Abstract:We developed Pickering foams highly stabilized by high-aspect-ratio (xi = diameter/thickness) nano-sheets. The effects of particle aspect ratio, concentration, and hydrophobicity were also investigated. To our knowledge, our study provides the first experimental evidence of the effect of particle aspect ratio on particle-stabilized foams. The adsorption properties of these highly anisotropic nano-sheets are strongly affected by their small thickness and large lateral size (i.e., two-dimensional). These high-aspect-ratio nano-sheets were obtained by exfoliation of a-zirconium phosphate (ZrP) crystals with propylamine (C3H7NH2, PA). The hydrophobicity of the nano-sheets was tailored by adjusting the PA : ZrP molar ratio in the suspension. The morphology and stability of the foam depend on the nano-sheet aspect ratio and concentration as well as on the PA : ZrP molar ratio. Here, we found that using low and high aspect ratio nano-sheets having a high and an intermediate degree of hydrophobicity, respectively, is the successful formula to obtain high foam stability. The aqueous foams were characterized by optical and cross-polarized micrographs. Scanning electron microscopy (SEM) micrographs of dried foams revealed the adsorption of the PA-ZrP nano-sheets on the air-water interface. The foam stability was studied by measuring the foam and the water volume as a function of time to obtain the foam decay and water drainage rate, respectively. We also observed that the foams were stabilized by jammed layers of nano-sheets located in the bulk and at the air-water interface. These layers of particles prevent air diffusion between the bubbles, hence arresting Ostwald ripening and coalescence.

Abstract:Foams are ultrastable when all the aging processes arrest. We make such foams by precipitating sodium dodecyl sulfate with potassium chloride during the foaming process. The precipitate crystals adsorb onto the bubble surfaces to arrest coarsening and stop drainage by blocking in the interstices around the bubbles. However, if the concentration of SDS is too high, the foams are no longer ultrastable. The transition is sudden and corresponds to the point at which significant dodecyl sulfate remains in solution. The presence of the noncrystallized surfactant allows the foam to coarsen leading to the eventual disappearance of the foams, even if the crystals in the continuous phase can still block drainage. The transition occurs as the concentration of nonsolubilized KCl becomes higher than the concentration of SDS, giving us a linear stability boundary. The system offers an interesting alternative to other types of particles because the surfactant crystals break and reform as the temperature is cycled, which makes for reusable solutions and stimulable foams.
Effect of Hydrophobically Modified SiO2 Nanoparticles on the Stability of Water-Based SDS Foam

Abstract:In the present study, SiO2 nanoparticles were first hydrophobically modified and then added into anionic surfactant sodium dodecyl sulfate (SDS) stabilized water-based foam to improve the foam stability. The foam stability was experimentally evaluated by measuring surface tension, Zeta potential and half-life of the foam. The foam stabilizing mechanism was also studied from a micro perspective by molecular dynamics simulation through analyzing the equilibration configuration and MSD curve of both SDS surfactant and water molecules. The results show that foam exhibits an optimal stability when SiO2 concentration is 0.35 wt% under a specific surfactant concentration (0.5 wt%) in this work. The addition of SiO2 nanoparticles with suitable concentration could improve the adsorption between SDS molecules and nanoparticles, thus limiting the movement of SDS and restricting the movement of surrounding water molecules, which is beneficial to enhance the foam stability.

Abstract:Mixed surfactants have antagonistic or synergistic effects on the air/liquid interface of foams, representing two opposite interactions about destroying or stabilizing foams. In this paper, mixed surfactant systems containing non-ionic surfactant polyoxyethylene alkyl ether (AEO) and anionic surfactant sodium dodecyl sulfate (SDS) were discussed by molecular dynamics simulation to study the mechanism of decreasing stability of SDS foam after AEO was added. The results showed that with the addition of AEO, the interaction between SDS molecules is weakened, and the thickness of hydrated shell around the polar head of SDS decreases. In order to simulate the process of foam drainage and rupture, steered molecular dynamics (SMD) containing two external forces on the foam film was performed. One is about the z-axis vertical external force, representing the stability of SDS hydrated layer at the interface; the other is about the external force in horizontal direction, representing the rupture process of the liquid film. The simulated results showed that the higher the concentration of AEO in the mixed surfactant interface layer, the smaller the external force to destroy the foam film interface. In addition, the free energy change of AEO molecules from the water phase through the SDS layer to the air phase further showed that the addition of AEO can reduce the stability of SDS foam films and play a defoaming role in the studied system. The simulated conclusions were consistent with the experimental results about the decreasing stability of SDS foam after AEO was added.

Abstract:The unstable nature of liquid foams is hampering their use in all the applications. This work presents a simple and versatile approach to prepare an innocuous system that combines a good foamability and remarkable foam stability. Anionic surfactant sodium dodecyl sulfate (SDS), gum acacia (GAC) and 1-Tetradecanol (TDA) were selected as main foaming agent, foam stabilizer and accessory ingredient respectively, which allowed the foams to present the performance of remarkable stabilization and multilayered liquid films. Besides, the differences of foam sizes have been obviously reduced, and bubble sizes are small and in range of 20-60 mu m. (C) 2013 Elsevier B.V. All rights reserved.

Abstract:A multiscale stability study of foams stabilized by sodium dodecyl sulfate (SDS), sodium dodecylbenzene sulfonate (SDBS), and sodium polyoxyethylene alkylether sulfate (AES) was conducted, to investigate the relationship of surfactant molecular behavior and interfacial monolayer configuration of foam film to the foam film properties. Molecular dynamic (MD) simulations using a full-atom model was utilized to explore the microscopic features of the air/liquid interface layer. Several parameters such as the distribution of surfactant head groups and the order degree of surfactant hydrophobic tails were used to describe the molecular adsorption behavior. The effect of molecular structure on the nature of the foam film and the impact on the dynamic stability of wet foam is discussed. In the experimental evaluation, the SDBS foam films manifest strong stiffness and low viscoelasticity as shown by the interfacial shear rheology determination as well as texture analyzer (TA) measurement results, which agree very well with the array behavior of SDBS molecules at the air/water interface as described by the simulation results and is identified to be the reason for the poor dynamic stability. Comparing the molecular structure of SDS, SDBS, and AES, the special contributions of the linking groups such as the O atom, the phenyl group, and the EO (oxyethyl) chain to the interfacial array behavior of surfactants were characterized. It is concluded that microhardness of the foam film enhanced by rigid linking groups favors static foam stability but decreases the dynamic foam stability, while viscoelasticity of the foam film enhanced by soft linking groups increases the dynamic foam stability.

Abstract:Surface tension and aggregation behavior in an aqueous solution of the mixture of cationic surfactant oleyl bis(2-hydroxyethyl)methylammonium bromide (OHAB) and anionic surfactant sodium dodecyl sulfate (SDS) have been studied by surface tension, conductivity, turbidity, zeta potential, isothermal titration microcalorimetry (ITC), cryogenic transmission electron microscopy (Cryo-TEM), and dynamic light scattering. The mixture shows pretty low critical micellar concentration and surface tension, and successively forms globular micelles, unilamellar vesicles, multilamellar vesicles, rod-like micelles, and globular micelles again by increasing the molar fraction of OHAB from 0 to 1.00. The cooperation of hydrophobic interaction between the alkyl chains, electrostatic attraction between the headgroups as well as hydrogen bonds between the hydroxyethyl groups leads to the abundant aggregation behaviors. Furthermore, the solubilization of zein by the OHAB/ SDS aggregates and their interactions were studied by ITC, total organic carbon analysis (TOC), and Cryo-TEM. Compared with pure OHAB or pure SDS solution, the amount of zein solubilized by the OHAB/SDS mixture is significantly reduced. It means that the mixtures have much stronger abilities in solubilizing zein. This result has also been proved by the observed enthalpy changes for the interaction of OHAB/SDS mixture with zein. Mixing oppositely charged OHAB and SDS reduces the net charge of mixed aggregates, and thus, the electrostatic attraction between the aggregates and zein is weakened. Meanwhile, the large size of the aggregates may increase the steric repulsion to the zein backbone. This work reveals that surfactant mixtures with larger aggregates and smaller CMCs solubilize less zein, suggesting how to construct a highly efficient and nonirritant surfactant system for practical use.
Stabilization and Functionalization of Aqueous Foams by Quillaja Saponin-Coated Nanodroplets.

Abstract:We report evidence for stabilization and functionalization of aqueous foams stabilized by Quillaja saponin (QS)-coated nanodroplets. In contrast to foams stabilized by QS, stabilized the foams of QS-coated nanodroplets showed superior foamability, stability and multi-functional characteristics. Specifically, the half-life time of the foam stabilized by nanodroplets was approximately 4 times that of saponin. The microstructure observation indicates the nanodroplets from assembly of saponin around oil droplet were strong attachment at the gas-liquid interface and stabling a large gas-liquid interfacial area in a hierarchical structure. The surface dynamic adsorption and large deformation rheology were performed, revealed that QS nanodroplets were almost irreversibly adsorbed at air-liquid interface and exhibited less surface desorption and high elastic-viscous response to a large mechanical deformation. These nanodroplets stabilized foams presented a large capacity for loading hydrophobic flavors and nutrients (e.g., β-carotene and curcumin), which could be used to create a new class of foam food products with sustained release of flavors and/or health benefit functionality.

Abstract:We reveal that zeta potential has a notable effect on properties of foamed suspension, which remains poorly explored. It is demonstrated low zeta potential is beneficial for foam stability, and the experimental results show that absolute value of zeta potential of 30-40 mV is the boundary between stable foams and unstable foams. High zeta potential above 40 mV gives rise to instability of foamed colloidal suspension, owing to strong in-terparticle repulsion force that prevents particles from forming a closely packed particle network at liquid/air, interfaces. Besides, it is found that high zeta potential leads to low foamability of foamed colloidal suspension. It is also demonstrated herein that stable and uniform foams with thin and homogeneous-thickness wall without agglomerates can be prepared at the isoelectric point (IEP) using long-chain surfactant, which generates weak agglomerated particles that can be re-separated to monodisperse particles due to the steric hindrance effect of surfactant.
Interaction mechanism and compatibility studies of silk protein peptide (SPP) with the common surfactants SDS and DTAB

Abstract:The molecular interaction of low-molecular-weight SPP with common surfactants (SDS and DTAB) is a more complicated process than has been long believed. In this work, the interaction mechanism between SDS/DTAB and SPP was proposed using multiple methods including conductivity measurements, ST, UV-vis, FT-IR, DLS, fluorescence spectroscopy, and molecular docking simulations. Moreover, the foaming properties of the mixed systems were studied, and they were evaluated as cosmetics preservatives. The effects of various surfactant and protein concentrations and ratios on compatibility and functionality were studied. Based on the results, the mechanism of complex formation was identified as a cooperative van der Waals interaction followed by hydrophobic interaction and hydrogen bonding. A simpler head group leads to easier aggregation and interaction with the SPP, the formation of smaller-sized complexes, and a weaker impact on the fluorescence intensity. Thus, SDS monomers easily aggregate on SPP chains, leading to a stronger influence on the final secondary structure of SPP. This was confirmed by multiple spectroscopy methods. Comparing its single surfactant system, the SDS-SPP solution demonstrates better foaming power and the DTAB-SPP solution shows higher bacteriostatic activity. The good compatibility between SDS/DTAB and SPP can improve the functional properties of SDS or DTAB as well as lower the optimal concentration of each component. These results provide data and theoretical support for the design of cosmetic product formulas.
Surfactant Crystals as Stimulable Foam Stabilizers: Tuning Stability with Counterions

Abstract:The demands on foam stability are variable and changing, which is why design of foams that are both ultrastable and stimulable is important. We study foams stabilized using surfactant particles made through precipitation of sodium dodecyl sulfate with alkali chlorides. We have previously shown that depending on the concentrations of surfactant and salt, the foams can be ultrastable or age like common surfactant foams. We now show that the adsorption of surfactant crystals changes with the type of salt added and how the crystals are made, as well as the surfactant concentration. We see differences in foam stability if the crystals are made prior to foaming or if they are formed concomitantly with foaming. The adsorption of the crystals is improved if the crystals are made during generation, possibly because of their smaller size. The foams destabilize when heated above the Krafft boundary. We show that through tuning the surfactant concentration and salt type or concentration, we can modulate the melting temperature, and hence the destruction temperature of foam between 22 and 50 degrees C. Precipitated surfactant particles are versatile alternatives to stabilize ultrastable and stimulable foams.
Pickering Foam Stabilized by Diacylglycerol-Based Solid Lipid Nanoparticles: Effect of Protein Modification

Abstract:Pickering foams have great potential for applications in aerated foods, but their foaming ability and physical stability are still far from satisfactory. Herein, solid lipid particles (SLNs) were fabricated by using diacylglycerol of varying acyl chain lengths with modification by a protein. The SLNs showed different crystal polymorphisms and air-water interfacial activity. C14-DAG SLN with a contact angle ∼ 79° formed aqueous foam with supreme stability and high plasticity. Whey protein isolate and sodium caseinate (0.1 wt %) considerably enhanced the foamability and interfacial activity of SLNs and promoted the packing of particles at the bubble surface. However, high protein concentration caused foam destruction due to the competitive adsorption effect. β-sheet increased in protein after adsorption and changed the polymorphism and thermodynamic properties of SLN. The foam collapsing behaviors varied in the presence of protein. The results gave insights into fabricating ultrastable aqueous foams by using high-melting DAG particles. The obtained foams demonstrated good temperature sensitivity and plasticity, which showed promising application prospects in the food and cosmetic fields.

Abstract:This paper reports the foamability and the stability of foams of aqueous solutions of mixed systems of a zwitterionic surfactant (i.e. N-Dodecyl-N,N-dimethyl-3-ammonio-1-propanesulfonate) and a cationic surfactant (i.e. cetyltrimethylammonium bromide) in the presence of NaCl. The synergism between the surfactants was examined by measuring the surface tension for various compositions of the surfactants and the salt. The interaction occurring between the surfactant molecules adsorbed at the air–water interface influenced the monolayer properties. The mixed surfactant system produced a significant decrease in surface tension as compared to the single surfactant systems. In the presence of salt, the surface tension reduction was larger. The interaction among the surfactant molecules at the air–water interface and the same in the mixed micelles was quantified by the respective interaction parameters. The blender test was used to investigate the foamability and foam stability. The foamability studies showed synergistic behavior inasmuch as higher foam volumes were generated in the mixed surfactant systems as compared to the single surfactant systems. The addition of salt had a remarkable effect on the foaming properties of the mixed surfactant systems. It increased the stability of foams significantly. The synergism between the surfactant molecules had a notable influence on the zeta potential at the air–water interface.

Abstract:This paper focuses on the gas-liquid interface characteristics of short-chain fluorocarbon surfactant FS-50 and hydrocarbon surfactant sodium dodecyl sulfate (SDS) and their mixed systems. The foam properties of SDS, FS-50, and their mixed solutions were experimentally determined. Then, based on the molecular dynamics simulation method, the interaction mechanism of surfactant molecules at the gas-liquid interface was simulated and analyzed by constructing a foam-liquid membrane system containing surfactant molecules and water molecules. The experimental results show that FS-50 can effectively enhance the foam stability when the concentration is lower than 0.16 wt% and the mixing ratio with SDS is not more than 1:1; the simulation results show that FS-50 can change the arrangement of SDS molecules at the gas-liquid interface. Simultaneously, there is a competitive adsorption phenomenon between FS-50 and SDS at the gas-liquid interface. The low mixing ratio FS-50 can increase the thickness of the gas-liquid interface of the mixed system and the ability of SDS to form hydrogen bonds with water, enhance the water-locking ability of SDS, and further improve the stability of the foam liquid film. The interaction mechanism between short-chain fluorocarbons and SDS surfactants at the gas-liquid interface was revealed by simulation, which provided theoretical guidance for optimizing the performance of the foam liquid film.

Abstract:The capacity of a protein to form and stabilize foams and emulsions depends on its structural characteristics and its physicochemical properties. The structural properties of lentil legumin-like protein including molecular weight, hydrodynamic size, surface charge and hydrophobicity, and conformation were studied in relation to its air-water interfacial behaviors. Kinetics study suggested that the foaming stability was closely related to the surface conformation of the protein that strongly affected adsorption and re-organization of the protein layer at the air-water interface. Foams prepared at neutral pH showed dense and strong networks at the interface, where combination of the α-helix secondary structure, medium hydrodynamic molecular size, and balance between solubility/hydrophobicity all contributed to the formation of such strong protein network at the interface. At pH 5.0, the protein formed a dense and thick network composed of randomly aggregated protein particles at the air-water interface. Whereas at pH 3.0, the unordered structure increased intra-protein flexibility producing a less compact and relaxed interface that reduces elasticity modulus with time and reduced foam resistance against collapse. This research revealed that lentil legumin-like protein could form long-life foams at mild acidic and neutral pH. The potential for use of lentil protein as a novel foaming plant-based stabilizer is demonstrated in food and non-food applications where stable, long-life foams are required.
Effect of surfactant concentration on the responsiveness of a thermoresponsive copolymer/surfactant mixture with potential application on Smart foams formulations

Abstract:We studied a system formed by a mixture of a thermoresponsive negatively charged graft copolymer (Alg-g-PNIPAAm) with a brush-type structure, and an oppositely charged surfactant (DTAB), in bulk and at the air-solution interface. We performed experiments of surface tension, electrophoretic mobility, dynamic and static light scattering and atomic force microscopy in order to characterize the complexes formed as a function of DTAB concentration and temperature. We found that these polymer-surfactant complexes are able to respond by changing their sizes, both in bulk and at the air-solution interface, when T is increased above the coil-globule transition temperature (LSCT) of the copolymer. However, the thermoresponse was found to be dependent on surfactant concentration, cs: for cs < 2.8 mM, the size of the aggregates decreases as T increases but, for cs >= 2.8 mM, the opposite behavior takes place, i.e. the size increases with T. At the interface, the intensity of the effect produced on the surface tension by increasing T above LCST diminishes continuously as cs increases, reducing the ability of the interfacial complex to respond to temperature changes. We studied the stability of aqueous foams formulated with these mixtures as a function of T and cs. We found that the stability of the foam can be modulated by changing T, but we observed that this effect is dependent on the surfactant concentration range. We found a correlation between changes in the aggregates sizes, the surface tension behavior and the responsiveness of foam stability to changes of temperature.

Abstract:Abstract The foam properties of different surfactants were evaluated by the stirring method. The synergistic foam stabilizing effect was formed by the combination of lauryl glucoside and hydrophilic nanoparticles, but the result was feeble. The blend of Janus nanoparticles and surfactants significantly improves foam stability, and the two have a strong synergistic effect on foam stability. The compound system has a specific temperature resistance. Kruss dynamic surface tensiometer and surface dilatation rheometer were used to measure the gas-liquid interface properties of the hydrophilic nanoparticles compound system, Janus nanoparticles compound system, and surfactant system, respectively. The effects of Janus nanoparticles on the surface tension and surface dilatation modulus of the compound system were analyzed, which were correlated with the stability of the foam.
Effect of Triton X-100 surfactant on the interfacial activity of ionic surfactants SDS, CTAB and SDBS at the air/water interface: A study using molecular dynamic simulations

Abstract:Molecular dynamics simulations were carried out to investigate the effect of TX-100 surfactant on the interfacial activity of ionic surfactants SDS, CTAB and SDBS at the air/water interface. Here, interfacial properties, molecular orientation of hydrocarbon chains of ionic surfactant and radial distribution functions between hydrophilic headgroups and water molecules at the air/water interface was evaluated by means of MD simulations. Particularly, TX-100 surfactant produces a reduction of the interfacial film thickness obtained using the water layer and increases the hydrophobic film thickness of the systems. In this investigation, we found that TX-100 surfactant present in mixed monolayers and distributed randomly on the water surface can modify the hydrophilic-lipophilic balance of the monolayer increasing the hydrophobic film thickness and reducing the adsorption of ionic surfactants at the air/water interface. Furthermore, the molecular array of these mixed monolayers obtained by the TX-100 surfactant improve the elasticity of the liquid film, which avoid the rupture of foams reducing the liquid drainage velocity of these systems. Finally, the results suggest that hydrophobic film thickness of the mixed monolayers produce by the TX-100 surfactant can reduce the diffusion of gas molecules from air phase toward the water phase, which increase the stability of foams.

Abstract:Surface activity, foam properties and aggregation behavior of a short-chain fluorocarbon surfactant (FS-50), an anionic hydrocarbon surfactant (sodium dodecyl sulfate, denoted as SDS) and FS-50/SDS mixture are systemically studied for the first time in this paper. Surface activity was characterized by surface tension. Foam properties, including foamability and foam stability, of the mixed systems were studied based on the standard Ross-Miles method. The aggregation behavior of the surfactant solution was observed by using cryo-transmission electron microscopy (Cryo-TEM). The results show that FS-50 exhibits good surface activity and foam properties, which reveals that as a kind of environment friendly short-chain fluorocarbon surfactant, FS-50 is a perfect substitute of long-chain ones. Surface activity and foam properties of FS-50/SDS mixed system are enhanced by adding FS-50 and further improved by the increase of FS-50 concentration. The foam properties are enhanced by tightening the arrangement of surface adsorbed molecules at the liquid-air interface. A synergistic interaction exists in the mixture of short-chain FS-50 and SDS, which is produced through microscopic spheroidal-to-wormlike transition. Finally, the macroscopic performance of FS-50/SDS mixed solution is enhanced by the changes of composition and morphology of the adsorbed film layer. This work shows an environmental friendly surfactants mixed system and provides a more comprehensive perceive of the relationship between macroscopic properties and micro-aggregation structure of short-chain fluorocarbon and hydrocarbon surfactants mixed system.

Abstract:In this study, the effect of sodium dodecyl sulfonate (SDS) on the foam stability of dodecylamine (DDA) and on its adsorption configuration at the gas-liquid interface was investigated. Froth stability experiments, surface tension measurements, time-of-flight secondary-ion mass spectrometry measurements, and molecular dynamics simulation calculations were performed in this investigation. The results revealed that the foam stability of DDA solution was extremely strong, and the addition of SDS could decrease the foam stability when the concentration of DDA was less than a certain value. The decrease in foam stability could be ascribed to several reasons, namely, the big cross-sectional area of SDS at the gas-liquid interface and low adsorption capacity of surfactants at the gas-liquid interface, the high surface tension, the change in the double-layer structure, the small thickness of the gas-liquid interfacial layer, the weak interaction intensity between the head groups of the surfactants and the water molecules, the strong movement ability of the water molecules around the head groups, and the sparse and less upright arrangement configuration of molecules at the gas-liquid interface. These findings can greatly help in solving the strong foam stability problem in DDA flotation and provide a method for reducing foam stability.
