Abstract:The effect of ionic liquid treatments containing various concentrations of 1-allyl-3-methylimidazolium chloride (AMIMCl) on the morphology and phase transition of cornstarch was observed using a differential scanning calorimeter (DSC), a scanning electron microscope (SEM), an optical microscope, X-ray diffraction (XRD), and a confocal laser scanning microscope (CLSM). After treatment with 50% AMIMCl, amylopectin endotherms were formed at higher temperatures, accompanied by an increase in absorbed enthalpy. However, slight changes were observed in the granular appearance and relative crystallinity (RC) of cornstarch. Upon increasing the experimental AMIMCl concentration, a remarkable loss of crystalline structure was observed in starch and the relative endotherm shifted to a lower temperature. Finally, after processing with 100% AMIMCl, disintegrated particles without an ordered structure were produced and induced no pronounced thermal change in the DSC diagram. In addition, the amylose components of normal starch, including amylose-lipid complexes, were significantly affected by the presence of AMIMCl in the solvent mixture.
