Abstract:In this paper, discrimination of soft tissues using laser-induced breakdown spectroscopy (LIBS) in combination with multivariate statistical methods is presented. Fresh pork fat, skin, ham, loin and tenderloin muscle tissues are manually cut into slices and ablated using a 1064 nm pulsed Nd:YAG laser. Discrimination analyses between fat, skin and muscle tissues, and further between highly similar ham, loin and tenderloin muscle tissues, are performed based on the LIBS spectra in combination with multivariate statistical methods, including principal component analysis (PCA), k nearest neighbors (kNN) classification, and support vector machine (SVM) classification. Performances of the discrimination models, including accuracy, sensitivity and specificity, are evaluated using 10-fold cross validation. The classification models are optimized to achieve best discrimination performances. The fat, skin and muscle tissues can be definitely discriminated using both kNN and SVM classifiers, with accuracy of over 99.83%, sensitivity of over 0.995 and specificity of over 0.998. The highly similar ham, loin and tenderloin muscle tissues can also be discriminated with acceptable performances. The best performances are achieved with SVM classifier using Gaussian kernel function, with accuracy of 76.84%, sensitivity of over 0.742 and specificity of over 0.869. The results show that the LIBS technique assisted with multivariate statistical methods could be a powerful tool for online discrimination of soft tissues, even for tissues of high similarity, such as muscles from different parts of the animal body. This technique could be used for discrimination of tissues suffering minor clinical changes, thus may advance the diagnosis of early lesions and abnormalities. (C) 2018 Elsevier Ltd. Study of Spatially Resolved Hyperspectral Scattering Images for Assessing Beef Quality Characteristics

Abstract:Hyperspectral scattering techniques were used to predict beef pH, tenderness (i.e. WBSF: Warner-Bratzler Shear Force) and color parameters. Thirty-three fresh strip loin cuts were collected from 2-day postmortem carcass. After capturing scattering images and measuring pH values, the samples were vacuum packaged and aged to seventh day, then their color parameters (L*, a*, b*) and WBSF were measured as references. The optical scattering profiles were extracted from the hyperspectral images and fitted to the Lorentzian distribution (LD) function with three parameters. LD parameters, such as the peak height, full scattering width at half maximum (FWHM) and the scattering asymptotic were calculated at individual wavelength. Stepwise regression was used to determine optimal combinations of wavelengths for each of parameters. The optimal combinations were then used to establish multi-linear regression (MLR) models to predict the beef attributes. The full cross validation method was used to examine the performance of models. The models were able to predict beef WBSF with R-CV=0.86, and with the SECV(the standard error of cross validation) of 11.7 N, 91% classification accuracy could be obtained. Two-day pH values with R-CV=0.86, SECV=0.07 and color parameters (L*, a*, b*) with R-CV of 0.92, 0.90 and 0.88, with the SECV of 0.90, 1.34 and 0.41 were obtained respectively. This research provided available technique for the development of multispectral system, which could be implemented online to determine beef steaks color and tenderness.

Abstract:To improve the classification accuracy of fresh meat species using laser. induced breakdown spectroscopy (LIBS), the support vector machine (SVM) and principal component analysis (PCA) were combined to classify fresh meat species (including pork, beef, and chicken). A simple sample preparation to flatten fresh meat by glass slides was proposed. For each meat sample, 150 spectra were recorded and randomly arranged. The first 75 spectra were used to train a model while the others were used for model validation. By analyzing the 49 normalized spectral lines (K, Ca, Na, Mg, Al, H, O, etc.) in the different tissues, the classification model was built. The results showed that the dimensionality of input variables was decreased from 49 to 10 and modeling time was reduced from 89. 11 s to 55. 52 s using PCA, thus improving the modeling efficiency. The mean classification accuracy of 89. 11% was achieved. The method and reference data are provided for further study of fresh meat classification by laser-induced breakdown spectroscopy technique.
Near-Infrared Spectral Image Analysis of Pork Marbling Based on Gabor Filter and Wide Line Detector Techniques

Abstract:Marbling is an important quality attribute of pork. Detection of pork marbling usually involves subjective scoring, which raises the efficiency costs to the processor. In this study, the ability to predict pork marbling using near-infrared (NIR) hyperspectral imaging (900–1700 nm) and the proper image processing techniques were studied. Near-infrared images were collected from pork after marbling evaluation according to current standard chart from the National Pork Producers Council. Image analysis techniques—Gabor filter, wide line detector, and spectral averaging—were applied to extract texture, line, and spectral features, respectively, from NIR images of pork. Samples were grouped into calibration and validation sets. Wavelength selection was performed on calibration set by stepwise regression procedure. Prediction models of pork marbling scores were built using multiple linear regressions based on derivatives of mean spectra and line features at key wavelengths. The results showed that the derivatives of both texture and spectral features produced good results, with correlation coefficients of validation of 0.90 and 0.86, respectively, using wavelengths of 961, 1186, and 1220 nm. The results revealed the great potential of the Gabor filter for analyzing NIR images of pork for the effective and efficient objective evaluation of pork marbling.
On-line prediction of fresh pork quality using visible/near-infrared reflectance spectroscopy.

Abstract:Visible/near-infrared (Vis/NIR) spectroscopy was tested to predict the quality attributes of fresh pork (content of intramuscular fat, protein and water, pH and shear force value) on-line. Vis/NIR spectra (350–1100nm) were obtained from 211 samples using a prototype. Partial least-squares regression (PLSR) models were developed by external validation with wavelet de-noising and several pre-processing methods. The 6th order Daubechies wavelet with 6 decomposition levels (db6–6) showed high de-noising ability with good information preservation. The first derivative of db6–6 de-noised spectra combined with multiplicative scatter correction yielded the prediction models with the highest coefficient of determination (R2) for all traits in both calibration and validation periods, which were all above 0.757 except for the prediction of shear force value. The results indicate that Vis/NIR spectroscopy is a promising technique to roughly predict the quality attributes of intact fresh pork on-line.

Abstract:Rapid discrimination of pork in Halal and non-Halal Chinese ham sausages was developed by Fourier transform infrared (FTIR) spectrometry combined with chemometrics. Transmittance spectra ranging from 400 to 4000 cm⁻¹ of 73 Halal and 78 non-Halal Chinese ham sausages were measured. Sample preparation involved finely grinding of samples and formation of KBr disks (under 10 MPa for 5 min). The influence of data preprocessing methods including smoothing, taking derivatives and standard normal variate (SNV) on partial least squares discriminant analysis (PLSDA) and least squares support vector machine (LS-SVM) was investigated. The results indicate removal of spectral background and baseline plays an important role in discrimination. Taking derivatives, SNV can improve classification accuracy and reduce the complexity of PLSDA. Possibly due to the loss of detailed high-frequency spectral information, smoothing degrades the model performance. For the best models, the sensitivity and specificity was 0.913 and 0.929 for PLSDA with SNV spectra, 0.957 and 0.929 for LS-SVM with second derivative spectra, respectively.
Qualitative and Quantitative Detection of Minced Pork Quality by Near Infrared Reflectance Spectroscopy

Abstract:The present study is concerning qualitative and quantitative detection of minced pork quality based on FT-near infrared (FT-NIR) spectroscopy and achieving the rapid approach to detecting the minced pork quality. Firstly, FT-NIR spectroscopy combined with partial least squares (PLS) and least squares-support vector machine (LS-SVM) was used for minced pork quality prediction including discrimination of the different muscle type of pig and quantitative detection of the fat, protein and moisture content of pork. The result indicated that 100% recognition ratio for calibration and 96% recognition ratio for validation were achieved by PLSDA for 4 different muscle types of pig. These two methods for chemical composition detection both have good performances in predicting fat and moisture content, the correlation coefficient for calibration and validation was all more than 0.9, but the models for protein content prediction were of less well performances, the correlation coefficients for calibration and validation, RMSEC, RMSEP and RMSECV respectively were 0.722, 0.593, 1.595, 1.550 and 1.888, respectively. The LS-SVM method is more accurate in predicting each quality index than the PLSR method. The result shows that the prediction models for fat and moisture content based on LS-SVM have a better performance with high precision, good stability and adaptability and can be used to predict the fat and moisture content of minced pork rapidly, and provide a fast approach to discrimination of the different muscle type of pig.
On-line determination of pork color and intramuscular fat by computer vision

Abstract:In this study, the application potential of computer vision in on-line determination of CIE L*a*b* and content of intramuscular fat (IMF) of pork was evaluated. Images of pork chop from 211 pig carcasses were captured while samples were on a conveyor belt at the speed of 0.25 m.s(-1) to simulate the on-line environment. CIE L*a*b* and IMF content were measured with colorimeter and chemical extractor as reference. The KSW algorithm combined with region selection was employed in eliminating the surrounding fat of longissimus dorsi muscle (MLD). RGB values of the pork were counted and five methods were applied for transforming RGB values to CIE L*a*b* values. The region growing algorithm with multiple seed points was applied to mask out the IMF pixels within the intensity corrected images. The performances of the proposed algorithms were verified by comparing the measured reference values and the quality characteristics obtained by image processing. MLD region of six samples could not be identified using the KSW algorithm. Intensity nonuniformity of pork surface in the image can be eliminated efficiently, and IMF region of three corrected images failed to be extracted. Given considerable variety of color and complexity of the pork surface, CIE L*, a* and b* color of MLD could be predicted with correlation coefficients of 0.84, 0.54 and 0.47 respectively, and IMF content could be determined with a correlation coefficient more than 0.70. The study demonstrated that it is feasible to evaluate CIE L*a*b* values and IMF content on-line using computer vision.
[Prediction of Minced Pork Quality Attributes Using Visible and Near Infrared Reflectance Spectroscopy].

Abstract:The objective of the present study was to estimate minced pork meat quality using visible and near infrared (Vis-NIR) spectroscopy. Two hundred twenty five carcasses samples from longissimus dorsi muscle were scanned over the Vis-NIR spectral range from 350 to 1 015 nm and analysed for intramuscular fat (IMF), protein and moisture according to the official methods. Wavelet transform was employed to eliminate the spectra noise. Partial least square regression (PLSR) and support vector machine (SVM) were used to develop Vis-NIR spectroscopy models for chemical composition detection. According to calibration statistics, the best model to predict intramuscular fat content was developed by SVM with the denoised spectra, the correlation coefficient was 0.889 for calibration and 0.888 for validation. For protein and moisture, the best model was achieved with the PLS method with the correlation coefficient of 0.869 and 0.881 for protein calibration and validation sets and 0.877 and 0.848 for moisture calibration and validation sets, respectively. And all the ratios of standard deviation of validation set to root mean square error of prediction (RPD) were not more than 3.0. Results indicated that it was possible to predict chemical composition in minced pork meat. As a fast predictor of meat quality using Vis-NIR spectroscopy, it is necessary to improve the precision and the robustness of the model for practice.

Abstract:Fresh and frozen-thawed (F-T) pork meats were classified by Vis-NIR hyperspectral imaging. Eight optimal wavelengths (624, 673, 460, 588, 583, 448, 552 and 609 nm) were selected by successive projections algorithm (SPA). The first three principal components (PCs) obtained by principal component analysis (PCA) accounted for over 99.98% of variance. Gray-level-gradient co-occurrence matrix (GLGCM) was applied to extract 45 textural features from the PC images. The correct classification rate (CCR) was employed to evaluate the performance of the partial least squares-discriminate analysis (RLS-DA) models, by using (A) the reflected spectra at full wavelengths and (B) those at the optimal wavelengths, (C) the extracted textures based on the PC images, and (D) the fused variables combining spectra at the optimal wavelengths and textures. The results showed that the best CCR of 97.73% was achieved by applying (D), confirming the high potential of textures for fresh and F-T meat discrimination. (C) 2014 Elsevier Ltd and IIR. Abstract:The potential of visible and near infrared hyperspectral imaging was investigated as a rapid and nondestructive technique for classifying fresh and frozen-thawed meats by integrating critical spectral and image features extracted from hyperspectral images in the region of 400-1000 nm. Six feature wavelengths (400, 446, 477, 516, 592 and 686 nm) were identified using uninformative variable elimination and successive projections algorithm. Image textural features of the principal component images from hyperspectral images were obtained using histogram statistics (HS), gray level co-occurrence matrix (GLCM) and gray level-gradient co-occurrence matrix (GLGCM). By these spectral and textural features, probabilistic neural network (PNN) models for classification of fresh and frozen-thawed pork meats were established. Compared with the models using the optimum wavelengths only, optimum wavelengths with HS image features, and optimum wavelengths with GLCM image features, the model integrating optimum wavelengths with GLGCM gave the highest classification rate of 93.14% and 90.91% for calibration and validation sets, respectively. Results indicated that the classification accuracy can be improved by combining spectral features with textural features and the fusion of critical spectral and textural features had better potential than single spectral extraction in classifying fresh and frozen-thawed pork meat.

Abstract:To enhance the accuracy of identifying fresh meat varieties using laser-induced breakdown spectroscopy (LIBS), we utilized the LightGBM model in combination with the Optuna algorithm. The procedure involved flattening fresh meat slices with glass slides and collecting spectral data of the plasma from the surfaces of the fresh meat tissues (pork, beef, and chicken) using LIBS technology. A total of 900 spectra were collected. Initially, we established LightGBM and SVM (support vector machine) models for the collected spectra. Subsequently, we applied information gain and peak extraction algorithms to select the features for each model. We then employed Optuna to optimize the hyperparameters of the LightGBM model, while a 10-fold cross-validation was conducted to determine the optimal parameters for SVM. Ultimately, the LightGBM model achieved higher accuracy, macro-F1, and Cohen's kappa coefficient (kappa coefficient) values of 0.9370, 0.9364, and 0.9244, respectively, compared to the SVM model's values of 0.8888, 0.8881, and 0.8666. This study provides a novel method for the rapid classification of fresh meat varieties using LIBS.
Using Wavelet Textural Features of Visible and Near Infrared Hyperspectral Image to Differentiate Between Fresh and Frozen–Thawed Pork

Abstract:In this study, wavelet textural analysis was applied to hyperspectral images in the visible and near-infrared (VIS/NIR) region (400–1,000 nm) for differentiation between fresh and frozen–thawed pork. The spectral data of acquired hyperspectral images were analyzed using partial least squares (PLS) regression and five wavelengths (462, 488, 611, 629, and 678 nm) were selected as the feature wavelengths by the regression coefficients from the PLS model. The fourth-order daubechies wavelet (“db4”) was used to serve as the wavelet mother function for wavelet textural extraction of the feature images at the above selected feature wavelengths with the wavelet decomposition level from 1 to 4. Four textural features were calculated in the horizontal, vertical, and diagonal orientations at each level. Forty-eight textural features were extracted from each feature image and used to differentiate between fresh and frozen–thawed pork samples by least-squares support vector machine (LS-SVM) model. Wavelet texture extracted from all five feature images at first decomposition level was identified as optimal wavelet texture combination, resulting in the highest classification accuracy for the LS-SVM models (98.48 % for the training set and 93.18 % for the testing set). Based on the texture combination, the quality attributes of pork meat could be predicted with correlation coefficients of calibration ( r c ) of 0.982 and 0.913, and correlation coefficients of prediction ( r p ) of 0.845 and 0.711 for pH and thawing loss, respectively. The results showed the possibility of developing a fast and reliable hyperspectral system for discrimination between fresh and frozen–thawed pork samples based on wavelet texture in the VIS/NIR wavelength range.
Quantification of Tissue Texture with Photoacoustic Spectrum Analysis

Abstract:Photoacoustic (PA) imaging is an emerging technology that could map the functional contrasts in deep biological tissues in high resolution by "listening" to the laser induced thermoelastic waves. Almost all of the current studies in PA imaging are focused on the intensity of the PA signals as an indication of the optical absorbance of the biological tissues. Our group has for the first time demonstrated that the frequency domain power distribution of the broadband PA signals encode the texture information within the regions-of-interest (ROI). Following the similar method of ultrasound spectral analysis (USSA), photoacoustic spectrum analysis (PASA) could evaluate the relative concentrations and, more importantly, the dimensions of microstructures of the optically absorbing materials in biological tissues, including lipid, collagen, water and hemoglobin. By providing valuable insights into tissue pathology, PASA should benefit basic research and clinical management of many diseases, and may help achieve eventual "noninvasive biopsy". In this work, taking advantage of the optical absorption contrasts contributed by lipid and hemoglobin at 1200-nm and 532-nm wavelengths respectively, we investigated the capability of PASA in identifying histological changes corresponding to fat accumulation livers through the study on ex vivo and in situ mouse models. The PA signals from the mouse livers were acquired using our PA and US dual-modality imaging system, and analyzed in the frequency domain. After quantifying the power spectrum by fitting it to a first order model, three spectral parameters, including the intercept, the midband fit and the slope, were extracted and used to differentiate fatty livers from normal livers. The comparison between the PASA parameters from the normal and the fatty livers supports our hypotheses that PASA can quantitatively identify the microstructure changes in liver tissues for differentiating normal and fatty livers.
Meat Species Identification Accuracy Improvement Using Sample Set Portioning Based on Joint X-Y Distance and Laser-Induced Breakdown Spectroscopy

Abstract:Laser-induced breakdown spectroscopy (LIBS) was suitable for the identification of meat species due to fast and less sample preparation. However, the problem of low accuracy rate of the recognition model caused by improper selection of training set samples by random split has severely restricted the development of LIBS in meat detection. Sample set portioning based on the joint x–y distance (SPXY) method was applied for dividing the meat spectra into a training set and a test set. Then, the five kinds of meat samples (shrimp, chicken, beef, scallop, and pig liver) were classified by the support vector machine (SVM). With the random split method, Kennard–Stone method, and SPXY method, the recognition accuracies of the SVM model were 90.44%, 91.95%, and 94.35%, respectively. The multidimensional scaling method was used to visualize the results of the sample split for the interpretation of the classification. The results showed that the identification performance of the SPXY method combined with the SVM model was best, and the accuracy rates of shrimp, chicken, beef, scallop, and pig liver were 100.00%, 100.00%, 100.00%, 78.57%, and 92.00%, respectively. Moreover, to verify the broad adaptability of the SPXY method, the linear discriminant analysis model, the K-nearest neighbor model, and the ensemble learning model were applied as the meat species identification model. The results demonstrated that the accuracy rate of the classification model can be improved with the SPXY method. In light of the findings, the proposed sample portioning method can improve the accuracy rate of the recognition model using LIBS.

Abstract:Nondestructive detection of the nutritional parameters of pork is of great importance. This study aimed to investigate the feasibility of applying hyperspectral image technology to detect the nutrient content and distribution of pork nondestructively. Hyperspectral cubes of 100 pork samples were collected using a line-scan hyperspectral system, the effects of different preprocessing methods on the modeling effects were compared and analyzed, the feature wavelengths of fat and protein were extracted, and the full-wavelength model was optimized using the regressor chains (RC) algorithm. Finally, pork's fat, protein, and energy value distributions were visualized using the best prediction model. The results showed that standard normal variate was more effective than other preprocessing methods, the feature wavelengths extracted by the competitive adaptive reweighted sampling algorithm had better prediction performance, and the protein model prediction performance was optimized after using the RC algorithm. The best prediction models were developed, with the correlation coefficient of prediction ( R P ) = 0.929, the root mean square error in prediction (RMSEP) = 0.699% and residual prediction deviation (RPD) = 2.669 for fat, and R P = 0.934, RMSEP = 0.603% and RPD = 2.586 for protein. The pseudo-color maps were helpful for the analysis of nutrient distribution in pork. Hyperspectral image technology can be a fast, nondestructive, and accurate tool for quantifying the composition and assessing the distribution of nutrients in pork.

Abstract:The mean spectral (MS) features were extracted from Raman scattering images (RSI) of beef samples over the region of interest covering the spectral range of 789-1710cm-1 and the spatial offset range of 0-5 mm (for two sides of the incident laser). The RSI monitored the main change in the protein, amide bands, lipids, and amino acid residues. The classification model performance based on MS features compared the conventional Raman spectral features and confirmed the usefulness of RSI. Finally, the results showed that RSI technology is a reliable tool for rapid and noninvasive detection of restructured beef.
Rapid And Nondestructive Classification Of Cantonese Sausage Degree Using Hyperspectral Images

Abstract:Hyperspectral images are widely used in the food industry as a fast and non-destructive analytical technique. Cantonese sausage has a long history and is a very old food production and meat preservation technology. According to the physical and chemical characteristics of the sausage, the Chinese business industry standard SB/t10003-92 divides the sausage into three grades, which are called excellent grade, level 1, and level 2. In this paper, k-means is adopted first to separate two parts of the meat adaptively to improve the discriminant rate. The hyperspectral information of the near-infrared band is extracted by successive projections algorithm (SPA). The multiple linear regression (MLR) and partial least squares regression (PLSR) algorithms are used to classify the sausage grade. The experimental results show that the lean meat and fat of the sausage have different characteristics in the near-infrared band, and the modeling results have higher accuracy and anti-interference after separating lean meat and fat meat. The best model of sausage classification is using SPA-MLR method to model the fat region of Cantonese sausage; the prediction accuracy of which is 100%. It was found that the modeling results of fat were better than lean meat in both PLSR and SPA-MLR, which indicated that there were obvious differences in fat composition among different grades of sausage, and the fat of sausage was more suitable for classification.
Monitoring microstructural changes and moisture distribution of dry-cured pork: a combined confocal laser scanning microscopy and hyperspectral imaging study

Abstract:Background: Various spectral profiles, including reflectance, absorbance, and Kubelka-Munk spectra, have been derived from hyperspectral images and used to develop multivariate models to evaluate changes in the quality of meat and meat products as a function of processing. However, none of these has the capacity to produce images of the structural changes often associated with processing. This study explored the feasibility of combining hyperspectral imaging (HSI) with confocal laser scanning microscopy (CLSM) to examine the impact of processing on microstructural changes and the evolution of moisture. Reflectance spectra features were obtained and transformed into absorbance and Kubelka-Munk spectra and their ability to predict moisture content using models established on partial least-squares regression were evaluated. Results: The partial least-squares regression model (full-band wavelength) dubbed Rs-MSC yielded the best result, with R c 2 = 0.967 , RMSEC = 0.127, R cv 2 = 0.949 , RMSECV = 0.418, R p 2 = 0.937 , RMSEP = 0.824. Next, a total of 16 optimum wavelengths were selected using the competitive adaptive reweighted sampling algorithm. These wavelengths also yielded good results for Rs-MSC, with R c 2 = 0.958 , RMSEC = 0.840, R cv 2 = 0.931 , RMSECV = 0.118, R p 2 = 0.926 , RMSEP = 0.121. Regarding moisture distribution and microstructure analysis, HSI and CLSM were able to reveal moisture content distribution and conformational differences in microstructure in the test samples. Conclusion: Using HSI in synergy with CLSM may offer a reliable means for assessing both the chemical and structural changes that occur in other congener food products during processing. © 2020 Society of Chemical Industry.
Visible/NIR Analysis of Fat, Protein and Water in Chilled Pork

Abstract:Fat, protein and water were determined by visible and NIR transmittance spectroscopy in chilled pork. After preprocessed by multiplicative scatter correction (MSC), the quantitative analysis models were developed based on the original, first derivative and second derivative spectra by using partial least squares (PLS) at the temperatures of 0-4 degrees C and 20 degrees C, respectively. By comparing the correlation coefficient (r), RMSEC, and SEP, we found that the first derivative model was the best, and the performance for 0-4 degrees C was better than that for 20 degrees C. At 0-4 degrees C and 20 degrees C, the correlation coefficients were 0.950 and 0.924 for fat, 0.713 and 0.455 for protein and 0.944 and 0.914 for water respectively, SEP values were 2.41 and 2.95 for fat, 5.44 and 4.25 for protein, and 2.37 and 2.38 for water respectively. The results showed that the visible and NIR analysis could measure the fat and water contents in chilled pork well, but was bad for protein, and this was caused by processing line of chilled pork. What's more, the spectrum offset was found in the original spectra at about 770 nm to be about 10 nm.
