Abstract:Basing on “the new theory of retailing wheel”, the paper begins by analyzing the market position of supermarkets and street fairs about technology edge, and argue the street fairs may offer better services than supermarkets do only in terms of the mix kind of fresh products. As compared with other services, it is less important for the consumer buyer behavior which can reach to consumers maximum utility to have convenient and comfortable purchasing environment. Its no showing advantage in nature for supermarket themselves to supply safety fresh products. In the end, we put forward some countermeasures.

Abstract:With the development of social economy, fresh food sales are increasing and become more important in supermarket operation. However, due to the seasonal impact of fresh products and their perishability, fresh foods can easily deteriorate in transit which lead to losses. The control strategy of fresh product inventory is the key point of supermarket inventory management. Therefore, the inventory control strategy of fresh products is the key of supermarket supply chain management. This paper analyzes the problems existing in the sales and inventory management of fresh pork in Shang Mao Cheng Supermarket, and analyzes the factors affecting the demand with the EOQ model, and establishes an inventory optimization model with the deterioration rate as a constant and the demand influenced by both price and freshness. MATLAB was used to solve the optimal order volume and order cycle and the optimal sales price per day, and the feasible suggestions were put forward for the fresh goods inventory management of the supermarket.

Abstract:By analyzing 359supermarket food safety incidents,this research found that chemical contamination,physical contamination,counterfeit,substandard,and expired food are key regulatory issues of supermarket food safety in China;manufacturer delivery acceptance and sales are critical regulatory links of supermarket food safety.At the acceptance link the main reasons for food safety incidents are foreign matter in food,food spoilage and adulteration,while at the sales link the main problem is selling expired food.Generally,the supermarket food security risk comes mainly from upstream food production enterprises.Thus,as far as the supermarket food safety risk control measures are concerned,the supermarket should strictly standardize the operational requirements,establish a secure food supply chain;the government should crack down on the problems of food production enterprises to curb food risk;and supermarkets and enterprises should actively cooperate in food quality information transmission to prevent the emergence of supermarket food as alemon market.

Abstract:Technology edge is the dominant factor in the transition of retailing format. There are two premises and two further hypotheses. One hypothesis is that consumers with budget constraint will consider price, diversity and freshness as the main elements to obtain the optimum in purchasing fresh products. The other is that the corner solution, which ensures the fresh product safety, determines the buyers' behavior, and if there is no corner solution, buyers will consider comprehensive standards to choose the purchasing place. Though it is supposed to be safety predominance in supermarket, actually it hardly comes into buyers' view. It is also found that the comfortable and convenient purchasing environment in supermarket is only a minor factor for the consumer.

Abstract:It is an acknowledged truth that the circulative loss of the fresh agricultural products is high, which has been laying store by the ministry of agriculture in China nowadays.The fresh agricultural products supply chain coordination under the physical loss-controlling is studied in virtue of the theories and techniques for deteriorating inventory management.The controlling method that decreasing the period profit leads to decreasing the loss more heavily is proposed,and the feasibility of the method is proved. The conclusion implies that the system profit under the centralized decision is more than the profit sum under the decentralized decision;when the system ordering period equals to the retailer's optimal ordering period under the decentralized decision,the system loss is least.

Abstract:Based on the truth that the study on fresh agricultural products inventory is few and the circulative loss of the fresh agricultural products is high,a deteriorating inventory model is developed with greenness in consideration.Then,an ordering policy of fresh agricultural products is studied under elastic demand,progressive price discount and loss-controlling.The conclusion implies that loss-controlling can contribute to save social resources and increase profit of retailers,but the retailers have no drive to decrease the loss in discount period of time.Therefore,suggestions that unifying the selling price by department of intendance in begin period of time in a region to inspire the retailer controlling the loss is proposed.

Abstract:The agricultural product business in urban supermarkets has developed to some extent in China. However, it is still at the stage of intense competition with the free markets. The emergence and development of the supermarkets' agricultural product business are decided by the factors such as economy, technology, population and so on. This paper shows that the factors of price and quality are determinant for the supermarkets' agricultural product business from the point of view of consumers. It is mainly because that on one hand, price and quality will affect consumers' choice of purchasing channels of agricultural products, which further influence the operation of supermarkets' agricultural product business. The supermarkets' endeavors in reducing the price premium to the free market as well as improving the quality image in the eyes of consumers will attract consumers purchase agricultural products more in supermarkets. On the other hand, prices and quality will also affect the supermarkets' agricultural product business through affecting consumers' willingness to pay for the agricultural products in supermarkets. And the supermarkets' unremitting efforts on the strict management of cost and quality will increase consumers' surplus of purchaser continuously, thereby enhance the attractiveness of the agricultural products in supermarkets to consumers.
