Abstract:Oil in water (O/W) emulsion in food is a system where complex sequence of chemical interaction between unsaturated fatty acyl groups in lipids with active oxygen species occurs.This review provides a brief background of the physical properties of food emulsions and how these properties impact lipid oxidation pathways,focusing on the effects of interfacial area,interfacial thickness,electrical charge,surfactant concentration,polarity of antioxidant and the protein in continuous phase.Bulk oil traditionally has been considered a homogeneous,however due to the minor components bulk oil,some physical structures exist.The impact of the physical structures on the oxidation stability of bulk oil has been briefly introduced in this review.

Abstract:This paper studied the effects of inorganic salts on the phase and stability of O/W emulsion by observing the sedimentation stability property,emulsion-breaking voltage,electrical conductivity and microstructures.The results showed that multivalent metal salts led to the demulsification or phase inversion of the O/W emulsion.The ability of multivalent metal salts that impel emulsion phase inversion to happen was arranged in the sequence of CrCl3 ＞ MgCl2 ＞ CaCl2 ＞ SrCl2 ＞ BaCl2.But FeCl3 only triggered demulsification not phase inversion.And the excessive concentration of metal salt reduced the stability of emulsion.OH-or acid radical ions can remove the effects of multivalent metal ions on O/W emulsion.The precipitates were formed by the reaction of Na2CO3,NaOH,Na2SiO3,and Na3PO4 with Cr3+ leading to W/O emulsion inverting to O/W type.On the contrary,Na2SO4,H2SO4 and H3PO4 can not result in emulsion reversible inversion.

Abstract:The water-in-oil emulsion has been of great importance in the oil industry. The stability of water-in-oil (W/O) emulsion has been investigated over a wide range of parameters. These parameters are salt concentration (0-8%), nonionic surfactant concentration (0-10%), and co-surfactant concentration (0-4%). The stability of water-in-oil emulsion was studied by recording the height of emulsion at 0, 6, 12, 24h. This investigation describes the coalescence process and shows that the presence of the surfactant is necessary for stable emulsion, and stability gradually decreases with salt concentration to some degree. Moreover, the co-surfactant combined with surfactant can increase the stability of emulsion effectively.

Abstract:The effect of inorganic salts on the properties of oil-in-water emulsion prepared by sodium petroleum sulfonate were studied by observing water/oil separation rate,electrical conductivity and emulsion-breaking voltage.And the microstructure was also observed by the microscope.Experimental results showed that under the condition of certain concentration,monovalent inorganic salts such as NaCl,KCl improved the stability of emulsions making the droplets smaller,more uniform and incloserconnection.At higher concentration,monovalent inorganic salts had inhibitory effects on the stabilities rather than led to phase inversion.Emulsions inverted from O/W to W/O when multivalent inorganic salts were added into the system.The smaller the cation radius,the higher the valence,the more significant the effect of multivalent cation was.The droplets of inverted emulsions became bigger,more uneven and took the formof isolated spheres.The stability of inverted emulsions wasweakened orderly as follows:MgCl2,AlCl3,CrCl3,CaCl2,SrCl2,BaCl2,FeCl3.

Abstract:Water content of W/O crude oil emulsion and temperature have great influence on stability of the W/O crude oil emulsion and the subsequent demulsification process especially for oil-water treatment centers using a two-step sedimentation demulsification process in Jilin oilfield. Electrical microscope and Turbiscan stability analyzer were employed to investigate the influence of water content and temperature on stability of synthetic W/O emulsion. The results show that the average water droplets size decreases when water content decreases, the emulsion stability decreases when water content or holding temperature increases, and the emulsion stability constant and the temperature have a linear relationship.

Abstract:In this work, the block copolypeptide surfactant, poly(l-lysine·HBr)40-b-poly(racemic-leucine)20, was synthesized and characterized, then used to build water-in-oil-in-water (W/O/W) double emulsions. Double emulsions are usually prepared by a two-step emulsification process and commonly stabilized using a combination of hydrophilic and hydrophobic surfactants. Herein, we report a one-step phase inversion process to produce water-in-oil-in-water (W/O/W) double emulsions stabilized by a synthetic diblock copolymer and electrolyte. It was found that the O/W ratio and the type of electrolyte had a marked effect on the formation and type of the double emulsions. Moreover, double emulsions containing an NaCl isotonic solution were stable for at least two months, whereas those using glucose as a substitute for NaCl showed a clear compartmental change. The mechanism behind this was related to the electrostatic interaction between the anion of the electrolyte and the cation of the polylysine residues, which affected the HLB value and curvature. This novel finding is very interesting in terms of both scientific research and practical applications.

Abstract:Different compositions and emulsification protocols were used to prepare stable water-in-oil (w/o) emulsions. Water, mineral oil, and a mixture of Span 80 and Tween 80 surfactants were combined to form emulsions that can be used as reference for electrolyte-free systems. Here, we have proposed emulsions wherein different properties were evaluated. Electrical conductivity measurements indicated that conductivity increases linearly with increasing surfactant content. The emulsions’ flow curves and viscoelastic behaviors were delineated by rheological measurements. Stability studies by centrifugal testing have shown that smaller the surfactant content, lower the stability, for any used stirring speeds. Furthermore, higher the applied mixing rate to make the emulsion, higher the stability, regardless of the amount of surfactant. Electrical field stability analysis showed, for all systems, that critical electric field (CEF) values were dependent on either surfactant amount and emulsion elastic modulus.

Abstract:Differing from conventional emulsions, water-in-oil (W/O) emulsions are produced with no additional surfactants in this study. The testing results show that both interfacial tension (IFT) and dilational modulus at all salinities and pH are much higher than those of normal emulsions. A high IFT is not good for making emulsions, but a higher dilational modulus will contribute to more stable emulsions. Emulsion stability declines slightly as salinity increases and the most unstable W/O emulsion appears at pH = 7. To deeply understand the effects of salinity and pH on emulsion stability, petroleum acid is extracted and characterized using Fourier transform ion cyclotron resonance mass spectrometry.

Abstract:Paraffin oil/water nano-emulsions stabilized by Tween 80/Span 80 were prepared using the phase inversion temperature (PIT) method in the presence of inorganic salts. The influence of different kinds of inorganic salts on the PIT, electrophoretic properties and long-term stability of the nano-emulsions was studied by conductivity measurements, zeta potential measurement and dynamic light scattering. It was found that, for a system with high PIT, an optimum PIT can be obtained in the presence of salting-out salts, and thus a stable emulsion can be prepared. The salts reduce the absolute value of the zeta potential of the nano-emulsion droplets and influence their long term stability. By analyzing the evolution of emulsion droplet size with time, the main instability mechanisms of the nano-emulsions were found to be Ostwald ripening and/or coalescence.

Abstract:Oil-in-water (O/W) wastewater generally contains inorganic salt ions, which cause energy consumption in the process of electric demulsification. To reveal the influence mechanism of inorganic salt ions on the micro movement of oil droplets in O/W emulsion, the electrophoretic migration of oil droplets with dif-ferent ion concentration was studied based on molecular dynamics simulation. The results showed that Na+ adsorbed the negative charge on the surface of the oil droplets while Cl-repelled it, leading to a decrease in the electrophoretic mobility and deformation of the oil droplets with the increase of ion con-centration. The inhibitory effect of three inorganic salts on oil droplet electrophoretic migration was MgCl2 > CaCl2 > NaCl. The weak interaction between oil, water and ions was mainly van der Waals inter-action. When the NaCl concentration was 0.4 mol/L, the oil-water interfacial tension was at its maximum value of 85.14 mN/m. and the deformation degree of oil droplets reached the minimum values of 0.45. The formation of hydrated ions reduces the freedom of water molecules. The above findings uncovered the effect of inorganic salt ions on the electrophoretic migration of oil droplets in O/W emulsions under a DC electric field, which can provide theoretical guidance for the purification of oily wastewater from the molecular level.(c) 2022 Elsevier B.V. Abstract:Concentrated water-in-oil emulsions of over 95% internal phase by volume were prepared using a variety of low HLB emulsifiers. These emulsions coarsened with time to produce a fraction of large droplets that grow at the expense of smaller droplets. This resulted in a decrease in yield stress and eventually to visible phase separation of water. There was a significant effect of emulsifier type, and the optimum HLB appears to be ∼5 for mineral oil. None of the emulsions prepared with distilled water as the internal phase could withstand a single freeze/thaw cycle. In contrast to the gradual coarsening process at room temperature, freeze/thaw instability was sudden and involved an inversion process that took place in the frozen state. The properties of these concentrated emulsions changed dramatically when electrolyte was introduced into the aqueous phase at concentrations as low as 0.02 M. The rate of coarsening decreased, and coalescence of water droplets during the freeze/thaw process was inhibited. The emulsions retained their yield stress over prolonged storage and a lower droplet size was often produced under the same conditions of emulsification. These effects seemed to be general and were observed with a variety of emulsifiers and electrolytes. The electrolytes appeared to enhance the stability of these water-in-oil emulsions by increasing the resistance of the water droplets to coalescence. It is proposed that this was achieved by a higher adsorption density of emulsifier at room temperature storage, and in the frozen state by the fractionation of a concentrated electrolyte solution that wetted the ice crystals and prevented their fusion. Analysis of emulsion rheology and processing suggested that this enhanced coalescence stability was adequate to account for the changes in yield stress and droplet sizes observed.

Abstract:This study considered the stability and rheology of a type of high internal phase water-in-oil emulsions (W/O) emulsion. The aqueous phase of the emulsions is a super-cooled inorganic salt solution. The oil phase is a mixture of industrial grade oils and stabilizer. Instability of these systems manifests as crystallization of the metastable dispersed droplets with time. This work focused on the effects of oil polarity and oil viscosity on the stability of these emulsions. Ten types of industrial oils, covering the viscosity range 1.4–53.2 cP, and with varying polarity, were used in combination with polymeric poly(isobutylene) succinic anhydride (PIBSA) and sorbitan monooleate (SMO)-based surfactants. The effect of oil relative polarity on rheological parameters of the emulsion was evident mainly in the emulsions stabilized using polymeric surfactant, whereas the oil viscosity did not show any significant effect. The optimum stability of the emulsions stabilized with SMO was achieved using high polar oils with a viscosity of 3 ± 0.5 cP. However, when using the PIBSA surfactant, the best emulsion stability was achieved with low polar, high viscosity oils.

Abstract:Oil-in-water-in-oil (O/W/O) emulsions commonly exist in crude oil treatment, food processing, pharmaceuticals, and cosmetics; however, few related studies have been conducted. To reveal the fragmentation mechanism of droplets in O/W/O emulsions, the behavior of complex droplets under different electric field intensities was investigated using a molecular dynamics method. It was found that the deformation of the intermediate phase (water) and the internal phase (hexane) increased dramatically with the electric field intensity, and the two phases separated when E ≥ 1.1 V∙nm −1 , indicating that the complex droplets had been simplified into two simple liquids. Observation of the droplet trajectory shows that the deformation of the internal phase was smaller than that of the intermediate phase, and the internal oil droplet moved toward the high electric potential position. Furthermore, we elaborated the interactions between different phases at the molecular level by means of weak interactions and radial distribution function analysis, and their magnitudes were as follows: Cl − - Na + > Na + - Water > Water - Hexane. The electric fragmentation mechanism of the complex droplets was investigated, which provides theoretical guidance for the treatment of O/W/O emulsions by electrodehydration.

Abstract:When using chemical agents especially surfactants to displace oil,the inorganic ions,which are contained in reservoir formation water,can have influence on emulsification and other properties of surfactant.Oil-in-water emulsion was prepared by using dehydrated crude oil and 0.4%(mass fraction) sodium dodecyl benzene sulfonate(SDBS).Thirteen inorganic salts with different concentrations were added to the SDBS emulsion,so as to investigate the influence of those inorganic salts on emulsion stability and phase inversion.Experimental results showed that Na and K salts both had optimum mass concentrations;emulsion stability was enhanced at those two optimum mass concentrations,but they did not cause emulsion phase inversion.Bivalent and trivalent inorganic salts had adverse influence on emulsion stability,the ability of these inorganic salts that impel emulsion phase inversion to happen was in sequence of AlCl3>FeCl3>BaCl2>SrCl2>CaCl2>MgCl2.Alkalescent sodium salts had synergistic effect with SDBS and had favorable influence on emulsion stability when its mass concentration was in optimum salt mass concentration.

Abstract:External electric fields (EEFs) have been applied on a wedgelike gap in a ball-disk configuration, through which oil-in-water (O/W) emulsions flowed. The film formation properties of O/W emulsions in the contact region between the ball and the disk, which is closely related to the stability of oil droplets in the wedgelike gap, have been investigated experimentally. It is found that the film formation property of emulsions in the contact region increases with the EEF strength, but tends to saturate after a critical EEF strength was reached. For the emulsion with a larger oil concentration, it can be enhanced by EEFs more dramatically. The change in the film formation property is more significant when EEFs were applied in emulsions with relatively high emulsifier concentrations, however, the droplet stability is higher in the emulsions with low emulsifier concentrations even when EEFs were applied. The ability of the deformation and breakup of droplets under EEFs in the wedge was also analyzed theoretically to correlate with the experimental results.

Abstract:Owing to their promising application prospects, water-in-oil (W/O) emulsions have aroused continuous attention in recent years. However, long-term stability of W/O emulsions remains a particularly challenging problem in colloid science. With the increasing demand of consumers for natural, green, and healthy foods, the heavy reliance on chemically synthesized surfactants to achieve long-term stability has become the key technical defect restricting the application of W/O emulsions in food. To design and manufacture W/O emulsions with long-term stability and clean label, a comprehensive understanding of the fundamentals of the W/O emulsion system is required. This review aims to demystify the field of W/O emulsions and update its current research progress. We first provide a summary on the essential basic knowledge regarding the instability mechanisms, including physical and chemical instability in W/O emulsions. Then, the formulation of the W/O emulsion system is introduced, particularly focusing on the use of natural stabilizers. Besides, the characterization and application of W/O emulsions are also discussed. Finally, we propose promising research trends, including (1) developing W/O high internal phase emulsions (HIPEs) as fat mimetic and substitute, (2) promising formulation routine for long-term stable double emulsions, and (3) searching for novel plant-derived stabilizers of W/O emulsions.

Abstract:The stability of W/O/W emulsions has been studied in batch agitators. The surfactants suitable for W/O/W emulsions were screened and the factors affecting the emulsion stability were also studied. Results showed that polyamine E644 was an excellent emulsifier for W/O emulsions since the emulsion stabilized by it has not only good stability but also shows smaller swelling. The stability of the emulsion increases with increase in membrane viscosity and concentration of surfactant, but decreases with increase in concentration of the internal reagent in the internal phase and the carriers in the membrane. Raising the agitation speed and the time for preparing the W/O emulsion is beneficial to membrane stability due to formation of smaller internal droplets, but raising the speed for dispersing the W/O emulsion in the external phase results in an increase in membrane breakage.

Abstract:If oilfield produced liquid is the W/O emulsion which has high moisture content,and there are Na+、Ca2+、Mg2+ and Cl- plasma contained in water phase,the type and content of the ions will have a significant impact on emulsion droplet formation and rheological properties of the emulsion. Phase transition process of W/O emulsion can be promoted by adding inorganic salts appropriately. Adding only one different salt and their quantities is even,CaCl2 has the most significant effect on emulsion droplet shape and particle size distribution,and this is followed by NaCl,MgCl2 last; under the condition of adding two salts by an equal percentage,the successive order of factors affecting emulsion droplet shape and particle size distribution are CaCl2-MgCl2,NaCl-CaCl2 NaCl-MgCl2. For the same kind of inorganic salts,emulsion droplet dispersity becomes inferior and average particle size of emulsion becomes larger along with adding amount of salt. The regularity is not obvious between the adding amount and type of inorganic salt and rheological properties of emulsion because of the emulsion stability; if multiple salts are added,rheological properties of emulsion will be a joint action of these multiple salts,still submit to the characteristics of power-law fluids.
