Abstract:Compound fermented seasonings were increasingly favored by consumers. This study using Aspergillus oryzae and soybeans as raw materials to make koji . Lactobacillus plantarum and Pediococcus pentosaceus were used as starters for common fermentation with mature koji and beef to obtain a fermented beef-soybean paste. The physicochemical parameters, volatile flavor compounds, and microbial community of beef-soybean paste during fermentation were determined, and the relationship between flavor changes and microbial community changes was analyzed. Compared to the soybean paste, the addition of beef for fermentation can significantly enhanced the content of protein, amino acid nitrogen, and free amino acids in the compound fermented soybean paste, improved the nutritional and health value of the product. The addition of beef also caused a decrease in pH and total acid content in the compound soybean paste. The flavor changed during the fermentation process of beef-soybean paste were related to the changed in its microbial community.

Abstract:Soybean paste,a Chinese traditional fermented condiment,is mainly made from soybean.The antioxidant capacity,polyphenol content and color values were assayed at different processing stages of soybean paste,including soaking,cooking,koji-making,fermentation with the addition of saline,and after sterilization.The effect of flour addition in soybean paste production on antioxidant capacity was also studied.Soaking caused a decrease in the reducing power of water extract of soybeans,and an increase in polyphenol content and color values.After cooking,the reducing power and color values were increased,while the polyphenol content was decreased drastically.After koji-making,the antioxidant capacity,polyphenol content and color values were all improved whether flour was added or not.The changes would be more obvious with the addition of flour.After the fermentation with the addition of saline,the antioxidant capacity of soybean paste without the addition of flour did not change significantly,while the antioxidant capacity,polyphenol content and color values of soybean paste with the addition of flour were raised significantly.Antioxidant capacity,polyphenol content and color values were not significantly affected by sterilization.The results showed that different processing techniques had different effects on antioxidant capacity of fermented soybean paste,and the addition of flour increased the antioxidant capacity significantly.

Abstract:Soybean paste,which contains many bioactive substances,is a kind of healthy season with high nutritional value.Its bioactive substances including isoflavone,polyphenol and melanoidins attracted high attention of scientists.However,the end product of soybean paste still has some quality problems such as biogenic amine,putrefactive bacteria and tyrosine crystal which seriously influence the nutritional value and outward appearance.In this article,the chemical structure of the bioactive substances,detection methods,influencing factors and the quality problems of soybean paste were reviewed.

Abstract:Soybean paste is widely used as a seasoning for authentic Asian cuisine due to its rich and savory sauce flavor. However, the primary components of the soybean paste sauce-flavor compounds and the fermentation regulation mechanisms are still unclear. Therefore, the present study sought to systematically explore the factors affecting the sauce flavor in terms of substrate, external microorganisms, brine concentration, and the alteration in flavor composition and its regulatory mechanisms. The results of the raw material ratios showed that an appropriate increase in the proportion of soybeans (6:4) could significantly enhance the concentration of amino acid metabolites, such as 2-methylbutanal, 3-methylbutanal, and 2-phenylethanal. Delayed addition to Tetragenococcus halophilic significantly enhanced 2-butylfuran, 2-pentylfuran, trans-2-(2-pentenyl) furan, and sauce-flavor perception in soybean paste by modulating the total acid. A suitable brine concentration (10%) could adjust the fermentation process and facilitate the formation of benzaldehyde, 2-ethylfuran, 2-butylfuran, 2-pentylfuran, and other sauce-flavor compounds. Meanwhile, combined results of sensory evaluation and GC-MS analysis demonstrated that the primary components of the sauce-flavor compounds in soybean paste consisted of furans (furfural, 2-methylfuran, 2,5-dimethylfuran, 2-ethylfuran, 2-butylfuran, 2-pentylfuran) and pyrazine (2,6-dimethylpyrazine, 3-ethyl-2,5-dimethylpyrazine). Overall, these results provide a theoretical basis for the targeted enhancement of the sauce-flavor of soybean paste and insights into the industrial production of high-quality soybean paste.

Abstract:Fermented sausage is popular with consumers because of its unique flavor, rich nutrition and long shelf life. In recent years, It has become a hot topic to endow the fermented sausage with functional characteristics under the premise of ensuring safety. The application of functional starter culture in fermented sausages can effectively inhibit the reproduction of harmful microorganisms, reduce the generation of biological amines and N-nitrosamines, promote the formation of good flavor, inhibit excessive oxidation, reduce blood pressure, and reduce cholesterol content. This paper reviews the research progress of functional starter cultureand functional characteristics of functional starter culture in fermented sausages, and looks forward to its future research trend.

Abstract:ABSTRACT:Asa traditional cooked meat product, stewed meat product is favored by most consumers in China by its beautiful color, soft texture, special flavor and moderate palate. In recent years, people’s diet concept has transformed from the pursuit of eating full into eating well, our nation has paid more attention on the green production and the industrialization of traditional meat products, it has also put forward higher requirements to the safety and nutrition and the green processing of traditional stewed meat products, related researches are also gradually on the agenda, and many scholars are devoting themselves to the theory of processing and the research of new techniques and the development of new products of stewed meat. In this article, the definition, characteristics and classification of stewed meat products were summarized. The processing techniques applied in stewed meat products were elaborated mainly including marinade treatment and quantitative bittern treatment of pump curing, tumbling marinade treatment, vacuum marinade treatment, sterilization and preservative and fresh-care techniques of vacuum cooling treatment, high pressure sterilization technique, irradiation sterilization technique, microwave sterilization technique, packaging techniques of vacuum, modified atmosphere, active and edible film, and the control and detection techniques of hazardous substance. The current issues of stewed meat products in our country were discussed and the development tendency were forecasted and expected aiming at providing references for the theory of processing and the research of new techniques and the development of new products about stewed meat products.
Research on Process Parameters and Quality of the Complex Probiotics Fermented Feed

Abstract:The study was conducted to investigate the effects of inoculum size,moisture,temperature and time on the quality of fermented feed using corn,wheat flour,rape seed meal and soybean meal mixed according to a certain proportion as raw materials, with complex probiotics solid fermentation technics.The results showed that both inoculum size,moisture,temperature,time have a significant influence on quality of fermented feed.The appropriate fermentation process parameters could improve the number of lactic acid bacteria,lactic acid content,free amino acids and in vitro digestibility of crude protein.In this experiment the optimum parameters of the fermented feed were:inoculum size 5.0%,moisture 40%,temperature 30～35℃,fermentation time 3 days.On this condition,the sensory evaluation of fermented feed is golden yellow,aromatic flavor,good texture.Value of pH,number of total microorganisms and lactic acid bacteria,lactic acid is 4.27,5.50×10~8 cfu·g~(-1),16.17×10~8 cfu·g~(-1) and 4.86 g·kg~(-1),respectively.Content of total free amino acid occupy 13.73%of total nitrogen.Dry matter recovery is 99.04%and in vitro digestibility of crude protein increased by 17.81%.

Abstract:Taking coix lacryma-jobi,beans,whole milk powder,and white sugar as raw materials,solidified coix lacryma-jobi soybean yoghurt could be processed by applying the technology discussed in this paper.The processing technology of coix lacryma-jobi fluid preparation,raw soybean flavor removing,lactobacillus domestication,and the effects on flavor,taste,stability of coix lacryma-jobi soybean yoghurt were studied.By the orthogonal experiment,that the optimal fermentation conditions were: adding inoculation rate 4%,emulsion stabilizer 0.15%,white sugar 8% and fermentation time 5 hrs,and the ratio of raw materials,i.e.,soybean,coix lacryma-jobi and whole milk powder is 10∶2.5∶1(W∶W).

Abstract:This research focused on observation of nutrient dynamics of the traditional fermented soybean paste during fermentation process,which was the theoretical foundation for the control of industrialized production of traditional fermented soybean paste.The change of moisture,pH,total acids,reducing sugars,amino acid nitrogen and fat were measured with national standard method during the different stages of fermentation process of the northern traditional natural fermented soybean paste.Results showed that soybean paste with 14% salt was roughly the same as soybean paste with 8% salt in nutrient changes during the natural fermentation process,and their moisture fluctuated between 64% and 72%.Additionally,although their pH was declined,the contents of total acids increased at first and then flattened in later stage of fermentation.The contents of amino acid nitrogen were gradually increased at first,but finally slightly decreased.The contents of reducing sugars were declined in the first two weeks and then sharply raised from the week 2 to 4,then sharply declined from week 4 to 5,then slightly declined from week 5 to 7.Furthermore,the contents of fat were slowly declined in the first two weeks,and then leveled off after sharply declined from week 2 to 7.The contents of moisture,total acids and amino acid nitrogen of soybean paste with 14% salt were lower than those of soybean paste with 8% salt during the whole fermentation process,but the pH and the content of fat were opposite.

Abstract:Nutrient dynamics of traditional Yanji soybean paste were analyzed.The production technology of this traditional soybean paste was collected.The nutrition values including total acid,water soluble carbohydrate(WSC),organic carbon(OC),crude protein,amino-acid and amino-acid nitrogen were determined by potassium dichromate method,anthrone colorimetry and so on.The results showed that the total acid increased at early stage fermentation,then decreased,and increased again up to 2.93% of final soybean paste.The declining trends were founded in water soluble carbohydrate and organic carbon during the soybean paste fermentation.The concentrations of OC and WSC were 387.95 g/kg and 17.13 g/kg in final soybean paste,respectively.The crude protein decreased to 24.76% after increasing smoothly in early fermentation process.The amino-acid nitrogen kept on increasing during the fermentation.The concentration of amino-acid was up to 101.2g/kg in final soybean paste.

Abstract:In this study the nutrition value of Tianyuan Jiangyuan soybean paste was determined by following parameters: moisture content, total acid, pH, water-soluble carbohydrate (WSC), organic carbon (OC), crude protein (CP) and amino-acid nitrogen. Results showed that the moisture content increases at first, and then decreases stably. The content of total acid increases stably, and its concentration is up to 3.13% in final soybean paste. The contents of OC and WSC remain declining, and their concentrations are down to 483.99 g/kg and 57.32 g/kg in final soybean paste respectively. As for CP, it decreases after stable increase , and its concentration is down to 24.61% in final soybean paste. The content of amino-acid nitrogen keeps increasing during the whole progress, and its concentration is up to 49.2 g/kg in final soybean paste.

Abstract:Pixian broad bean paste is a renowned fermented seasoning. The fermentation of broad bean is the most important process of Pixian broad bean paste. To enhance the flavor of tank-fermented broad bean paste, salt-tolerant Bacillus amyloliquefaciens strain was inoculated, resulting in an increase in total amount of volatile compounds, potentially leading to different flavor characteristics. To investigate the fermentation mechanism, monoculture simulated fermentation systems were designed. Metabolomics and transcriptomics were used to explore Bacillus amyloliquefaciens' transcriptional response to salt stress and potential aroma production mechanisms. The results highlighted different metabolite profiles under salt stress, and the crucial roles of energy metabolism, amino acid metabolism, reaction system, transportation system in Bacillus amyloliquefaciens' hypersaline stress response. This study provides a scientific basis for the industrial application of Bacillus amyloliquefaciens and new insights into addressing the challenges of poor flavor quality in tank fermentation products.
