Abstract:China is the largest egg production and consumption country in the world. As the increasing consumption and centralized processing of eggs, a large number of discarded eggshells not only cause serious environmental pollution, but also result in large waste of resources. It is significant to use the eggshell efficiently. The application of eggshells has been widely studied at home and abroad, but how to use eggshell membrane efficiently is still lack of research. In fact, eggshell membrane is the potential resources of protein and peptide which have a very considerable application value. The eggshell membrane with high added value was overviewed. The keratin, the collagen, the bioactive peptides existed in the membrane were introduced and the corresponding extraction methods were emphasized, which aimed to provide a theoretical reference for the eggshell membrane.

Abstract:China is the largest egg production and consumption country in the world. There are abundant eggshell resources in our country, which contains amount of calcium carbonate, while most of them has been abandoned, which has caused the environmental pollution and resources waste. It is significant to study the utilization of calcium carbonate in eggshell. The organic calcium can be acquired by two ways: one is to calcine, and the other is to add organic acid into eggshell power directly. The eggshell is a good source of calcium in food, and has broad development prospects. The research status for preparation of organic calcium using eggshell in recent years were discussed, and some presumptions about using eggshell calcium carbonate convert to the organic calcium were pointed out, which aimed to offer the scientific theory for the development and utilization of the eggshell calcium carbonate.

Abstract:Blue-green eggs exhibit unique shell color; however, compared to commercial layers, blue-green eggshell chickens have lower egg production and lack uniform shell colors. Aiming to confirm the molecular mechanisms that affect shell color and egg production, this study collected the uteruses of 12 blue-green eggshell chickens (BG group) and six Hy-Line layers (Brown group), which had significantly different shell color indexes (SCI) and egg numbers at 300 days of age (EN300). Transcriptome sequencing and comparative analyses were subsequently performed. BG hens were divided into two groups for comparative analysis (BGblue vs. BGgreen and BGlow vs. BGhigh, respectively), based on the differences in SCI and EN300, respectively. The result of weighted gene co-expression network (WGCNA) analysis showed that the sequenced and mapped 16,785 genes were clustered into 18 modules, among which six modules with a total of 4270 genes were highly correlated with SCI and EN300 traits. Five hundred and eleven differentially expressed genes (DEGs) belonged to the six key modules. Through KEGG mapping, GO enrichment, and Cytoscape network analysis, nine Hub genes were tightly associated with SCI and EN300. The up-regulated genes were CCR2, CCR8, CD40LG, IL18RAP, INHBA, and P2RY13, while the down-regulated genes were ABCA13, ADCY2, and GRM1. Co-analyses with the results of comparisons between the BG subgroups revealed that the expression of solute carrier (SLC) proteins and ABC transporters were highly related to eggshell color, while cytokine-cytokine receptor interactions and neuroactive ligand-receptor interactions were key pathways affecting egg production. The expression of extracellular cytokines and membrane receptors were significantly up-regulated in low-yield chickens. The candidate DEGs and pathways found in the study will assist in clarifying the molecular mechanisms affecting shell color and egg production, and improve the breeding of blue-green eggshell chickens.

Abstract:The eggshell quality declined with extending of chicken laying cycles. Eggshell quality is a crucial feature that not only affects consumer preference, but also influences producers' economic profitability. The eggshell ultrastructure consists of mammillary, palisade, and vertical crystal layers. Any defect in shell structure results in a reduction in eggshell quality. Speckled, translucent, pimpled, and soft eggshells are common defects that cause significant financial losses for farmers and food security concerns for consumers. Therefore, reducing the faulty eggshells is critical for poultry production. Defective eggshell quality has been attributed to hereditary factors and external environmental stimuli. As such, improvements can be carried out through selective breeding and environmental control of components such as temperature, moisture, and diet formula balance. In this review, the molecular mechanisms of the main eggshell quality defects (speckled, translucent, pimpled, broken, and soft-shell eggs) and the relevant improvement methods are detailed. We hope this review will serve as a useful resource for poultry production management and effectively increasing eggshell quality.

Abstract:The water has been used as the environmental protective separation substance for the eggshell membrane in this study.The eggshell membrane separation efficiency has been improved significantly when get rid of the eggshell powder whose size more than 200 mesh,and the physical and chemical composition of eggshell and its membrane has not changed.Firstly,five factors influencing effect of eggshell membrane seperation have been studied,including the mixing time,mixing speed,solid-liquid ratio,seperation times and static duration,and the optimal separation conditions have been determined using orthogona1 experiment.The result shows that:when used the yield of eggshell as the indicatrix,the optimum eggshell membrane separation conditions are as below:mixing time 20min,liquid ratio of 1∶10,mixing speed 600 r/min,the separation times 4,can get the yield of eggshell up to 94.47%,the membrane residual rate is 0.271 8%,When used the yield of membrane as the indicatrix,the optimum eggshell membrane separation conditions are as below:mixing time 10 min,liquid ratio of 1∶6,mixing speed 400 r/min,the separation times 4,can get the yield of eggshell membrane up to 4.220%,the membrane residual rate is 3.34%.

Abstract:As a kind of food rich in high-quality protein, poultry eggs not only play the most basic nutritional role in national life, but also widely used in bread, pastry, baking and other food industry because of its excellent processing characteristics such as foaming, emulsification and gel properties, besides its active ingredients can also develop new egg products and functional foods. China, a large country producing and consuming of poultry eggs, has ranked first in the annual production of poultry eggs since 1985. However, the consumer market is dominated by fresh eggs, whose processing conversion rate is only about 12%, and it is mainly based on traditional egg products such as salted eggs and preserved eggs. Compared with Western countries, the market share of egg powder, egg liquid, dry egg products, egg drinks, convenient egg products and other new egg products is small in China. In recent years, China’s egg industry has entered the mature stage of development, which takes a favorable trend. In 2022, the output value of China’s egg processing industry has exceeded 400 billion RMB. This paper mainly updates and interprets the history, present situation and prospect of egg processing industry in China.

Abstract:Eggshell membrane is a kind of cheap, abundant resources with great potential utilization value. A variety of active ingredients in it can be used as raw materials for medicine, light industry and other industries. At present, soluble protein, collagen, keratin, sialic acid, hyaluronic acid and antimicrobial protein have been successfully extracted from eggshell membrane and exploited in various fields. This study aimed to separate the eggshell membrane for fully exploiting the potential utilization value of the eggshell, and reduce the amount of waste discharged, which is conducive to protecting the ecological environment on which we depend. In order to reduce energy consumption of eggshell membrane separation, separate eggshell membranes from eggshells by flash evaporation was investigated. The flash separation conditions were optimized considering three independent variables at three different levels by response surface methodology The results showed that the processing parameters of separating eggshell membranes and eggshells with flash evaporation were 1.0 Mpa pressure, 45% moisture content, and 5 mm eggshells' particle size. Under these conditions, the separation rate was 69.16%. Therefore, flash separation can be a promising approach for separating eggshells and eggshell membranes.

Abstract:Eggshell membranes (ESM) contain 90% protein, 3% lipids, 2% sugars, and small amounts of minerals such as calcium and magnesium. Of the 90% of proteins present, 472 proteins species have been identified. ESM provide the initial mineralization platform for eggshell formation, and can be used for to produce adsorbents, cosmetics, and medical products because of their special physical structure and chemical composition. The special physical structure of the eggshell membrane, with disulfide bonds between and within the protein molecules and the cross-linking of lysine-derived and heterochain chains between the eggshell membrane, makes the membrane very difficult to dissolve, with a maximum solubility rate of only 62%. Also, the insolubility of ESM limits its development and use also any related research. Based on the physical structure and chemical composition of the eggshell membrane, this paper reviews the latest research on eggshell membrane separation and membrane protein solubilization to provide a reference for promoting the separation, dissolution, and rational development and use of the avian eggshell membrane.

Abstract:To explore the relationships between the quality and elemental composition,ultra-microstructure of eggshell,sixty-five eggs collected at the same day were used for quality determination.The quality of the eggshell was evaluated by routine methods.The element composition of eggshell was analyzed by X-ray energy dispersive spectroscopy(EDS).The ultra-microstructure of eggshell was observed by environmental scanning electron microscope(SEM).The results showed that the difference of the relative content of elements in eggshells with different strength was not significant.The quality of eggshell was decided by the ultra-microstructure of eggshell,while the effective thickness of mastoid layer and mastoid gap had an important influence on the eggshell strength.The effective thickness of mastoid layer and mastoid gap of high intensity treatment were lower than middle intensity and low intensity treatments by 23.01%(P0.01) and 14.94%(P0.05),73.43%(P0.01) and 25.06%(P0.05) respectively.It was concluded that the density of eggshell ultra-microstructure and the effective thickness of mastoid layer directly influenced the eggshell quality.The relationship between elemental composition and eggshell quality was not significant.

Abstract:Salted duck egg white is a by-product of duck egg processing and high-quality proteins with high nutritional value and good processing properties.However a large amount of salted duck egg white is discarded every year,resulting in a waste of egg resources and polluting the environment at the same time. And only a small amount of salted duck egg white is added to the feed currently.The research of salted duck egg white is summarized in this paper,and aims to provide a reference and theoretical basis for the high value utilization of salted duck egg white,leading to be a useful reference for the reuse of salted duck egg white.

Abstract:Eggshell is rich in calcium, which can be used to make activated calcium carbonate. It can be extensively used in food additives and medicines. The principle and method liked as physical modification and chemical modification for surface modification of calcium carbonate with compound coupling are described. The two methods for preparing ultrafine active carbonate, batch bubble carbonization and multistep carbonization with continuous spray are presented. The applications of the product of development are discussed. The absorption of calcium in the body were introduced briefly in the text, and introducing the application of calcium carbonate in several fields, predicting the development of calcium carbonate in the food field. The research status for preparation of activated calcium carbonate using eggshell in recent years were discussed, and some presumption about using eggshell calcium carbonate convert to the activated calcium carbonate were point out, which aimed to offer the scientific theory for the development and utilization of the eggshell calcium carbonate.

Transcriptome analysis in the shell gland of laying hens affecting eggshell qualities

Abstract:Abstract Background Eggshell plays an important role in protecting against physical damage and microorganic invasion. It is subject to quality loss with increasing hen age, and fragile eggshells result in huge economic losses to the poultry industry. Therefore, improving eggshell quality is particularly important. However, little is known about the potential molecular mechanisms regulating eggshell quality in chickens. Methods In this study, we aimed to compare differential expression of long non-coding RNAs (lncRNAs) and mRNAs between old and young laying hens to identify related candidate genes for chicken shell gland development by the method of high-throughput RNA sequencing (RNA-seq). Results In total, we detected 176 and 383 differentially expressed (DE) lncRNAs and mRNAs, respectively. Moreover, functional annotation analysis based on the Gene Ontology (GO) and Kyoto encyclopedia of genes and genomes (KEGG) databases revealed that DE-lncRNAs and DE-mRNAs were significantly enriched in “phosphate-containing compound metabolic process”, “mitochondrial proton-transporting ATP synthase complex”, “inorganic anion transport”, and other terms related to eggshell calcification and cuticularization. Through integrated analysis, we found that some important genes such as FGF14, COL25A1, GPX8, and GRXCR1 and their corresponding lncRNAs were expressed differentially between two groups, and the results of quantitative real-time polymerase chain reaction (qPCR) among these genes were also in excellent agreement with the sequencing data. In addition, our research indicates that FGF14, COL25A1, GPX8, and the members of the SLC family may be key genes that affect eggshell quality in hens. Conclusions This study provides a catalog of lncRNAs and mRNAs of the laying hen eggshell gland and will contribute to a fuller understanding of the molecular mechanisms of the function of the shell gland in poultry. Our findings will provide a valuable reference for the development of breeding programs aimed at breeding excellent poultry with high eggshell quality or regulating dietary nutrient levels to improve eggshell quality.

Abstract:Egg,which is rich in nutrition,is an important source of animal protein for human and its role in our diet is irreplaceable. With consumers’ increasing awareness of nutrition and health,the quality and safety of egg has received growing attention. The concept and standards of the egg shelf-life,quality and safety indicators such as haugh unit,mass loss rate,yolk index and the content of microorganism and affecting factors,such as temperature,vibration,microbial infection,were reviewed,and the technology used to prolong the egg shelf-life including cleaning and coating,gas regulating packaging and low temperature storage were summarized. Future research directions on egg quality and its shelf-life were presented at the end of this paper.
