Abstract:Kiwifruit is widely consumed in many parts of the world. They contain a variety of bioactive substances that make them a valuable functional food source. For instance, kiwifruit contains vitamin C, polysaccharides, polyphenols (catechin, anthocyanin, chlorogenic acid, gallic acid), alkaloids (aconitine, safranin, actinidine), and terpenoids (ursolic acid, oleanolic acid), which are claimed to exhibit antioxidant, anti-inflammatory, and anticancer effects, as well as protecting against cardiovascular and cerebrovascular diseases. However, the potentially beneficial effects of most of these bioactive substances have still not been confirmed by clinical trials. This article reviews recent research on the type and physiological functions of the main bioactive components in kiwifruit. The techniques required to extract and characterize these components are discussed, as well as current challenges in kiwifruit processing. Several innovative extraction techniques have been utilized to extract bioactive substances from kiwifruits, including ultrasound- and microwave-assisted methods. Moreover, several non-thermal processing methods (such as sonication, high-pressure, and pulsed electric field processing) are being used to reduce the losses and increase the activity of bioactive substances, preserve the sensory qualities of the fruit, and reduce the allergenicity of kiwifruit. Abstract:Kiwifruit (Actinidia spp.) is a commercially important horticultural fruit crop worldwide. Kiwifruit contains numerous minerals, vitamins, and dietary phytochemicals, that not only responsible for the flavor but can also serve as adjuncts in the treatment of diabetes, digestive disorders, cardiovascular system, cancer and heart disease. However, fruit quality and shelf life affect consumer's acceptance and production chain. Understanding the methods of fruit storage preservation, as well as their biochemical, physiological, and molecular basis is essential. In recent years, eco-friendly (comprehensive and environmentally friendly) treatments such as hot water, ozone, chitosan, quercetin, and antifungal additive from biocontrol bacteria or yeast have been applied to improve postharvest fruit quality with longer shelf life. This review provides a comprehensive overview of the latest advancements in control measures, applications, and mechanisms related to water loss, chilling injury, and pathogen diseases in postharvest kiwifruit. Further studies should utilize genome editing techniques to enhance postharvest fruit quality and disease resistance through site-directed bio-manipulation of the kiwifruit genome.

Abstract:Cranberries are well-known berry fruits and a member of Ericaceae family. It is a potential source of bioactive components including phenolic acids, flavonols, organic acids, pentacyclic triterpenoids, anthocyanins, etc. Until now, several scientific researches uncovered the positive role of cranberry consumption to suppress human diseases including obesity, diabetes, microbial infection, hepatotoxicity, hypertensive and cardiotoxicity, neurotoxicity, and cancer. This review focused on the chemical components of cranberries, as well as comprehensively explored the biological capabilities of cranberries based on recent findings. Furthermore, the health benefits of cranberries were also discussed based on recent clinical studies. Our review reported that cranberries are a rich source of various minerals, vitamins, organic acids, sugars, and polyphenols. Cranberries exert potential antioxidant, anti-inflammatory, antiobesity, anti-diabetic, anti-microbial, hepatoprotective, cardioprotective, neuroprotective, and anti-cancer activity via regulating several signaling pathways such as PI3K/Akt/Nrf2, Nrf2/ARE, PI3K/Akt/COX-2, TLR4-NF-kB-p38 MAPK, JAK-STAT, PPARs, TGFβ/Smad, ACE I, and others. Among all bioactivities, antimicrobial activity of cranberries is promising due to bactericidal, bacteriostatic, and antibiofilm properties. Recent clinical studies further confirmed the health benefits and safety, though extensive clinical research are recommended to ensure these effects at the clinical level. Apart from this, consumption of cranberries and their products is suggested because of the rich source of bioactive components to ameliorate biological disorders.

Abstract:Fruit tissue is heavily damaged during fresh-cut processing, which induces a series of physiological disorders such as softening, browning and microbial infection. Rapid deterioration and short shelf-life are the major hurdle to the commercial marketing of fresh-cut fruit. This paper introduces physiological and biochemical characteristics and summarizes key biotechnologies for fresh-cut processed fruit to provide practical and theoretical basis for the development of fresh-cut fruit industry.
Antioxidant, antimicrobial, and antiproliferative activity-based comparative study of peel and flesh polyphenols from Actinidia chinensis

Abstract:BACKGROUND: Kiwifruit (Actinidia chinensis) peel has been always considered as useless because of the harsh taste. To promote the full utilization of kiwifruit resources it is essential to explore the nutritional benefits of kiwifruit peel.OBJECTIVE: Our studies explored the difference in polyphenolic composition and biological activity including antioxidant, antimicrobial, and antiproliferative activity of the flesh and peel of kiwifruit.DESIGN: Antioxidant activity of the extracted polyphenols of the peel and flesh of A. chinensis was checked by 2,2-diphenyl-1-picrylhydrazyl, 2,2'-azino-bis3-ethylbenzothiazoline-6-sulphonic acid (ABTS), hydroxyl ion reduction, and ion chelating ability. Antibacterial activity against Escherichia coli, Listeria monocytogenes, and Staphylococcus aureus and antiproliferative activity against HepG2 was tested in a dose- and time-dependent manner. Liquid chromatography/mass spectrometry (LC/MS) chromatogram of the peel and flesh further differentiated the phenolic acid profile.RESULTS: The pericarp of kiwifruit was found to be more abundant in polyphenols and flavonoids than the flesh, with contents of 12.8 mg/g and 2.7 mg/g, respectively. LC/MS analysis revealed that the catachin, quercetin and epigallocatechin content (the main polyphenols in kiwifruit) in the peel was significantly higher than in the flesh (P < 0.05). The antioxidant and antibacterial activity of the peel was significantly higher when compared to the flesh. Moreover, the proliferation of HepG2 cells was time- and dose-dependently inhibited by kiwifruit polyphenols, with IC50 values of 170 μg/mL and 291 μg/mL for peel and flesh polyphenols after 72 h of treatment time, respectively.CONCLUSION: Kiwifruit peel, with higher content of phenolics and flavonoids, exerts more potent antioxidant, antibacterial, and anticancer activity than the flesh. Our study provides scientific evidence for the development of kiwifruit, especially peel-based, novel natural products with excellent bioactivity.

Abstract:Kiwifruit ( Actinidia ) is becoming increasingly popular worldwide due to its favorable flavour and high vitamin C content. However, quality parameters vary among cultivars. To determine the differences in quality and metabolic parameters of kiwifruit, we monitored the growth processes of ‘Kuilv’ ( Actinidia arguta ), ‘Hongyang’ ( Actinidia chinensis ) and ‘Hayward’ ( Actinidia deliciosa ). We found that ‘Kuilv’ required the shortest time for fruit development, while ‘Hayward’ needed the longest time to mature. The fruit size of ‘Hayward’ was the largest and that of ‘Kuilv’ was the smallest. Furthermore, ‘Hongyang’ showed a double-S shape of dry matter accumulation, whereas ‘Kuilv’ and ‘Hayward’ showed a linear or single-S shape pattern of dry matter accumulation during development. The three cultivars demonstrated the same trend for total soluble solids accumulation, which did not rise rapidly until 90–120 days after anthesis. However, the accumulation of organic acids and soluble sugars varied among the cultivars. During later fruit development, the content of glucose, fructose and quinic acid in ‘Kuilv’ fruit was far lower than that in ‘Hongyang’ and ‘Hayward’. On the contrary, ‘Kuilv’ had the highest sucrose content among the three cultivars. At maturity, the antioxidative enzymatic systems were significantly different among the three kiwifruit cultivars. ‘Hongyang’ showed higher activities of superoxide dismutase than the other cultivars, while the catalase content of ‘Hayward’ was significantly higher than that of ‘Hongyang’ and ‘Kuilv’. These results provided knowledge that could be implemented for the marketing, handling and post-harvest technologies of the different kiwifruit cultivars.

Bioactive compounds and in vitro antioxidant activities of peel, flesh and seed powder of kiwi fruit

Abstract:Summary The aim of this work was to assess the bioactive compounds and antioxidant potential of powder obtained by the lyophilisation of the peel, flesh and seeds of kiwi fruit. Eight typical varieties of kiwi fruit in Shaanxi, China, were selected, and the pH value, content of Vc, total polyphenols, and flavonoids of different parts of the kiwi fruit were analysed. The content of phenols was determined by HPLC . The results revealed that phenolic compounds, such as protocatechuic acid, chlorogenic acid, caffeic acid, rutin, p‐hydroxybenzoic acid and quercetin, were rich in different parts of kiwi fruit and highest in the peel. The Vc content was highest in the flesh. The antioxidant activities show the same trend as the total polyphenol content. The kiwi fruit peel and seed can be used to reduce agro‐industrial waste and are promising ingredients for use in the enrichment of products providing dietary fibre, bioactive compounds and antioxidant action.
Changes of bioactive substances in lactic acid bacteria and yeasts fermented kiwifruit extract during the fermentation

Abstract:Probiotic fermented fruit extract is a new kind of food with potential health care efficacy. In this study, transformation of bioactive substances in Lactic acid bacteria (LAB) and yeast fermented kiwifruit extract were researched. The highest levels of total polyphenol, superoxide dismutase (SOD) were found in Lactobacillus paracasei LG0260 fermented kiwifruit extract with 2.31 ± 0.06 mgGAE/g, 369 ± 12.73 U.mL−1, respectively. LAB fermented kiwifruit extract dramatically had a highest vitamin C (VitC) concentration during the fermentation, while yeast and natural fermented samples were decline steadily. Another interesting founding, a highest level of γ-aminobutyric acid (GABA) was found in Saccharomyces cerevisiae J2861 fermented kiwifruit extract with 24.132 ± 1.01 μg/mL. Furthermore, the main organic acids in fresh kiwifruit and yeast fermented kiwifruit extract were citric acid and malic acid. However, lactic acid and citric acid were the main organic acids in LAB fermented kiwifruit extract. A total of 43 kinds of flavor compounds in fresh kiwifruit and 88 kinds of flavor compounds in fermented kiwifruit extract were identified. Esters and alcohols in fermented kiwifruit system increased by the fermentation of selected bacteria which improved the taste and flavor.
Characterization, Antioxidant Capacity, and Anti-Inflammatory Activity of Polyphenol-Enriched Extracts Obtained from Unripe, Mature, and Overripe Fruits of Red-Fleshed Kiwifruit Cultivars

Abstract:Discarded unripe kiwifruits (DUKs) are regarded as the major agro-byproducts in the production of kiwifruits, which have abundantly valuable secondary metabolites. Nevertheless, owing to the limited knowledge about the differences in phytochemicals and bioactivity between DUKs and mature kiwifruits, the utilization of DUKs in the food industry remains scarce. Hence, to promote their food applications, the phenolic compounds and bioactivity of discarded unripe, mature, and overripe fruits from three red-fleshed kiwifruit cultivars were studied and compared. The results revealed that the levels of total phenolics, total flavonoids, and total procyanidins in kiwifruits varied significantly by maturity stage. In addition, our findings demonstrated that DUKs possessed much higher contents of valuable phenolic compounds (e.g., chlorogenic acid (CHA), neochlorogenic acid (NCHA), gallic acid (GA), protocatechuic acid (PA), procyanidin B1 (ProcB1), procyanidin B2 (ProcB2), procyanidin C1 (ProcC1), quercetin 3-O-glucoside (QueG), and quercetin 3-O-rhamnoside (QueR)) than mature and overripe kiwifruits. Furthermore, DUKs exerted much stronger in vitro antioxidant capacity, inhibitory effects on α-glucosidase, and anti-inflammatory activity than mature and overripe kiwifruits, which were mainly attributed to their higher contents of total polyphenols and individual phenolic components, such as GA, CHA, NCHA, PA, ProcB1, ProcB2, ProcC1, and QueR. Overall, these findings provide sufficient evidence for the development and utilization of DUKs in the food/functional food industry.

Abstract:Kiwifruit is a climacteric fruit, in which the accumulation of flavor substances mainly occurs at the postharvest ripening stage. However, the dynamic changes in metabolite composition remain poorly understood. Here, targeted multi-platform metabolome analysis based on GC-MS and UPLC-MS/MS and enzyme activity analysis were performed at different postharvest ripening stages of kiwifruit. A total of 12 soluble sugars and 31 organic acids were identified. The main soluble sugars are sucrose, glucose and fructose, which exhibited similar variation tendencies along with the extension of ripening. The main organic acids are citric acid, quinic acid and malic acid, which showed different variation patterns. A total of 48 energy metabolites were identified, which were classified into two groups based on the content variation. The content of substances related to the respiratory metabolic pathway decreased gradually along with postharvest ripening, and there was obvious accumulation of downstream products such as amino acids at the late ripening stage. A total of 35 endogenous hormones were identified, among which seven cytokinins were highly accumulated at the later stage of softening. We further investigated the dynamic changes in the activities of 28 ripening-related enzymes. As a result, the activities of 13 enzymes were highly correlated with changes in starch, total pectin, and soluble sugars, and those of seven enzymes were closely associated with the change in firmness. In conclusion, this study comprehensively describes the dynamic changes in soluble sugars, organic acids, hormones, energy substances, and ripening-related enzyme activities during kiwifruit postharvest ripening, and provides a theoretical basis for the postharvest quality improvement of kiwifruit.

Abstract:There is a growing interest in various types of kiwifruits, such as the "yellow" kiwifruit (Actinidia chinensis var. chinensis) and the "baby" kiwifruit of Actinidia arguta. These fruits are rich in bioactive compounds, which contribute to their nutraceutical properties, but they nevertheless have a shorter shelf life, resulting in economic losses. This study aims to chemically characterize kiwifruit juices from SunGold and baby kiwifruit varieties (Hortgem Rua and Hortgem Tahi) to improve knowledge and explore the suitability of these products for producing low-alcohol beverages using non-Saccharomyces strains, with the purpose of reducing waste and generating value-added processing. Total soluble solids, acidity, hardness, dry matter, total phenolic content, and antioxidant capacity were used as indicators of fruit quality. Chemical characterization of fresh kiwifruit juices revealed distinct profiles among varieties, with SunGold juice exhibiting higher sugar content and acidity. Citric acid was the predominant organic acid, while, as expected, tartaric was not detected. Kiwifruit juice fermentations by T. delbrueckii UMY196 were always completed regardless of the type of juice used, producing beverages with ethanol content ranging from 6.46 to 8.85% (v/v). The analysis of volatile organic compounds highlighted the presence of several molecules, contributing to aroma profiles with relevant differences among the three kiwifruit-based drinks. In particular, the total concentration of esters in the beverages reached 8.2 mg/L, 9.2 mg/L, and 8.6 mg/L in the Tahi, Rua, and SunGold beverages, respectively. The qualitative and quantitative profiles of the kiwifruit drinks revealed a pronounced perception of acidity and fruity traits, with significant differences observed by Principal Component Analysis (PCA) in aroma descriptors among the proposed beverages. The possibility of using unsold, overripe, or waste fruits to prepare new products with an increase in the sustainability of this supply chain is set.
Impact of must clarification treatments on chemical and sensory profiles of kiwifruit wine

Abstract:This study examined the effect of various clarification treatments on the physicochemical properties, volatile compounds, and sensory attributes of kiwi wines produced from five different kiwifruit (Actinidia deliciosa) varieties. The degree of clarification had a minimal impact on physicochemical parameters, including the content of residual sugar, ethanol, volatile acid, titratable acidity (except for the kiwifruit variety 'Qinmei'), and the pH value. However, wines made from unclarified juices (muddy juice and pulp) displayed a higher glycerol content than those made from clarified juices. The cluster heat map and principal component analyses (PCA) demonstrated that kiwi wines produced from clarified kiwi juices possessed a higher ester content, whereas muddy juice and pulp wines contained elevated levels of higher alcohols. Quantitative descriptive analysis (QDA) indicated that clarified juice wines outperformed muddy juice and pulp wines in terms of purity, typicality, harmony, intensity, and freshness, with negligible differences in terms of palate acidity. Moreover, the clarified juice wines featured more characteristic kiwi wine aromas (kiwifruit, passionfruit, and pineapple) compared with that of the muddy juice and pulp wines, which exhibited an increased grassy flavour. Although the 100-NTU kiwifruit juice-fermented wine did not show an advantage in the cluster heat map and PCA, it presented better freshness, typicality, and intensity in the QDA, as well as a more passionfruit aroma. Based on the orthogonal partial least-squares discriminant analysis, A. deliciosa 'Xuxiang' was deemed to be the most suitable variety for vinification. This study provides crucial insights for enhancing the production of high-quality kiwi wine.
A Study on Tissue Pigments,Sugar, Acid Contents in Red-Fleshed Kiwifruit

Abstract:The inner and outer pericarps of ‘HY-09’,a mutant of ‘Hongyang’(Actinidia chinensis) ki-wifruit in Fengxin County were selected as materials ,and the contents of pigments ,sugar ,acid in the inner and outer pericarps were estimated and compared .The results showed that:there was clear difference in the pigment composition and content between the inner and outer pericarp of ‘HY-09’ fruit.Although chloroplast pigments existed in the inner pericarp and outer pericarps ,anthocyanin only existed in the inner pericarp .The chlorophyll content of the outer pericarp was always higher than that of the inner pericarp ,and showed significant fluctua-tions during the dessending process .The dynamic changes of soluble sugar and sugar acid ratio were more con-sistent in the inner and outer pericarps ,which showed a slow upward trend in the 47 days after full blossom , then increased rapidly ,and the soluble sugar and sugar-acid ratio of the inner pericarp were always higher than those in the out pericarp after in the 106 days after full blossom .However there was little difference between the two tissues in the changes of carotenoids and titratable acid contents in the entire development period .These study results are helpful to explore the difference between the inner and outer pericarp of red -fleshed kiwifruit , and lay the theoretical foundation for the research on the coloring mechanism of red -fleshed kiwifruit .
Comparison of Aroma and Taste Profiles of Kiwi Wine Fermented with/without Peel by Combining Intelligent Sensory, Gas Chromatography-Mass Spectrometry, and Proton Nuclear Magnetic Resonance

Abstract:Kiwi wine (KW) is tipically made by fermenting juice from peeled kiwifruit, resulting in the disposal of peel and pomace as by-products. However, the peel contains various beneficial compounds, like phenols and flavonoids. Since the peel is edible and rich in these compounds, incorporating it into the fermentation process of KW presents a potential solution to minimize by-product waste. This study compared the aroma and taste profiles of KW from peeled (PKW) and unpeeled (UKW) kiwifruits by combining intelligent sensory technology, GC-MS, and 1H-NMR. Focusing on aroma profiles, 75 volatile organic compounds (VOCs) were identified in KW fermented with peel, and 73 VOCs in KW without peel, with 62 VOCs common to both. Among these compounds, rose oxide, D-citronellol, and bornylene were more abundant in UKW, while hexyl acetate, isoamyl acetate, and 2,4,5-trichlorobenzene were significantly higher in PKW. For taste profiles, E-tongue analysis revealed differences in the taste profiles of KW from the two sources. A total of 74 molecules were characterized using 1H-NMR. UKW exhibited significantly higher levels of tartrate, galactarate, N-acetylserotonin, 4-hydroxy-3-methoxymandelate, fumarate, and N-acetylglycine, along with a significantly lower level of oxypurinol compared to PKW. This study seeks to develop the theoretical understanding of the fermentation of kiwifruit with peel in sight of the utilization of the whole fruit for KW production, to increase the economic value of kiwifruit production.

Abstract:Introduction: Hardy kiwifruit ( Actinidia arguta ) has an extensive range of nutritional and bioactive compounds and has been valued as a great resource for kiwifruit breeding. A better understanding of the dynamic changes of the composition and accumulation of nutritional compounds during fruit development and ripening is required before genetic or cultural improvements can be targeted. Methods: In the present study, the phytochemical analysis of two A. arguta cultivars 'Yilv' and 'Lvmi-1' showed that they comprised different morphology, with a higher fruit diameter while a lower vertical fruit diameter of 'Lvmi-1' compared with 'Yilv'. The antioxidant capacity of both cultivars decreased during the maturity time and showed no significant difference between them. Furthermore, although glucose gradually increased during the maturity time, the predominant sugar composition was speculated to be fructose in 'Lvmi-1' fruit while sucrose in 'Yilv' fruit at the early fruit developmental stages. Moreover, the predominant acids in 'Yilv' and 'Lvmi-1' were citric acid followed by quinic acid, malic acid, and oxalic acid. The expression of sugar- and starch-related genes encoding the crucial enzymes suggested different changes in 'Yilv' and 'Lvmi-1'. Notably, a subsequent correlation analysis showed a significant positive correlation between sucrose phosphate synthase (SPS) expression and glucose in 'Yilv', fructokinase (FK) expression, and starch content in 'Lvmi-1', implying their vital roles in sugar and starch accumulation. By contrast, a significant negative correlation between FK expression and fructose in 'Lvmi-1' fruit was observed. Results and Discussion: In summary, our results provide supplementary information for the dynamic changes of nutritional compounds and antioxidant capacity during hardy kiwifruit maturity time and give a clue for exploring the mechanism of sugar and starch accumulation in hardy kiwifruit.

Abstract:The main aim of the present study was the evaluation of proteins and antioxidant potential in ethylene-treated kiwifruit during the first 10 days of ripening. Kiwifruit samples were randomly divided into two groups: treated and untreated. Flesh firmness, sensory value, visual score, free sugars, soluble solids, ethylene biosynthesis, proteins, dietary fibers, total polyphenols and antioxidant potential were determined in both groups. Ethylene (100 ppm) at 20 degrees C for 24 h was used in the treated group. The flesh firmness and acidity in treated samples decreased significantly in the early stage of ripening simultaneously with significant increase in the contents of free sugars, soluble solids, endogenous ethylene production, sensory value, 1-aminocyclopropane-1-carboxylic acid (ACC) content, ACC synthase and ACC oxidase activities, total polyphenols and related antioxidant potential, and was significantly higher than in untreated samples (P < 0.05). Proteins were extracted from kiwifruit and separated by modified sodium dodecyl sulphate polyacrylamide gel electrophoresis. The separation was resolved into 14 protein bands. Some minor quality changes were found only in the 32 kDa band, which was more pronounced in the treated samples. In conclusion, ethylene treatment of kiwifruits leads to positive changes in most of the studied kiwifruit compounds and to an increase in the fruit antioxidant potential. It shortens the ripening time and improves fruit quality by decreasing its flesh firmness and acidity. Some minor changes in the protein profile did not affect the fruit taste and quality.

Abstract:Fruit and vegetable fermented beverages, a functional non-dairy fermented product, are popular worldwide due to their health-promoting attributes. It is reported that a variety of nutrients and chemical composition are found in fruit and vegetable fermented beverages, and health-promoting effects also have been reported. In addition, the quality and consumer acceptance of products is largely affected by probiotics starter, fermentation process, juice sterilization process and beverage enhancements. Considering the extensive reports on fruit and vegetable fermented beverages, the summary of these aspects is rare and not comprehensive enough. In view of this, we realized that it is necessary to update influencing factors of the quality and consumer acceptance of fruit and vegetable fermented beverages and some of the technologies involved, as well as nutrients, chemical properties and health benefits. Based on recent developments, it can be anticipated that fruit and vegetable fermented beverages will continue to be an important part of the functional food market.

Abstract:Kiwifruit is very popular for its unique flavor and nutritional value, and for its potential health benefits, which are closely related to its richness in a variety of natural antioxidant substances, in which polyphenolics play a non-negligible role. This study investigated changes in the fruit quality, phenolic compounds, and antioxidant potential of Chinese red-fleshed kiwifruit "Hongshi No. 2" during postharvest ripening at room temperature (20 ± 1 °C). Results showed that the weight loss rate slowly increased, the firmness rapidly decreased, and the soluble solid concentration gradually increased during the postharvest ripening of red-flesh kiwifruit. In addition, the total phenolic (TPC), total flavonoid (TFC), and total proanthocyanidin (TPAC) contents gradually increased during postharvest ripening. The most abundant phenolic compounds in kiwifruit throughout postharvest ripening were catechin (CC), proanthocyanidin B1 (PB1), and proanthocyanidin B2 (PB2). Furthermore, the methanolic extracts of red-flesh kiwifruit exhibited remarkable antioxidant activities throughout postharvest ripening stages. Indeed, some phenolic compounds showed good correlations with antioxidant activities; for instance, chlorogenic acid (CHL) showed a significantly positive correlation with ferric reducing antioxidant power (FRAP), and isoquercitrin (IS) showed a significantly negative correlation with DPPH free radical scavenging ability. The findings from this study are beneficial to better understanding the quality profile of red-flesh kiwifruit "Hongshi No. 2" during postharvest ripening.

Abstract:Kiwifruit is well-known for an excellent source of antioxidants. In this study, antioxidant capacity, evaluated by DPPH·, ABTS·+ and FRAP assays, was investigated in outer/inner pericarp and core during post-ripening process at ambient temperature. The results explored that the changes patterns of free radical scavenging rate of DPPH and ABTS remained relatively steady in whole post-ripening process, while FRAP increased in earlier stage and then declined remarkably.
