance to coalescence, long-term stability, good biocompatibility and tunable properties. In recent years, Pickering emulsions are widely applied in scientific researches and industrial applications. In this review, we focus on the influences of particle properties on Pickering emulsions, including particle amphiphilicity, concentration, size and shape, and summarize the strategies developed for the preparation of amphiphilic Janus particles. The applications of Pickering emulsions in food industry, cosmetic industry, material science, drug delivery, biomedical research and vaccine adjuvant will also be covered. Pickering emulsions are a unique system for multi-disciplinary studies and will become more and more important in the future.

Abstract:With the development of reversible deactivated radical polymerization techniques, polymerization-induced self-assembly (PISA) is emerging as a facile method to prepare block copolymer nanoparticles in situ with high concentrations, providing wide potential applications in different fields, including nanomedicine, coatings, nanomanufacture, and Pickering emulsions. Polymeric emulsifiers synthesized by PISA have many advantages comparing with conventional nanoparticle emulsifiers. The morphologies, size, and amphiphilicity can be readily regulated via the synthetic process, post-modification, and external stimuli. By introducing stimulus responsiveness into PISA nanoparticles, Pickering emulsions stabilized with these nanoparticles can be endowed with "smart" behaviors. The emulsions can be regulated in reversible emulsification and demulsification. In this review, the authors focus on recent progress on Pickering emulsions stabilized by PISA nanoparticles with stimuli-responsiveness. The factors affecting the stability of emulsions during emulsification and demulsification are discussed in details. Furthermore, some viewpoints for preparing stimuli-responsive emulsions and their applications in antibacterial agents, diphase reaction platforms, and multi-emulsions are discussed as well. Finally, the future developments and applications of stimuli-responsive Pickering emulsions stabilized by PISA nanoparticles are highlighted.

Abstract:Pickering emulsion is a type of emulsion that uses solid particles or colloidal particles as emulsifiers instead of surfactants to anchor at the oil-water interface. Its unique properties, such as high stability, low toxicity, environmental friendliness, and low cost, make it ideal for pharmaceutical, food, and cosmetic applications. Unlike conventional emulsions in which amphiphilic surfactants are reversibly adsorbed at the interface, Pickering emulsions rely on the irreversible anchoring of particles at the liquid interface to produce electrostatic repulsion and spatial positional resistance for high stability. Particle properties play an important role in the stability, performance, and characterization of Pickering emulsions. This study provides an overview of several aspects of particles in Pickering emulsions. The critical evolution of the Pickering emulsion particles was analyzed in the last two decades by Citespace to identify the critical positions of particles in the emulsion. We then discuss how the properties of particles influence the stability of Pickering emulsions. The stabilization mechanism of Pickering emulsions and the difficulties of interfacial particle detection techniques are also discussed. This study provides a comprehensive overview and guide to particle-based Pickering emulsion performance optimization and interfacial detection technologies.

Abstract:The investigationof self-assembled particle structures at fluid interfaces has gained considerable interest across various fields. In particular, Pickering emulsions (PEs) stabilized by binary particles co-assembling at these interfaces have attracted even more attention. To explore the self-assembly process of superhydrophobic and superhydrophilic particles at oil–water (O/W) interfaces influenced by a trace amount of surfactant, a series of experiments were conducted. A small quantity (0.01 mmol·L −1 ) of dodecyltrimethylammonium bromide (DTAB) was introduced, establishing a variable stable emulsion system with high salt tolerance, capable of withstanding up to 6 mol·L −1 NaCl, in synergism with the particles. The DTAB concentration required to stabilize the O/W emulsion with particles was as low as 0.001 mmol·L −1 . The stability and type of the resulting emulsion could be adjusted by varying the ratio of hydrophobic to hydrophilic particle ( R ) or by modifying acid/base conditions. The systems exhibited robust cyclic acid/base regulated demulsification and phase inversion behavior, maintaining stability over at least 10 cycles. Results indicated that the stability and nature of the emulsion were influenced by the curvature of the interface formed by the self-assembled interfacial particle structures, arising from the competitive adsorption of both types of particles and trace surfactant. Further analysis revealed a correlation between interfacial curvature and the surface charges of the particles, which could be modulated through DTAB adsorption. This study elucidated the behavior of hydrophilic and hydrophobic particle self-assembly at interfaces, provided a straightforward strategy for co-preparing switchable emulsions using superhydrophilic and superhydrophobic particles, and expanded the range of amphiphilic particles available for producing PEs. This approach presents significant potential for future research and applications in the field of PEs.

Abstract:Pickering emulsions are ultra-stable dispersions of two immiscible fluids stabilized by solid or microgel particles rather than molecular surfactants. Although their ultra-stability is a signature performance indicator, often such high stability hinders their demulsification, i.e., prevents the droplet coalescence that is needed for phase separation on demand, or release of the active ingredients encapsulated within droplets and/or to recover the particles themselves, which may be catalysts, for example. This review aims to provide theoretical and experimental insights on demulsification of Pickering emulsions, in particular identifying the mechanisms of particle dislodgment from the interface in biological and non-biological applications. Even though the adhesion of particles to the interface can appear irreversible, it is possible to detach particles via (1) alteration of particle wettability, and/or (2) particle dissolution, affecting the particle radius by introducing a range of physical conditions: pH, temperature, heat, shear, or magnetic fields; or via treatment with chemical/biochemical additives, including surfactants, enzymes, salts, or bacteria. Many of these changes ultimately influence the interfacial rheology of the particle-laden interface, which is sometimes underestimated. There is increasing momentum to create responsive Pickering particles such that they offer switchable wettability (demulsification and re-emulsification) when these conditions are changed. Demulsification via wettability alteration seems like the modus operandi whilst particle dissolution remains only partially explored, largely dominated by food digestion-related studies where Pickering particles are digested using gastrointestinal enzymes. Overall, this review aims to stimulate new thinking about the control of demulsification of Pickering emulsions for release of active ingredients associated with these ultra-stable emulsions.

Abstract:The versatility of colloidal particles endows the particle-stabilized or Pickering emulsions with unique features and can potentially enable the fabrication of a wide variety of derived materials. We review the evolution and breakthroughs in the research on the use of colloidal particles for the stabilization of Pickering emulsions in recent years for the particle categories of inorganic particles, polymer-based particles, and food-grade particles. Moreover, based on the latest works, several emulsions stabilized by the featured particles and their derived functional materials, including enzyme immobilized emulsifiers for interfacial catalysis, 2D colloidal materials stabilized emulsions as templates for porous materials, and Pickering emulsions as adjuvant formulations, are also summarized. Finally, we point out the gaps in the current research on the applications of Pickering emulsions, and suggest future directions for the design of particulate stabilizers and preparation methods for Pickering emulsions and their derived materials.

Abstract:Pickering emulsions stabilized by micro/nanoparticles have attracted considerable attention owing to their great potential in various applications ranging from cosmetic and food industries to catalysis, tissue engineering and drug delivery. There is a growing demand to design "green" micro/nanoparticles for constructing stable Pickering emulsions. Micro/nanoparticles derived from the naturally occurring polysaccharides including cellulose, chitin, chitosan and starch are capable of assembling at oil/water interfaces and are promising green candidates because of their excellent biodegradability and renewability. The physicochemical properties of the micro/nanoparticles, which are determined by the fabricating approaches and/or post-modification methods, have a significant effect on the characteristics of the final Pickering emulsions and their applications. Herein, recent advances on Pickering emulsions stabilized by polysaccharides-based micro/nanoparticles and the construction of functional materials including porous foams, microcapsules and latex particles from these emulsions as templates, are reviewed. In particular, the effects of micro/nanoparticles properties on the characteristics of the Pickering emulsions and their applications are discussed. Furthermore, the obstacles that hinder the practical applications of polysaccharides-based micro/nanoparticles and Pickering emulsions as well as the prospects for the future development, are discussed.

Abstract:Pickering emulsion is a heterogeneous system consisting of at least two immiscible liquids, which are stabilized by solid particles, in which organic solvent or water is dispersed into other phase in form of micrometre-sized droplets. Compared to traditional emulsions stabilized by surfactant, solids are cheap and can be easily separated and recycled by centrifugation or filtration after use. Moreover, the properties of Pickering emulsions can be adjusted by using different types of solid particles. Up to now, Pickering emulsions have been applied in a wide range of areas such as material science and catalysis. Abstract:Pickering emulsions, which are stabilized by particles, have gained considerable attention recently because of their extreme stability and functionality. A food-grade particle is preferred by the food or pharmaceutical industries because of their noteworthy natural benefits (renewable resources, ease of preparation, excellent biocompatibility, and unique interfacial properties). Different edible particles are reported by recent publications with distinct shapes resulting from the inherent properties of raw materials and fabrication methods. Furthermore, they possess distinct interfacial properties and functionalities. Therefore, this review provides a comprehensive overview of the recent advances in the stabilization of Pickering emulsions using diverse food-grade particles, as well as their possible applications in the food industry.

Abstract:Pickering emulsions are increasingly being explored for their potential applications within the food industry. However, the stability of these emulsions is often limited when stabilized by single colloidal particles. Herein, we examined the possibility of improving the performance of Pickering emulsions by using a combination of colloidal particles (zein nanoparticles, Z) and small molecular emulsifiers (quillaja saponin, Q). The stability mechanism of Pickering emulsions was explored from microscopic to macroscopic scales using QCM-D, microrheology and Cyro-SEM, et. Corn oil-in-water Pickering emulsions were prepared by adding the Z and Q in different sequences: (i) mix Z and Q and then homogenize ("ZQ-P′′); (ii) add Z, homogenize, and then add Q ("Z-QP"); (iii) add Q, homogenize, and then add Z ("Q-ZP"). The sequence significantly influenced the interfacial structure and properties of Pickering emulsions. Macroscopic rheology and microrheology showed that the Pickering emulsions formed an elastic-like structure (G'>G′′) and their viscoelastic properties increased over time. QCM-D analysis showed that the properties of the interfacial layers depended on the emulsifier addition sequence used to form the Pickering emulsions. The interfacial membranes formed using the Q-ZP sequence were the thickest (5.8 nm). Cyro-SEM imaging showed that nanoparticle bridges formed between neighboring droplet surfaces, which led to the formation of a 3D network that provided mechanical strength. Overall, this study showed that the Q-ZP addition sequence was the most effective at forming stable Pickering emulsions. It provides new insights that may facilitate the formation of plant-based Pickering emulsions with improved functional performance in food applications.

Abstract:Pickering emulsions stabilized by polysaccharide particles have attracted extensive research interest in the food, biopharmaceutical and cosmetic industries due to their ability to edibility, protect bioactive substances, and control the release of bioactive substances. This paper reviewed research progress in using natural polysaccharides, modified polysaccharides by physical or chemical method and polysaccharide complexes as particles to form and stabilize Pickering emulsions. In particular, the application of Pickering emulsions stabilized polysaccharide particles in encapsulation and delivery of food bioactive ingredients, fat substitutes, and modulation of lipid digestion, was discussed. Finally, the future prospects of Pickering emulsions stabilized by polysaccharide particles were discussed.

Construction of highly stable, monodisperse water-in-water Pickering emulsions with full particle coverage using a composite system of microfluidics and helical coiled tube

Abstract:Water-in-water (W/W) Pickering emulsions, exhibit considerable potential in the food and pharmaceutical fields owing to their compartmentalization and high biocompatibility. However, constrained by the non-uniform distribution of shear forces during emulsification or the spatial obstruction in polydimethylsiloxane (PDMS) passive microfluidic platform, the existing methods cannot generate monodisperse W/W Pickering emulsions with high particle coverage rate, thereby limiting their applications. Herein, a novel microfluidic system is designed for the preparation of monodisperse and highly particle-covered W/W Pickering emulsions under mild conditions. pH-responsive Polyethylene glycol (PEG)/phosphate aqueous two-phase system (ATPS) is used for the emulsions' preparation. Notably, a coverage rate of 96 ± 3 % is obtained by adjusting the length of the helical coiled tube, as well as the size and contact angle of genipin cross-linked BSA (BSA-GP) particles. Moreover, these W/W Pickering emulsions, with surfaces almost completely covered, can maintain monodisperse (Ncoal = 1.18 ± 0.03) for one day. Furthermore, the results of ranitidine hydrochloride (RH) release demonstrated that the drug release rate of W/W Pickering emulsions in the simulated gastric fluid (SGF) was 10 times faster than that in the neutral solution. We believe that the highly particle-covered monodisperse W/W Pickering emulsions possess great potential applications in bioencapsulation for foods and drug delivery.

Abstract:Pickering emulsions stabilized by solid particles are more stable and environmentally friendly compared to traditional surfactants. Herein, a series of Chitosan-g-Poly(N-vinylcaprolactam) (CS-g-PNVCL) microgel particles were synthesized via a free radical surfactant-free emulsion copolymerization and the obtained particles were used to stabilize Pickering emulsions. It is found that the ratio (CS/PNVCL = 60 wt%) was optimal to produce Pickering emulsions. The microstructures of Pickering emulsions can maintain for 60 days at room temperature and this long-term stability is attributed to the CS-g-PNVCL microgel particles adsorbed at the oil-water interface. The Pickering emulsions displayed thermo-responsive characteristics when exposed to environmental stimuli. The emulsions became destabilized with an increase in pH and temperature. The droplets turned unstable and irregular due to excessive NaCl concentration, caused by electrostatic repulsion between the microgel particles. This study presents a novel way to form smart and uniform Pickering emulsions with the application potential in food, cosmetics, and drug delivery, etc.

Abstract:Pickering emulsion, a kind of emulsion stabilized only by solid particles locating at oil-water interface, has been discovered a century ago, while being extensively studied in recent decades. Substituting solid particles for traditional surfactants, Pickering emulsions are more stable against coalescence and can obtain many useful properties. Besides, they are more biocompatible when solid particles employed are relatively safe in vivo. Pickering emulsions can be applied in a wide range of fields, such as biomedicine, food, fine chemical synthesis, cosmetics, and so on, by properly tuning types and properties of solid emulsifiers. In this article, we give an overview of Pickering emulsions, focusing on some kinds of solid particles commonly serving as emulsifiers, three main types of products from Pickering emulsions, morphology of solid particles and as-prepared materials, as well as applications in different fields.
