Abstract:Fruit tissue is heavily damaged during fresh-cut processing, which induces a series of physiological disorders such as softening, browning and microbial infection. Rapid deterioration and short shelf-life are the major hurdle to the commercial marketing of fresh-cut fruit. This paper introduces physiological and biochemical characteristics and summarizes key biotechnologies for fresh-cut processed fruit to provide practical and theoretical basis for the development of fresh-cut fruit industry.

Abstract:As the requirements of food quality and safety increasing, the preservation technology of fresh-cut fruits and vegetables are developed rapidly. Biological preservatives with safe, efficient and other characteristics becomes the hotspot of fresh-cut fruits and vegetables. Fresh-cut fruits and vegetables are processed with cleaning, trimming, peeling, cutting, and so on. In this process, mechanical damage, physiological metabolism, pathogen infection and other problems can cause decay and quality decline of fresh-cut fruits and vegetables. This has brought a huge loss to the economy and trade of fresh agricultural products, and this is also harmful for human health. This paper reviewed several important factors such as temperature, gas environment, physiological and biochemical reactions, microbial, which could cause browning, decay and poor quality of fresh-cut fruits and vegetables, and the application of biological preservatives on fresh-cut fruits and vegetables, including botanical natural preservatives, animal natural preservatives and microbial natural preservatives. Finally this paper discussed the lacks of biological preservatives and prospected the development of biological preservative.

Abstract:A growing awareness among consumers towards the health aspects has increased their interest on natural products.As an alternative to certain disadvantages associated with chemical preservatives,industries are paying more emphasis on the use of natural preservatives.Utilization of natural preservatives has rendered foods with high nutritional value,free from chemical preservatives and adequate microbiological safety.Natural preservatives are the chemical agents derived from plants,animals,microbes and their metabolites that prevent the decomposition of products by any means.The mode of action of these natural preservatives is inhibition of microbial growth,oxidation and certain enzymatic reactions occurring in the foodstuffs.This review focuses on variouses naturally derived constituents,their mechanisms of antimicrobial action,and the application research status in food preservation.The application result in food hurdle technology is introduced.The future application prospect of natural biological preservative and the main problems to be solved in the research and development are outlooked in food systems.

Abstract:With the increasing restriction on the use of conventional physical methods against food putrefaction and currently used chemical food preservative such as acetic acid, the study and application of biological and natural preservatives have been entering into a new developing field, which has been showing its advantages. In this review, we’ll compile the data available on the emerging alternatives for the commonly used chemical preservatives. We’ll present the current understanding of the mode of action of these biological preservatives and the possibilities for microbial resistance development. Also further study on microbial stress responses against common physico-chemical preservation factors such as heat, water activity (a w) and pH, which will give clue to the further study on biological preservatives, are mentioned briefly.

Abstract:With the continuous improvement of living standards and growing concern on health,people put forward higher requirements on food safety. Natural food preservatives are a class of antimicrobial materials,directly extracted from plants,animals and microorganisms. Natural food preservatives have the advantage of abundant resources,strong antimicrobial activity,water-soluble,non-toxic,and wide antimicrobial spectrum are becoming a research hotspot focus in recent years. However,natural food preservatives have not been widely used yet. The natural property,antibacterial mechanism and application of the five kinds of animal antimicrobial materials were reviewed in this article,and their future development and problems encountered in use were also discussed.

Abstract:Spoilage caused by microorganisms during the food processing,storage and transportation process has been a worldwide problem in the field of food preservation.Due to the security risks can not be ignored caused by the use of chemical preservatives,the development of safe and efficient biological preservatives has gradually become the focal point.However,the single target and high-cost of biological preservative restricts its development.So how to combine different biological preservatives reasonably and achieve multi-target attack on the spoilage bacteria on the basis of reducing the intensity of single factor has attracted more and more concern.In this paper,the biological preservative with the target of cell wall,cell membrane,intracellular genetic material and outer membrane layer of gram negative bacteria were systematically reviewed.Their mode actions and applications in food preservation were summarized,and further studies in this area are also suggested.This work will provide a theoretical basis for the precise combination of biological preservatives.

Abstract:Postharvest storage has been the technological bottleneck of the shelf life and quality of logistics process due to its soft and juicy of berry,in particular,the decay caused by pathogenic microorganisms often result in a huge amount of product losses.In this paper,natural preservative,especially used in postharvest berry storage were reviewed in recent years,and the research progress in animal source,botanical and microbial natural preservative was mainly discussed.Besides,the anticorrosion mechanism of natural preservative as well as application examples were discussed,in order to provide scientific information and reference for the related research of the natural preservative and its future development.

Abstract:Fresh-cut fruits and vegetables have become more popular among consumers because of their nutritional value and convenience. However, the lower shelf life of fresh-cut fruits and vegetables due to processing and mechanical damage is a critical factor affecting their market expansion, and advances in preservation technology are needed to prolong their shelf life. Some traditional chemical preservatives are disliked by health-seeking consumers because of worries about toxicity. Chemical preservation is inexpensive and highly efficient, but sometimes it carries risks for human health. Biological preservation methods are safer and more appealing, but they are not applicable to large-scale production. Physical fresh-keeping methods have been used for the storage and transportation of fresh-cut fruits and vegetables due to the ease of application. This review discusses current research in fresh-keeping technology for the preservation of fresh-cut fruits and vegetables. Preservation methods include low temperature, modified atmosphere packaging, cold plasma, pulsed light, ultrasonics, ultraviolet light, and ozonated water. As promising alternatives to chemical methods, these novel processes have been evaluated singly or combined with natural preservatives or other methods to extend the shelf life of fresh-cut fruits and vegetables and to provide references and assessments for further development and application of fresh-cut fruit and vegetable preservation technology.

Abstract:Synthetic preservatives are widely used in the food industry to control spoilage and growth of pathogenic microorganisms, inhibit lipid oxidation processes and extend the shelf life of food. However, synthetic preservatives have some side effects that can lead to poisoning, cancer and other degenerative diseases. With the improvement of living standards, people are developing safer natural preservatives to replace synthetic preservatives, including plant derived preservatives (polyphenols, essential oils, flavonoids), animal derived preservatives (lysozyme, antimicrobial peptide, chitosan) and microorganism derived preservatives (nisin, natamycin, ε-polylysine, phage). These natural preservatives exert antibacterial effects by disrupting microbial cell wall/membrane structures, interfering with DNA/RNA replication and transcription, and affecting protein synthesis and metabolism. This review summarizes the natural bioactive compounds (polyphenols, flavonoids and terpenoids, etc.) in these preservatives, their antioxidant and antibacterial activities, and safety evaluation in various products.

Abstract:Abundantly available plants, animals, and microbes are excellent source of active substance to be used as fruit preservatives to delay postharvest fruit from decay, maintain good quality, and increase the shelf life. Although they are effective and free from toxicological risks, the use of the natural active products in agriculture is still limited due to the high cost of producing, complexity interaction in food matrix, and unacceptance of odor. This review focuses on employing naturally occurring bioactive compounds as an alternative to the synthetic preservatives used in fruit. For this purpose, natural compounds from abundantly available source, such as plants, animals, and microbes, are systematically described for their properties, mechanism of action, and applicability. Different postharvest handling of bioactive compounds and mechanism of their triggered/controlled release properties are discussed, especially with regard to challenge and future directions of these new strategy to preserve fruit in industry. This review offers a fundamental theory and technologies to develop the efficient and safe alternative strategies to synthetic fruits preservatives. Overall, the utilization of natural preservative techniques offers promising opportunities to maintain quality and extend shelf life of fruit, with potential applications in various industries such as vegetables, meat, and processed food.

Abstract:Food storage and preservation has been the focus of attention of the people. The traditional chemical preservatives such as sodium benzoate and sodium nitrite have certain toxicity. Therefore, researches for safe non-toxic bio-preservative to replace chemical preservative had become the focus of attention. Biological preservative compositions derived from organism itself or its metabolites, which possessescharacteristic of tasteless, non-toxic, safe, biodegradable and no secondary pollution, is causing widespread concern. In this paper, effects of chitosan, organic acids, polyphenols, nisin, and biological enzymes on physiological and biochemical characteristics, the total number of bacteria and shelf of aquatic products were reviewed. A comparative analysis of the difference in the biological preservative fresh-keeping effect of application in different aquatic product process was presented. The main problems including separation and purification of biological preservatives, high cost and limited application of biological preservation technology still exited. Some suggestion was provided to the main problems in the preservation of biological technology in China.

Abstract:Fresh-cut fruits and vegetables are increasingly popular among consumers because of their ease of consumption and cooking. However, during the fresh-cutting process, damage induces a series of physiological changes in fruits and vegetables, resulting in softening, discoloration, spoilage and other undesirable phenomena, which seriously affect the quality and safety of fresh-cut fruits and vegetables.The research and development of fresh-cut fruit and vegetable preservation technology is of great significance to the development of the industry, of which physical preservation technology has unique advantages. Recent advances in physical preservation technologies for fresh-cut fruits and vegetables are described, including common preservation technologies such as low temperature, heat treatment and controlled atmosphere storage, as well as new physical sterilization techniques such as electron beam irradiation, ultraviolet light irradiation, high hydrostatic pressure and low temperature plasma. The characteristics and mechanisms of various physical preservation methods are summarized, and finally,the future direction of fresh-cut fruit and vegetable preservation is outlined.
