Abstract:The risk assessment for imported and exported food is a complex system process,which involves a large number of assessment factors and relies on effective risk evaluation model.In the paper,risk assessment method for imported and exported food based on risk assessment index hierarchy of food safety adapted for food supervision authorities and set pair analysis(SPA) theory is presented,which establishes the connection degree expression between the safety status of food samples and the food safety standards to assess the risk level of food samples.The method also takes the difference of calculating connection degree between qualitative and quantitative indexes into consideration.Finally,the effectiveness and feasibility of the presented method is proved by an example.

Abstract:Aiming to address the problems and difficulties in the existing environmental risk management system of China,the concept of national environmental risk management system was discussed firstly,and then the experiences of the USA and Europe in their environmental risk prevention and control were summarized.Based on that,the four-dimension in one system for environmental risk management at national level as well as its supporting institutional framework was proposed.Lastly,the urgent tasks in environmental risk prevention and control for policy-makers of China to consider and act upon were listed.

Abstract:The aim of evaluation for food safety is to evaluate the food safety state with the hazard analytical data of various foods,and support the decision-making for administrators.In this paper,a new evaluation method for food safety,based on fuzzy evaluation theory was presented,where the variety of food,variety of hazard and difference of toxicity for hazard was considered,and the measurement data for every hazard was used to evaluate the risk index of the corresponding food using fuzzy mathematical method.Then the complex index of safety was completed.Finally,the analytical data of safety food imported to a coastal city was evaluated.

Abstract:In recent years, food safety events occurred frequently, which caused consumers to show a lower level confidence in safety of food. Food safety information disclosure system is one of the important part of food safety supervision system, which is an important link in food safety regulation, and is helpful to transparency and publication of food safety information. The purpose is to improve food security and establish the correct view of consumption. This paper analyzed the main problems and difficulties of disclosing information in China and revealed the difference between China and USA. Meanwhile, it analyzed the subject, content, mode, platform, laws and regulations of food safety information disclosure system of USA. The comparison revealed difference of food safety information disclosure between China and America. Then some suggestions to improve China’s food safety information disclosure system were explained in order to provide certain theoretical reference for improving food safety information disclosure mechanism.

Abstract:Objective To make survey and analysis on food safety confidence of the 1613 urban resi-dents in Zhejiang Province. Methods Questionnaire survey of urban residents in Zhejiang Province on food safety knowledge, information sources and other aspects of handling the problem on 1613 residents had been investigated, which explored the consumers’ attentions, perceptions and confidence level of the current food safety issues, then analyzed the reasons for these problems, proposed of substantive measures. Results The ratio of the people focused on food safety was 67.95%, of which 26~50 years old, high school and above accounted for the majority. When meeting food quality problems, 50.34% of consumers hold it’s better to save trouble attitude and 39.99%consumers said they were not confident of China’s food safety. Conclusion Government departments, enterprises, individual consumers improved food security, established the correct view of consumption and consumer rights awareness was a feasible way to rebuild confidence in the safety of food.

Abstract:In recent years, domestic and international food safety incidents occurred frequently.Establishment of food safety traceability system is an important way to ensure food safety , and it has attracted more and more attention. This article analyzed China's food safety traceability system , proceeding from the definition of food safety traceability,analyzing the significance of the establishment of food safety traceability system and introducing the development history and current situation of it at home and abroad .Meanwhile ,it analyzed the current problems of our traceability system and put forward the corresponding countermeasures and suggestions for improvement.

Abstract:Based on a survey of 117 food enterprises in Zhejiang Province, China, this paper presents the results with respect to the adoption of the hazard analysis and critical control point (HACCP) system in the Chinese food industry with special emphasis on the food enterprises without an HACCP system. The findings suggest that compared with those that have adopted an HACCP system, the food enterprises that have not adopted HACCP system can be identified by the following criteria, small- and medium-sized enterprises (SMEs), suppliers of the domestic market which have not implemented other quality management systems and of which managers have relatively low education levels and who have a limited perception of the HACCP system. The results also indicate that food enterprises without an HACCP system in practice are more sensitive to external factor incentives such as consumer awareness of food safety and extension and support from the government. A number of possible methods to encourage the adoption of the HACCP system by the Chinese food industry can be identified from this empirical study.

Abstract:Based on literature review,this paper explores HACCP system decision mechanisms implemented by 117 domestic:food companies and analyzes the cost and benefit of those 66 companies which have implemented HACCP system.The behave motivation factors and main constrains are found,which influences food co-mpanirs' adoption HACCP system ay present.Therefore,the control method with market-stimulating in dominant position and administrative regulation in the complementary position is proposed.And it is also suggested that strategy of propelling the extension of compulsory HACCP certification gradually should be implemented in those large enterprises,especially in those with export advantages.And corresponding specific measurements are given finally

Frontiers in Sustainable Food Systems

Abstract:Background: Food safety has always been a major concern for people, and frequent food safety incidents pose a serious threat to people's health and safety. To identify high-risk patterns in the field of food safety and assist regulatory authorities in scientifically managing food safety risks, this study aims to evaluate food safety risks from multiple dimensions and provide a scientific basis for formulating targeted food safety management measures. Methods: The risk matrix method, along with the Borda method, is used to evaluate food safety risks. Based on the constructed food safety incident database, the risk matrix method is applied for static risk assessment from seven aspects: food categories, years, provinces, incident entities, causes, pollution sources, and links, and for dynamic risk assessment in different provinces. Results: The top five food categories in risk ranking are meat and meat products, fruits and vegetables, grain and grain products, other category, and aquatic products. Food safety risks show an increasing trend year by year, with the years 2006, 2012-2015 and 2019 having higher risk rankings. The top three provinces in risk ranking are Hunan, Guangdong, and Shaanxi. The top four entities in risk ranking are restaurants, enterprises, households, and canteens. The top four causes in risk ranking are human intention, human error, mismanagement, and production and social environment. The top four pollution sources in risk ranking include chemical pollution, other pollution, biological pollution, and food additives. The top three links in risk ranking include production and processing link, catering link, and agricultural production link. Across provinces, food safety risks in the years 2012-2015 are generally higher compared to other years, with the highest number of high-risk provinces in 2014. Implication: The findings of this study have significant implications for food safety management in China. By implementing food safety risk prevention and control countermeasures proposed, China can strengthen its food safety management framework, reduce the incidence of food safety incidents, and safeguard the health and well-being of its population.

Abstract:In order to evaluate China's food safety risk,on the basis of catastrophe theory and structure stability theory,the food safety risk assessment indexes were designed from the food chain perspective,the risk degrees existing in productive link,circulative link and consumptive link were estimated respectively.Thus,the total risk degree of China's food safety in recent years was obtained,and the deficiencies for food safety were identified.The results show that the risk degree existing in productive link takes on a trend of decline,while the risk degrees existing in circulative link and consumptive link fluctuate greatly,and the risk degree in consumptive link is on the rise as a whole.So food control in circulative and consumptive links needs strengthening.On the whole,the risk degree of China's food safety is falling with short fluctuations,yet food safety still needs great attention.

Abstract:<p>Food safety risks has received great attention in all world. And the reasonable effectiveness of security warnings can reduce public panic and risk losses. Therefore, this paper proposes an improved risk early warning method for food safety detection data based on the analytic hierarchy process (AHP) integrating the quality control analysis method. The AHP based on the entropy weight can obtain risk values for food safety component data. And the risk matrix of the risk component is obtained by the risk probabilities of the components. Then the corresponding risk levels are calculated using the quality control analysis method to release the risk warning information. Finally, a case study of dairy product safety data from the GuiZhou province in China is conducted to verify the feasibility and reliability of the proposed method. Moreover, the proposed method can scientifically and reasonably determine the risk level information. Furthermore, the risk management is provided to effectively reduce risk losses of the country though relevant quality inspection departments.</p>

Abstract:Abstract In recent years, with the frequent occurrence of food safety problems, people have begun to pay attention to food safety, especially the food safety of hotels. This paper proposed a Hazard Analysis and Critical Control Point (HACCP) management system to analyze food safety issues of hotels in order to improve the food quality and safety in hotel management. Through the practical application of the HACCP management system in the hotel catering industry, it was found that the amount of bacteria greatly reduced and the pass rate of tableware disinfection increased significantly in the hotel's food processing links, while customer satisfaction greatly improved. Therefore, the HACCP management system had great applicability in improving the food quality and safety of hotels.

Abstract:Ensuring the chemical, physical, and microbial safety of food and ingredients underpins the international trade of food items and is integral to building consumer confidence. Achieving this requires effective systems to support the safety of food across the supply chain. Differing risk-assessment approaches are utilized globally for establishing food safety systems, and bench marking these approaches against international food safety standards can assist in the development of country-specific systems. This China-Australia collaborative review examined similarities and differences in the food safety risk-assessment systems of China, Australia/New Zealand, Canada, and the United States, with the view to identify areas that could support improvements to the Chinese system. Key differences include the level of cohesiveness among stakeholders and the level to which each country promotes the international harmonization of standards. The evidence highlights a need for greater capacity-building in risk assessment in China that may support greater stakeholders' cohesion, improve hazard identification, and allow regulators to more readily keep abreast of changes to international standards. This review may help the Chinese food industry to replicate the same level of food safety risk assessment currently applied by other key countries, and reflects the determination, government prioritization, and active strengthening of China's National Centre for Food Safety Risk Assessment currently underway.

Abstract:The safety assessment of nanomaterials in food is essential for safeguarding supervision and maintaining public health. However, there are still no safety assessment procedures for nanomaterials established in national-level in China and no specific toxicology and safety assessment procedures about nanomaterials for food, too. These factors lead to restriction on food safety protection and supervision. Current methods of evaluating the safety of nanomaterials mainly rely on traditional toxicological assessment that are extrapolated based on animal experiment from high doses to low doses and from animals to humans. These uncertainties restrict the accuracy of safety assessment for nanomaterials and also limit the development of scientific and effective evaluation procedures and regulatory measures. Currently, the key issues need to be solved including exposure assessment and evaluation methods of nanomaterials in food and the established methods of the toxicity test for nanomaterials that are consistent with the objectives of toxicity test in the 21st century vision and strategy. In this article, we reviewed current administrative regulatory, situations, and existing issues of food nanomaterials either in China or some developed countries in order to provide a scientific basis in establishing safety assessment procedures for nanomaterials in food in the future.

Abstract:There are many serious potential hazards in China today but the risk analysis and management still linger on very low level.Based on the comparative analysis of the existing models,a concept model of community-based overall process risk management system(COPRMS) is presented in this paper.The new model is an integrated risk management model combining two opposite approaches of to and bottom to top which emphasizes the policy support from the government in higher level and the public participation in communities during the whole process of risk management.The theories and applications of COPRMS model are discussed in this paper.
