EFFECT OF SOYBEAN LECITHIN ON THE PROPERTIES OF THERMOPLASTIC STARCH PLASTICIZED BY EXTRUSION PROCESSING

Abstract:Thermoplastic starch (TPS) modified by extrusion processing using lecithin as reagents was performed. The thermoplastic starch was characterized by Fourier transformation spectroscopy (FT-IR), thermal gravimetric analysis (TGA), X-Ray diffraction (XRD), Rapid viscosity analysis (RVA), and Texture Profile Analysis (TPA). XRD analysis and FT-IR spectra indicated that soybean lecithin (LEC) decreased the crystallinity and crystalline peak intensity of thermoplastic starch significantly. The thermostability of thermoplastic starch with LEC drastically improved. The Thermal gravimetric analysis showed that the physicochemical properties of thermoplastic starch were correlated to amylose content and LEC. LEC significantly influenced the turbidity, pasting properties, gel textural properties, and thermal stability of thermoplastic starch during extrusion processing. The addition of LEC with 1.2% could drastically change the color of the thermoplastic starch. The turbidity, swelling power, and solubility of thermoplastic starch with LEC improved after extrusion processing.
