Abstract:In this paper,the definition and preservation mechanism of biological preservatives are summarized,the domestic and foreign research situation of biological preservatives from aspects of plants,animals,microbes and enzymes are introduced,the existing problems in the development of bio-preservative are analyzed,and its application prospects are forecasted for the purpose of providing a reference for the further research on biological preservatives.

Abstract:Spoilage caused by microorganisms during the food processing,storage and transportation process has been a worldwide problem in the field of food preservation.Due to the security risks can not be ignored caused by the use of chemical preservatives,the development of safe and efficient biological preservatives has gradually become the focal point.However,the single target and high-cost of biological preservative restricts its development.So how to combine different biological preservatives reasonably and achieve multi-target attack on the spoilage bacteria on the basis of reducing the intensity of single factor has attracted more and more concern.In this paper,the biological preservative with the target of cell wall,cell membrane,intracellular genetic material and outer membrane layer of gram negative bacteria were systematically reviewed.Their mode actions and applications in food preservation were summarized,and further studies in this area are also suggested.This work will provide a theoretical basis for the precise combination of biological preservatives.

Abstract:In the process of production, storage, transportation, distribution, retail and ultimately deliveries to the consumer's plate, there exists possibility of microorganism contamination, which leads to food poisonings. Preservatives are usually used in food to prolong the shelf life. Due to the insecurity of chemical preservatives, plant extracts, which would be developed as food preservative, has become the research hot spot. Active ingredients of plants are secondary metabolites including phenols, alkaloids, terpenoids, glycosides, and so on, which can inhibit one or more kinds of microorganisms. According to the research results of domestic and overseas scholars, this study summarized the inhibitory effect of plant extracts on the foodborne pathogen and its mechanism (pathogenicity, biofilm, membrane permeability, and quorum sensing) and prospected the application prospect. This study also provided theoretical basis for developing green, nutrition, safety food preservatives.

Abstract:A growing awareness among consumers towards the health aspects has increased their interest on natural products.As an alternative to certain disadvantages associated with chemical preservatives,industries are paying more emphasis on the use of natural preservatives.Utilization of natural preservatives has rendered foods with high nutritional value,free from chemical preservatives and adequate microbiological safety.Natural preservatives are the chemical agents derived from plants,animals,microbes and their metabolites that prevent the decomposition of products by any means.The mode of action of these natural preservatives is inhibition of microbial growth,oxidation and certain enzymatic reactions occurring in the foodstuffs.This review focuses on variouses naturally derived constituents,their mechanisms of antimicrobial action,and the application research status in food preservation.The application result in food hurdle technology is introduced.The future application prospect of natural biological preservative and the main problems to be solved in the research and development are outlooked in food systems.

Abstract:With the increasing restriction on the use of conventional physical methods against food putrefaction and currently used chemical food preservative such as acetic acid, the study and application of biological and natural preservatives have been entering into a new developing field, which has been showing its advantages. In this review, we’ll compile the data available on the emerging alternatives for the commonly used chemical preservatives. We’ll present the current understanding of the mode of action of these biological preservatives and the possibilities for microbial resistance development. Also further study on microbial stress responses against common physico-chemical preservation factors such as heat, water activity (a w) and pH, which will give clue to the further study on biological preservatives, are mentioned briefly.

Abstract:This review covered recent trends on using plants antimicrobials in food and their functions and mechanisms on controlling food preservation.Bacteriostatic mechanisms of plants antimicrobials,the effect of food ingredients on antimicrobials activities of plants extracts,interactions of several plants extracts and their combinations with other technologies were summarized.In most cases,antimicrobials activities were decreased due to interactions with food ingredients.As the higher concentrations of plants extracts could lead to unfavorable taste and smell of food.The antimicrobials activities of extracts in in-vitro studies were quite different to their activities in food systems.These could be challenges in the utilization of plants antimicrobials.In conclusion,the author suggested that it was important to understand the effects of plants extracts on the behaviours of microbial population in food systems.Furthermore,scientists should conduct more advanced researches on the developments of plants resources and the utilizations of plants antimicrobials in the processing,packing and storage of food.

Abstract:The nutrients present in food are not only prone to a series of physicochemical reactions but also provide conditions for the growth and reproduction of foodborne microorganisms. In recent years, many innovative methods from different fields have been introduced into food preservation, which extends the shelf life while maximizing the preservation of the original ingredients and properties of food. In this field, there is a lack of a systematic summary of new technologies emerging. In view of this, we overview the innovative methods applied to the field of food preservation in recent 3 years, focusing on a variety of technological approaches such as antimicrobial photodynamic therapy based on nanotechnology, electromagnetic radiation sterilization based on radiation technology, and antimicrobial peptides based on biomolecules. We also discuss the preservation mechanism and the application of the different methods to specific categories of products. We evaluated their advantages and limitations in the food industry, describing their development prospects. In addition, as microorganisms are the main causes of food spoilage, our review also has reference significance for clinical antibacterial treatment.

Abstract:The antibacterial action of the newly biological preservative MicrogardTM and the frequently used preservatives were compared. The result showed that in pH5.0 Microgard 200 could retarde the growth of pseudomonas putida and escherihia coli by 3logcfu/mL respectively as compared with the control(p0.05); Microgard 100 could reduce the population of P. Putida by 3logcfu/mL as compared with the control(p0.05) and had no significant inhibitory effect on E. coli; Microgard 300 could reduce the population of staphylococcus aurens by 1logcfu/mL after as compared with the control and had no inhibitory effect on S. aurens.

Abstract:With the continuous improvement of living standards and growing concern on health,people put forward higher requirements on food safety. Natural food preservatives are a class of antimicrobial materials,directly extracted from plants,animals and microorganisms. Abstract:Meat and meat products are highly susceptible to contamination by microorganisms and foodborne pathogens, which cause serious economic losses and health hazards. The large consumption and waste of meat and meat products means that there is a need for safe and effective preservation methods. Furthermore, toxicological aspects of chemical preservation techniques related to major health problems have sparked controversies and have prompted consumers and producers to turn to natural preservatives. Consequently, natural preservatives are being increasingly used to ensure the safety and quality of meat products as a result of customer preferences and biological efficacy. However, information on the current status of these preservatives is scattered and a comprehensive review is lacking. Here, we review current knowledge on the classification, mechanisms of natural preservatives and their applications in the preservation of meat and meat products, and also discuss the potential of natural preservatives to improve the safety of meat and meat products. The current status and the current research gaps in the extraction, application and controlled-release of natural antibacterial agents for meat preservation are also discussed in detail. This review may be useful to the development of efficient food preservation techniques in the meat industry. © 2024 Society of Chemical Industry.

Abstract:Recently,more and more consumers are desired to buy naturally meat products without the direct addition of chemical preservatives.Many plant extracts with strong free radical scavenging capacity and antibacterial activity are used as the preservative in prepared meat products.The bioactive substances,physiological activities and research progress of some plant extracts,such as grape polyphenols,tea polyphenols,oregano oil and allicin,as the preservatives in prepared meat products were reviewed in this paper.The development tendency and research directions in future of these nature preservatives were also prospected.

Abstract:Microorganisms are often affected by various environmental stresses(such as acid,heat,salt and oxidation)in the production and processing of fermented foods.Cross-protection refers to the phenomenon in which microorganisms are induced to increase stress tolerance after subjected to certain stresses.Improving microbial environmental tolerance with cross-protection is of great significance for improving the functional characteristics of microorganisms and promoting the development of the fermented food industry.In this paper,the cross-protection of microorganisms in fermented foods is reviewed.Furthermore,the response mechanisms of microbial cells under cross-protection are summarizes from the aspects of the cell wall and membrane barrier system,the intracellular pH regulation system,and the protein and amino acid regulation system,and possible strategies are suggested to improve the stability of microorganisms under stress conditions.
