Abstract:It is very important to detect the freshness of eggs.In order to achieve non-destructive detection of freshness,the electronic-nose technique was used in this study to predict the degrees of freshness of the eggs stored at a temperature of 20 ℃ and a relative humidity (RH) of 70％ by detecting volatiles.Meanwhile,as known indicators of the degree of freshness,the physical and chemical indices of eggs (Haugh unit and yolk index) were measured.The classification analysis of eggs stored for different numbers of days was conducted using linear discrimination analysis,and the result showed that these eggs could be distinguished effectively;the total contribution of the discriminant functions was 75.70％.Models of the relationship between the electronic-nose signal and the physical and chemical indices of eggs were established using multiple linear regression analysis and a back propagation (BP) neural network.The correlation coefficient and relative error of the multiple linear regression model were greater than 0.84 and around 8.00％,respectively.The correlation coefficient and the relative error of the BP neural network model were greater than 0.84 and around 9.00％,respectively.The results indicated that the electronic nose technique had a certain predictive capability of egg freshness,and this study can provide a reference for the non-destructive detection of the freshness of eggs.

Abstract:The real-time monitoring of food freshness in refrigerators is of significant importance in detecting potential food spoiling and preventing serious health issues. One method that is commonly reported and has received substantial attention is the discrimination of food freshness via the tracking of volatile molecules. Nevertheless, the ambient environment of low temperature (normally below 4 °C) and high humidity (90% R.H.), as well as poor selectivity in sensing gas species remain the challenge. In this research, an integrated smart gas-tracking device is designed and fabricated. By applying pump voltage on the yttria-stabilized zirconia (YSZ) membrane, the oxygen concentration in the testing chamber can be manually tailored. Due to the working principle of the sensor following the mixed potential behavior, distinct differences in sensitivity and selectivity are observed for the sensor that operated at different oxygen concentrations. Typically, the sensor gives satisfactory selectivity to H2S, NH3, and C2H5OH at the oxygen concentrations of 10%, 30%, and 40%, respectively. In addition, an acceptable response/recovery rate (within 24 s) is also confirmed. Finally, a refrigerator prototype that includes the smart gas sensor is built, and satisfactory performance in discriminating food freshness status of fresh or semi-fresh is verified for the proposed refrigerator prototype. In conclusion, these aforementioned promising results suggest that the proposed integrated smart gas sensor could be a potential candidate for alarming food spoilage.

Abstract:With the development of olfaction sensors sensors, many research and applications have been made in the electronic nose. The electronic nose consists of an array of gas sensors with different selectivity patterns, signal handling and pattern recognition and decision strategy. Measurement data from the artificial smell and taste sensors are used to produce sensor-specific opinion about these two human-like sensing modalities. This paper is introduced the configuration and basic principle of electronic nose? at the same time, current research situation and applications of the electronic nose in the food industry have been introduced in details. Abstract:For the actual needs of the fish freshness detection,a fish freshness detection scheme based on electronic nose system was proposed and the key technologies and system architecture were researched theoretically.On the basis of the study of electronic nose gas sensor array and its work principle,by analyzing the functional requirements of the detection system,using microcontroller STC12C5A combined with the smell sensor,fresh smell signal of fish was collected and uploaded to the data analysis processing system,and ultimately by pattern recognition gas composition was analyzed.The test results had shown that the fish freshness could be detected fast,simply and accurately based on electronic nose system and the electronic nose system could be widely used in areas such as logistics and warehousing.

Abstract:In this article, a convolutional neural network (CNN)-based electronic nose system is proposed, which utilizes time series features to classify the freshness of food. The electronic nose is composed of three elements: a highly sensitive miniaturized micro-electromechanical sys-tems (MEMS) metal-oxide (MOX)-semiconductor gas sensor array, a complementary metal-oxide-semiconductor (CMOS) integrated circuit, and a CNN-based classification unit. The gas sensors exhibit exceptional sensitivity, low power consumption, and a small size. The interface circuit for sensor readout is fabricated using a standard 180-nm CMOS pro -cess, with an area of 1.5 x 1.5 mm. The interface chip mainly consists of an analog-to-digital converter (ADC), an electrically erasable programmable read-only memory (EEPROM), an oscillator (OSC), power management, a heater driver, and a digital control circuit. Fixed R(t) exposures are taken at specific intervals under gas input and output conditions. Time series features are extracted from a diverse set of sensor signals, which allows the subtle differences in various food odors at different freshness levels to be identified. The incorporation of time series feature extraction extends the data features, resulting in enhanced classification accuracy with a limited number of sensors. An abstract odor map input to the CNN is formed by combining the steady-state and transient information of the gas sensor response. The final freshness classification accuracy of 20 types of foods is 97.3%. The accuracy is improved by 6.5% after the implementation of time series feature extraction, demonstrating the significance of instantaneous fluctuation information for classification accuracy.

Abstract:Physiological and environmental fluctuations in the oyster cold chain can lead to quality deterioration, highlighting the importance of monitoring and evaluating oyster freshness. In this study, an electronic nose was developed using ten partially selective metal oxide-based gas sensors for rapid freshness assessment. Simultaneous analyses, including GC-MS, TVBN, microorganism, texture, and sensory evaluations, were conducted to assess the quality status of oysters. Real-time electronic nose measurements were taken at various storage temperatures (4 °C, 12 °C, 20 °C, 28 °C) to thoroughly investigate quality changes under different storage conditions. Principal component analysis was utilized to reduce the 10-dimensional vectors to 3-dimensional vectors, enabling the clustering of samples into fresh, sub-fresh, and decayed categories. A GA-BP neural network model based on these three classes achieved a test data accuracy rate exceeding 93%. Expert input was solicited for performance analysis and optimization suggestions enhanced the efficiency and applicability of the established prediction system. The results demonstrate that combining an electronic nose with quality indices is an effective approach for diagnosing oyster spoilage and mitigating quality and safety risks in the oyster industry.

Electronic‐nose Technique: Potential for Monitoring Maturity and Shelf Life of Tomatoes

Abstract:An electronic nose (E-nose) was used to evaluate the maturity and to monitor the shelf life of tomatoes. Results showed that pink-stage fruit could be distinguished frorn light-red stage and red-stage ones based on the E-nose using principal component analysis (PCA) and linear discril-ninant analysis (LDA). The E-nose was able to classify samples having different firmnesses using PCA. By means of partial least squares (PLS) based on E-nose sensor response signals, fruit firmness was predicted and the correlation between the predicted and measured values were 0.936. A-clear distinction of initially light-red fruit during storage from Days 1-6, Days 7-11 and Days 14-17 was obtainable by the E-nose using PCA and LDA. It was also possible to distinGuish storage of initially red-stage fruit during storage from Days 1-5, Days 6-11 and Days 14-17 using LDA. The shelf life by PLS models using the E-nose sensor response signals were predicted and the coefficients were 0.981 and 0.968 for initially light-red stage fruit and red-stage fruit, respectively. Research has shown that the E-nose has sufficient sensitivity and resolution to evaluate tomato fruit maturity and to predict firrimess. The shelf life of light-red stage and red-stage fruit can be satisfactorily evaluated also.

Abstract:Electronic nose technology offers non-destructive alternative to sense aroma, can be used to assess fruit ripening stage during shelf life. The objective of this study was to monitor tomato storage shelf life during two storage treatments using PEN 2 electronic nose (E-nose). Principal component analysis (PCA) and linear discriminant analysis (LDA) were used to distinguish the different tomato storage time. The obtained results proved that tomato with different storage time can be monitored by the E-nose, but very clear separation among all groups of different storage time was not achieved. By PCA and LDA, E-nose could more clearly discrimination storage time of tomato in carton box than one in folded bag. The correlations between the measured and predicted values of fruit quality attribute (soluble solids content, pH, and puncture force) showed poor prediction performance on the base of signals of E-nose sensors.
Discrimination And Prediction Of Pork Freshness By E-Nose

Abstract:An electronic nose (e-nose) was used to establish a freshness evaluation model for pork. A pre-experiment was performed to acquire optimum parameters (10 g sample mass with 5 min headspace-generation time in 500 mL vial) for later e-nose detection of pork. Responding signals of the enose were extracted and analyzed. Linear Discriminant Analysis (LDA) results showed that the e-nose could classify pork with different storage time (ST) well. Back Propagation Neural Network (BPNN) was performed to predict the ST, and the results showed that 97.14% of the predicting set (with 95.71% of the training set) was classified correctly; and Multiple Linear Regression (MLR) was used to predict the sensory scores, with the results showing that the correlation coefficients (R-2 = 0.9848) between the e-nose signals and the sensory scores was high. These results prove that e-nose has the potential of assessing pork freshness.

Abstract:Wheats of five storage ages and with 15 degrees of insect damage were evaluated and classified by the static-headspace sampling method using an electronic nose (E-nose). A commercial E-nose (PEN2) comprising 10 metal-oxide semiconductor (MOS) sensors was used to generate a typical chemical fingerprint of the volatile compounds present in the samples. Principal-component analysis (PCA) and linear-discriminant analysis (LDA) were applied to the generated patterns to achieve classification into the five groups of different storage-age wheats and the 15 groups of different degrees of insect-damaged wheat. The results obtained indicated that the E-nose could discriminate successfully among wheats of different age and with different degrees of insect damage.

Abstract:Fresh beef under 0~12 day cold storage were detected by sensory evaluation, semi-micro determination of nitrogen detection, microbiological testing and electronic nose(e-nose) detection. For the e-nose detection, the 50th s sensor signals were extracted for analysis. Mahalanobis Distance(MD) between fresh and stored samples enlarged with the increase of storage time, and the quality of beef significantly changed after stored for 5 days. Principle component analysis(PCA) and Linear Discriminant Analysis(LDA) results indicated that all the beef samples could be well distinguished except a little overlap between the samples stored for 0~5 days. Stepwise Linear Discriminant Analysis(Step-LDA) was applied to predict the storage time and got an accuracy of 96.19%. Back Propagation Neural Network(BPNN)and Generalized Regression Neural Network(GRNN) were also used to build a correlation model between the storage time and the physicochemical indicators, which showed that GRNN was better than BPNN. The prediction error based on the GRNN model for the storage time, total volatile basic nitrogen, microbial population and sensory scores were 1.36 days, 4.64?10-2 mg/g, 1.61×106 cfu/g and 1.31, respectively.

Abstract:An electronic nose (e-nose) instrument combined with chemometrics was used to predict the physical–chemical indexes (sensory scores, total volatile basic nitrogen (TVBN) and microbial population) for beef. The e-nose data generated were analyzed by chemometrics methods and pattern recognition. Mahalanobis Distance (MD) analysis, Principle Component Analysis (PCA) and Linear Discriminant Analysis (LDA) conﬁrmed the difference in volatile proﬁles of beef samples of 7 different storage times (ST). The Back Propagation Neural Network (BPNN) and Generalized Regression Neural Network (GRNN) were used to build prediction models for ST, TVBN content, microbial population and sensory scores. The result of GRNN was better than that of BPNN, and the standard error (SE) of GRNN prediction model for ST, TVBN, microbial population, sensory scores were 1.36 days, 4.64×10−2mgg−1, 1.612×106cfug−1 and 1.31 respectively. This research indicates that it is of feasibility to use e-nose to predict multiple freshness indexes for beef.
23 Discrimination of Different Storage Time of Pork by Electronic Nose

Abstract:In this study,a rapid detection method based on electronic nose for pork freshness was developed.An electronic nose(E-nose,PEN 2)was employed to classify pork groups with different storage time(0~7 d),42 samples were tested everyday.The mass of each sample was 10 g,and the headspace-generated time was 5 min.The 60th data from the response of the E-nose was extracted for further analysis.After employing the Linear Discriminant Analysis(LDA),samples could be well classified according to their storage time.Stepwise Linear Discriminant Analysis(Step-LDA)and Back Propagation Neural Network(BPNN)were also employed to predict the storage time of the samples.The result showed that Step-LDA got 100% training accuracy with 97.92% prediction accuracy,and BPNN got 94.17% training accuracy with 93.75% prediction accuracy.This study implied that electronic nose method could be expected to more wildly used on pork freshness detection.

Abstract:The objective of this study was to investigate the potential of an electronic nose (E-nose) technique for monitoring egg storage time and quality attributes. An electronic nose was used to distinguish eggs under cool and room-temperature storage by means of principal component analysis (PCA), linear discriminant analysis (LDA), BP neural network (BPNN) and the combination of a genetic algorithm and BP neural network (GANN). Results showed that the E-nose could distinguish eggs of different storage time under cool and room-temperature storage by LDA, PCA, BPNN and GANN; better prediction values were obtained by GANN than by BPNN. Relationships were established between the E-nose signal and egg quality indices (Haugh unit and yolk factor) by quadratic polynomial step regression (QPSR). The prediction models for Haugh unit and yolk factor indicated a good prediction performance. The Haugh unit model had a standard error of prediction of 3.74 and correlation coefficient 0.91; the yolk factor model had a 0.02 SEP and 0.93 correlation coefficient between predicted and measured values respectively.

Abstract:In the present study,an electronic nose(PEN2) was used to characterize and classify two types of oranges coming from different storage times and methods.This method firstly sampled aroma composition emanating from the oranges by PEN2 systems and then obtained response values of PEN2.After this,data analysis was conducted by using principal component analysis(PCA) and linear discrimination analysis(LDA).The results of this study showed that electronic nose was able to identify the above oranges by LDA method.This new approach for orange determinations using a portable electronic nose was faster and cheaper than classical method.

Abstract:We propose a method for building a simple electronic nose based on commercially available sensors used to sniff in the market and identify spoiled/contaminated meat stocked for sale in butcher shops. Using a metal oxide semiconductor-based electronic nose, we measured the smell signature from two of the most common meat foods (beef and fish) stored at room temperature. Food samples were divided into two groups: fresh beef with decayed fish and fresh fish with decayed beef. The prime objective was to identify the decayed item using the developed electronic nose. Additionally, we tested the electronic nose using three pattern classification algorithms (artificial neural network, support vector machine and k-nearest neighbor), and compared them based on accuracy, sensitivity, and specificity. The results demonstrate that the k-nearest neighbor algorithm has the highest accuracy.
