Abstract:In order to achieve the acceptance of Huyou juice bitter by consumers, Resin adsorption method was used to remove bitter in the Huyou juice.The best technique of debitterize was determined through measuring the changes of naringin, limonin and nomilin in juice, as well as sensory evaluation.The results indicated that the ideal effects were achieved when 10% resin was added to juice(W/W) at 40 ℃ for 2.5 min.The removal ratio of naringin and limonin in the juice was 64.6% and 76.7%, respectively.Comparison result of physical and chemical indices of Huyou juice after and before debitter showed that the nutritional ingredients of Huyou juice were almost remained during the treatment.

Abstract:Honey and Fructus Rosae laevigatae were used as raw materials with domesticated yellow wine yeast strains as fermenting agent to produce high quality Fructus Rosae laevigatae honey wine.Single-factor experiments and orthogonal experiments suggested that four factors including pH value,the addition level of Fructus Rosae laevigatae,fermenting temperature and initial sugar content had important influence on wine fermentation(pH value had the most significant influence,and then the addition level of Fructus Rosae laevigatae,and then fermentation temperature,and finally initial sugar content).The optimum technical parameters were summed up as follows: fermenting temperature was at 22 ℃,pH value was 3.8,initial sugar content was 26 Brix,and the addition level of Fructus Rosae laevigatae was 11.5 % and fermenting time was 21 d.The produced wine was clarified naturally with its alcohol content as high as 13.3 %vol.Besides,it had strong aroma and harmonious wine body with enjoyable aftertaste.In the production,Fructus Rosae laevigatae could provide proper amount of nitrogen source to honey fermentation and produce elegant fruit aroma and mellow taste.

Abstract:The influence of temperature and duration of 1-methylcyclopropene(1-MCP) treatment on the quality and redox state of kiwifruit was investigated in this experiment.'ZhongHua' kiwifruits were treated with 1 μL/L 1-MCP at 0,10,20,30 ℃ for 12 h or 24 h,respectively,and then stored at 20°C for 14 days.The results showed that,1-MCP treatment for 12 h reduced respiration rate and ethylene production significantly,and the treatment effect at 30 ℃ was the best.However,higher respiration rate and ethylene production were observed when fruits were treated for 24 h.1-MCP treatment for 12 h or 24 h at 20 ℃ or 30 ℃ could remarkably keep kiwifruit firmness and color during storage,and the firmness with 1-MCP treatment for 12 h at 30 ℃ was the highest.The influence of 1-MCP treatment on solube solid content of fruit was small,the fruits with 1-MCP treatment could maintain a lower conductivity,higher VC/DHA and GSH/GSSG ratios,and higher cell antioxidative level.Comprehensive comparison,the 1-MCP treatment preservation effect of kiwifruit at 30 ℃ for 12 h was the best.

Abstract:With the development of diversification in tea consumption, white tea has increased its popularity owning to the natural-mellow taste. Up to now, the production area of white tea relatively concentrated in Fujian Province, limited yield of which is difficult to meet the demand of market. With the geographical advantage near Fujian Province, Zhejiang Province also has abundant tea resources. It is potential for Zhejiang Province to develop white tea production. This study aims at screening optimal withering and drying parameters for processing using local white tea materials of Zhejiang Province. In this study, the fresh leaves from the cultivar"Chunyu 2", one of major tea cultivars in Zhejiang Province were selected as test materials, and treated by traditional processing technology of white tea. Optimal withering and drying parameters for processing were explored, by sensory evaluation of the made tea and quantitative determination on chemical ingredients in made tea. The results showed that the processing time varied due to differences in ambient temperature and relative humidity caused by various types of withering and drying. Compared to sunshine withering and indoor natural withering, the quality of white tea made under controlled temperature was more stable. Short-term withering at 35℃ led to the lower catechins and amino acid contents in made tea. Lower amino acid contents under short-term high-temperature withering may be mainly because of deficient protein hydrolysis. But white tea prepared by short-term high-temperature withering gained high taste score and aroma score by sensory evaluation because of taste-sweetness increasing and green-gas reducing. Meanwhile, the results also indicated that short-term high-temperature drying could facilitate chemical reaction of amino acids and other chemical compositions, reduce amino acid contents and increase aroma richness, and improve the quality of the made tea. It is concluded that the following two processing procedures are suitable for preparation of"Chunyu 2"white tea in Zhejiang Province. 1) Fresh leaves →withering at 35℃for 25 h→drying at 50℃ for 2 h, and 2) fresh leaves →sunshine withering for 40 h→drying at 100℃for 30 min.

Abstract:It is studied that the pickling process technics is improved in cabbage through adding different natural ingredient to improve its color, the fragrance and the taste and through. By spectrophotometry to determine nitrite in the pickling process. The result indicated that, it can obviously reduce nitritere by adding blue apple or pear, but it is better than before by increasing the right tea extract or the tea polyphenol based on this. Two peaks of nitritere content appears in the pickling process, and this is different from the predecessor findings. High quality pickling product is obtained which the mouth is good but nitritere is too lower to safe by increaseing the right tea extract or the tea polyphenol and the blue apple or the pear which has up-regulate function of reducing nitritere.

Abstract:With the increasing awareness of health, more people have shown a preference for low-alcohol beverages. Seeking various methods to improve the quality of kiwi wine is now a major research interest in the wine industry. In this study, kiwi wine was fermented by Saccharomyces cerevisiae and different non-Saccharomyces strains (Torulaspora delbrueckii, Kluyveromyces thermotolerans, Pichia fermentans) in three methods (pure fermentation, simultaneous, and sequential co-fermentation). The physicochemical characteristics, color parameters, phenolic profiles, total phenolic content (TPC), antioxidant activities, organic acids, and taste sense of the different wines were evaluated to determine the effects of different yeasts and fermentation methods on the quality of the kiwi wine. Results indicated that co-fermentation reduced the contents of alcohol while enhancing the lightness of the kiwi wine. The TPC of sequential co-fermentation with K. thermotolerans/S. cerevisiae was significantly higher than that of their simultaneous co-fermentation. Compared to K. thermotolerans/S. cerevisiae, the antioxidant activities were increased by co-fermentation of T. delbrueckii/S. cerevisiae and P. fermentans/S. cerevisiae. Principal component analysis showed that kiwi wines fermented by different yeasts and inoculation methods could be separated and grouped. Correlation analysis presented positive correlations of phenolic composition, antioxidant activities, and color intensity. This study provided theoretical guidance for co-fermentation of non-Saccharomyces/S. cerevisiae and accelerated the industrialization process of kiwi wine.

This method has been successfully applying in Shan xi preserved kiwi fruit processing enterprises, also realizing a certain economic benefit.

Abstract:This study examined the effect of various clarification treatments on the physicochemical properties, volatile compounds, and sensory attributes of kiwi wines produced from five different kiwifruit (Actinidia deliciosa) varieties. The degree of clarification had a minimal impact on physicochemical parameters, including the content of residual sugar, ethanol, volatile acid, titratable acidity (except for the kiwifruit variety 'Qinmei'), and the pH value. However, wines made from unclarified juices (muddy juice and pulp) displayed a higher glycerol content than those made from clarified juices. The cluster heat map and principal component analyses (PCA) demonstrated that kiwi wines produced from clarified kiwi juices possessed a higher ester content, whereas muddy juice and pulp wines contained elevated levels of higher alcohols. Quantitative descriptive analysis (QDA) indicated that clarified juice wines outperformed muddy juice and pulp wines in terms of purity, typicality, harmony, intensity, and freshness, with negligible differences in terms of palate acidity. Moreover, the clarified juice wines featured more characteristic kiwi wine aromas (kiwifruit, passionfruit, and pineapple) compared with that of the muddy juice and pulp wines, which exhibited an increased grassy flavour. Although the 100-NTU kiwifruit juice-fermented wine did not show an advantage in the cluster heat map and PCA, it presented better freshness, typicality, and intensity in the QDA, as well as a more passionfruit aroma. Based on the orthogonal partial least-squares discriminant analysis, A. deliciosa 'Xuxiang' was deemed to be the most suitable variety for vinification. This study provides crucial insights for enhancing the production of high-quality kiwi wine.

Abstract:'Hongyang' kiwifruit is a new breed of red-fleshed cultivar that has become broadly popular with consumers in recent years. In this study, the internal quality and aroma of this kiwifruit during ripening were investigated by means of gas chromatography-mass spectrometry (GC-MS) and electronic nose (E-nose). Results showed that the green note aldehydes declined, the main fruity esters increased, and the terpenes had no obvious changes during ripening. Correlations between quality indices, volatile compounds, and E-nose data were analyzed by ANOVA partial least squares regression (APLSR), and the results showed that firmness and titratable acidity (TA) had highly positive correlations with (E)-2-hexenal and hexanal, while soluble solids content (SSC) and SSC/TA ratio had positive correlations with ester compounds. The E-nose sensors of S7, S10, S8, S6, S9, and S2 were positively correlated with ester compounds, S1, S3, and S5 were mainly correlated with hexanal, and S4 was correlated with terpene compounds. Partial least squares regression (PLSR) and support vector machine (SVM) were employed to predict the quality indices by E-nose data, and SVM presented a better performance in predicting firmness, SSC, TA, and SSC/TA ratio (R-2 > 0.98 in the training set and R-2 > 0.94 in the testing set). This study demonstrated that the E-nose technique could be used as an alternative to trace the flavor quality of kiwifruit during ripening.

Abstract:Taking coix lacryma-jobi,beans,whole milk powder,and white sugar as raw materials,solidified coix lacryma-jobi soybean yoghurt could be processed by applying the technology discussed in this paper.The processing technology of coix lacryma-jobi fluid preparation,raw soybean flavor removing,lactobacillus domestication,and the effects on flavor,taste,stability of coix lacryma-jobi soybean yoghurt were studied.By the orthogonal experiment,that the optimal fermentation conditions were: adding inoculation rate 4%,emulsion stabilizer 0.15%,white sugar 8% and fermentation time 5 hrs,and the ratio of raw materials,i.e.,soybean,coix lacryma-jobi and whole milk powder is 10∶2.5∶1(W∶W).

Abstract:Analysis of low-sugar preserved Kiwifruit processing status and the key factors of quality control, based on the comparative study of different control methods, fuzzy control technique is applied to the quality control of low-sugar preserved Kiwifruit with using the embedded microcontroller processor to design the system controlling hardware, and the system software flowchart. The control studies of the end product quality of the low-sugar preserved Kiwifruit can provide the technical basis and process control method for low-sugar food-preserved fruit production process , so the corresponding products satisfy the people's low-sugar and low-calorie requirements.

Abstract:Using fresh grapefruit as material,the grapefruit vinegar is produced after pretreatment,juicing, alcohol fermentation and acetic acid fermentation. The production conditions of grapefruit vinegar are investigated,after 3 days'alcohol fermentation and 6 days'acetic acid fermentation,the total acidity of the fruit vinegar is 7.23%,the sugar degree is 9%,the grapefruit vinegar has a good flavor with grapefruit aroma, and all the microbial indicators are accorded with the national standard.

Abstract:Background: To improve the aroma of kiwi wine through the utilization of Wickerhamomyces anomalus, kiwi juice was fermented using a selected W. anomalus strain in pure culture and mixed fermentations with Saccharomyces cerevisiae, which was inoculated simultaneously and sequentially. The physicochemical indices, volatile compounds and aroma properties of the kiwi wines were assessed. Results: The study suggested that the ethanol, color indices and organic acids of the wines were closely related to the method of inoculation. Compared with the pure S. cerevisiae fermentation, the mixed fermentations produced more varieties and concentrations of volatiles. The sequential fermentations increased the concentrations of esters and terpenes, improving the flower and sweet fruit notes of the wines. The simultaneous inoculation enhanced the contents of esters and aldehydes, intensifying the flower, sweet and sour fruit of the wines. Partial least-squares regression analysis showed that esters and terpenes contributed greatly to the flower and sweet fruit aroma, whereas aldehydes were the major contributors to the sour note. Conclusion: Based on our results, the mixed fermentations not only enriched the types and concentrations of volatiles, but also had better sensory properties. © 2021 Society of Chemical Industry.

Abstract:Using Kiwifruit as raw material, the optimal alcohol fermentation was carried out at 28 ℃ for 3 d with prime sugar quantity of kiwifruit fruit 16 %,acid quantity 2 g/L,inoculum 0.1 %,resulting in transform efficiency 80.94 %;the optimal acetic acid fermentation was set at 30 ℃ with alcohol 5 %,pH6.0, inoculum 14 %.Fruit vinegar prepared was a condiment as well as material to prepare fruit vinegar drink.

Abstract:A new fermentation method for kiwi wine was explored by developing the well-known medicinal and edible plant Cyclocarya paliurus (C. paliurus) to create more value with undersized kiwifruits. In this study, the changes in bioactive substances during the C. paliurus–kiwi winemaking process were analyzed on the basis of response surface optimization results, and the antioxidant capacity, aromatic compounds, and sensory quality of the C. paliurus–kiwi composite wine with kiwi wine and two commercial kiwi wines were compared. The results showed that DPPH radical, OH− radical, and ABTS+ scavenging rates remained at over 60.0%, 90.0%, and 70.0% in C. paliurus–kiwi wine, respectively. The total flavonoid content (TFC) and total polyphenol content (TPC) of C. paliurus–kiwi wine were significantly higher than those of the other three kiwi wines. C. paliurus–kiwi wine received the highest score and detected 43 volatile compounds. Ethyl hexanoate, which showed stronger fruity and sweet aromas, was one of the main aroma components of C. paliurus–kiwi wine and different from commercial wines. This wine has a good flavor with a natural and quality feeling of C. paliurus–kiwifruit extract, low-cost processing, and great market potential.
