Abstract:Adrenergic receptor agonists are a class of adrenergic transmitters analogues that can bind and stimulate adrenergic receptors, which always have been illegally used in the animal husbandry since they can promote growth, reduce fat deposition, and improve lean meat rate. Thus, detecting these agonist residues is of great significance to ensure food safety and human health. Here, we proposed a comprehensive and critical review, firstly introducing the typical adrenergic receptor agonists that occurred in animal-derived foods. Then we summarized and discussed the recent residues detection methods including immunoassays, receptor-based assays, liquid chromatography-tandem mass spectrometry, gas chromatography-tandem mass spectrometry, and electrochemical methods. We highlighted the immunoassays due to their merits of simple operation, low cost, and high sensitivity for screening purpose. Lastly, we prospected the future development of adrenergic receptor agonist residues detection method.
Comparison Of Biogenic Amines In Chinese Commercial Soy Sauces

Abstract:Soy sauce contains a series of biogenic amines (BAs) which is a kind of bioactive organics relating to food quality and safety. High concentration of BAs may lead to remarkable physiological and toxicological influences on human bodies, including hypotension, dizziness, and headaches. Here, we systematically compared the levels of ten main BAs among 53 Chinese commercial soy sauces using an improved high-performance liquid chromatography (HPLC) method. The results showed that the brands and production regions were both important factors accounting for the BAs' content. The contents of Cad, Spm, Try, Phe, His, and Tyr in dark soy sauces were higher than those in light soy sauces. His and Phe in dark soy sauces were 3.7 and 1.84 times higher than in light samples, respectively. Besides, it was surprising that the content of BAs in soy sauces hugely varied from place to place. This work comprehensively compared the content of BAs in soy sauces, showing the relation between soy sauce processes and BAs, offering abundant information for further research on BAs control.

Abstract:Aflatoxins are mutagenic and carcinogenic. Even if people eat it at tract level, people’s health will be harmed for a long time. The foodstuffs would be contaminated by aflatoxins during growing and storing periods. Due to the high toxicity, sensitive determination techniques for analyzing the aflatoxins of different samples are developed. Each technique has some advantages and disadvantages and not all of them can test at limited level. This review aims to summarize the different health effects of aflatoxins for people, the develop-ment of analytical techniques and special discussion about the applications of developed techniques in a variety of matrices.

Abstract:With the increasing development of the society and the growing awareness to health, the public has been concerned about the safety and quality of agriculture and food products for many years. Biosensor, an efficient analytical device, has been broadly applied in the analysis to agriculture and food samples. Since the analytes in agriculture and food samples are low-abundant and complex, there is an urgent need to concentrate the analytes with suitable enrichment methods before the biosensor-based detection. In this review, we highlight recent advances and future trends in the biosensor-integrated enrichment methods to preconcentrate the low-abundant analytes of agriculture and food samples, including material-based enrichment methods and electric-based enrichment methods. We do hope that the biosensor-integrated enrichment methods would be easier, more stable, novel, integrated and efficient in the next few years and the enrichment performance would be enhanced with the inspirations from our review.

Abstract:Biogenic amines are organic bases with low molecular weight. They can be expected in all foods that contain proteins or free amino acids. Consumption of food containing high amounts of biogenic amines may cause toxicological effects. The most notorious foodborne intoxications caused by biogenic amines are related to histamine. The article reviewed methods of determination of biogenic amines in foods in recently years and emphasized on the characteristics of HPLC, CE, biosensor and TLC and their applications.

Abstract:With the increasingly serious problem of aminoglycoside antibiotic residues, it is imperative to develop rapid, sensitive and efficient detection methods. This article reviews the detection methods of aminoglycoside antibiotics in animal-derived foods, including enzyme-linked immunosorbent assay, fluorescent immunoassay, chemical immunoassay, affinity sensing assay, lateral flow immunochromatography and molecular imprinted immunoassay. After evaluating the performance of these methods, the advantages and disadvantages were analyzed and compared. Furthermore, development prospects and research trends were proposed and summarized. This review can serve as a basis for further research and provide helpful references and new insights for the analysis of aminoglycoside residues. Accordingly, the in-depth investigation and analysis will certainly make great contributions to food safety, public hygiene and human health.

Abstract:Aquatic products are easily polluted by microorganisms during storage owing to their nutritional characteristics, leading to deterioration. Microbes containing amino acid decarboxylases can decarboxylate free amino acids in aquatic products and produce biogenic amines (BAs). Excessive intake of BAs can cause food poisoning and other adverse physiological reactions, thus posing a potential safety risk to human health. Therefore, controlling the production of BAs in aquatic products to ensure food quality and safety is particularly important. Although the previous reviews introduced relevant information about BAs, they did not comprehensively and systematically introduce types, formation mechanisms, physiological effects, toxicity, content of BAs in various aquatic products, limit standards, freshness indexes, commonly used indirect and direct detection methods, and recent research progress on BA control technologies in aquatic products. Thus, this article reviews the literature in this field and provides an overview of state-of-the-art technologies. Additionally, current problems in the research and control of BAs, as well as future research directions are proposed. There are still enormous challenges for BAs as a freshness indicator in the field of intelligent packing systems, as well as in BA detection and control methods. Multiple techniques, including bacterial starters or purified amine oxidase, quorum sensing inhibitors, and low-temperature treatment combinations, need to be further studied in handling and storage processes to ensure the quality and food safety of aquatic products.

Abstract:The safety in agriculture, food and medicine production and processing is of grave importance to global economic and social stability. Efficient techniques for microorganism detection are essential to control health risks during product circulation. Rapid development in functional nucleic acids (FNAs) and molecular amplification technologies with improvements in the operation time, sensitivity and high throughput analysis have brought about a qualitative leap in microorganism detection. This review gives an investigative summary of many novel microorganism detection methods driven by nucleic acid-aided molecular amplification techniques (NAAMAT) in three aspects: direct to indirect methods, simple to integrated strategies, and representative applications. This paper will provide a useful reference and guide for future development of more advanced nucleic acid-aided molecular amplification techniques.

Abstract:This article provides an overview on the broad topic of biogenic amines (BAs) that are a persistent concern in the context of food quality and safety. They emerge mainly from the decomposition of amino acids in protein-rich food due to enzymes excreted by pathogenic bacteria that infect food under inappropriate storage conditions. While there are food authority regulations on the maximum allowed amounts of, e.g., histamine in fish, sensitive individuals can still suffer from medical conditions triggered by biogenic amines, and mass outbreaks of scombroid poisoning are reported regularly. We review first the classical techniques used for selective BA detection and quantification in analytical laboratories and focus then on sensor-based solutions aiming at on-site BA detection throughout the food chain. There are receptor-free chemosensors for BA detection and a vastly growing range of bio- and biomimetic sensors that employ receptors to enable selective molecular recognition. Regarding the receptors, we address enzymes, antibodies, molecularly imprinted polymers (MIPs), and aptamers as the most recent class of BA receptors. Furthermore, we address the underlying transducer technologies, including optical, electrochemical, mass-sensitive, and thermal-based sensing principles. The review concludes with an assessment on the persistent limitations of BA sensors, a technological forecast, and thoughts on short-term solutions.

Abstract:Contamination of agricultural products and foods by aflatoxin B1 (AFB1) is becoming a serious global problem, and the presence of AFB1 in edible oil is frequent and has become inevitable, especially in underdeveloped countries and regions. As AFB1 results from a possible degradation of aflatoxins and the interaction of the resulting toxic compound with food components, it could cause chronic disease or severe cancers, increasing morbidity and mortality. Therefore, rapid and reliable detection methods are essential for checking AFB1 occurrence in foodstuffs to ensure food safety. Recently, new biosensor technologies have become a research hotspot due to their characteristics of speed and accuracy. This review describes various technologies such as chromatographic and spectroscopic techniques, ELISA techniques, and biosensing techniques, along with their advantages and weaknesses, for AFB1 control in edible oil and provides new insight into AFB1 detection for future work. Although compared with other technologies, biosensor technology involves the cross integration of multiple technologies, such as spectral technology and new nano materials, and has great potential, some challenges regarding their stability, cost, etc., need further studies.

From detection methods to risk prevention: Control of N-nitrosamines in foods and the role of natural bioactive compounds

Abstract:Food processing unavoidably introduces various risky ingredients that threaten food safety. N-Nitrosamines (NAs) constitute a class of food contaminants, which are considered carcinogenic to humans. According to the compiled information, pretreatment methods based on solid-phase extraction (SPE) were widely used before the determination of volatile NAs in foods. The innovation of adsorbents and hybridization of other methods have been confirmed as the future trends of SPE-based pretreatment methods. Moreover, technologies based on liquid chromatography and gas chromatography were popularly applied for the detection of NAs. Recently, sensor-based methods have garnered increasing attention due to their efficiency and flexibility. More portable sensor-based technologies are recommended for on-site monitoring of NAs in the future. The application of artificial intelligence can facilitate data processing during high-throughput detection of NAs. Natural bioactive compounds have been confirmed to be effective in mitigating NAs in foods through antioxidation, scavenging precursors, and regulating microbial activities. Meanwhile, they exhibit strong protective activities against hepatic damage, pancreatic cancer, and other NA injuries. Further supplementation of data on the bioavailability of bioactives can be achieved through encapsulation and clinical trials. The utilization of bioinformatics tools rooted in various omics technologies is suggested for investigating novel mechanisms and finally broadening their applications in targeted therapies.

Abstract:<span>Aminoglycosides, as effective, broad-spectrum antibiotics, have been widely used in animal husbandry. These antibiotics can cause potential hazards to human health, as they can accumulate through the food chain. To obtain a better control of food quality and safety, developing effective and sensitive methods for the pretreatment and determination of aminoglycosides is essential. This review aims at elucidating on the health risk-toxicology of aminoglycosides in food and to provide a comprehensive overview of aminoglycosides pretreatment and detection methods since 2010. Moreover, novel pretreatment methods such as microextraction, QuEChERS and online technology as well as novel analytic methods such as orbitrap MS, are summarized. Furthermore, we elaborate and compare the merits and demerits of diverse pretreatment and analytical methods and suggest their future prospects.</span>

Detection of Ten Biogenic Amines in Chinese Commercial Soybean Paste by HPLC

Abstract:This paper aimed to develop a high-performance liquid chromatography (HPLC) method that can simultaneously detect ten biogenic amines (BAs) in commercially available soybean paste and to determine the contents of BAs in these products. Heptylamine (Hep) was used as the internal standard reagent and benzoyl chloride as the sample derivatization reagent; Inertsil ODS-3 chromatographic column was set as the stationary phase while the acetonitrile and 5 mmol/L ammonium acetate solution as the mobile phases; the samples were treated with gradient elution and detected at 254 nm (UV). Perchloric acid solution (0.4 mol/L) was employed as the sample extraction solvent to determine the contents of ten BAs in soybean paste products. All BAs were separated within 20 min. The methodological validation suggested good linearity, whereas the linear correlation coefficient of all standards was greater than 0.99 with the linear range of 0.1–80 μg/g, detection limits of 0.01–0.03 μg/g, and quantitation limits of 0.03–0.10 μg/g. For 17 commercially available soybean paste products involved in our study, different samples were distinguished from each other not only by the dramatic differences in the contents of BAs but also by the variance in BA types. Of these BAs, tyramine (Tyr) and agmatine (Agm) were found to be the highest contents in soybean paste products; the contents of histamine (His), 2-phenylethylamine (Phe), serotonin (Ser), spermidine (Spd), and putrescine (Put) were lower, followed by cadaverine (Cad), tryptamine (Try), and spermine (Spm). This method proved to be highly sensitive and effective in determining the contents of BAs in soybean paste products; there was a dramatic difference in the contents of ten BAs among different soybean paste products.

Abstract:Biogenic amines (BAs), as important indicators for evaluating food spoilage caused by fermentation processes or microbial activities, present significant risks of food safety. Consequently, the development of a simple, sensitive, and selective detection method for amines is of great importance. In this study, we proposed a three-in-one sensor 3,6-bis(dimethylamino)-9-(ethylthio)xanthylium (PSE) for high sensitivity and selectivity detecting BAs with multimodal responses, including olfactory, colorimetric, and fluorescent signals, thus facilitating convenient real-time detection of BAs. Mechanism study indicated that the nucleophilic substitution of PSE with BAs induced such rapid multi-responses with a low detection limit (LOD = 0.03 μM). We further fabricated PSE loaded paper for portable detection of BAs vapors. And the accurate determination of BAs levels is achieved through analyzing the RGB color mode. Finally, we successfully applied these test strips for non-destructive assessing meat beef freshness with the assistance of a smartphone in on-site scenarios.

Abstract:In recent years, people pay more and more attention to food quality and safety, which are significantly relating to human health. Food adulteration is a world-wide concerned issue relating to food quality and safety, and it is difficult to be detected. Modern detection techniques (high performance liquid chromatography, gas chromatography-mass spectrometer, etc.) can accurately identify the types and concentrations of adulterants in different food types. However, the characteristics as expensive, low efficient and complex sample preparation and operation limit the use of these techniques. The rapid, nondestructive and accurate detection techniques of food adulteration is of great and urgent demand. This paper introduced the principles, advantages and disadvantages of the nondestructive analysis techniques and reviewed the applications of these techniques in food adulteration screen in recent years. Differences among these techniques, differences on data interpretation and future prospects were also discussed.
