Abstract:In recent years, food safety events occurred frequently, which caused consumers to show a lower level confidence in safety of food. Food safety information disclosure system is one of the important part of food safety supervision system, which is an important link in food safety regulation, and is helpful to transparency and publication of food safety information. The purpose is to improve food security and establish the correct view of consumption. This paper analyzed the main problems and difficulties of disclosing information in China and revealed the difference between China and USA. Meanwhile, it analyzed the subject, content, mode, platform, laws and regulations of food safety information disclosure system of USA. The comparison revealed difference of food safety information disclosure between China and America. Then some suggestions to improve China’s food safety information disclosure system were explained in order to provide certain theoretical reference for improving food safety information disclosure mechanism.

Abstract:Objective To make survey and analysis on food safety confidence of the 1613 urban resi-dents in Zhejiang Province. Methods Questionnaire survey of urban residents in Zhejiang Province on food safety knowledge, information sources and other aspects of handling the problem on 1613 residents had been investigated, which explored the consumers’ attentions, perceptions and confidence level of the current food safety issues, then analyzed the reasons for these problems, proposed of substantive measures. Results The ratio of the people focused on food safety was 67.95%, of which 26~50 years old, high school and above accounted for the majority. When meeting food quality problems, 50.34% of consumers hold it’s better to save trouble attitude and 39.99%consumers said they were not confident of China’s food safety. Conclusion Government departments, enterprises, individual consumers improved food security, established the correct view of consumption and consumer rights awareness was a feasible way to rebuild confidence in the safety of food.

Abstract:In recent years, domestic and international food safety incidents occurred frequently.Establishment of food safety traceability system is an important way to ensure food safety , and it has attracted more and more attention. This article analyzed China's food safety traceability system , proceeding from the definition of food safety traceability,analyzing the significance of the establishment of food safety traceability system and introducing the development history and current situation of it at home and abroad .Meanwhile ,it analyzed the current problems of our traceability system and put forward the corresponding countermeasures and suggestions for improvement.

Abstract:Based on literature review,this paper explores HACCP system decision mechanisms implemented by 117 domestic:food companies and analyzes the cost and benefit of those 66 companies which have implemented HACCP system.The behave motivation factors and main constrains are found,which influences food co-mpanirs' adoption HACCP system ay present.Therefore,the control method with market-stimulating in dominant position and administrative regulation in the complementary position is proposed.And it is also suggested that strategy of propelling the extension of compulsory HACCP certification gradually should be implemented in those large enterprises,especially in those with export advantages.And corresponding specific measurements are given finally

Abstract:Prevalence of pathogenic bacteria in food commodities in China have been reported in numerous publications over time. However, the results are scattered and varied. To calculate a robust point estimate with a higher statistical power, we applied meta-analytic approach for investigating the prevalence of common foodborne pathogens in major food items in China. Data, on prevalence of bacteria in various food commodities were extracted and analyzed from 361 (132 English and 229 Chinese) publications. Prevalence of eight most frequently reported pathogens on six broad food categories was used for pooled and subgroup meta-analysis by DerSimonian-Laird method in random-effects model. The estimated overall prevalence of pathogens in the foods was 8.5% (95% CI 8.2-8.7). The highest prevalence, irrespective of the pathogen type, was in the aquatic produce at 12.8% (12.0-13.5), while the least was in the vegetables at 3.0% (2.6-3.4). Among the pathogens, the most prevalent was Vibrio at 21.3% (19.6-23.1), whereas the least was pathogenic Escherichia coli at 4.3% (3.3-5.2). The major food pathogens in Chinese foods in decreasing order of prevalence were Vibrio parahaemolyticus, Campylobacter, Bacillus cereus, Staphylococcus aureus, Salmonella, Enterobacter, Listeria monocytogenes, and pathogenic E. coli. Presence of these organisms in foods equates the risk of microbiological food safety in China with other developed countries rather than the developing countries. This justifies the need of novel perspectives for formulating policies on microbiological food safety and risk mitigation.
Moving Forward to the Future: A Review of Microbial Food Safety Education in China

Abstract:Millions of foodborne illness cases occur in China annually, causing significant social and economic burdens. Improper food handling has been observed not only among commercial food handlers but also among residential food handlers. It is critical to conduct a comprehensive scoping review of previous efforts to identify food safety knowledge gaps, explore the factors impacting knowledge levels, and synthesize the effectiveness of all types of food safety educational interventions for commercial and residential food handlers in China. This review aims to analyze food safety education studies published over the past 20 years and provide foundations for developing more effective food safety educational interventions in China. A total of 35 studies were included in this review. Most studies reported that Chinese commercial and residential food handlers had insufficient food safety knowledge, especially in the areas of foodborne pathogens and safe food-handling practices. The factors impacting food handlers' knowledge levels included education level, gender, income level, residency (rural vs. urban), the use of WeMedia, college students' major, and food safety training experiences. Food handlers in the following demographic groups tend to have lower levels of food safety knowledge: lower education levels, the elderly, males, lower-income levels, rural residents, those who do not use WeMedia, those without food safety training experience, or college students in nonbiology-focused majors. Many food handlers did not always follow recommended food safety practices, such as proper meat handling practices, handwashing practices, and cleaning and sanitation practices. Thirteen studies evaluated the effectiveness of educational interventions, and knowledge increases were reported after all interventions. The findings of this review provide guidance to researchers, educators, and government agencies in their future efforts to develop education programs emphasizing the importance of microbial food-safety content and behavior change regarding food safety and hygiene practices.
A Review on the Research of Food Safety Issue in Rural Areas of China in Recent Years

Abstract:Researches of domestic scholars on the rural food safety issue can be categorized into three aspects: first,the main problems of rural food safety; second,factors affecting food safety in rural areas; and third,suggestions and countermeasures for solving the problems of rural food safety. The food safety problem in rural areas mainly includes source pollution of food production,non-standardized food production and hidden trouble through food circulation. The food safety problem in rural areas mainly lies in the fact that the farmers have very lower purchasing power and lack food safety awareness,and government supervision does not work properly. The suggestions and countermeasures to solve the problem given in the paper include increasing farmers' income,intensifying food safety awareness advocating,and perfecting laws and regulations. These researches,however,failed to take into consideration the marketing departments of food enterprise,and fewer quantitative analyses in the study of food safety have been done so far in China. How to enhance the government supervision,strengthen the enterprise's marketing management and integrate management,raise farmers' food safety awareness and consciousness will be some new academic research directions to solve food safety problems in China's rural areas.

International Food Safety Standards: Catalysts for Increased Chinese Food Quality?

Abstract:During the last 10-15 years the question about food safety has increasingly been a topic of great concern nationally and internationally. Traditionally there has been a conflict of interest between the developed countries with higher food safety standards and the developing countries with lower food safety rules. As long as adequate international rules persist the view of standards as barriers should be replaced by the view of standards as catalysts for increased food quality. This article looks at the food safety issue in China, the largest developing country. The Chinese exports of food products have been confronted with trade restrictions because the products did not comply with the high food standards in the USA, the EU and Japan. These difficulties have contributed to a greater concern in China about the quality of the food products. In the last ten years a series of changes in the rules and in the administration have taken place. It is a complicated task because it touches the whole food chain. The article tries to cast light on these important questions. What have been the consequences of inadequate food safety regulations in China? What have been done until now to improve the food quality standards in China? What further initiatives should be taken to improve the situation in the future?

Abstract:Economic development and the evolution of food industry not only help to meet the human needs for food, but also cause worldwide health problems. Due to the imbalance of economic development and the difference of dietary habits, the population in China is faced with the problem of excessive food intake, obesity and the possible deficiency of some nutrients. In the past few decades, the food industry has profoundly affected people's intake patterns of nutrients such as energy, fat, salt and added sugar, as well as changed the nutritional structure of food and the risk of exposure to harmful substances. Food contamination caused by pathogenic microorganisms, pesticides and heavy metals are serious concerns. The dietary guidelines for Chinese residents provide basic principles for guiding the dietary behaviors of the public, but their implementation is hampered by people's lack of understanding of food and nutrition, traditional dietary habits, media misinformation and other factors. How to provide healthy and safe food for the people is an important issue at present. This paper discusses some basic concepts of healthy diet, how to promote healthy eating habits through education, how to preserve and process food to maintain nutrition, how to control food safety hazards, and other dietary related approaches that can promote health.
Evaluation of food safety on traditional Chinese snacks based on system safety theory: The case study of Wuhan hot-dry noodles

Abstract:Wuhan hot-dry noodles, as one of the traditional Chinese snacks, have been famous in most parts of China for nearly 100 years. Its characteristic, taste, and quick cooking method cater to the needs of many people. However, food safety has become an essential obstacle in developing Wuhan hot-dry noodles. The present work developed evaluation indicators, and selected an entropy method to analyse the food safety problems of Wuhan hot-dry noodles based on the system safety theory. Results showed that the score was 2.59 over 5.00, which meant the performance was below average. This could have been due to poor perception of employees on food safety, primary enterprise management, and less effective and authoritative standards within the industry. Based on the system theory, the present work suggested engineering, education, and enforcement, namely the "3E principle", to solve the above problems. The key to the "3E principle" is to focus on identifying, controlling, and evaluating hazards around the most critical issues, and solving them in order of importance and urgency. The "3E principle" also emphasises circular processing for better food safety.

Abstract:This paper discusses the framework of China's food safety standards and provides a brief overview of the problems and developmental characteristics of food safety in China. The composition and characteristics of China's food safety standards are revealed by an analysis of the changes in China's general food standards, an overview of the characteristics of the hygiene requirements in the production and operation process, and an introduction to food product and test method standards. In conclusion, Chinese food safety standards are still being improved, but they must also be effectively implemented and followed up in real time in order to continuously improve the quality of food and reduce food safety incidents. © 2024 Society of Chemical Industry.

Abstract:Background: Food safety has always been a major concern for people, and frequent food safety incidents pose a serious threat to people's health and safety. To identify high-risk patterns in the field of food safety and assist regulatory authorities in scientifically managing food safety risks, this study aims to evaluate food safety risks from multiple dimensions and provide a scientific basis for formulating targeted food safety management measures. Methods: The risk matrix method, along with the Borda method, is used to evaluate food safety risks. Based on the constructed food safety incident database, the risk matrix method is applied for static risk assessment from seven aspects: food categories, years, provinces, incident entities, causes, pollution sources, and links, and for dynamic risk assessment in different provinces. Results: The top five food categories in risk ranking are meat and meat products, fruits and vegetables, grain and grain products, other category, and aquatic products. Food safety risks show an increasing trend year by year, with the years 2006, 2012-2015 and 2019 having higher risk rankings. The top three provinces in risk ranking are Hunan, Guangdong, and Shaanxi. The top four entities in risk ranking are restaurants, enterprises, households, and canteens. The top four causes in risk ranking are human intention, human error, mismanagement, and production and social environment. The top four pollution sources in risk ranking include chemical pollution, other pollution, biological pollution, and food additives. The top three links in risk ranking include production and processing link, catering link, and agricultural production link. Across provinces, food safety risks in the years 2012-2015 are generally higher compared to other years, with the highest number of high-risk provinces in 2014. Implication: The findings of this study have significant implications for food safety management in China. By implementing food safety risk prevention and control countermeasures proposed, China can strengthen its food safety management framework, reduce the incidence of food safety incidents, and safeguard the health and well-being of its population.

Abstract:Despite the increasingly sophisticated management systems in China, food safety issues continue to be a persistent problem. This paper examines the underlying issues behind food safety regulation in China, focusing on the recent surge in incidents. Against the backdrop of a risk society, food safety issues have become a hot topic in Chinese society today. Our research on it should not only be limited to interpreting it as a shallow phenomenon of unscrupulous businessmen profiting at the expense of conscience, nor should it be simply attributed to the negative effects of modern food chemical technology development. Instead, we should start from the perspective of the theory of risk society to gain a more thorough understanding and comprehensive reflection. The backdrop of a risk society in transition, China's food safety problem has become increasingly severe. To better withstand risks and move towards a safer society, it is essential to fully recognize the importance of food safety and establish a scientific and reasonable system of risk governance through improving legal mechanisms, risk communication and interest mechanisms.

Abstract:Objective To provide reference to food safety supervision and management by analyzing the characteristics and trends of food safety incidents reported by media in 2013 in china.Methods Data were collected and collated from food safety incidents reported by printed media,major web portals,news websites and public opinion reports of the government during 2013.1.1 and 2013.12.31 with their occurrence characteristics and trends studied.Results Food safety incidents reported by media added up to 740 cases during 2013.1.1 and 2013.12.31 in China,of which the most reported was in Guangdong province,with 130accounting for 17.6% of the total,next followed by Shandong,Zhejiang and Jiangsu provinces.The number of incidents reported by months did not show an obvious trend,yet incidents occurred more frequently in September and October.As for related food types,164 incidents (22.2% of the total) related to poultry meat and meat products;snacks were involved in 53 incidents,accounting for 7.2% of the total.Nearly 2/3 of the incidents resulted from problems of production and processing links,among which 13.9% were from the production of primary agricultural products,10.2% and 8% from sales &circulation,and catering consumption respectively.About 40% of the food safety issues reported by media were related to circulation.As for nature of the incidents,pathogenic micro organisms,pesticides or veterinary drug residues and excessive contents of heavy metals was 22%,followed by processing with non-food raw materials or adding non-food chemicals.31.8% of hazards or potential hazards in reported food safety incidents during 2013 were food additives and illegal additives.Conclusion Food safety incidents involving meat,meat products and snacks had a relatively higher occurrence.Food production,processing and circulation became high risk links in food safety issues.Pathogenic micro organisms,pesticides or veterinary drug residues,excessive contents of heavy metals and violation of food additives management were relatively serious problems.Chemical hazard was one of the major hazards in food safety issues.

Abstract:The past decade has seen what could reasonably be called an explosion in the number of food-related crises in China. Food safety issues represent a national crisis threatening the physical and psychological health of Chinese citizens, despite the repeated adoption of stringent food safety laws and regulations. This project, based on a stratified random sample of 337 households in Nanjing, assesses perceptions related to different food safety concerns and issues among urban residents and explores differences in perceptions across social strata as defined by socioeconomic and demographic variables using principal component analysis and standard statistical tests.

Abstract:Food safety is related to health and quality of life. Therefore, the social responsibility of the food industry to ensure food safety has received increasing attention. Influencing factors and mechanisms of participation in food safety certification are important issues in this field. Existing studies on factors affecting food safety certification mainly focus on the impact of a single or few factors. In this study, listed Chinese food companies were selected, and the fuzzy set qualitative comparative analysis method was utilized to explore the matching mode of various factors to encourage companies to obtain food safety certification. The following results were obtained. (1) State-owned companies tend to achieve food safety certification. (2) Companies with high media attention are inclined to achieve food safety certification. (3) In state-owned companies, when the company size is small, a higher degree of food safety concern in the mission statement can encourage the company to achieve food safety certification, and when the company size is large, higher media attention can encourage the company to achieve food safety certification. (4) In non-state-owned companies, when food safety concerns are highlighted in the mission statement and media attention is relatively high, the company will gain food safety certification. This study provides new perspectives on food safety-related research and suggestions for government and the public sector to supervise food safety issues in enterprises.
