Abstract:New techniques for extraction and analysis of natural pigments were introduced.New extraction techniques include(supercritical) fluid extraction,physical assistant extraction,molecular distillation and aqueous two-phase extraction.New analytical techniques are high performance liquid chromatography,high-speed countercurrent chromatography,high performance(capillary) electrophoresis and chromatography-mass spectrometry.Fundamental principles,characteristics and applications of new techniques were discussed,and the existing problems were pointed out.The applications and prospects of new techniques for(extraction) and analysis of natural pigments were explored.

Abstract:Supercritical carbon dioxide was applied in the extraction of capsicum oleoresin with the red capsicum＇s smash as the raw material.With the yield of capsicum oleoresin as an index,the optimal conditions were as follows：pressure（25MPa）,temperature（30℃）,time（3h）,and the extraction rate of capsicum oleoresin up to 10.09%±0.29%.Under the conditions,the color value of the capsicum oleoresin extracted by supercritical carbon dioxide was 303±5 and the mass concentration of capsaicin was 3.7%±0.7%,obviously better than that from soxhlet extraction.With the capsicum oleoresin extracted by supercritical carbon dioxide as the material,the capsicum red pigment and the capsaicin could be primarily separated by another supercritical carbon dioxide extraction.

Abstract:The optimization of conditions for simultaneous extraction of pigment and capsaicin from Capsicum frutescens L.with ethanol as solvent were studied.Some factors,such as the ethanol mass fraction,the ratio of extracted material to solvent,the temperature and time,were studied with orthogonal method.Results showed the successive order of factors affecting extraction of pigment was ethanol mass fractionsolid-liquid ratioextraction temperature extraction time,and the successive order of factors affecting extraction of capsaicin was solid-liquid ratioextraction time extraction temperature ethanol mass fraction.Finally,by studying the single factor of extraction times,the optimum conditions for the extraction of pigment and capsaicin were determined to be 95% ethanol at 50℃ in 1 hour and the solid to liquid ratio 1∶11 for 3 times.

Abstract:Chilli pigment is a kind of substance drawn from the rind of the ripe chilli. As a hot point of the research of natural pigment, it has a high-applied value and a good market in home and abroad. The character of chilli pigment, extracting technics, purifying technology are outlined based on the accomplishments in recent years, and the flow of technics and the quality of products are compared. Some typical methods are enumerated such as organic solvent extraction, column chromatography and Supercritical CO 2 fluid extraction. Furthermore, the viewpoint and suggestion on the farther study of chilli pigment are put forward and they will provide reference for the research.

Abstract:Paprika red extracted from paprika is widely used in food additive,beverage,cosmetic and pharmacy field,which has big market need.In this study,a process for extracting and separating paprika red from paprika was presented.Firstly,hexane was used to extract paprika red from paprika(at temperature of 60℃;with particle size of 20～40 mesh;the volume(mL) to mass(g) ratio of extraction solvent to feed of 5:1;extraction time of 3.5 h;and extraction times of two).Then the crude sample was purified by solvent extraction.In order to optimize the solvent extraction process,the suitable extractant was chosen and the influences of extractant concentration,solvent load and extraction times on the color of paprika red and content of capsaicinoids were investigated.It turns out that the suitable conditions are as follows: under normal temperature,using the solution of ethanol-water(6:4,v/v) as the extraction solvent,R(ratio of feed volume to solvent volume) of 4:1,and extracting one time.Under the above conditions,the color of paprika red and content of capsaicinoids are 87.3 and 0.16%,respectively,which satisfy the requirement of GB10783-2008.
Optimization of Molecular Distillation Separation Conditions for Capsicum Oleoresin by Response Surface Methodology and Antioxidant Activity of Its Separated Components

Abstract:Molecular distillation(MD) was used to purify capsicum oleoresin,and three important process parameters such as distillation temperature,distillation pressure and wiper rolling speed were optimized by response surface methodology for better separation between capsaicinoids and capsicum red pigment.Individual variables and their interactions on the response values capsaicinoid concentration and color value were explored according to Box-Behnken design.A mathematical quadratic polynomial regression equation was established.The optimal process conditions for distillation temperature,distillation pressure and wiper rolling speed were 144 ℃,9.5 Pa and 313 r/min,respectively.Under these conditions,the capsaicinoids concentration was increased to 75.30%,and the color value of capsicum red pigment separated was 19.84.DPPH radical scavenging assay showed that the capsaicinoids separated had good antioxidant activity.

Abstract:The qualities and extraction technology of red pigment of Camellia japonica L.were studied in this paper.The qualitative informations were obtained through solubility,colors in different pH and the absorptions maximum.Various factors that affected the extraction of the red pigment were investigated including extraction temperature,extraction time,extraction times and ratio of liquor to material.Results showed the red pigment was one of the anthocyanins.Also,the extraction technology was as follows:ratio of liquor to material was 10:1,extraction times was three times,extraction time was 15 min,and extraction temperature was 40 ℃.

Abstract:The capsicum red pigment content of 44 pepper materials was determined using organic solvent method to quantitatively analyze capsicum red pigment content change under different cultivation condition,at different development stage and the correlation between pigment content and fruit quality. The results showed that the red pigment content of pepper fruit in outdoor cultivation was much higher than that in greenhouse cultivation,and the average difference on 10 pepper materials was 2.2 g·kg-1. Capsicum red pigment content was negatively correlated with moisture content of fruit,fresh weight and dry weight of the whole fruit. It is shown the bigger pepper fruit had lower pigment content.

Abstract:In this experiment,we studied the best technology of ultrasonic assisted extraction of capsanthin for protecting environmental and saving energy.We used ethyl acetate-an environmentally friendly solvent,discussed a number of factors affect the quality of products,and studied the effect of natural light impact on color value of product,then ruled out the presence of Sudan Red.The results show that,using ultrasonic assisted extraction,under room temperature,extract one time for 60 min,solid/liquid is 1/10(g/mL).The color value of crude extract reached 136.2;the extraction yield was 5.6 %.In natural light after eight days,the residual color value was 57.8 %.We are excited about the discovered that after purify through column chromatography,the color value of product reached 492.2.This method have low energy consumption,no pollution of environment,the product was free of toxic substances and can be used in food,cosmetics,medicine and other fields after simply concentrated.

Abstract:Anthocyanin is a water-soluble pigment, is a class of secondary metabolites, and it belongs to the flavonoid polyphenols. The peel is purple, which caused by the anthocyanin accumulation, so the purple pepper is loved by more and more consumers by high nutritional value and health effects. With the deepening of research about anthocyanin biosynthetic pathways in plants, some research of this aspect are carried out in the purple pepper. This paper mainly discuss the biosynthetic pathway of anthocyanins in purple pepper, and the research progress of the transcription factors that involved in the regulation and the effects of the external environment, which is helpful to have a better understanding of the mechanism of anthocyanin biosynthesis and provide a theoretical reference for the breeding of purple pepper varieties.
An Analysis of Capsaicin, Dihydrocapsaicin, Vitamin C and Flavones in Different Tissues during the Development of Ornamental Pepper

Abstract:As a fruit and vegetable crop, the ornamental pepper is not just highly ornamental but also rich in nutritional value. The quality of ornamental pepper fruits is given in their contents of capsaicin, vitamin C (VC), flavonoids and total phenols. The study concentrated on the accumulation of capsaicin and dihydrocapsaicin in different tissues of 18 peppers during fruit growth and development. The results showed that the pericarp and placenta contained significantly higher levels of capsaicin than dihydrocapsaicin. Additionally, the placenta contained significantly higher levels of both capsaicin and dihydrocapsaicin compared to the pericarp. The content of capsaicin was in the range of 0-6.7915 mg·g-1, the range of dihydrocapsaicin content was 0-5.329 mg·g-1. Interestingly, we found that the pericarp is rich in VC (5.4506 mg·g-1) and the placenta is high in flavonoids (4.8203 mg·g-1) and total phenols (119.63 mg·g-1). The capsaicin is the most important component using the correlation analysis and principal component analysis. The qPCR results substantiated that the expression of genes in the placenta was significantly higher than that in the pericarp and that the expression of genes in green ripening stage was higher than that in red ripening stage. This study could be utilized to select the best ripening stages and tissues to harvest peppers according to the use of the pepper and to the needs of producers. It not only provides a reference for quality improvement and processing for consumers and market but also provides a theoretical basis for high-quality pepper breeding.
