Abstract:The processing technology of broadbean can was studied by optmiization technology parameters using Qinghai12 broad bean as main ingredient.The study on pre-cooking quality of broad bean was affected by the liquid ratio,pre-cooking time in broadbean processing.The broadbean can ratio of keeping color and crisp was optimizated.It determined that optimum processing parameters was solid-liquid ratio 1 : 10,pre-cooking time of 10 min,pre-cooked liqid in medium with 0.6%VC,0.2% citric acid and 0.6% CaCl2.There is a good sensory quality of broadbean can;The paper studied that the quality of flavoured broad bean can was affected by the starch concentration,sugar addition amountand,salt addition amount and tomato sauce,It determined that optimum formula was the ratio of tomato sauce and water 1 : 4,starch addition level of water is 2%,sugar addition level of 30% tomato sauce,salt addition level of 2% tomato sauce.The flavoured broadbean is moderate sweet and sour and the flavor palatability.

Abstract:[Objective] To study the processing technology of coated-powder fried broad bean.[Method]Qinghai 12 broad bean was used.Effects of different pretreatment,fried temperature and time,coated-powder material on quality of coated-powder fried broad bean were analyzed.[Result] After processing of sprouting pretreatment,fried 5 min in 180℃ and using glutinous rice flour as coated-powder material,the coated-powder fried broad bean was well and delicious.[Conclusion] The processing technology of coated-powder fried broad bean was optimized.

Abstract:Extrusion conditions of black cereal paste such as moiture content of raw materials,granularity,raw material proportion and naturtal puffing additives,etc.were optimized,and the processing technology of black cereal paste was determined.Its main nutrition contents were evaluated on the basis of nutrition composition changes and extrusion treatments of black cereal paste raw materials such as black rice,black corn,black wheat and black soybean,etc.The results showed that after germinating treatment,the contents of vitamins B1,B2,C,and E were increased significantly.The optimal extrusion conditions were moisture content 14%,granularity 20 meshes,ratio of cereals and beans 80-90∶20-10,ratio of black non-glutinous rice and black glutinous rice 60-70∶40-30;contents of protein,fat,crude fiber,minerals,vitamins and aminao acids,etc.of black cereal nutritious paste processed mainly from black rice,blackcorn,black soybean,black wheat and black sesame were relatively high,featuring balanced nutrition and reasonable structure,with protein content reaching 18%,and 8 essential amino acids higher than WHO/FAO model.

Abstract:Optimized the enzymolysis conditions as the viscosity index,then investigated the spray drying technological parameters,and detected the change of main composition content.The optimal enzymatic hydrolysis conditions were jujube paste mass ratio of 0.20,hydrolysis temperature of 43℃,hydrolysis time of 4h,enzyme amount of 0.27mL/g.The spray drying technological parameters were mass ratio of 0.20,the amount of maltodextrin is equal to the amount of dried date in jujube paste,the feed liquid import temperature of 120℃,the peristaltic pump feeding quantity of 600mL/h.With the treatment of enzymolysis,homogenization and spray drying,the content of total flavonoids gradually decreased,the content of total polyphenol increased after enzyme hydrolysis and reduced after spray drying,the content of total sugar gradually increased.7 polyphenols were determined by HPLC,which is protocatechuic acid,catechin,coffee acid,epicatechin,rutin,cinnamic acid and quercetin.The content of coffee acid increased and then reduced after enzyme hydrolysis.The content of quercetin increased at first and reduced after spray dried,the content of the other 5 polyphenols decreased with the treatment of enzymolysis,homogenization and spray drying.By this optimized processing technology we can get the date powder product with 50%date powder,what's more,it is yellowish and with good flavour.

Abstract:The processing technology of sweet potato powder and the possibility to manufacture nutritive foods with sweet potato powder as main raw material by extrusion technology was studied. And the changes of nutritive components and physical-chemical properties during extrusion were analyzed. The results showed that the starch and protein in the product decreased, and total soluble saccharides increased, while water absorption index and water soluble index increased and the color darkened after extrusion, there was characteristic flavor of sweet potato produced.

Abstract:The processing technology and quality control of purple sweet potato were studied in this paper,with emphasis on the key technology of the color protection and the zymohydrolysis.The results indicated that the best effect of the color protection was under the conditions of NaHSO3,ascorbic acid,citric acid for 400,300,1400mg/kg respectively that a mixture of color liquid immersion in 10min.Moreover,adding 1.5% mixed-in for the ratio of 1∶3(α-amylase to glucoamylase)under 50℃ hydrolysis for 90min.The product was in uniform mud,with the natural purple color,taste and smell,moderate sweet,delicate and smooth taste.

Abstract:According to the prevalent processing technology for piglet pellet feed at home,the effect of the key parameters of crucial technology on the product quality was summed up.Though choosing advisable indexes,among which the key parameters contain the puffing degree and the particle size of raw materials,the feeding speed,the tempering time and temperature,the characteristic of pelleting machine,the cooling time and so on,and the product quality contains the degree of starch gelatinization and hardness of pellet,the relation between parameters and product quality was concluded.The characteristics and rule of effect of processing technology on product quality were analyzed systematically.

Abstract:Microporous sweet potato starch was prepared directly by Aspergillus niger fermentation. In the foundation of monofactorial research,adopting orthogonal experiment to optimize process conditions of microporous starch. Results showed that,absorbability of microporous sweet potato starch was optimized,when temperature 30℃,rate of rotation 170 r/min,initial pH 5.5,adding initial raw sweet potato starch 10%,bean powder 3%,inoculation 3%,pro–fermentation 40 h,additional raw starch 15%,post–fermentation 45 h. The absorptive and structural properties of the microporous starch can be enhanced by crosslinked.

Abstract:The production process of mung bean vermicelli is studied by single-factor methods and orthogonal experiments.The results show that the optimum conditions for production process of mung bean vermicelli are 2∶3 of the ratio of fresh mung bean flour to cooked mung bean flour,35% of water accession,5% of the addition of vital wheat gluten quantity,0.3% of Artemisia glue.

Abstract:Purposes: This study aimed at developing production process of purple potato granules and improving the qualities of purple potato granules.Methods: The influences of factors on qualities of purple potato granules and the change of anthocyanidin during process were studied. The quality of production was also evaluated. Results:Drying temperature,drying time and comminution granularity were optimized through orthogonal experiments.Purple potatoes were processed through sorting and cleaning,peeling,color- protection,cooking and blanching,10h drying under 60℃ and grinding to 60~80 mesh to get granules of high sensory quality and the yield rate was20.69%.The starch accounted for 54.50% and the protein was 7.30% in granules and the contents of polyphenol and anthocyanidin were 466.40mg /100g and 348.03mg /100g respectively.The cooking and drying processes were key processes which were most influential to the change of anthocyanidin.Conclusions: Purple potato granules of high quality can be obtained using the optimized process.Drying temperature and drying time should be carefully controlled to improve the quality of purple potato granules.

Abstract:The processing technologies and parameters for a kind of traditional instant rice powder were studied to accelerate its industralization.The results were described as follows:rice was soaked in water at room temperature for 3h after being washed cleanly,steamed for 25min at atmospheric pressure,dried to moisture content about 10% ,stir-fried,and finally ground and sieved to granularity smaller than 140 mesh.The product was good in water -mixing property and sensory quality.

Abstract:The present experiment was conducted to determine the influence of raw materials on the quality of salty and sweet corn pancake.The special yellow corn meal was obtained from Du’an County,Guangxi.The method of processing technology and ingredient parameters were optimized and verified by orthogonal design test.The optimized ingredient parameters in making salt corn pancake were as follows: applying 40 mesh size of corn meal,adding 130 g of flour,6 g of salt,200 g of egg in 1 kg of corn meal.While for the sweet corn pancake,the parameters worked out are as follows: adding 150 g of sugar,110 g of flour,320 g of egg and 800 g of milk.The descending order of ingredients influencing the quality of salt and sweet corn pancake was saltfloureggsize of corn meal and sugarflourmilkegg,respectively.Using this information,the quality of salt and sweet corn pancake can be improved.

Abstract:Based on water absorption and bean paste rate (dry matter),the soaking and cooking process of red adzuki bean were optimized.Then,the dynamic changes of main nutritional and functional components during the process were tracked.The results showed that the water absorption of red adzuki bean was the highest (94.67 ± 1.29)％ under the soaking temperature of 45 ℃ and soaking time of 12 h.The bean paste rate was the highest (65.69±0.68) ％ to be cooked at 110 ℃ for 40 min with a solid-to-solvent ratio (soaked red adzuki bean:water) of 1 ∶ 2 (g/mL).The nutritional and functional components of red adzuki bean decreased significantly during the process of sand making (P＜0.05).The loss rates of main functional components such as flavonoids,polyphenols and tannin were significantly higher than protein,fat and ash (P ＜ 0.05).In particular,the loss rate of flavonoids in soaking,cooking and sand washing process was relatively high (39.62％,48.42％,13.08％).The content of protein in the finished red adzuki bean paste was 21.48％ (dry matter),while the polyphenol and tannin were enriched in the bean dregs with the contents (dry matter) of 162.30 mg/100 g and 14.26 mg/100 g respectively,which is potential for value-added utilization.

Abstract:Experiments with millet as the main material and yam as the auxiliary material made a nutritious millet yam paste which can pamper your senses. The preparation of millet instant powder was optimized by single factor experiments and response surface methodology. The results showed that the best preparation process were as fol-lowed: water to material ratio 1:5, millet soaking time 40min, steaming time 19min and powder time 4.7min. Or-thogonal tests were used to evaluate the additive formula of 9 groups of millet yam paste, and the optimum formu-la of additives was determined as followed: CMC-Na 1.5%, xanthan gum 0.8% and maltodextrin 6.0%. By compar-ing 5 kinds of drying methods of yam slices, the best drying method was determined as freeze drying. Using the processing technology above, millet yam paste with the best sensory quality was obtained, which offers more op-tions for modern healthy diets.
