Abstract:Protein phosphorylation is the most important mode of post-translational modifications.Protein phosphorylation and dephosphorylation play a critical regulation function in the whole process of vital movement.The major objectives of the present phosphoproteomics include the isolation of global phosphorylation protein in the cell,the generation of global phosphorylation protein map,and the identification of phosphorylated site on phosphorylation protein,and then regulation functional analysis of phosphorylation and dephosphorylation in the life process.On the basis of introducing the research approaches and the latest progress on plant phosphoproteomics,this paper also looks into the prospects of phosphoproteomics.

Abstract:Protein oxidation is one of the major causes of quality deterioration in meat and meat products during processing and storage.Protein oxidation results in physicochemical and structural changes,therefore,leading to changes in nutritional and functional properties.Mechanism,effects and antioxidant strategies against protein oxidation were reviewed in the present paper and prospects were also described,to provide theoretical instructions for controlling meat quality and prolonging shelf-life in terms of protein oxidation.

Abstract:The peanut is an important source of plant proteins,but its application in food industry of natural peanut protein is limited by its undesirable functional characteristics.The modification of peanut protein property has become a preferable topic in plant protein processing.This paper briefly outlined the nutritional and functional properties of peanut proteins,the types of modification and then the progress of modification research about peanut protein in areas,with an emphasis on the recent advance on the modified properties caused by enzymatic reaction.The prospects for development of the processed products and production of bioactive peptides by enzymatic hydrolysis from peanut proteins were proposed accordingly.it has been found that the exploration of peanut protein modification and its functional properties contributed to new application ways of peanut and to enhance its application value.

Abstract:Protein post-translational modification plays an important role in organism. It makes the protein obtain more complicated structures, perfect functions, more accurate regulations and more specific operations. The most common protein post-translational modifications include ubiquitylation, phosphorylation, glycosylation, lipodation, methylation, and acetylation and so on. Ubiquitylation plays an essential role in cellular functions such as cellular differentiation, apoptosis, DNA repair, antigen processing, and stress response. Phosphorylation is related to physiological and pathological processes including cellular signal conduction, nervous activity, muscle contraction and proliferation, development and differentiation of cells. Protein glycosylation is of great importance for many cell processes like immunoprotection, virus replication, cell growth, and occurrence of inflammation and so on. Lipodation is vital to signal conduction. Histone methylation and acetylation are responsible for transcription regulation. In vivo, different post-translational modifications do not occur isolatedly, but influence each other's function and cooperate with each other. Understanding what influences the post-translational modifications will help to uncover cellular processes and protein network in molecular level and finally direct more precise drug design targeting molecules. Post-translational modification mimics are set to dominate the next wave of protein therapeutics and become powerful medicinal tools in the 21st century.

Abstract:Phytoalexins are antimicrobial compounds of low molecular weight that are synthesized and accumulated in plants after exposure to microorganisms.Recent studies have revealed that phytoalexins carry a variety of nutrition and have numerous biological functions including antioxidant activity,anti-inflammation activity and anti-cancer activity.Thus phytoalexins as a crucial secondary metabolite,have a great potential to be applied in the fields of functional food and dietary supplement.This paper was an overall study on the variety,beneficial property,elicitation and accumulation of phytoalexins in plants,which provided an evidence and a guideline for the selectivity of phytoalexins for food functional component.

Abstract:Proteins are present in a wide range of our everyday foods and complex macromolecules made up of one or more polypeptide chains. From these common foods, a large number of bioactive peptides can be produced. An array of biological health effects has been attributed to these peptides, including antioxidative, antihypertensive, antidiabetic, anticoagulant, antithrombotic, anti-inflammatory, hypocholesterolemic and immunomodulating. The chemical structure of biologically active peptides is closely related to its specific biological activity. Furthermore, the amino acid composition and sequence information of peptide molecular chain have an important influence on its physiological activity. Food-derived bioactive peptides are typically released from animal and plant proteins via enzymatic hydrolysis under in vitro or in vivo conditions using different kinds of protease. However, the production, separation and purification of bioactive peptides with desired specific functions have become a focus and challenge. In addition, further studies are needed on the mechanism of action and multiple biological functionalities. Theresent review focuses on the recent biotechnological advances in the production, purification and identification of bioactive peptides were. Structure-activity relationship and methods to evaluate several common food-derived bioactive peptides were reviewed as well.

This review covered seven chemical modification methods such as protein cross-linking modification,small-molecules chemical modification,and cofactor modification,and three genetic engineering methods such as molecular orientation modification and site-directed mutagenesis modification,as well as their applications in the food,pharmaceutical and chemical industries. Additionally,the prospects of enzymatic modification development also be highlighted.

Abstract:Among the common natural biomolecules, the excellent properties of proteins have attracted extensive attention from researchers for functional applications, however, in native form proteins have many limitations in the performance of their functional attribute. However, with the deepening of research, it has been found that the combination of natural active substances such as polyphenols, polysaccharides, etc. with protein molecules will make the composite system have stronger functional properties, while the utilization of pH-driven method, ultrasonic treatment, heat treatment, etc. not only provides a guarantee for the overall protein-based composite system, but also gives more possibilities to the protein-composite system. Protein composite systems are emerging in the fields of novel active packaging, functional factor delivery systems and gel systems with high medical value. The products of these protein composite systems usually have high functional properties, mainly due to the interaction of the remaining natural active substances with protein molecules, which can be broadly categorized into covalent interactions and non-covalent interactions, and which, despite the differences in these interactions, together constitute the cornerstone for the stability of protein composite systems and for in-depth research.

Abstract:In the field of food science,protein and polysaccharide glycosylation based on Maillard reaction mechanism is an effective and green method for protein modification,and belongs to the category of chemical modification of protein.In this reaction,protein is covalently grafted with sugar,and the reaction proceeds spontaneously by heating alone and does not require addition of any chemical catalyst.Previous studies have shown that protein glycosylation is one of the effective ways to improve the functional properties and other application features of proteins.In this paper,the structure and reaction mechanism of protein glycosylation,major function of sugar chain in protein glycosylation,method of glycosylation,and research directions of protein glycosylation were introduced and discussed.Due to certain limitations of protein glycosylation methods,it is difficult to achieve controllability,industrialization,and large-scale applications.The areas that receive wide attention include methodologies to utilize interdisciplinary approaches to study the existing glycosylation methods,and controllability and industrialization of the glycosylation process.Moreover,methods to expand the application of glycosylated products will also be a potential hot research topic in the future.

Abstract:Modification of functional properties by glycosylating with polysaccharides is an effective solution to improve the internal disadvantages of native proteins. Generally, protein glycosylation belongs to the first stage of the Maillard reaction in essence. Dry-heating, wet-heating, and their combination are the major methods for the preparation of protein-polysaccharide conjugates (PPC). Spectrophotometry, spectroscopy, electrophoresis, calorimetry, chromatography, and mass spectrometry are confirmed to be the most effective methods for the identification of PPC. After glycosylation, functionalities of the native protein, including solubility, rheological properties, emulsifying properties, foaming properties, gel property, film-forming properties, thermal stability, antioxidant activity, allergenicity, and antibacterial properties, are improved. The PPC is extensively used as an encapsulation or a delivering material in order to improve the bioaccessibility of bioactive compounds in food system. Some new applications in food processing could be explored using PPC as an ingredient based on the improved functional properties, such as 3-dimensional printing food, gelled food, and colloid food. Furthermore, the model of protein glycosylation and the application of PPC in food processing could be extended to other protein modification to broaden the exploitation of native protein resource for the processing of novel foods.

Abstract:With increasing consumer health awareness and demand from some vegans, plant proteins have received a lot of attention. Plant proteins have many advantages over animal proteins. However, the application of plant proteins is limited by a number of factors and there is a need to improve their functional properties to enable a wider range of applications. This paper describes the advantages and disadvantages of traditional methods of modifying plant proteins and the appropriate timing for their use, and collates and describes a method with fewer applications in the food industry: the Hofmeister effect. It is extremely simple but efficient in some respects compared to traditional methods. The paper provides theoretical guidance for the further development of plant protein-based food products and a reference value basis for improving the functional properties of proteins to enhance their applications in the food industry, pharmaceuticals and other fields.

Abstract:Background: Protein is an essential component of human diet and can be applied to many aspects in food systems due to its abundant nutritional value and functional properties. There are many physical methods that have been used to modify the inherent structure of protein to expand its application areas in the food industry. Among them, electric fields and electromagnetic wave technologies have attracted increasing attention on their abilities to modify food protein structure and functionality, due to the advantages of energy efficiency, food safety and minimal loss of nutrients. Scope and approach: The current review presents the effects of electric fields and electromagnetic wave including pulsed electric field, microwave, radio frequency and gamma irradiation on the changes in food protein structure (primary, secondary, tertiary and quaternary) and functionality (solubility, apparent viscosity, emulsifying, foaming, and gelling properties). The affecting factors such as protein concentration and pH, and the strength and duration of electric fields and electromagnetic wave on the mechanisms and effectiveness of changes in protein structure and functional properties are introduced, and the advantages and limitations of these technologies for protein modification are also discussed. Key findings and conclusions: Applications of electric fields and electromagnetic wave can induce the conformational changes of protein via the creation of free radicals or larger or smaller molecules, damaging the primary, secondary, tertiary and quaternary structure of protein, and thus influence the functional properties. Therefore electric fields and electromagnetic wave are useful methods to modify food protein structure and functionality for the food industry, and active researches focus on multi-technology corporations for modifying protein structure are urgently required.

Abstract:The functional properties of peanut protein can be altered by different modification and processing methods. And the applications for peanut protein include meat and milk substitutes, edible films, nanoparticles, and some new technologies such as electrostatic spinning and three‐dimensional (3D) printing in recent years. Summary Peanuts produce millions of tons of high‐protein peanut meal (after oil extraction) annually that can be used for food. Peanut protein, as a plant‐based protein, is a great alternative to animal protein to address protein deficiencies and rising health problems in the world. It has a high nutritional value, while the globular structure results in poor functional properties, limiting its application. Better functional properties can be obtained through processing and modification. This paper elaborates the nutritional and functional properties of peanut protein and highlights the application of peanut protein in food industry in recent years. Applications for peanut protein include meat and milk substitutes, edible films, nanoparticles, and some new technologies such as electrostatic spinning and three‐dimensional (3D) printing in recent years. This paper could improve people's understanding of the molecular structure of peanut protein and the physicochemical properties associated with the structure changes during processing. It could also contribute to better utilisation of peanut protein, providing more varieties of peanut protein products for the food industry.
